NINE YEARS AGO, I FELL IN LOVE. WITH A DRESS. I STOOD IN

front of the mirror in a springtime Trina Turk number at Nordstrom’s

and debated with myself over my LOOOVE for this dress and its hefty

price tag. My argument for it was strong: it was beautiful, versatile and

well-made. My argument against it was so cliché: $. Love won the day.

Nearly a decade later (and a gain and __ yay, finally! __ loss of 40

pounds of baby weight), I still fit in that dress and adore it. It could last

me another decade.

It’s not that we shouldn’t experiment with today’s latest trends, but

timeless style is __ and always will be __ simple, elegant and graceful.

Think Audrey Hepburn. We seek the Audreys of the home design world.

We found one in builder Tim Cunningham’s Mills Farm residence.

Designed by Scott Bickford and furnished by Muse Furniture & Lifestyle

Designs, it has a Hamptons-style vibe that can be pumped up for

entertaining or relaxed for family time. In places, it’s fancy; in others, it’s

quirky. It’s full of light and light-hearted. It’s hard to imagine this home

needing an overhaul in the next 50 years. Check it out on page 36.

Style is also subjective. Whether you like Old World or Mid-Century,

that’s great, too. Diversity makes this magazine tick. Each style has its

own value and following; all we ask for is commitment.

My eyes drift to it when I’m thinking. I’m quite familiar with it now, sitting

at Brooke’s desk while she’s on maternity leave for the summer. Her

FOOD AND DECOR MAKE A WONDERFUL PAIR, DON’T THEY?

Nowhere is that more clear than at this spring’s Dining by Design

event sponsored by DIFFA. This fundraiser for AIDS prevention

and education brings together all creative types to imagine the

most beautiful to almost practically impossible magical scenes

for an intimate dinner party. From a hot pink graphical Kansas

City skyline to a greenhouse enclosure, designers showed what

it really means to create a sense of place.

When we signed up to design a table for this signature evening,

we turned to Brenda Freebern of Picture Perfect Interiors for help

accessorizing. Having recently lost a dear friend, Brenda was

inspired to pay tribute to someone who “lit up our lives.” She

gathered black, gold and crystal lamps and massed them

together at the center for a powerful impact. “It’s traditional

with a little glam because Jim liked things over the top,”

Brenda explains. Roses and Casablanca lilies in crystal vases

encircled the centerpiece, and settings of red-rimmed china

(left to Jim by a friend who died of AIDS) on gold chargers and

a RM Coco damask tablecloth pulled the sophisticated color

palette together.

HAMPTONS-STYLE ARCHITECTURE HAS BEEN AROUND

for centuries back East, but here in the Midwest, the look is

new and unique to many. Builder Tim Cunningham launched

a year-long design process with architect Scott Bickford and

interior designers Amber Brown and Kendra Miner to create

this tribute home in The Estates at Mills Farm. “I wanted to

throw new ideas out there for people to consider, getting them

thinking in a different direction,” he says. Brown adds that

she wanted three words to come to people’s minds: elegant,

“It had to be airy yet anchor the space at

the same time,” Brown says. Corbett Lighting’s

white shade with crystals is and does both.

From the start — at the curb — the home causes

near-collisions with its standout presence on a

corner lot. If the classic shingle-style façade with

porte cochere and octagonal skylight don’t cause a

foot to hit the brake, the rear patio’s 12-foot waterfall

from an infinity-edge pool will.

The front entry, instead of opening into the

house, looks straight through large-frame windows

out to the poolscape. It sets the tone for the

feeling of indoor/outdoor connectivity that pervades

throughout. Above, light pours in from an eight-sided

dome, reaching into the two wings of the house and

down to the lower level. “It was more of a challenge

to frame this one area than it was the entire house,”

Cunningham notes.

The biggest example of bringing the outdoors in

and taking the indoors out, however, is the lanai. “We

are used to seeing lanais with screens or just totally

open,” Brown explains. “But we made this home

temperature-controlled so you could enjoy it in every

season.” Accordion-style doors fold into each other

to completely open the room to the rest of the space

or close it off; the dark-water pool glistens just steps

outside a pair of sliding glass doors.

Flanking the window, Angelique white enameled mirrors from Z Gallerie add another

layer to the space. White linen tailored chairs and window treatments fit the simple

yet elegant theme of the home and allow the wallpaper to garner all the attention.

Below... Tailored sofas facing each other give the great room a formal feel, yet they are comfortable

and relaxed. The real highlight of the space, though, is the floor-to-ceiling chiseled-crystal

stacked-stone tile fireplace. The high, angular vaulted ceiling is trimmed in 5-inch beadboard

enameled in crisp white. “By adding the wood, it brings the ceiling in and creates a warmer space,”

Brown says. A Currey & Company two-tiered gray Murano glass chandelier reigns overhead.

Meant to be a showhouse, it features some

nonstandard products such as prefinished

cabinets and pre-engineered hardwood bamboo

flooring. The home is completely automated and

has a central vacuum with the hose conveniently

stored in the wall.

Wallpaper makes a comeback in a few key

areas, but it’s brighter and bolder than in the past

and even used in nontraditional ways, such as

running horizontally in combination with paint

in the powder bath. Mirrored accents add

dimension and a ‘wow’ effect, while Brown gave

the palette gray undertones over the usual

brown ones. “I have noticed in the homes I do

that it allows your art and accessories to stand

out more,” she remarks.

While there is much to envy, the home still

feels casual and friendly. “Everything is simple,

not overdone,” Cunningham describes.

Above left...The sanctuary known as the master bedroom is created by pewter tones

in the carpet and chenille tufted headboard. A tone-on-tone damask wallpaper behind the bed

gives a hint of pattern, while a splash of yellow complements the gray.

Above right... At the center of the master bath, a freestanding tub framed in Calcutta tile

makes a statement. Espresso wood his-and-hers vanities feature Calcutta countertops and

backsplashes as well. Set against tall walls meeting at a vaulted ceiling, framed mirror spaces

feel more substantial and offer a surface to feature antique mirrors and chrome sconces.

in the kitchen and found an intriguing fit in Kohler’s

freestanding cast iron island with long, horizontal sink

and open base. The main island has prep space plus

a lowered top at standard table height to seat users

in regular chairs. More seating is available at the

banquette in the corner.

bring outdoor elements to this luxurious lanai,

featuring 36-inch x 36-inch travertine tiles and cut stone

on the fireplace. A peacock perches on the custom

steel hood by Colorado-based Raw Urth, its colors

complementing the hand-glazed backsplash tiles.

Loaded with a grill, sink, ice maker and bar top

with stools, it has the makings of an outdoor kitchen,

but with the space completely enclosed and

temperature-controlled, it can be used year-round.

Not knowing who the buyer would be,

Cunningham made spaces that could transition

between party house and family home. For

example, the study connecting to the master

could be a nursery, and the lower-level dining

room a pool room. The master bedroom isn’t

huge on purpose. “We found that people don’t

spend a lot of time in their bedroom,” Cunningham

says. So he gave them amenities: a pair of chairs

in a bay window, a sizable closet with built-ins

and washer/dryer hookup, and a glamorous

bathroom bedecked in glass, crystal and mirrors.

from the front of the house,” Sheri says.

The couple had always wanted a pool, but

a careful watch over their three daughters’

safety prevented them from building until last

year. “The advantage of waiting was that it

gave us lots of time to think about what we

wanted,” Russ says.

They built the house in 1998 and were

happy there until their last child arrived and the

house started to feel cramped. They looked for

a new house but couldn’t find anything to equal

their 2/3-acre property in a cul-de-sac off a

cul-de-sac.

So they decided to remain where they

were... forever. That last word stayed with the

couple and impacted every decision they made

as they remodeled every square inch of the

house except the basement bathroom and

installed the pool. During construction, they

moved into a house down the street. “We

moved twice so we wouldn’t have to move

once,” Russ explains.

Russ is a big-picture thinker, while

Sheri is the meticulous, detailed type. That

combination helped them achieve the best

outcome. From the large-scale scope of the

pool project, including a new patio, outdoor

kitchen, hot tub and fire pit, to details like

the reef ledge, which Sheri went so far as

to think that her future grandkids would

enjoy playing on, the Lindmarks carefully

considered every aesthetic and function.

Above... A comprehensive remodel included alterations

to the back of the house, including a covered deck off the master

and an expansive travertine tile patio. A grill is built into an

outdoor kitchen between the house and pool/pump house.

The site was pitch-perfect for this style of pool and its five

waterfalls. The naturally sloped property allowed the pool to be

built right into the hill, even leaving enough space for a yard at the

top where it’s flat. Designed to fit among mature maples so no

trees would have to be felled, the scale is grand, yet the distinct

areas are cozy.

“We wanted it to look like it had always been here,” Sheri says.

Of course, they added new touches, such as a border of

Knockout roses, native wildflower beds and three birch trees,

spectacularly uplit at night, that symbolize the three kids.

Technology, too, is present but hidden. Three music zones ___

patio, pool and fire pit ___ can be adjusted individually by whim.

It’s so comprehensively designed that it attracts adults but

especially kids, and that’s just how the Lindmarks planned it.

“The girls are busy, but we want them here. (The pool) gives

them some freedom. All their friends come over, and they love it,”

Sheri says.

Last fall, this was the place for friends, their dates and parents

to gather and take photos before the Homecoming dance.

Together and smiling, creating memories, it must have looked

reminiscent of the vacation photos that started this whole thing

in the beginning. From a world away to their backyard, the

project comes full circle, bonding family, friends and fun forever.

surrounded by boulders. The rest is “sports” depth: 4 feet.

FOR MOST LAKE HOMEOWNERS, IT’S NOT UNUSUAL FOR THE

natural surroundings to be a focal point of their residences. For

husband and wife Wayne Marlow and Nancy Hall, however, the Lake

of the Ozarks itself is only one layer in their outdoor scenery, and while

the waterscape is impressive, their gardenscape makes their lake

home a blossoming standout. The garden/lake combination makes

for a beautiful living arrangement, a compromise that keeps the

couple together: Wayne loves the lake, Nancy loves gardening, and

today they have the best of both at home.

The couple relocated to the Lake from Prairie Village, Kan., in 2008.

“Before we moved to the Lake full time, we had a split life,” Nancy

says. “Wayne came to the Lake, and I stayed in the city to garden.”

Wayne grew up near the Chesapeake Bay and has always loved

boating and water. Today, he’s a licensed captain and still takes a

couple of charters out each summer. Nancy, however, prefers her

hands in the dirt instead of a life on the water. She grew up on a small

farm in Iowa, part of a garden-fed family of six kids, and her love for

flowers and life outdoors started at an early age.

While Wayne was ready to retire to a life on the water, Nancy

was unsure about living at the Lake full time. She made the

move with the stipulation that her garden would come with her.

In July 2008, when they sold their Prairie Village house more

quickly than expected, Nancy was days away from beginning

her annual teaching stint at Michigan State — which meant

they had to move their plants to temporary homes. By fall

2009, the couple had lost a number of trees in their lake

home’s yard, casualties of the building process that disturbed

roots and disrupted water flow.

That winter, Nancy began resketching the garden. The

following spring, truckloads of good soil were brought in,

creating the rich base to transplant 100 shrubs and grasses,

the underpinnings of the gardens in their current form. Liriope

lining the sidewalk, hosta, daylilies, astilbe, heuchera, daisies

and even ferns that originally stemmed from Nancy’s mother’s

garden survived the drawn-out move.

Today, blooms and greens, stone and pottery envelop the

cottage-style, 3,000-square-foot house for an overall crafted

effect that gives a sense of careful cultivation and easy,

natural growth. Nancy loves easy-care plantings that reseed

themselves, such as daisies, black-eyed susan and yarrow,

but she also likes to mix in unusual selections with differing

textures and colors.

With a view of the water across the street and

undeveloped woods in the backdrop, the couple loves

the freedom of no neighbors directly beside them.

Having vantage points throughout the house from which

to enjoy the garden was important to Nancy, and the

home’s interior is designed to meld the two worlds.

“We designed the house with windows everywhere to

give views of the garden,” she says. “We wanted to feel

the outside from the inside and vice versa.”

Indoors, carefully selected floral fabrics and calm

blue hues comfortably blend, and window seats in

both the office and sunroom, plus a bay window in the

nook, connect the two environments. Nancy credits

homebuilder Jon Larson of Miriah Development and

Jason Cooper of Cooper Siteworks with helping make

their vision come to life, from designing the window seats

to carving out the beds before laying sod outside. From

the front of the home, the shaded front porch overlooks

a pond and waterfall and is one of Nancy’s favorite spots.

Wayne teases that sometimes Nancy’s gardening

hobby is like a third element in their relationship, but he

admits that their home at the Lake worked out even

better than expected.

On June 2, Wayne and Nancy’s home was a stop

on the annual Lake Area Master Gardeners’ Garden

Walk, with proceeds benefiting local scholarships. In

addition to their boating and gardening passions, the

couple actively supports the local community, including

such organizations as Big Brothers Big Sisters, Kiwanis

and more.

IF YOUR IDEA OF A PERFECT SUMMER DAY

includes floating on the water in the hot sun, then the

Lake of the Ozarks’ annual AquaPalooza celebration on

July 21 is the only place to be. A boat-lover’s dream,

this free festival is part of a nationwide series of events

held at more than 100 locations.

The Lake’s event is one of the largest in the country,

with attendance last year estimated at 3,000 boats

and 15,000 people. Those numbers are expected to

increase in 2012, with the Lake of the Ozarks

Marine Dealers Association signed on as the headline

sponsor, getting more than 40 marine dealers to

promote the event.

Capitalizing on last year’s success, this year

promises to be more jam-packed than ever with

live bands, games, prizes and activities for the entire

family. “AquaPalooza has quickly become one of the

Lake of the Ozarks’ premier events,” says Mark Barrett,

owner of Dog Days Bar & Grill.

“Thousands of boats are tied together and create the

ultimate floating party. Where else can you float on a raft

and be in the front row at a concert?” he asks. This

year’s band lineup includes The McClymonts, Rock

Paper Scissors, Trailer Choir and Hells Bells (an AC/DC

tribute act).

Don’t miss this day-long celebration of fun and sun

on the lake. The event runs from noon to 5 p.m. at Dog

Days Bar & Grill, located by water at 19MM or by car at

CAPTURING THE ESSENCE OF TUSCANY WAS THE TASK AT

hand for the design and build team of this Melody Point home.

Builder Doug Hulse, along with interior designer Janie Comstock of

J. Kimball Interiors, house designer Brian Kirk of Home Design

Studio and carpenter Mark Norris of Woodworks, spent more

than a year designing, building, selecting and finishing to create a

luxurious lakeside retreat for the homeowner and her family.

“The homeowner had very concrete ideas of what she wanted

and was very articulate about the details,” Kirk says. “Melody Point

homes are Craftsman-style homes, and I took the homeowner’s

ideas and put them all together.”

With 10,000 square feet of total living space and five master

bedroom suites, the house was aptly designed for weekend

getaways and large family gatherings. To celebrate the family’s

heritage and many trips to Italy, the interiors of the home evoke

the ambiance of the Italian countryside.

“We wanted to create the feeling of Tuscany inside the

home with the details. We used imported red tile flooring, deep

yellow walls and a special tile backsplash behind the stove,”

Comstock says.

Many of the light fixtures, including the striking piece over the

main kitchen island, were selected from an antique shop in Tulsa.

Throughout the home, custom forged ornamental ironwork by Phil

Endicott graces doors, walls and woodwork. Beneath the Tuscan

decor, the home is loaded with unique features and living amenities.

“The main level upstairs has a huge open living space for dining

and entertaining and a wall of windows to focus on the view of

the lake,” Hulse says.

In the kitchen, the large island houses multiple appliances,

including two dishwashers. A butler’s pantry separates the front

of the house from the kitchen and includes a wine fridge and

beverage dispenser. Also on the main level are the main master

On the lower level, there is a large living area, additional

bedrooms, a bar and wine cellar. All of the custom

woodwork was done by hand.

“We mostly used maple, and everything was handmade

in our shop,” Norris says. “The wine cellar has Old World

panels with square pegs, and I don’t even know how many

pieces of custom molding there are on the bar.”

The luxury continues outside. The back of the home

overlooks the lake and features 3,200 square feet of deck

space, a fully loaded outdoor kitchen and an oversized hot

tub for 20 people with an infinity edge.

“The upper deck can probably hold 75 to 100 people all

doing the Macarena at the same time,” Hulse says. “From

the lake, this home appears like a resort.”

The building process for this home was challenging,

resulting in some structural wonders. The front porch of

the home is above the wine cellar and has a suspended

concrete ceiling. The garage floor also is suspended, with

storage underneath for golf carts.

“Building this home was an adventure,” Hulse says.

“The foundation is particularly complex and it took a lot of

planning. I’m very proud of this home. I’ve built houses

this big before, but never with the kind of detail that the

homeowner wanted in this house.”

hand-forged iron fixture of grape leaves and room for 600 bottles.

Oklahoma’s Green Country, it features more

than 1,300 miles of shoreline and 45,000 acres

of water and wooded areas. “It offers an all-

around package for people who want to get away

from it all,” says Tad Jones, executive director of

the Grand Lake Association.

Love to fish? Bring your poles or watch the pros

do it during the American Fishing Tour in October.

Or come in February during the Bassmaster

Classic. “It’s the Super Bowl of fishing,” Jones says.

Nestled at the farthest tip of Monkey Island is the

area’s newest resort, Shangri-La Golf Club, Resort

& Marina. Take a swing on the Legends Nine golf

course that opened Memorial Day weekend. Afterward,

hop on the shuttle boat and travel the marina to the

Summit Restaurant.

Bird lovers should plan to attend the annual Pelican

Festival in September. A migratory stop for the American

White Pelican, the festival features a parade, carnival and

arts-and-crafts competitions. Tour the area and watch

the birds while enjoying a dinner cruise on the water.

If you miss city life, there’s a lot to explore. Stick to

your Kansas City roots by taking a trolley through

Grove as you spend your day shopping,

eating and sightseeing. Tour the Pensacola

Dam, the world’s longest multiple-arch dam.

Stroll through the antiques and historic artifacts

at Har-ber Village, visit Darryl Starbird’s

National Rod & Custom Car Hall of Fame

Museum or sip wine at nearby wineries. While

you’re in the area, be sure to taste a part of

history at Clanton’s Café, the oldest family-owned

restaurant on Route 66. Try the chicken fried steak!

More than Just ShelterI am known for custom orders that capture someone’s home,

hobby or sport. Some of my notable custom pieces include a

loose replica of a Frank Lloyd Wright house in Buffalo, N.Y., a

large flower on a custom pole resembling a stem, a John Deere-

inspired tractor and a replica of a customer’s new RV.

Handy from a Young AgeI was lucky to have parents who always encouraged me to

be creative, take things apart and try to put them back together.

I had a corner of the basement with a workbench and an

ever-growing collection of tools. In addition, I spent a lot of time

with my grandfather, who was very handy and liked to build

things, and he was always patient in teaching me how to safely

use power tools.

Inspiration and ProcessCustomers come to me with a vague idea of what they think

they want, and I include them along the way with my ideas and

additions. When I’m between projects, I often get inspiration from

my favorite place, Habitat ReStore. I love that I can go in several

times a week and find different items during each visit that are

useful in my birdhouses.

Humor When AppropriateMy most talked-about birdhouse is a set of male/female public

restroom figures where the entry hole is the head of the image.

My favorite one is a Halloween-themed “haunted birdhouse,”

purposefully cut so the house leans, with a crooked half open

door and pool of blood seeping out. I also had an “ah ha” moment

with a piece of acrylic that makes a clear-viewing panel so you

can see a nest without disturbing the birds.

Branching OutI’m always looking for new challenges. Recently, I was asked

to do two butterfly houses for a community center in Topeka.

I wasn’t aware such a thing existed, but with a little help from

the Internet, I found basic dimensions and created two pieces

that accent the newly built modern building.

Atchison, Kan. Not only is this well-over-a-century-old settlement

abounding with embellished Victorian mansions, it has a storied

past, rumors of present-day hauntings and enough ballyhoo about

its famous daughter, aviatrix Amelia Earhart, to attract a fair amount

of press.

Just shy of an hour from Kansas City, the journey northwest

passes quilted river valley farmland into the storybook town banked

against limestone bluffs. Atchison’s rich architectural heritage is

immediately apparent ___ Queen Annes, Gothic Revivals, Italianates

and Romanesques showcase the splendor of a bygone era.

Begin on 10th Street at the historic Santa Fe Depot, housing

the Chamber of Commerce and Visitor’s Center. Not far from

there, history buffs can follow Lewis and Clark’s expedition

starting with a footbridge near the Depot. At the foot of

Commercial Street and River Road lies a commemorative marker

where the expedition observed Independence Day on July 4,

1804. Follow up with a visit to the site of a reconstructed Kanza

Indian dwelling at the Lewis and Clark Pavilion in Riverfront Park.

Motor up to the Amelia Earhart Historic District, located on

the east side of town. Not only is this hilltop an ideal vantage point

during July’s two-day Amelia Earhart Festival, it’s only a few

blocks from Benedictine College. The Brothers of St. Benedict

and Sisters of Mount St. Scholastica made their mark in the late

1850s and are still actively contributing to the community. Tour the

grounds of the abbey, college and nearby Mount St. Scholastica

to view heavenly architecture featuring flying buttresses, gables

and impressive stained glass.

As you find your way back downtown to brick-lined streets,

consider getting sidetracked along Commercial Street’s

pedestrian mall. You may have heard of Ms. Mary Carol Garrity,

one powerhouse retailer causing folks to make a pilgrimage from

far and wide to her famous Nell Hill’s corner emporium. She

shares her notoriety with an assortment of eclectic shops and

dining establishments: Cottage of the Seasons, Garrity’s and

Willow Brook for home decor; and quaint eateries Marigold

Bakery and Cafe, Pepper Mill Grill, Paolucci’s Restaurant and Deli,

and Snow Ball 8th Street Bistro.

A full roster of events encompasses art and garden tours,

concerts and community theater productions, Juneteenth and

Oktoberfest celebrations, and an honest-to-goodness county

fair. Atchison, confirmed by paranormal hunters everywhere as

one of the most investigated ghostly hot spots in the country,

affords many opportunities to reveal its mysteries through guided

tours and special events.

Skeptical? Take advantage of earthbound activities touring

glorious mansions, the Muchnic Art Gallery or the International

Forest of Friendship.

Atchison may be a day trip, but there’s far more territory to

cover than you might imagine. Its architectural and historical

significance notwithstanding, this is one beautiful place.

Sautéed Shrimp Appetizer

8 ea 13/15 shrimp, peeled and deveined1 t garlic, minced1 t serrano or jalapeño pepper, minced½ C chicken stock2 T olive rice1 T lime juice1 oz butter, unsalted1 t tomato paste1 bunch cilantro, leavesFresh mint, chiffonade, 3 leavesFresh hearts of palm, shavedcanola oilolive oil

Olive Rice½ C Jasmine rice1 C water¼ C nicoise olives, minced¼ t salt1 T olive oil• Combine all ingredients, except olive oil, in a medium saucepan. • Bring to a simmer over medium heat. • Cover. Reduce heat and cook for 12 minutes. • Remove from stove and stir in olive oil.

Shrimp• Heat a saute pan over medium-high heat. Add enough canola oil

to film the bottom of the pan. Season shrimp with kosher salt. • When oil begins to smoke, add shrimp. After 1 minute, add garlic

and serrano. Turn shrimp over; add rice, chicken stock and lime juice. • Whisk in butter and tomato paste. Reduce until stock thickens to

sauce consistency. Season with salt.• In a separate bowl, toss hearts of palm slices, cilantro, olive oil,

lime juice and salt.• Spoon shrimp and rice onto a small appetizer plate. • Garnish with cilantro and hearts of palm.

Grilled Octopus AppetizerMustard Seed Vinaigrette1 C mustard seeds1 C water1½ C white wine vinegar½ C sugar2 t kosher salt• Combine all ingredients in a medium saucepan

and simmer 45 minutes to an hour, until most of the liquid is gone and the seeds are approximately double in size.

• Store the seeds in the refrigerator. • To make the vinaigrette, mix 2 T of seeds

with 1 T white wine vinegar and 2 T olive oil.

Octopus8 oz octopus tentacles, simmered in water, wine and

mirepoix until tender, 1-3 hours6 asparagus stalks, peeled and blanched¼ C mustard seed vinaigrette½ C nicoise olives, pitted and halvedparsley or small arugula leavesolive oillemon juicesalt and pepper• Place octopus and asparagus on a hot grill. Cook until

lightly charred on all sides. • Remove from grill and place in a medium bowl. Add

vinaigrette and olives and toss. In a separate bowl, dressgreens with lemon juice and olive oil.

• Arrange octopus and asparagus on a plate. Top with greens. Drizzle olive oil.

Pan-Roasted Chicken Breast with morels, sugar snap peas, carrot purée, maple gastrique

Maple Gastrique1 C maple syrup¾ C white wine vinegarPinch of salt• Combine in a saucepan and reduce by half.

Carrot Purée3 carrots, peeled and roughly chopped1 small serrano pepper, seeds removed2 T creamsalt• Place carrots and serrano in a medium saucepan,

cover with water, season with ½ t salt and simmer for 20 minutes or until carrots are easily mashed.

• Add carrots and serrano to a blender. Add enough fresh water to purée. Add cream and purée until smooth.

• Season with salt if necessary.

Chicken2 chicken breasts, skin on4 oz morels, split lengthwise1 t shallot, minced1 doz sugar snap peas, blanched¼ C carrot purée

• Add canola oil to two saute pans and heat until oil barely smokes. • Season chicken with salt and pepper and add skin side down to

one pan. • Add morels to the other pan. When the chicken skin is lightly brown,

flip breasts and place in a 350-degree oven. • Cook until hot through, 8-10 minutes. • Brown morels lightly. Season with salt and pepper. Add garlic and

butter and cook until butter browns lightly. Add parsley. Add peas andwarm through.

• To plate, slice chicken. Spoon purée onto plate. Top with morels. Drizzle with gastrique. Fan chicken on top. Arrange peas on top of chicken.
