GREETINGS TO ALL: I am glad to bring greetings to all during this beautiful spring day! When all the flowers and plants are in bloom and the weather is getting warmer-- it brings a cheer to my heart and soul! On that note--I want to remind everyone of our annual meeting coming up on May 7th at the Extension Office. Our "BEE" theme will continue at this event. All clubs know of their responsibilities for their reservations, table decor, basket donations, and end of year reports. We have had a GREAT year and I thank everyone-- my officers--committee chairpersons--clubs/officers/members and, of course the Extension staff and agents for making that possible. Without your support--we would not have had such a smooth year--I say... Thank you! Thank You! Thank you! Please also note upcoming classes and programs that remain for the rest of the month. The Essentials on Essential Oils By now, you’ve likely heard about essential oils, but

may not be familiar with their benefits and risks. Essential oils are highly concentrated oils derived from plants. While used for centuries, their popularity has soared, especially among individuals looking for natural healing options.

A term you may be more familiar with is aromatherapy, which is one way people use essential oils. While research is limited about the effectiveness of aromatherapy, some studies have shown the practice may have health benefits such as relieving anxiety or depression or improving health and wellness, particularly for those who suffer from chronic illness. Many oils are safe when used as directed, but none are regulated by the U. S. Food and Drug Administration. Because they are not regulated by the FDA, companies do not have to test for quality and purity, but some voluntary do.

The oil you choose to use depends on the ailment you hope to address. No medically endorsed list exists that specifies which oil is best for treating particular a health condition. The chemistry of oils will vary among different locations, climates, seasons, time of day when harvested, packaging methods, storage method and even among plants. This is in vast contrast to pharmaceuticals that are synthetically reproduced to be the same each time.

You can apply oils in a variety of ways but you would most commonly dilute them with a carrier oil and apply directly on the skin or inhale them. The application method depends on the part of the body you’re trying to support and the type of oil you are using. For example, you would most likely dilute and apply an essential oil topically if you were using it on a wound. It’s most common to inhale oils you are using to enhance your mood for quick results. Some oils can cause skin irritation and you should not apply them directly to the skin. Many oils need to be diluted with a carrier oil such as olive oil or coconut oil before you apply them to your skin. Others may produce an allergic reaction in some individuals or cause sun sensitivity. If you have questions about an application method, you should consult an aromatherapist.

You should not ingest oils or apply them to mucous membranes such as the inside of your nose or the inside of your mouth. Essential oils should not be used on children under 2 years or who weigh less than 44 pounds. Pregnant women should not use essential oils, and some oils are discouraged among breastfeeding women. If you have asthma or other breathing issues, you should avoid inhaling oils.

UK HealthCare has approved four essential oils for use in aromatherapy when administered by trained professionals within their clinical setting. These oils are ginger, lavender, peppermint and sweet orange. Before starting any treatment, research the oil and consult qualified health care professionals. Specialty Clubs focus on learning, developing and preserving a specific skill, interest or activity. There is a deliberate focus on sharing members’ skills with others to strengthen the community. Participants do not have to be an expert - as the objective is to learn. Interested in adding to the variety of your diet or working to become ‘gluten-free’? This May Day class will delve into the origins and use of different kinds of flours, such as millet, spelt, sorghum, amaranth tapioca, rice, and quinoa. We’ll discuss their flavors, nutritional qualities, and uses, and even have a taste-test. Cost: $8.00 for Fayette Co. Homemaker members or $12.00 for non-members. Meatless Mediterranean ~ Wednesday, May 22nd, 6:00- 8:00 p.m.: This presentation will introduce you to the staples of Mediterranean cooking—the ingredients and processes—and how to plan a delicious meatless Mediterranean meal. In-process photos will show in detail the steps for making each of the dishes for the meal, from appetizer through dessert. The focus will be on simple dishes that are healthy and allow delicious vegetables to star. Cost: $8.00 for Fayette Co. Homemaker members or $12.00 for non-members. May Flower Basket ~ Thursday, May 23rd, 10:00 a.m.- 4:00 p.m.: This basket is woven on a wood base with seagrass over dyed stakes used as weavers. Cost: $38.00 for Fayette Co. Homemaker members or $46.00 for non-members. Jams and Jellies ~ Wednesday, May 29th, 1:00-3:00 p.m. OR 6:00-8:00 p.m.: Learn the basics of preserving fruits or veggies as Jam or Jelly. Each participant will take home a jar of Jam or Jelly. And will learn the basics of food preservation as it relates to making Jam and Jelly. Learn about products on the market and the safest way to preserve fruits and veggies. Cost: $10.00. “Eggstra” Special - Deviled Egg Carrier Basket ~ Thursday, June 6th, 10:00 a.m.-4:00 p.m.: This Basket is woven on a 12” round base with lidded plastic insert to carry and protect the cargo. Red rosewood handles on the rim and outside trim if desired. Cost: $42.00 for Fayette Co. Homemaker members or $50.00 for non-members. Food Preservation Boot Camp ~ Tuesday-Thursday, June 10th-12th, 10:00 a.m.-3:00 p.m.: This three day class series covers most aspects of food preservation including canning, freezing and drying - including pickling, jams and jellies. Lecture and hands on activities. Cost: $50.00 Be a Bag Lady: Molly Maker Bag ~ Thursday, June 13th, 10:00 a.m.-3:30 p.m.: The soft-sided design allows the bag to sit open for easy access to project supplies for a variety of crafts such as hand sewing, knitting, crocheting and more. Holds a full size skein of yarn. Approximate size: 11” x 8” x 3.5” Cost: $5.00, supply list will be provided after registration Baking Class: Popovers ~ Tuesday, June 18th, 1:00- 3:30 p.m.: Popovers are a hollow quick bread shaped like a muffin and made from a thin batter of eggs, milk, and flour. Learn all about popovers and how they are made. We will have a demo, recipes and tasting during class. We will discuss and taste fruity versions and savory versions. Cost $5.00

Monday, May 20th: Richard Taylor, Elkhorn: The Evolution

of a Kentucky Landscape. Driven by topophilia (love of place),

Taylor focuses on the eight-mile stretch of the creek from

the Forks of the Elkhorn to Knight’s Bridge to provide a

glimpse into the economic, social, and cultural

transformation of Kentucky from wilderness to its current

landscape. He explores both the natural history of the

region and the formation of the Forks community. Taylor

recounts the Elkhorn Valley’s inhabitants from the earliest

surveyors and settlers to artist Paul Sawyier, who

memorably documented the creek in

watercolors, oils, and pastels.

vignettes about historical figures of the

Cooking Through the Calendar: Chicken and Ranch Mushrooms ~ Wednesday, May 1st, 12:00- 1:00 p.m.: Class will include a cooking demonstration and taste test. Learn the techniques used in the recipe along with helpful and healthy kitchen tips. Door prizes will be given. Cost: Free, but must register in advance. Basket of Flours ~ Wednesday, May1st, 6:00-8:00 p.m.: Curious about the various flours on the market? Wonder how they taste or how you would use them? Interested in adding to the variety of your diet or working to become ‘gluten-free’? This May Day class will delve into the origins and use of different kinds of flours, such as millet, spelt, sorghum, amaranth tapioca, rice, and quinoa. We’ll discuss their flavors, nutritional qualities, and uses, and even have a taste-test. This class is led by Doraine Bailey, a home cook who has experimented with various tastes, food trends, and ethnic traditions for over 30 years, and is Fayette Co. Homemakers Vice President. Cost: $8.00 for Fayette Co Homemaker members or $12.00 for non-members. Strength and Stability ~ on Wednesdays, 6:30-7:30 p.m.: Bring a friend or come alone to a fitness class, Strength and Stability, that is sure to meet your 2019 physical activity goal. The class will be lead by Beth Leistensnider, CYT, 200. This is a beginner level class, accessible to most, that is yoga based with added strength and stability training techniques. Cost: $4.00 per week (exact amount, cash or check only, payable at door). Registration in advance is encouraged but not required.

Monthly Table Runner-May ~ Monday, May 6th, 9:30 a.m.-2:30 p.m.: Table runners are an excellent opportunity to learn a new block or pattern, try it to see if it meets your expectations and complete a project without the commitment of a whole quilt. Throughout the year we will explore some traditional blocks, do some appliqué work, dabble in foundation piecing, and explore the principles and tasks of setting blocks on point, all while keeping the runners seasonal. These classes will focus on learning or reinforcing basic and more advanced quilting skills. If you choose to use your own fabrics, if you choose not to buy the kit each month, your fabric MUST be cut before class. Samples will be hung in the office quarterly. Cost: $13.00, supply list will be provided after registration. A KIT IS NOT AVAILABLE FOR THE MAY TABLE RUNNER. PLEASE NOTE: For the May Table runner, you must have knowledge of appliqué for this class. Tumbler Flag Wall Hanging or Table Topper ~ Monday, May 13th, 9:30 a.m.-2:30 p.m.: THIS IS A KIT ONLY class. Die cut tumbler blocks pieced in rows to create this representation of an American flag. Choose from antique look or crisp modern. Kits will include all fabric for the top. Approximate size: 26” x 40” Pre-registration is required. Cost: $20.00, proceeds beyond kit cost will go to Quilts of Valor Foundation, providing Quilts for our veterans. Kentucky Proud Evenings Presents: Richard Taylor, Elkhorn: The Evolution of a Kentucky Landscape ~ Monday, May 20th, 6:00 p.m.: Driven by topophilia (love of place), Taylor focuses on the eight-mile stretch of the creek from the Forks of the Elkhorn to Knight’s Bridge to provide a glimpse into the economic, social, and cultural transformation of Kentucky from wilderness to its current landscape. He explores both the natural history of the region and the formation of the Forks community. Taylor recounts the Elkhorn Valley’s inhabitants from the earliest surveyors and settlers to artist Paul Sawyier, who memorably documented the creek in watercolors, oils, and pastels. Interspersed with photographs and illustrations—contemporary and historic—intermixed with short vignettes about historical figures of the region, Elkhorn: Evolution of a Kentucky Landscape delivers a history that is by turns a vibrant and meditative personal response to the creek and its many wonders. Kentucky Proud Evenings is a series of monthly author talks. Copies of the book being discussed will be available for sale at the events. Cost: Free, but must register in advance. Dreaming of Spring Quilt ~ Tuesday, May 21st, 10:00 a.m.-3:00 p.m.: “Dreaming of Spring” is a fun quilt that can be completed by quilters at any skill level - beginners and up. This quilt is a great way to show off those beautiful florals or you can use any fabric combination that you want. It would also make a nice pattern for a baby quilt. Sample of this quilt is in the office. Cost: $20.00, supply list will be provided after registration. Meatless Mediterranean ~ Wednesday, May 22nd, 6:00-8:00 p.m.: This presentation will introduce you to the staples of Mediterranean cooking—the ingredients and processes—and how to plan a delicious meatless Mediterranean meal. In-process photos will show in detail the steps for making each of the dishes for the meal, from appetizer through dessert. The focus will be on simple dishes that are healthy and allow delicious vegetables to star. Cost: $8.00 for Fayette Co Homemaker members or $12.00 for non-members.

NEW May Flower Basket ~ Thursday, May 23rd, 10:00 a.m.-4:00 p.m.: This basket is woven on a wood base with seagrass over dyed stakes used as weavers. ** Supplies YOU must provide: water container (bucket/bowl), small towel, scissors (garden type preferable), small flat head screwdriver, 2 dozen snap type clothespins, tape measure, pencil, pocket knife (good sized), sandpaper, weights (unopened soup cans work) and a small spray bottle. Materials for making the actual basket (reed, etc.) will be provided. Please Note: Supplies are specifically cut for each basket two days prior to class. If you need to cancel, you MUST call 72 hours prior to class. SKILL LEVEL: Beginner. Cost: $38.00 for Fayette Co. Homemaker members or $46.00 for non-members. Jams and Jellies ~ Wednesday, May 29th, 1:00-3:00 p.m. OR 6:00-8:00 p.m.: Learn the basics of preserving fruits or veggies as Jam or Jelly. Each participant will take home a jar of Jam or Jelly. And will learn the basics of food preservation as it relates to making Jam and Jelly. Learn about products on the market and the safest way to preserve fruits and veggies. Cost: $10.00 Please Note: Please select 1:00 –3:00 p.m. OR 6:00-8:00 p.m. Heat Embossing on Paper ~ Saturday, June 1st, 9:00 a.m.-12:00 p.m.: Participants will have the opportunity to create elegant stationary and note cards embellished with the technique of heat embossing. Heat embossing creates a raised, stamped design on paper through application of embossing powder while the stamp is still wet and then quickly dried with a heat gun. Participants will learn how to create a simple jig for centering their designs on paper. Commercially available rubber stamps will be used for the workshop. Participants may bring their own rubber stamps, though not all designs emboss well. Plain stationary sheets and notecards with envelopes will be provided, as will black, gold and silver embossing powders. Cost: $10.00, covers materials and use of tools needed for the class. PLEASE NOTE: Heat guns are used in this class, not blow dryers. Heat guns get hot enough to cause serious burns if handled carelessly. Therefore, this class is for adults only. Topics will include: June 5th-Introduction; June 12th-Oak Furniture; June 19th-Salt & Pepper; June 26th-Flow Blue; July 3rd-American Quilt; July 10th-Flower Frogs; July 17th-Cut Glass; July 24th-Roadshow. Cost: $50.00 Be a Bag Lady: Molly Maker Bag ~ Thursday, June 13th, 10:00 a.m.-3:30 p.m.: The soft-sided design allows the bag to sit open for easy access to project supplies for a variety of crafts such as hand sewing, knitting, crocheting and more. Holds a full size skein of yarn. Approximate size: 11” x 8” x 3.5” Cost: $5.00, supply list will be provided after registration. New Date: Baking Class: Popovers ~ Tuesday, June 18th, 1:00-3:30 p.m.: Popovers are a hollow quick bread shaped like a muffin and made from a thin batter of eggs, milk, and flour. Learn all about popovers and how they are made. We will have a demo, recipes and tasting during class. We will discuss and taste fruity versions and savory versions. FCS Class Policy Update Please be aware of our new class policies.

1. Please notify the office if you will be late. If you come to class 30 minutes late without prior notice the teacher may ask for you to wait while other students are taught so they do not get behind. We cannot guarantee that you will have a chance for complete instructions.

2. Only the person who has paid for the class is allowed in the classroom. If you want for someone else to attend, there must be space and they must pay for the class.

3. Please be prepared for class. Have required items, material cut, pre sewn or other instructions completed in advance. The class instructors and other member will not wait for you to catch up. People who are prepared will be helped first.

4. Be respectful of teachers and other class members as the class is taught. Keep talking to a minimum.
