A garlic head is generally four to eight centimeters

of numerous (8 - 25) discrete bulbs. the bulb is of a compound

nature, consisting of numerous bulblets, known technically as

'cloves,' grouped together between the membranous scales and

enclosed within a whitish skin.

GARLIC

Garlic is most often used as a seasoning or a condiment.

Garlic is widely used in many forms of cooking for its strong

flavor, which is considered to enhance many other flavors. It is

the most widely used component of the Lebanese cuisine. The shoots are often pickled in Russia and states of

the Caucasus and eaten as an appetizer. In parts of Austria, salads are prepared with vinegar, oil and minced

garlic. Raw garlic appears in quite a multitude of Mediterranean sauces.

Garlic is taken orally to reduce high blood pressure, prevent heart disease and arthrosclerosis, treat

ear-aches, and stimulate both the immune and circulatory systems. It may have some cancer-fighting properties

because it is high in diallyl sulphide (DADs), believed to be an anticarcinogen. Garlic cloves continue to be

used by aficionados as a remedy for infections (especially chest problems), digestive disorders, and fungal

infections.

INGREDIENTS

4 Boneless chicken breast slices

1 Onion, thinly sliced

1/2 Cup olive oil (8 tbsp.)

1/2 Cup vinegar

2 Garlic cloves, crushed

1/2 Cup fresh parsley, chopped

1 Can (14-16 oz) tomato sauce

1 Cup water

4 Servings of rice

1. In large frying pan, saute chicken in olive oil with onion.

2. Add vinegar, garlic, parsley, tomato sauce and salt and pepper to

taste.

3. Cover and simmer about 1 hour, until ingredients are tender.

4. Remove meat. strain the sauce and return the strained sauce to

the frying pan.

5. Reduce 5 minutes.

6. Place rice in a serving dish, and pour the sauce over it.

7. Serve with rice.
