Just a short note to say thank you to our many loyal members who supported the Club throughout the holiday season hosting dinners, lunches, and Christmas parties and to our political friends, we would like to say thank you when sponsoring receptions, banquets and luncheons.
Quite often I’m asked by new members about hosting events. Keep in mind, as an Austin Club member you can sponsor or host:

Along these same lines of discussion, are you aware of the fact that the Austin Club Dining Room is one of a handful of dining venues in Down-town Austin where earplugs are not required to enjoy a fantastic meal and great service? Joe Jafarian is here nightly to ensure all of your needs are addressed. So give it a try and see how enjoyable dining still exists in Austin.

The Austin Club Receives
Coveted AwardRecently, the Austin Club was recog-nized by BoardRoom Magazine, the leading publication in Club Management, for outstanding service, facilities, and Club Man-agement. After two days of visiting the Austin Club incognito as members from Reciprocal Clubs, observing our staff, dining in various rooms, the BoardRoom team introduced themselves to Club Manager Ken Richardson, to advise him that the Austin Club was nominated to receive this prestigious recognition. It didn’t stop there; a team member spent an additional day inter-viewing staff along with meeting members of the management team to gain a better understanding of what makes the Austin Club so unique. Congratulations to all!
Recently the Austin Club installed an AED defibrillator to be used in case of emergency. Chef Mike and Assistant Manager Lillian Beckwith looks on as Carson Watson installs the wall case
for the defibrillator unit. All employees will receive training in the use of the defibrillator when a CPR and First Aid course is adminis-tered within the next couple of months.

I would like to start off saying thank you to all the members who were able to attend both our January Downton Abbey Wine Dinner and our February French Wine dinner. Wow, what successes! Your culinary staff really appreciates the opportunity to create such memorable dinners. It’s nice to have a change of pace from our regular dining and banquet events, so thank you!
With Spring around the corner, make sure to get your reservations in for our 2014 Easter Holiday Brunch. I am sure it will be another sell-out event here at the Club! Keep an eye out for upcoming changes and Spring additions to the Main Dining Room dinner menu. See you around the Club!

Austin Club Steak Diane
4 each, 2 ounce Filet Mignon medallions 2 ounces of Brandy or Cognac2 tablespoons of cooking oil 4 ounces of Veal Glace 1 tablespoon of chopped shallots (can be found at Central Market or may substitute beef broth)1 tablespoon of chopped garlic 1 tablespoon of chopped fresh parsley and thyme2 cups of sliced Crimini mushrooms 2 tablespoons of butter
In a medium saute pan heat up the cooking oil to a medium heat, be careful, we don’t want it to smoke. Next, season the filet mignons with kosher salt & black pepper, sear two pieces at a time on both sides for about a minute. Place the seared filets off to the side, next, add in the shallots and garlic and saute for about a minute, careful not to overcook. Next, add in mushrooms and continue to saute, de glaze with the cognac and add the filets back into the pan with the shallots, garlic & mushrooms. Next, add in the veal glace and fresh herbs. Allow to simmer for about two minutes. Remove the filets and place on your serving dish. Now whisk in the butter to the mushroom sauce. Once the butter is incorporated into the sauce it is ready to be poured over the filets for you and yours to enjoy!

Greetings,I would like to take this opportunity to thank all the members and guests that participated in our special dining events in January and February. A special thanks to Chef Mike Maples and his team for creating such delightful menus for Downton Abbey, Valentine’s, and the French Dinner. Once again, we must thank Mr. Terry Lyons for inviting his Austin Wine Society friends to participate in our special dinner functions. Last, but not least, thank you to Mrs. Karen Johnson for inspiring us to plan such wonderful evenings for our members.Wines of the Season:Domaine Chandon Chardonnay Carneros, Napa: This wine’s aroma is fresh and structured with floral notes highlighted by elder flower. As a signature of its Carneros appellation, the wine’s mineral aromas remain lifted by balanced acidity. When harvesting at optimal ripeness, characters of white burgundy are revealed in the wine as subtle, yet present, with the oak being perfectly integrated. Fuji apple, lemon and other citrus flavors create a satisfying, seamless palate that finishes with notes of white peach and apricot. The depth of this versatile, food-friendly Chardonnay makes it a natural match for hearty seafood dishes like grilled salmon or halibut. Seghesio Zinfandel, Sonoma, California: Opaque purple, strong nose, plum and dark fruit jam on the front palate, peppery finish. Sweet finish at first which seems cloying, but give the wine 30-45 minutes to open. The peppery flavors come on after time and so do the tannins.
