The very mention of dessert inevitably makes us think of its most loyal companion : chocolate. The two have a history together going back many, many years, their love never wan-ing even after all this time. This ingredient was long enjoyed exclusively by nobles and aristocrats, and would come to be cherished by dessert chefs. First used in drinks, it would be a long time before chocolate made its triumphant entrance into the world of baking.
