winery that firmly supports the Maltese art scene.

Marsovin commissions a local artist to create

bespoke paintings to adorn the 1919 labels for each

vintage released. For this 2017 vintage Marsovin

has commisioned local artist, Victoria Tanna.

Zeppi's Maltese Liqueurs are traditionally made

from Maltese ingredients. Such liqueurs have

been developed to highlight typical Maltese

fruits, herbs and other traditional products

which have been used within the Maltese

community by tradition.

Malta Chocolate Factory is the only chocolate

factory in Malta to make chocolates in a production

LIVING LIFE A SPARKLE AT A TIME

In a war time speech to British troops Winston Churchill once

exclaimed "Remember gentlemen, it's not just France that we're

fighting for, it's champagne''. His love for Champagne was no

secret and was mentioned on other occasions in his life. The

popularity of this noble beverage does not limit itself to historic

prime ministers but has also tickled the fancy of Kings, Princes

and Hollywood celebrities, but make no mistake not all

sparkling wine is created equally, as different methods can be

employed each differing in quality. Sparkling wine might just

be the most technical of all wines in the world, the reason why

certain sparkling wines are so complex is because of the need

for two fermentations; one to make wine and the other to make

bubbles.

A French monk, laid down the principles still used

today in making 'Champagne' but sparkling wine

owes much of its character to the century between 1820

and 1920, when scientists first began to understand the

double fermentation process that makes sparkling

wine and developed a structured methodology to

make champagne from a still wine. To this day, the

only sparkling wine that may be marketed as

Champagne in Europe is that which is made in the

Champagne region, however the same intricate

method is employed in other parts of the world.

There are four ways used to add the sparkle to the

wine. One is by carbonation which is introducing

carbon dioxide into still wine, creating a frizzante;

the second is the tank method whereby carbonation

is created as a by-product of second fermentation

occurring in stainless steel pressurised tanks, also called

the methode charmat. The third is the transfer

method, in which a second fermentation occurs in

the bottle and then transferred to pressurized

tanks for filtration. Lastly and most importantly is

the method traditionelle which is the method

employed by all top champagne houses

to make this glorious beverage. It is a

labour intensive, expensive and

time-consuming process which

results in a complex, exciting wine

with a delicate effervescence that

would be unobtainable through

cheaper, industrial techniques. Cassar

de Malte, Marsovin's premium quality

brut is created in exactly this manner.

Marsovin's Cassar de Malte is made

from high-quality Chardonnay grapes,

grown and hand-picked at the Cassar

family's private 15 tumoli estate in

Wardija. The process for creating

Cassar de Matte takes over 17 months,

starting off with grapes being pressed

with little or no intervention as the grapes

split open under their own weight to

produce top quality 'free run juice'. This

highly acidic free run juice is fermented

into a still wine and stored at low

temperature in stainless steel vats. In a

process called the Tirage, the still wine is

transferred to the bottle along with a

mix of yeast and sugar to be sealed off

with a crown cap.

This will trigger a second fermentation

in the bottle which will cause

naturally induced carbon dioxide.

This fermentation produces sediment

called lees which are allowed to remain

in contact with the wine for a period of

time ranging from as little as 17 months.

This imparts complex flavours to the

wine. The next step in the process is the

manual removal of the lees from each

and every bottle, which is known as the

disgorgement.

Part of this process involves turning

each and every bottle daily for four

weeks. After the lees are removed a

mixture called the Liqueur d'Expedition

is added to each individual bottle

bringing the wine to the desired level

of sweetness which determines Cassar

de Matte's classification as Brut. Each

bottle is then corked and labeled.

There is a lot to love about a refreshing

glass of the wonderfully Mediterranean

crisp Cassar de Malte. The plentiful

sunshine and vineyard microclimate

in which the grapes grow make for a

delightfully clean and refreshing

wine. Not surprisingly, it can be paired

well with practically anything from

oysters to dessert. Cassar de Malte is a

limited edition premium sparkling

wine with an annual production of

around 4,000 bottles.

Cru wines in Burgundy, with a historic

range of more than 130 Appellations, all

known for their high quality standard. The

Burgundy region offers a diverse terroir

unique in the world, known mostly for their

legendary Pinot Nair and Chardonnay

wines. Louis Latour reds are known for

their elegance with smooth tannis and

finesse where as the whites are structured,

rich and well balanced which make this

brand renowned for its high quality wines

and its extensive range of Burgundies.

Although the vines in Urville were originally

planted by the Romans 2000 years ago, it was

Saint Bernard, founder of Clairvaux Abbey,

who had the Drappier cellars built in 1152.

Seven centuries later, in 1808, around this

magnificently preserved testimony to medieval

times, where the exceptional cuvees slumber, the

family domaine was created, today this is

headed by Michel Drappier. Urville lies

where the first vineyard was planted and is

now cultivated according to organic and

natural principles.

Maison Drappier is unique in carrying out the

prise de mousse, the remuage and the individual

disgorgement of every single bottle from the

half-bottle to the Melchizedek. Through this

traditional technique the wine is guaranteed an

exceptional freshness and finesse of effervescence

which creates great Champagne.

Descendants of the Brun family have

owned the winery since 1571. Chateau

Brun is a 12 hectar estate spread over the

slopes of a hill in Northwest Saint-Emilion.

The vineyards of Chateau Brun enjoy full

southern sun exposure and the soil is

predominately clay and limestone. All

these factors and the occurrence of natural

drainage allow the grapes to achieve full

ripeness. Chateau Brun is predominately

planted with Merlot and produces a great

quality Saint-Emilion Bordeaux.

The Santa Rita Winery, in Chile was founded

in 1880 by Domingo Fernandez Concha, a

noted entrepreneur and public figure of his

time. He introduced fine French varietals to

the privileged soils of the Maipo Valley as well

as specialized machinery.

In the 130 years of wine production at the

Santa Rita Winery, it has gained a wealth of

experience which no doubt translates in the

quality of its products. Santa Rita's result

can be seen in the different awards and

distinctions conferred upon the winery and its

wines over the years. This is a quality which

has remained steadfast over time and which

will continue to delight people all over the

world.

The term 'Organic' is a trending keyword nowadays in the

gastronomic realm, which has quickly risen to the highest

echelons of 'desired products' in the world market. Organic

wine however still accounts for a very small percentage of

global wine sales, but it is certainly a fast-growing market

with the Europeans being the largest producers of

organic wine. The organic grape growing area has more

than tripled in the last ten years despite the lengthy

certification process and added expenses incurred by

wineries owed to changes in procedure and added rules.

What is an organic wine?

Organic wines come from grapes like normal

wines , yet unl ike many normal wines they

have to be made using only grapes grown

without synthetic pesticides , herbicides ,

fungicides or chemical fertilizer. There are also

a set of criteria to follow during the vinification

process which mainly revolves around using low

Sulphur dosages and minimum intervention to

produce a wine as close as possible to nature and

earth. Malta has also very recently joined the

organic wine band wagon wi th M a r sovin ' s

MARNISI becoming the first Maltese wine in the

premium wine category to be certified organic and

awarded the official seal of 'Organic Wine'.

Marsovin's Organic Adventure

In early 2014, Marsovin embarked on a

challenging journey to produce its first

Organic Wine. The organic conversion

process began with the application of

organic farming practices at the Mamisi

Estate in Marsaxlokk, where an area

covering 2.8 hectares makes this the

largest expanse of organically-farmed

vines anywhere in Malta . In order

to have organically-grown grapes,

Marsovin's viticulturists engaged in an

entirely different set of practices to maintain

their vines.

Due to the nature of Marsovin's vineyards,

and climatic conditions, this was no easy task.

To achieve this, esp2cially with Malta's high

hwn.id conditions, organic viticulture

involves much more manual work than

conventional viticulture. Disease prevention

is partially obtained by limiting the

vegetative growth, in order to allow enough

air circulation around the grape bunches to

reduce excessive hwn.idity.

These operations involve, shoot

selection in spring as well as defoliation

during grape ripening. This greatly reduces

the chance of disease and thus the need to

intervene with the few allowed natural

pest/disease control products. Following the

successful vineyard conversion period, the

harvested grapes are transferred to the

winery; where an alternative winemaking

approach is employed which focuses on

the use of a specific list of ingredients

used for organic vinification.

All practices in Organic winemaking are

strictly controlled under EU

Regulation 834/2007. Samples of

both the grapes and the wine are

taken by MCCAA and tested in

specialised laboratories in Germany.

As a result of all this, MARNISI 2016

is now the first officially-certified

Maltese wine launched locally for

market sale as 'organic wine'.

The Wine

The 2016 vintage was characterised by

warmer-than-normal temperatures and

drier weather during the winter months,

followed by relatively mild temperatures

throughout summer. These elements

allowed for very good grape maturity and,

thus, an exceptional vintage year. The

resultant wine, MARNISI 2016, portrays a

concentrated, complex and layered wine

that is very approachable in its infancy

and will keep drinking well in the years to

come.
