Menu Tracker
Background & Methodology
• Largest and most accurate database in the industry
• Updated yearly with historical data back to 2005
• Databases covering all types of menus – chains, independents, foodtrucks, and
non-commercial
• Data is released every June, thus 2019 data includes the June 2018-June 2019 time frame.
The US Chains and Independents database tracks 4,800 restaurants
• Balanced to the US restaurant census by segment, region, and cuisine type
• 50%/50% split between chains and independents
• Capture both ethnic and non-ethnic restaurants with 25 different cuisine types
• Ability to dive down into the 4 census regions, 5 segments, 5 menu part, or 100+ item types
MenuTrends offers access to over 100,000 distinct US menus and
quantitative analysis of more than 1.1 million hand coded items.
PENETRATION% of RESTAURANTS that serve that food, flavor, or ingredient.
This is a measure of adoption. Increases in penetration indicate that more
restaurants are adding the item to their menu. Penetration is the most
important statistic and the best indicator of trend movement.
INCIDENCE% of MENU ITEMS that feature that food, flavor, or ingredient.
This is a measure of versatility. A restaurant adding yet another chicken dish to
its menu will result in an increase in incidence. Incidence is a supporting
statistic, to be used as a complement to penetration.
