Pectin

a Natural Product from Fruits

Already more than 200 years ago pectins were dis-covered in fruits. However, not before the beginning

of the 20th century, their functional applicability in the

production of food was recognized.

Due to its gelling, thickening and stabilising proper-

ties pectin have become increasingly important both

for the food industry and the cosmetic and pharma-

ceutical industry.

Today, highly specialised pectins are mainly produ-

ced from harvest-fresh dejuiced and carefully dried

apples resp. citrus fruits. The production process

from fruit to pectin requires much experience and

accuracy to guarantee the highest possible quality

and purity. There is hardly one pectin application

which could not be covered by an established H&F

pectin type.
