Goats cheese lasagne with ratatouille Lasagne is perfect for your lunch box thinks pär Gustavsson from Gotland, who shares his recipe with us here. It lasts a long time and just gets tastier if you let it stand for a few days. Lasagne is easy to combine with different ingredients and is relatively quick to prepare. Try it for yourself!
you will need:Approx. 16-20 sheets spinach lasagne or regular lasagne1.5 dl parmesan cheesePreheat the oven to 200 degrees
Goats cheese sauce50 g butterApprox. 5 tbs flour1 litre milk250-300 g goats cheese2 tbs liquid honey
ratatouille1 courgette, 1 aubergine, 1 red pepper, 1 red onion3 cloves of garlic pinch of thyme, oregano, lemon juice (2-3 tsp) 4 tbs tomato purée500 g crushed tomatoes
to make the goats cheese sauce:• Melt the butter in a saucepan and whisk in the flour and milk.
Allow to cook for several minutes while whisking so it does not burn.
• Slice all the goats cheese so that everything melts together. Finish by adding honey, salt and white pepper. Remove from the heat
to make the ratatouille:• Cut the courgette, aubergine and peppers into 1-2 cm pieces.• Finely chop the onion. Fry the garlic in a large pan with a drop
of oil. Add the sliced vegetables, spices and lemon juice. Fry for approx. 5 minutes until they colour. Stir in the tomato purée and crushed tomatoes and allow to simmer for approx. 5 minutes. Add salt and pepper.
• Grease the bottom of an oven proof dish with butter and place a layer of lasagne in the bottom. Layer the goats cheese sauce with ratatouille and a new layer of lasagne, about 4 layers should be enough.
• The top layer should only be goats cheese, topped with parmesan cheese
• Place in the oven for approx. 40 minutes. Bake in the bottom of the oven or cover with foil for the last 10 minutes
divide into lunch boxes and freeze, you have the perfect dish to take to the pool.
Irene's chicken BoxChicken is tasty and affordable. It is easy to combine into a delicious gratin and provides endless variety. This recipe comes from Irene holmstedt, Sydpoolen.
you will need: 1 grilled chicken, 1 onion, 200 g mushrooms and 1 jar pickled peaches.
What you need to do:• Clean the chicken and divide into smaller pieces. • Fry the onion and mushrooms in a pan. • Chop the peaches.• Pour ingredients into a gratin dish • Stir in 1 large jar of crème fraiche with 1 tbs
Chinese soy sauce and 1 tbs Japanese soy sauce.• Baked in oven at 225 degrees for approx. 25 minutes.
