A supermarket has partnered with The Salvation Army to assist Kiwi families in need.

On November 17, Countdown began its annual Christmas Food Rescue Appeal to help the growing number of New Zealanders who have registered for food assistance.

Partnering with The Salvation Army, Countdown supermarkets are collecting donations to help meet the increasing need for food parcels around the country at Christmas.

The su-permarket is encouraging shoppers to help sup-port 17,000 families in need over Christmas by making a food donation in store, or a donation at the checkout.

The Salvation Army’s national secretary for social services Major Pamela Waugh said the patterns were changing

with New Zealanders who registered for food assistance.

“We’re seeing more people who are

struggling because of rising living costs. And they need help.”

She said in the last three months more than 4000 new families or individuals have

registered for food parcel assistance.

“We’ve also seen significant growth in the number of single men who are struggling to make ends meet with costs often associated with issues such as inadequate accommodation,” she said.

All 172 Countdown stores will also donate $500 of groceries to their local Salvation Army centre, contributing an extra $86,000 of groceries to The Salvation Army’s food banks nationally.

Evil K’Neevil is a strange name for an account manag-er, but next week she will fit right in with Miss Crunch-bull and Lady Trample by her side.

Kay Newton as she is more commonly known competes in roller derby and has been selected to represent New Zealand at the Roller Derby World Cup to be held in Dallas, Texas, from Decem-ber 4-7.

It has not been an easy task to get to this point for her though with $5000 need-ing to be fundraised and hard work put into training

six days a week.“It has been pretty intense.

I have given up alcohol and am eating healthy because I want to be the best I could and I think that has helped.”

This is Newton’s second world cup after competing in the inaugural event in 2011.

She said that team was not a fair reflection of what New Zealand roller derby has to offer as politics got in the way of people being selected but this time round the team is as strong as it can be.

“It is going to be a really tough tournament and people are going to be taking it more seriously.

It’s more like a sport now

and people train their asses off.”

Newton has also faced the challenge of having to travel to train with the New Zealand side once a month as all the trainings have been in the North Island and Dunedin.

“My league, Dead End Der-by, have been super generous with so much fundraising. I could not have gone without them really, they have been amazing,” she said.

New Zealand is in group A with Norway, South Africa and Wales and have the privilege of taking on Norway in the first match of the tournament.

A bid for permanent community facilities in St Albans is finally gaining traction.

A new building for the transi-tional community facility has been donated to the St Albans Residents’ Association.

The converted garage was donat-ed by social service organisation START to be used as a community office for the centre.

The first working party to dis-cuss permanent facilities in the St Albans community would also be held on Wednesday.

What would happen to commu-nity facilities in the area were to be discussed as part of the city coun-cil’s long term plan.

The current transitional centre and new community office would stay in place until April 2016.

START had lost their main building in the earthquakes and had converted the garage into a three-room social services centre.

But with a new site purchased the organisation no longer needed the building.

On Tuesday the building was craned onto a neighbouring site, where it would stay until site re-source consent was processed.

Businesses in the area had of-fered free services to get the build-ing up and running.

St Albans Residents’ Association co-chairwoman Emma Twaddell said they had been given every-thing they needed and more.

“With this building it actually puts us back in the position of be-ing able to help the community more than we have in the last four years,” she said.

At the meeting on Wednesday, members from the Shirley-Pa-panui Community Board would discuss what residents would like for a permanent facility.

“We need to put the wheels in motion now so it does happen,” said community board chairman Mike Davidson.

St Albans public computer use group Neighbour Net would also return to the centre.

The group had been donated eight new laptops by the city coun-cil.

Community centre to expand ▌▌ IN BRIEF

Flood plan optionsIt’s the last chance for residents to have a say on the city council’s preferred option to reduce flood-ing in the Flockton area. Pre-ferred option two is expected to reduce the frequency and severity of flooding in the area and benefit at least 585 properties. The pre-ferred option would return most of the Dudley Creek catchment to the same level of flood risk than before the earthquakes. Consulta-tion closes at 5pm on Wednesday.

Volunteer awardsMayor Lianne Dalziel will present Civic Awards to 13 community-minded individuals and organisa-tions on December 10 at a special ceremony. The awards recognise those whose voluntary work has made the city a better place to live. It would be the first ceremo-ny since 2010. Awards would be received by Anna-Marie Mitch-ell of Papanui for services to the disabled and Masako Kayaba of Papanui for services to Japanese community, culture and educa-tion.

Bridge repairsRepairs to the Fendalton Rd bridge at the junction of Harper Ave, Deans Ave and Fendalton Rd will begin today. Drivers who have been using this route while Kahu Rd was closed will be able to return to their original route. Work will continue until the Christmas break-up, then resume in January for four weeks.

St Albans residents say city council road upgrade plans may be detri-mental to the community.

The project aims to upgrade the Northern Arterial Extension and Cranford St to ease travel to and from areas north of the city.

The city council wants to in-crease capacity by widening a 700m stretch of Cranford St, north of its intersection with Innes Rd to four lanes.

A meeting was held by the St Albans Residents’ Association on November 20 to look at how to get people involved in the city coun-cil’s submission process.

Emma Twaddell said the com-munity felt like they would be in a position where traffic issues were being pushed on them.

She said it would be a lot more than just Cranford St residents who would be affected.

“St Albans streets are not that big – they’re little old streets that can’t handle the amount of traf-fic being put on them already, let alone more.”

A new extension to the north-ern arterial would be constructed through the Cranford basin.

The project would see 50,000 ve-hicles moving down Cranford St to Innes Rd corner.

On-street parking would be re-moved to allow a raised median and cycle lanes would be provided.

The city council have opened public consultation on the project until December 19.

Tracey, tell me a bit about you, are you Christchurch born and bred?

No, I lived a little bit further south as a child and moved to Christchurch as a teenager. Now I live in Bryndwr.

Where did you go to school?I went to Linwood College.

Then I did a Bachelor of Educa-tion at Canterbury University, and then a graduate diploma in project management at CPIT. But that was when I came back to New Zealand after being overseas for 10 years, working and adventuring.

How did you become involved in belly dancing?

I didn’t start dancing until I got back to New Zealand. My old flatmate in London sent a video of her performing, and then I just knew it was what I wanted to do.

How long have you been belly dancing?

Just over five years. I started at the School of Contemporary Belly Dance, which has closed down now. TribalDiva took over the running of it and now I run that. The school dwindled after the earthquake and we lost our prem-

ises. The whole thing was run by committee – it was really draining at the time.

How long have you been in-volved in the TribalDiva group?

I’ve been involved since I began belly dancing. The school was an incorporated society which meant you needed a committee and a certain number of annual mem-bers. It was just becoming really hard to maintain. Now we run it as more of a business and you don’t need a membership.

Is this your full-time job? No, it’s a part-time job. I’ve been

working as a construction project co-ordinator at Unity Construc-tion for the past four months. Before that I was a project co-ordinator for a software company. It really is a total contrast.

For those out there who may not know much about it, what

are the main aspects of belly dancing?

Well we have tribal fusion and tribal belly dance which are both modern styles of belly dance. They retain a lot of the original aesthet-ics of traditional belly dancing but incorporate a lot of new stuff as well. We have music and costumes and add in a bit of hip hop and flamenco as well. It’s really fun.

Where does the dance origi-nate from?

Tribal belly dance and tribal fusion originate from the United States. It comes from the San Francisco area around the 1970s.

So how did you get involved in the Christmas in the Park event, is this the first time your group has been involved?

This is our third year doing it and it’s heaps of fun. We have a group of eight dancers this year. We were approached to be involved. The first year we were asked they were having belly danc-ers in Auckland and wanted some in Christchurch too.

Is there anything new for audiences at Christmas in the Park?

The dancers are all new. We’re using the same props as last year – we have huge isis wings which will fill up the whole stage.

How many hours of training have you been putting in?

A lot – a good amount. I normally dance about 15 hours a week.

How many people are involved in TribalDiva?

There is probably up to about 40 people spread across all the classes and we have between eight to 10 classes depending on the term.

Do you have a range of danc-ers involved?

Oh definitely. I currently only have one male student but we definitely do welcome male students. And age is no barrier. We have a huge age span, from about 17 through to 70.

Have you noticed a growth in interest since you opened?

Yes definitely. I think since we are operating as TribalDiva we have been doing a lot of public gigs and taking it out to places you wouldn’t normally see it, and that is what has started it up

for a lot of new people.Where have you performed

in New Zealand?I performed in Wellington

at the start of this month for a friend’s concert and in Dunedin earlier this year. I’ve performed lots in Dunedin, Wellington and Auckland.

Where is your favourite place in New Zealand to perform?

In New Zealand I really like performing at outdoor gigs.

Have you had anything crazy happen to you while perform-ing?

Oh yeah. There’s been a few crazy things. Often at outdoor gigs you get kids and dogs wander into your performances. I dance at Topkapi Turkish Res-

taurant most weekends – that’s always fun, you get people up dancing who are more enthusi-astic than you would think.

Have you done anything for it overseas?

I went over to Los Angeles earlier this year for an intensive training session. It was 59 hours of training with people who in our opinion are the superstars of tribal fusion.

What was that experience like?

The people who were teach-ing us are like celebrities to us. It was overwhelming, it took a day or two before I could really start absorbing it. I definitely learnt a lot there.

What has been your favou-

rite place to perform over all?I performed in Las Vegas.

That was probably the coolest so far. It was in a really funky old casino that looked like it was out of the film Fear and Loathing in Las Vegas. It was the old down-town Las Vegas, not the new flashy area, so it was really cool.

What kind of reactions do you get from your audiences?

In New Zealand it’s a really mixed bag. Sometimes you get people who are really enthu-siastic and sometimes you get crowds who are really reserved. They look like they’re not quite sure what we are doing – New Zealand as an audience is pretty reserved.

Do you have a family? I have a partner.Does he ever get involved in

the dancing? He comes along sometimes

to do sound checks for us. I’ve tested out the odd new move on him. If I can explain it to him and he understands it then I can be sure the students can do it.

What do you like the most about belly dancing?

There is a real community spirit to belly dancing, you need to work together. I enjoy the costumes and getting dressed up. For me I just love perform-ing.

Great! Is there anything else you want to say?

Just that if anyone wants to come and join in on a class they are totally welcome to.

Burnside High School celebrated recy-cling week with a $4000 innovation to keep cans and bottles out of landfills.

The school is one of five secondary schools to win a set of purpose-built bins in a national competition aimed at increasing beverage container recycling rates in New Zealand colleges.

The stainless steel bins, funded by a Keep New Zealand Beautiful Beverage Container Community Grants Pro-gramme, are designed to prevent alu-minium glass and plastic bottles being thrown out with general school waste.

This year Recycling Week NZ ran from November 10-16.

The project was designed by Environ-mental Education for Resource Sustain-ability Trust chairman Marty Hoffart.

“There’s definitely an ulterior motive behind the contest,” said Mr Hoffart.

The last remaining and second oldest Anglican church in St Albans is set to be deconsecrated.

On Sunday, November 30 the St Matthews Church on Cranford St will be deconsecrated by Anglican Bishop of Christchurch Right Reverend Victoria Matthews.

The earthquake-damaged church will be demolished early next year ending 139 years of Anglican churches in the area.

The Anglican parish will merge with St Mary’s church in Merivale.

Plans were being developed for a new church complex on the site of the former St Mary’s church building on Church Lane.

Over the transition period the new parish group would call itself ‘The parish of St Mary and St Matthew: Journeying together.’

Reverend Glenda Hicks said she wanted to make sure members of the community were aware of the merger between the Anglican congregations.

“St Matthews Church has quite a proud history that is being left behind, but hope-fully it is carried into a new entity,” she said.

The first St Matthews Church was built on the corner of

Edgeware Rd and Colombo St in 1875.

The Scottish Society now owned the original church hall in Caledonian Rd but most other traces of the early church complex are gone.

Reverend Hicks said the cost of repairing the St Mat-thews Church outweighed the

cost of staying.She said since the earthquakes

there had been an emphasis on what would be most effective for churches going forward.

Beginning in December, Sunday worship for St Matthews would be held at St Margaret’s College auditorium.

Reverend Hicks would re-

main the priest in charge until the end of November when Reverend Megan Herles-Mooar would take over.

Residents are invited to attend the deconsecration ceremony at 11.30am on Sunday.

Rangi Ruru Girls’ School students have been exploring the theme of responsibility through seminars led by University of Otago’s Dr Deborah Stevens.

The students covered a range of contemporary bioethical is-sues.

The seminars asked a number of questions including “To whom are we responsible?” “What is the nature and degree of personal responsibility?” and “What are my responsibilities to other people?”

Dr Stevens worked alongside year 7 to 10 students.

The session with year 7 and 8 were themed with specific case studies used to explore the con-cept of responsibility.

Year 8 student Aspen Berry said she enjoyed the seminars held by Dr Stevens.

“She is an amazing speaker and has a great ability to leave questions in people’s minds,” she said.

Student Courtney Webb, also year 8, said she was grateful to have had the opportunity to lis-ten to her speak.

“Dr Stevens brought up points that no one would have thought about on a day to day basis,” she said.

Dr Stevens said she used devel-opments in human reproductive technology and how these were changing the face of the family to highlight consumer and business ethics as the anchor issues for the year 9 and 10. 

“In both sessions, the

exploration of the broader issues were used to progressively focus on more immediately relevant situations to the students including for example, responsible use of technology (bullying),” she said.

The seminars were an exten-sion of the 2013 year 7 to 10 Global Day where students were introduced to a range of global issues.

This year’s focus was on global thinking and was designed to help the Global Project student committee formulate a focus for next year’s project.

Students at Burnside High School have received mul-tiple commendations from judges in the  Orion Health 2014 Codeworx competi-tion.

Two individuals and one team entry from Burnside received highly commended rankings. 

The Codeworx competi-tion was an initiative run by eHealth software company Orion Health.

Secondary school students were required to create a project using a Raspberry Pi (a credit card-sized com-puter used in electronics projects) to solve a real world problem or one for use in ev-eryday life.

Burnside High School student Nathan James was awarded a highly commend-ed ranking by judges with his device.

The device allowed people to easily calculate the cost of bulk bin selections before they are dispensed.

Fellow Burnside student Tom Wright also received a highly commended ranking for his coding project.

Tom’s project was to turn his cellphone into an au-tomated and secure door opener, removing the need to carry around a swipe card. 

A group of students from the school also developed a device which monitored the terrain safety levels while

riding a quad bike.The man responsible for

the students’ enthusiasm was digital technology teacher John Creighton, who was passionate about getting stu-dents involved in coding.

Orion Health chief execu-tive Ian McCrae said he was impressed with the wide-ranging entries.

“I have been amazed that we could have 14-year-old

students coming up with great projects which, with a little further development, could easily be products that can go to market and go on to save lives,” he said.

Mission Heights Junior College student Dylan Townsend took out the top individual prize for his proj-ect which alerted drivers to children, pets or other ob-jects in the driveway.

A new cycle shop has just opened in Redwood, and after 15 years without the convenience of a cycle shop in their neighbourhood, local residents can now find everything they need at The Bike Shop.

Located in the Main North Road premises previously occupied by the gift shop, Presence, The Bike Shop is the second cycle shop owned and operated by Graeme Taylor. His other business, Burwood Cycles has been going for nine years, and is rebranding to The Bike Shop, continuing to still offer the same honest advice and service.

Both stores carry the same well-known brands in bikes and accessories, with the new one offering a more extensive accessory range, Graeme says. Bike brands carried are GT, Haro, Trek, Mongoose, Raleigh, Malvern Star, and Premium BMX bikes. They also have a wide selection of children’s bikes. The range of accessories includes Bell helmets, Giro gloves and shoes, BBB and Ontrack accessories, plus many more.

With over 20 years in the cycle trade, Graeme has the knowledge and experience both to advise customers on the right bike and accessories for their needs, and provide repairs and servicing.

“We offer all sizes, types and prices of bikes, and if it’s not on display in the shop we can supply it from our off-site storage facility,” Graeme says.

“We sell recognised brands at genuine sale prices. This is unlike some other outlets where over-inflated original prices are marked down to so-called ‘discount prices’.

Customers can feel comfortable talking to us about their requirements, as we don’t use high-pressure selling

tactics. We offer friendly advice, and find a suitable bike for your needs, and within your budget, rather than a high-priced bike you don’t need.”

Graeme’s wife Michelle and long time employee Dirk are also on hand to help customers with their choices.

Making sure every customer rides away completely happy with their bike is also the focus at The Bike Shop.

“We have a real commitment to getting bikes adjusted as finely as possible,” Graeme says. “There’s no point in having a high-end bike if it rides like a junker. We see many poorly assembled bikes coming through the door, which we then get going much more efficiently.”

Service-wise, everything from puncture repairs to suspension servicing is carried out on site, which means a very quick turnaround time. They also do wheel building.

“There is always a mechanic on duty, so anyone can bring their bike in for a check-over and we will show them what needs to be fixed, and give an estimate of the cost,” Graeme says.

The shop also carries lubricants and cleaners for bike maintenance at home.

The Bike Shop’s Redwood premises have been completely renovated and it is the first of the six outlets in the block to have a makeover, with the others

to follow over the next few months. Coffee Culture, popular with cyclists in other areas of the city, is located a few metres along from The Bike Shop.

The Bike Shop is located at 290 Main North Road, opposite the Redwood Library. There is plenty of parking behind the shop.

Guests were entertained by live choral singing while enjoying sumptuous refreshments before and after the presentation of awards to the winners.

As the stars chased the setting sun away and captured the twilight sky recently, a red carpeted night of fun and excitement, Glam Slam, was getting underway at Elmwood Tennis Club.

Guests, dressed as famous tennis players or in retro costumes, vied for attention on the clear and crisp evening.

Organised to raise funds as well as the profile and awareness of the club, about 160 guests danced under the soft, festive glow of fairy and tea lights, with refreshing Pimm’s cocktails and bubbles on hand.

During breaks in the jollity, both a silent and live auction raised over $27,000 for the club.

Burnside High School

Burnside High School has relished the challenge of combining engineering, electronics, programming, design and media together in the EVolocity

electric motor sport event, culminating in a speedway competition at Ruapuna Raceway in November. Th e Burnside teams have gone for streamlined and low three-wheeled designs, and have spent hours of time thinking through where to put things, where to source things and where to store things.

Th e Burnside plan was to order in a prototype cart, thanks to the generous funding by the Burnside High School PTA, that had some steering and gearing pre-

confi gured. Th e goal was to then modify and develop from there. Michael Perry is the chief engineer who has built and assembled the trike in Team 1. Jonathan McKay, Josh Lowe and Arron Prattley are the other builders across the school.

Th e bikes eventually arrived and it has been a busy process of development, investigation and a bit of trial and error to get the bikes

up to a safe racing level. Th is is a truly cross departmental activity where the students have had to liaise with staff from physics, engineering, electronics, maths and digital.

Th is is a fantastic opportunity for the school to participate in and has allowed students to experience a ‘blue skies’ project, where they set the specifi cations and constraints and then realise them. Some students have negotiated this into their subject areas and are able to be assessed against the standards appropriate.

Th e best part of this is where the students get exposure to professionals and push the key competencies of managing self, relating to others, participation and contributing with their communities and thinking.

Papanui High SchoolEvolocity: The evolution of an electric

vehicle, designed and built by teenagers

This project started earlier in the year with an invitation to take the challenge to be one of the fi rst schools to design and build

a vehicle capable of transporting a student, with payload, powered by a small electric motor. A group of interested year 10 and 11 students attended a ‘brainstorming’ meeting where participants were encouraged to think ‘outside the square’. Our designs were based around bicycle parts. We were able to course these from the EcoShop, who kindly donated enough parts to start the project.

For our fi rst design, we settled on the driver sitting in the sidecar. For manoeuvrability, we were fi xed on steering both ends of the bike. Early tests resulted in a catastrophic collapse of the wheel. We initially powered the sidecar wheel with the motor supplied in the kit, donated by ‘Orion Energy’, but found we could turn right with ease, but couldn’t turn left at all.

We also had a team working on a ‘purpose designed and built’ speed controller, to provide gentle and controlled acceleration and would enable the team to monitor key performance indicators. Success on this front meant that we had a working speed controller. Th is enabled Papanui to place an entry in the ‘speed controller’ challenge.

Our second design was based on a trike with dual steering wheels at the front, with the drive wheel at the back. Th e driver of this vehicle sits below the axels in a ‘recumbent’ repose. Th e payload and batteries were to be carried under the fl oor plate in order to maintain a very low centre of gravity and for an aerodynamic feel. Th e challenge here revolved around the structural rigidity of the frame which added extra weight everytime another piece of steel was added.

Mastering appropriate steering geometry

was a problem, but some trial and error testing resulted in an acceptable solution.

With the addition of roll bars, brakes and other safety features, we now had two functioning vehicles, ready for the fi nal challenge: a series of challenges to be held at Ruapuna Raceway at the end of November and sponsored by Orion Energy and APEV.

Th e learning and ‘ownership’ of the vehicles has been amazing with a huge variety of skills being developed. Th ese included the advantages of planning before building, working with metal and wood, the engineering challenges of strength, suitability of materials for a given purpose and numerous electronic challenges.

THAI RED CURRY DUMPLINGS Minced pork or chicken could replace the prawns. The pork may take a little longer to cook. Dim sum wrappers are thinner than wonton wrap-pers, which could also take longer to cook. Makes 20-22 1 tsp rice bran oil 1 small shallot, diced 2 tbsp grated root ginger 250g raw prawns, shelled,

deveined and tails removed 2 tsp Thai red curry paste 1 tsp fish sauce 2 tbsp chopped coriander 20-22 dim sum or wonton wrappers Dipping Sauce: ¼ cup light soy sauce 2 tbsp lemon juice

Heat oil on low and pan-fry shallot, until softened. Stir in root ginger and heat through for 1 minute. Cool.

Place prawns in a food processor and mix until finely chopped. Place in bowl and add shallot mixture, red curry paste, fish sauce and coriander. Mix.

Take one wrapper, lightly

moisten the edges with water, then place a heaped teaspoon of prawn mixture in the centre. Draw up edges to form a bag. Squeeze tightly to seal. Place on an oiled plate and cover with a damp paper towel.

Continue making bags until filling is used up. Dumplings may be covered with a damp towel and refrigerated for 2-3 hours before steaming.

Bring a large saucepan of water to the boil. Place a steamer on top. Lightly oil the base. Steam wontons for about 8 minutes, until the filling is set and the wrappers soft.

Serve immediately with dip-ping sauce.

steam until hot, cool a little, thenpop the pod to yourmouth, andsqueeze or suck out the beans.You don’t eat the pod. Edamameare high in carbohydrates,

protein, dietary fibre, folates,manganese and vitamin K.Shelled frozen edamame are

available frommanysupermarkets. They are greatpureed for dips, or they can beadded to stir-fries, salads, soupsand casseroles.Tips for hosts:

■ Refrigerate food until justbefore preparing and serving toavoid contamination and foodpoisoning.■ Themenu should include abalance of flavours and textures.

450g shelled edamame beans4 cloves garlic1 tsp saltFinely grated rind kaffir limeor common lime3 tbsp lemon juice1-2 tsp sesame oilWhite pepper to tasteWater1/4 cup finely choppedcoriander

Cook edamame in a saucepanof boiling water until tender,about 5minutes. Drain. Place ina food processor andmix untilcoarsely chopped.

Meanwhile, chop garlic andsprinkle with salt. Using the flatblade of a heavy knife, squashgarlic and salt to a paste.

Add to beans with lime rind,lemon juice, 1 teaspoon ofsesame oil and 3-4 tablespoonsof water. Mix to a smooth paste.

Youmay needmore water andseasonings. Stir in coriander.

The spread can be preparedahead, covered and refrigeratedfor a day or frozen for up to twoweeks. — Serves 8-10

SWEET CHILLIMUSSELSI used steamed mussels thatare vacuum-packed in theirshells. If using fresh mussels,steam them to open.

12 mussels, steamed1 egg white1 tbsp chilli sauceFinely grated rind 1 kaffir lime1 tbsp each: choppedcoriander, spring onion2 tsp fish sauce4 tbsp panko crumbs

Remove half of eachmusselshell. Snipmussel whereattached to shell. Removetongues if preferred. Place on atray suitable for grilling.

Lightly whisk egg white. Addchilli sauce, lime leaf, springonion, fish sauce and pankocrumbs. Spoon overmussels.Grill for 1-2minutes untiltopping is set. — Makes 12

CRAB CAKES WITHAVOCADO RELISH2 small shallots, diced1/2 tsp each: grated rootginger, crushed garlic, groundturmeric340g frozen crab meat or 2 x

170g cans crabmeat, welldrained and chopped1 & 1/2 cups panko crumbs1 tbsp each: lime juice,chopped corianderSalt and pepper to taste1 large egg, lightly beaten1 tbsp canola oil

Combine shallots, ginger, garlicand turmeric with crab in abowl. Add 1/2 a cup of pankocrumbs, lime juice, coriander,seasonings and egg. Form intoeight patties.

Place remaining pankocrumbs on a plate. Coat crabcakes with crumbs, pressinggently. Chill.

To serve, pan-fry crab cakesin oil for about 2-3minutes eachside. Dollop top with avocadorelish. — Serves 8.

AVOCADO RELISH1 avocado, halved, stoned,peeled1 medium tomato1 small red onion, finely diced1 spring onion, diced2 tbsp chopped coriander1 tsp each: finely grated limerind, diced red chilli or chillipaste2 tsp lime juice

Place avocado in a bowl andmashwith a fork. Halve tomatoand squeeze out seeds. Finelydice the flesh.

Add to avocado with onion,coriander, and seasonings andlime juice. Cover and chill for upto 2 hours. — Makes 1 cup.

Addmore salt if necessary plusfreshly ground black pepperand 1 tbsp chopped freshherbs, such as parsley,chives and thyme. Reheatgently, sprinklingindividual serves withgrated cheddar.

packet ‘‘chips’’ we tend to thinkof fatty, salty occasional treats.But I was recently pleasantly

surprised to discover amoreishrange of proper chips— 100 percent natural, gluten-free, GMO-free and hand-cooked in high-oleic sunflower oil. Ned andMina Smith, the expatriateAmerican couple who run thefamily-style Proper Crispsoperation in Nelson, brandedtheir delights ‘‘crisps’’ todistinguish them frommass-produced ‘‘chips’’. And they are

4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4 meringue nests, optionalToffee: 1/2 cup sugar1/2 cup water

Refreeze the scoops oficecream.When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.

Tomake the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.

Stir to dissolve sugar.Continuemicrowaving for 3-4minutes until liquid is lightgolden. Remove— the toffeewill continue to colour onstanding.

Remove icecream fromfreezer. Place inmeringuenests, if using. Drizzle withtoffee. Serve immediately.

Serves 4.

CHOCOLATE POTATOTRUFFLESThe mashed potato must befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.

1 cup dark chocolate chips1/2 cup cold cooked mashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting

Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir intomashed potatovery well.Add vanilla essence and stir wellagain. Themixture should besmooth. Chill for 30minutes.

Cut ginger into thirds orquarters. Take a tablespoon ofpotatomixture and roll around apiece of ginger.

Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.

Can be stored in fridge for upto one week.

Makes 16.

POTATO & SQUIDSALADThis is based on a PetaMathias recipe that she will bedemonstrating at theChristchurch Food Show, April4-6.

400g waxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbsp white-wine vinegarFlaky sea saltFreshly ground black pepperto taste

Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.

Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.

Heat a little of the olive oil in afrying pan. Add diced chilli.

Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.

Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.

Serves 8 as a starter.

GLUTEN-FREEPOTATO PASTRY450g cooked warm mashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten

Place warmmashed potato andbutter in a large bowl andmixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand tomix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

Makes 800g.

AVOCADO RELISH 1 avocado, halved, stoned, peeled 1 medium tomato 1 small red onion, finely diced 1 spring onion, diced 2 tbsp chopped coriander 1 tsp each: finely grated lime rind, diced red chilli or chilli paste

2 tsp lime juice

Place avocado in a bowl and mash with a fork. Halve tomato and squeeze out seeds. Finely dice the flesh.

Add to avocado with on-ion, coriander, and season-ings and lime juice. Cover and chill for up to 2 hours. Makes 1 cup

CRAB CAKES WITH AVOCADO RELISH Serves 8

2 small shallots, diced ½ tsp each: grated root ginger, crushed garlic, ground turmeric 340g frozen crab meat or 2 x 170g cans crabmeat, well drained and chopped 1 & ½ cups panko crumbs 1 tbsp each: lime juice, chopped coriander Salt and pepper to taste 1 large egg, lightly beaten 1 tbsp canola oil

Combine shallots, ginger, garlic and turmeric with crab in a bowl. Add ½ a cup of panko crumbs, lime juice, coriander, seasonings and egg. Form into eight patties.

Place remaining panko crumbs on a plate. Coat crab cakes with crumbs, pressing gently. Chill.

To serve, pan-fry crab cakes in oil for about 2-3 minutes each side. Dol-lop top with avocado relish.

It may be a hangover caused by the continued use of fireworks well past Guy Fawkes but out of around 100 fire calls in the city this week nearly 20 were to vegetation fires with a fur-ther 15 miscellaneous fires.

This runs through small grass fires, tussock and bark to couches, fences and even a shed in Huia St that blistered and threatened the home of an elderly resident.

That the majority of these are either delib-erately lit or the result of reckless behaviour is of real concern.

Fire is not entertainment. It can be a useful tool but used inappropriately it can damage, hurt and even kill.

I just wish they would think, just for once, of the consequences.

A paraglider who crashed his contraption on the Port Hills last Friday apparently suf-fered broken ribs and was carried by fire and ambulance staff several hundred metres to the ambulance at the  nearest road.

He should perhaps be buying a lotto ticket while his luck is in.

Last Saturday a very localised small tor-nado lifted tiles from the roof of a house in Burnside. This might sound unlikely bit I’ve seen this occur in the city before.

On that occasion a swathe of roofing iron was ripped from the roof of a large industrial building and was caught on CCTV.
