Susie’s Favorite Recipe:

Pumpkin Roll

3 large eggs

1 cup granulated sugar

2/3 cup canned pumpkin

1 teaspoon lemon juice

3/4 cup all-purpose flour

1 teaspoon ground ginger

1/2 teaspoon salt

1 teaspoon baking powder

2 teaspoons ground cinna-

mon

1 cup pecans, finely chopped

1 cup confectioners' sugar, plus more for sprinkling

Two 3-ounce packages cream cheese, room temperature

1 stick butter (1/2 cup), room temperature

1/2 teaspoon vanilla extract

Preheat the oven to 350 degrees F. Grease and flour a 17 1/2- by 12

1/2-inch jellyroll pan.

With an electric mixer, beat the eggs, granulated sugar, pumpkin

and lemon juice until smooth. Sift together the flour, ginger, salt, bak-

ing powder and cinnamon. Add the sifted ingredients to the egg mix-

ture and blend until fully combined. Spread the batter in the jellyroll

pan. Sprinkle the dough with the chopped pecans. Bake until a cake

tester inserted in the center comes out clean, 14 minutes. Let the

cake cool in the pan for 5 minutes.

Invert the cake onto a wire rack. Sprinkle some of the confectioner'

sugar on a large tea towel and carefully transfer the warm cake to

the towel, folding the sides of the towel over the cake. Roll the cake

up in the towel and cool in the refrigerator thoroughly for about 45

minutes. Recipe: Foodnetwork.com -Trisha Yearwood

Angey’s Favorite Recipe: Sweet Potato

and Quinoa Chili

one 29 oz. can black beans, rinsed

and drained

one 6 oz. can tomato paste

32 oz. vegetable stock

1 onion, chopped

5 cloves garlic, minced

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon oregano

1 tablespoon olive oil

1 sweet potato, peeled and cut into bite

sized chunks

1 cup dry quinoa

salt and pepper to taste

avocado, cilantro for garnish (optional)

Heat the oil in a large heavy soup pot over medium

low heat. Add onions, and cook until soft and they

start to turn brown (about 10 minutes). Add the gar-

lic, and cook for about 2 minutes. Add the tomato

paste, chili powder, cumin, and oregano and cook

for about 2 minutes, stirring constantly. Add the

beans, stock, and potatoes, and season with salt and

pepper . Cook for about 5 minutes, then add the qui-

noa. Continue cooking for about 15 minutes – 30

minutes, stirring frequently, until quinoa and potatoes

are cooked and the chili has thickened. Add a bit of

water if the chili becomes too thick for your liking. Top

with avocado and chopped cilantro. Scrumptious!
