A Dandy of a Dog! Denali, a beautiful, six year old Male Boston terrier is owned by Andre and Irene Jones. Denali was a birthday present to Irene Jones from her husband Andre. The Boston terrier is known as the “Little American gentleman” because of its classic tuxedo attire and its sweet, lovable, happy, and outgoing personality. These dogs are easy to train and love everybody, including children and other animals. Often happy to simply lie by its owner’s side with a chew toy, the Boston can adapt to city, suburban, or country life. The Boston terrier sheds minimally and requires only occasional brushing and bathing. This dog’s exercise needs are minimal; short walks will suffice. Denali comes from a family of champion Boston terriers. His Great Grand Dad, Champion – Rudy Is A Dandy. The name “Denali” is named after a family vehicle, a GMC Yukon “Denali.” The Jones’s discovered after naming him that other Boston terriers are named after a vehicle. “He is my best birthday present ever,” states Irene Jones. “He is so full of energy and is ready to play at a moment’s notice. He loves his toys and also loves attention from people. He would rather hang out with people that with other dogs.” Andre and Irene are the owners of Eye Connoisseur Photography. They enjoy doing pet photography. They may be contacted at 916/444-1222.

Go West Young Man?? While not the true author to this famous quote, Horace Greeley’s 1865 editorial in the New York Tribune encouraged Civil War veterans to take advantage of the Homestead Act and colonize public lands saying “Washington (D.C.) is not a place to live in. The rents are high, the food is bad, the dust is disgusting and the morals are deplorable….” I wonder if Mr. Greeley had any idea that the West would become the epicenter of the same negative elements they were running away from back then. California is the top agricultural state in the country providing nearly 15% of the US total and some of the greatest minds, innovation and technological advances come from the Silicon Valley. It’s also arguably one of the worst states in America in terms of debt, taxes, unemployment, illegal immigration, over-regulation and judicial activism. High taxes on companies, individuals and good/services are driving people out of the state in droves while driving property values down and foreclosures up at an alarming rate. Unemployment sits at 12.5% behind only Nevada (14.4%) and Michigan (13.1%) and the state has borrowed over $8B from the Federal Government for unemployment insurance while falling over $20B in debt. Despite spending over $25B on education each year, the state ranks a ridiculous 49th in the country behind only Mississippi. With Democrats owning large majorities in the state legislature and winning the top 8 spots in state government in November, none of the above will change any time soon. California is one of the most beautiful places in the world with its majestic mountains, crystal-clear raging rivers, redwood forests and the Pacific Ocean all along the western border of the state. It’s also held hostage by Environmental activist groups that have crippled the farming and fishing industries proposing nearsighted laws and regulations through the state legislature as well as limiting the state’s ability to drill offshore for oil. Political correctness runs amok at every turn and prison overcrowding allows the daily release of people who sometimes spend less than 1/10 of their sentence whether the crime is violent or merely drug-related. The glitz and glitter once associated with Hollywood has been replaced by drugs, drunks, scandals, arrests and the deplorable morals Mr. Greeley wrote of back east. They see and hear actors and actresses spewing their liberal garbage in political campaigns like we’re supposed to really care what they have to say. How did this happen? California used to be the place people would flock to for the beautiful weather, beautiful landscape and beautiful people. It still stands as one of the few places where you can ski or snowboard in the morning and play a round of gold in the afternoon. It boasts the striking beauty of all 4 seasons of the year with the snows of winter, the flowers of spring, the sunshine of summer and the colors of the fall leaves. The problem in most instances is the people and the ridiculous things they say and do. Many people across the country have this view of all Californians walking around like the Jeff Spicoli character from Fast Times at Ridgemont High. They see and hear our political figures from Barbara Boxer to Arnold Schwarznegger to Maxine Waters step up to the microphone weekly and embarrass themselves and our state with divisive, mindless, nonsensical drive that most people in the country can’t relate to and don’t agree with. So what’s this Midwestern boy to do? Not interested in enduring the winters back home in Michigan, the east coast is much like the west with some hurricanes thrown in for good measure and no disrespect intended but I just can’t see myself fitting in with the “good ‘ol boys” of the south. California holds great memories for me as a place I found and married a beautiful loving woman, met great friends I’ll have for life and rediscovered my faith in God. Kind of makes all the other stuff pale in comparison…..

How to Start a Blog……and Post To It, With Minimal Effort

I was casually chatting with our office neighbor, Roger, last week.“I need to start blogging,” he told me. “And posting educational videos.

And doing all the things I need to do to get my website found on the first page of Google.”

Why’s that, Rog? He continued: “The first thing my clients and potential clients do when they

need my service is they search Google. So that’s where I need to be – right on the first page – above my competitors, of course.”

Yesterday, I walked in to his office, and showed him the simplest way to start and write a blog. In fact, it’s so easy, he can write a blog post without ever looking at his blog – which is perfect for someone like Roger, who has more important things to do than fool around with his blog platform.

The platform I showed him is Posterous – a no frills, dead simple way to post and share things on the internet.

Last summer, we converted our company blog to Posterous, from WordPress. While WordPress is an outstanding blogging platform with no shortage of options and plug-ins, the complexity of the system was becoming too much for us to manage. We just wanted a simple way to post articles that we wrote – that’s it!

With Posterous, creating blog posts is dead simple – you just send an email to a preassigned address. The subject line of your email becomes the title of the post, while the body of the email becomes the body of the blog post.

As soon as you hit the Send button in your email client, the post goes live. Done and done!

If you’ve always been meaning to start a blog, but you never seem to get around to it, I’d highly recommend that you set aside an hour to check out Posterous.

They’ve done an excellent job at taking the “I don’t want to deal with this” factor out of the equation. You just sign up for an account, and start posting to your blog (which Posterous will host for you, of course).

Most people perceive prisons via movies and television media which aren’t always correct. The museums primary goal is to educate the public about realities of prison life through a multitude of exhibits. The Folsom Prison Museum is currently staffed by volunteer docents and is open daily from 10am to 4pm with a $2 admission charge for those 12 years and older. For more information call (916) 985-2561 ext. 4589.

The Retired Correctional Peace Officers museum was open in 1975 as

part of the original Folsom Prison gift shop, which was run by inmate workers. It is now operated by retired correctional peace officers and the museum is now a non-profit charitable organization, not an entity of the state, dedicated to the prison staff that died from cancer, and proceeds are donated to the American Cancer society, Make-A-‘wish, Fisher House. Touring the museum you can discover the legend of Johnny Cash with many photographs and memorabilia. He wrote “Folsom Prison Blues” and performed it at a live concert for the

prisoners on January 13, 1968. The museum also features a wealth of photographs, old hemp ropes once used to hang prisoners and the actual gallows (although it’s temporarily covered at present), a hand cranked Gatling gun, a Thompson sub-machine gun, many inmate manufactured weapons, an 8’0 high motorized Ferris wheel made of about 250,000 toothpicks by a prisoner in the1930’s. There is a mock cell in the rear of the museum with a talking animated life size mannequin providing a 5-minute

message. The museum also shows an 8-minute video that takes you on a tour of the prison via TV in the viewing room. A restroom is provided. Folsom Prison Museum celebrated the Folsom Prison 130 year anniversary Nov. 5, 2010 at the Folsom Community Center with over 500 guests in attendance that featured guest speakers, entertainment and dinner. You’re welcome to visit the museum cameras are invited. Website: www.folsomprisonmuseum.org by Pete Culcasi

Where’s That Ocean Smell?A bit of history before I begin. My family was in the fish business for many years. They purchased the fish from the fisherman and then processed it for the market which means filleting, freezing and shipping it to distribution centers. We love to have fish as part of our regular weekly diet; however we enjoy local varieties not farm raised white fish that is shipped from far away ports. I may be a bit spoiled. I am looking for that fish that is so fresh that it is shiny and smells like the ocean or the one that has been so cared for that its flesh glistens even when frozen and thawed. On the all-knowing internet I searched Sacramento Fish Markets and up came a market that was located in the south end of the county off of Hwy 99. Doing a bit of research I found it was an ethnic market catering to the Pilipino community. In their advertising they talked about bringing in fresh whole fish every day. What an opportunity to explore and learn. With GPS my adventure began. The market was a beautiful facility set in a strip mall with other stores that featured Pilipino services. The market was filled with items that I have never seen and its vegetable department was glorious. Towards the back of the store there where huge bins filled with ice and whole fish. I brought my husband as he is supposed to know all about things that are fishy. We cruised the bins and found all kinds of interesting looking species – almost none of which we recognized. There was some very nice looking squid (calamari) and clams. One bin was filled with small blue crab, all alive and climbing over each other. Customers where crowded around choosing the best ones. The one fish that we thought looked the best was a red snapper. They had very nice bulging eyes and shiny scales (always look for this when buying whole fish). We figured out by the time you chopped off the head and tail, filleted it – the cost was $20.00 per lb. That’s a bit steep. I am still in search of a seafood market, one that is preferably closer and probably one that carries varies that I am familiar with (but not closed minded).

You Could Be a VA! As I was thinking about what type of business to spotlight for kids this month, I kept thinking about how tech-savvy kids are these days and how my own kids do more and more for me in my businesses each week. Icing on the CakeWhy do all the most delicious cakes come with icing? Because it’s not a cake

without the sweet, colorful confection on top! Walking out of your closet without this season’s hottest accessories makes for one ‘tasteless cake’. Start building your jewelry wardrobe with a few of these guidelines.

Taste twice – If you enjoy having those ‘one-of-a-kind’ pieces, try vintage or antique. Mix a modern piece with a vintage piece to keep things fresh and trendy. Most antique pieces have been well crafted and it shows…adding an element of sophistication to your style.

Try a new flavor – Switch up your classic pearls for a multi-colored strand or black pearls. Add bright colored stones and gems to your everyday pieces to bring a personal charm all your own. Mix your metals in different lengths for a trendy rocker look.

Super-Size– Tiny jewelry can look dated, and doesn’t make a bold statement. Larger, more complicated pieces can be the centerpiece of any outfit. In most cases bigger is better; unless you’re very petite then stick to medium sized pieces.

Adds Spice - Take a jewelry making class and create your own beautiful jewelry with broken, dated and/or unwanted jewelry. Everyone is going green, so why not recycle what you already have?!

Cream of the Crop – Purchasing quality investment pieces is always a plus. When you can add a sparkling Cartier or Tiffany piece to your ‘running around town’ style you will invariably create a look of classic style and polished sophistication with little to no effort.

Investment Real Estate Group

Rich or WealthyThere is an important and subtle difference between being wealthy and being

rich. To be rich is to have a lot of money, to go to work and get paid a lot for your services - but wealthy, to be wealthy you need a steady money stream coming in day and night – from investments, royalties or other sources.

Notice the difference – being paid lots of money by an employer is fine and all, but you need to have your butt in the seat actually working to get paid. If you don’t work, you don’t get any money! Wealth, however, will come in whether you’re at the office or not. Your investments, royalties, stocks or whatever vehicle you choose will produce money for you while you sleep! One of my favorite ways of producing this kind of passive income (oh yeah, passive income is taxed less by the way) is through rental units.

Tax benefits aside (and there are quite a few, believe me!) the rate of return can be amazing! Think of just one obscure benefit; inflation! Your properties value will keep up with inflation – and rents will too! So, you’re fixed payment appears to shrink over time – becoming less and less costly as inflation devalues money. Your money is inflation proof while your tenants pay off your rental house(s) for you at an increasing rate! Sounds like a great deal to me!

We’ve all been brought up with the idea that every spring we should clean our homes from end to end and freshen up for our health. This might have come from the idea that in spring, things are fresh and new and cleaning the home will renew your feelings about yourself.

1. Improve Your Health Without Diets Or Pills

Pollens, mold, and mildew spores are dumped into the air at incred-ible intensity. Pollutants from car exhaust, burning fields, and cigarette smoke were also dumped into the stagnant air. All this gunk drifted into your home and when you closed the house up, where do you suppose it’s been ever since? It got trapped in your home. Thanks to today’s air tight, energy efficient homes, your family and guests have been breathing that recycled air-garbage. 2. Your Home Is Your Personal Breeding Ground For Invisible Crit-ters And Varmints In addition to the air-garbage from outside, you have uncontrolled vermin inside. Too tiny to see, dust mites live in your carpet, upholstery, bedding and drapes by the millions. By now their dead bodies and dung are in your house by the billions. They live off your dead skin as do billions of bacteria in your home, including those that cause staph and strep infections. Ever wonder why so many people get strep as soon as it cools off outside? Now you know. Plus, fleas brought into your house last summer don’t die off like they do outside when it freezes. Bacteria and germs have been breeding in the warm fibers of your carpet.

3. Does Your Bedroom Smell Like A Gerbil? Here’s Why…

Besides being Harmful to our health, all the germs, bacteria and crit-ters that live off dead skin from us and our pets, stink. They eat skin and along with other excretions, put out tainted methane gas which smells bad. 4. Heavy Soil From Outside Sifts Deep Into Your Carpet Never To Be Seen Again Until the winter rains have washed the sand soil from the roads and sidewalks, heavy soils from outside are tracked onto your carpet, wiggle down deeper than your vacuum can reach and stay there, grinding your carpet down into worthless fibers. You’ll find them in your vacuum bag.

Choosing a company can be treacherous. I’ll tell you up front that my service is not for everybody, but here are some reasons to choose me: If all you want is a cheap, brush-the-dirt-off-the-sur-face cleaning, lots of companies can help you. Choose us when you want deep, thorough cleaning. We’ll give you the fluffiest, freshest, healthiest, longest lasting, clean carpets possible . . .

. . . Guaranteed!!!

I have seen many service personnel that my wife would not allow in our home. Good character and integrity have kept us in business for 21 plus years

Cleaning now, will get rid of sandy soils before they do lots of damage or get too deep.

5. Finally – Someone Who Can Remove Those Ugly Black Lines By The Walls, or Crevice of Steps I’ve had new clients call us to evaluate some embarrassing black lines where the carpet meets the wall and at the edges of steps and jagged lines under curtains. They told me no carpet cleaner could get them out and in some cases they had tried up to five different firms. But the black remained. I inspected these lines and found the cause to be an air filtration problem. With extra effort and knowledge on our part, the ugly black lines can be removed. I told the client this and they were apprehensive. I also told them if it didn’t come clean as I described, they would not have to pay us. How’s that for confidence? Yes, we cleaned the ugly black lines. Yes, our clients were happy. 6. Do-It-Yourself Folks Get What They Paid For… …Nothing The problems I have described here can’t be fixed very

well with any home remedy. Sure you can dust and do the basic cleaning just fine. But drapes, fine rugs and upholstery often cannot be safely cleaned except by a professional. Let’s face it. If those puny little cleaning systems could even come close to the effectiveness of a trained professional using a $55,000.00 steam cleaning system, no one would pay the money for them. But There’s Still One Thing You Should Know . . .

If You Love Your Children By Azeen Kazemi

Lead by Example Children are fast learners. How many times have we heard the phrase “that child is such a sponge?” From the age of 2 until 10, a child is absorbing its most information. These days information comes quick, through the internet and now phones, children of the 21st Century have the means of learning almost anything with a click of a button. But one of the most important ways children learn is through imitation. They mimic words, actions, and even how to have fun. During these years a child is very susceptible to learning behavior from what they see in friends, teachers, and mostly family. We see this imitation example in nature looking at baby dolphins. The baby dolphin, also known as a calf is extremely close to its mother, as well as its “auntie dolphins” and grandmother who babysit constantly. It can take years before the dolphin is ready to fend for itself. It learns how to swim, turn, jump and even play by mimicking. The mother is the baby dolphin’s playmate and will teach her child how to have fun by playing games with it. The calf is close to its mother at all times, including physically, it will stay by her side under waves, underwater currants, and surfacing; hanging to the mothers fin sometimes. Dolphins born in captivity can perform in shows at the age of 1 without human training, because they will mimic their mother’s performance. Nature shows us how important it is for us to all be role models for our children. How easily they learn by the things they see in our examples. We must lead by those examples, even if it means showing them the right ways to have fun. Even friends and other family members have influence over the child; anyone who comes in contact can be influential. So parents, remember behavior is learned, and the biggest influence of behavior, is how you behave yourself.

Good Health – Great LifeBeing successful is not just about what is seen. There is plenty of evidence to

support that living a healthy lifestyle can help improve clarity of thought, provide greater energy and a better quality of life. Consuming healthy foods and nutritional supplementation, getting regular exercise and quality rest is what your body needs to function at its optimum. A healthier life aids in reducing anxiety, stress and depression. Imagine yourself as a Ferrari. Owners of a car like this know that in order to maintain its peak performance it requires a higher level of maintenance and care; filling it with only premium fuel and oil and hiring the best technicians available.

Sadly enough, most people treat themselves like a used Volkswagen leaving them unprotected from the elements of the world. Yet they want the beauty and lifestyle of a Ferrari. If we mistreat our body, we will never have the life our body was created for. The wonderful thing is it’s never too late for a major tune up. You need to invest in an extended lifetime warrantee.

Optimizing your health makes you sharper and more alert, resulting in better decision making, having more confidence and a better self image. Living a healthier lifestyle can increase your wealth by gaining respect, making you more attractive to potential clients and business associates. I believe from all the reading I have done, all the health related seminars I’ve attended and all the doctors and nutritionists I’ve talked with that there is a direct correlation between eating right and exercising, having more energy, reduced stress and a healthier all around well-being. Many people who are success driven often forget their most important asset, their body. You won’t get far running on empty.

For those of you who are success driven, I am sure you want to be around to enjoy the fruits of your labor.

Games & Gaming

GamificationAre you playing a game without realizing it? Many aspects of life are now

reflecting the concept of gamification. From keeping track of how many badges you have while doing check-ins around town on Foursquare, to using your Wii console for exercise, or playing Rock Band as a form of musical entertainment, games are becoming an important part of our lives. Even keeping track of your airline frequent flier points is a form of a gamification.

At its core, gamification is about fun, rewards and social connections. Years ago, the world renowned leadership and human relationship expert, Dale Carnegie, wrote about one of the most fundamental of all human needs, the need to feel important. Games meet that basic human need by offering rewards in the form of real or virtual currency and status in the hierarchy of the game. People play games to master a topic or skill, practice strategic reasoning and, ultimately,

to win.As time goes on and Internet network games become more embedded in

society, they will undoubtedly have a greater influence on our daily lives. The days of keeping up with the Jones by measuring the size your house or by comparing the brand of car you drive appear to be numbered.Ushered in will be an era of keeping up with the Jones by tracking the number of fans on your Facebook page, or by belonging to the mightiest and most powerful guild in World of

Warcraft. Will you be prepared when the “Era of Gamification” arrives? More then likely it will arrive sooner, rather than later.

Reflections for a New Year

The start of a new year is a time for reflection and giving thanks.First of all, I am thankful that my two wonderful children have turned into

such incredible adults, especially considering that their mother was a traveling executive/single soccer mom. No one ever wanted to trade lunches with my kids! My daughter and son are amazing people and I couldn’t be prouder of them.

2. I am grateful that I was born to a woman of character, generosity and enormous love. Despite her propensity for re-arranging my pantry, my mother has been my rock throughout my life and everyone who comes in contact with her has been blessed with her presence. And how many eighty three year old women do you know who could pass a 6 hour real estate broker’s exam?

3. I am thankful for the wonderful circle of friends who have supported me and willingly read and re-read my first novel, “Dying for a Date.” I must admit there is a high probability that their captivating stories will occasionally show up on my written pages.

4. I am grateful that Kit Kat is now making their delectable bars in dark chocolate which has helped increase my daily word count.

5. I am thankful that I just celebrated my sixtieth birthday and I can still swivel my hips and cha cha to work off all of those calories from # 4.

6. I am thankful that my new career has given me the opportunity to meet so many interesting people: mystery fans, budding writers, and published authors. Our community is blessed with some incredibly creative people and I’m thrilled that I can spend time in their presence.

May you all have a successful and fulfilling 2011.

What the Numbers Show

Now that Congress has extended the Bush tax cuts for everyone—rich and poor and everyone in between, ask yourself: how much of the tax burden do you bear today?

The latest numbers from the IRS -- based on 2008 tax returns -- show that the top 1% of income earners paid 38.02% of individual income taxes paid. That’s a lot, but it’s actually a smaller share of the total tax bill than the top 1% paid in 2007. That year they paid 40.42%. We also learn from the IRS that, in 2008, the richest 1% of

Americans made 20% of all the adjusted gross income reported. That’s almost twice the 12.75% of total income earned collectively by the lowest-earning 50% of workers. Yes, 1.4 million taxpayers earn 20% of all income reported while 70 million share just 12.75%.

But get this: When it comes to taxes paid, an even wider discrepancy shows itself -- in reverse. Compared with that 38% of taxes paid by the top 1% of earners, the bottom 50% pay just 2.7% of the taxes collected.

What’s Cooking with Mom

Soy-Ginger Salmon with Roasted LeeksIngredients:3/4 lb salmon steak(s) 1 thumb sized ginger, grated 2 tbsp soy sauce 3 tbsp oil pinch of salt 1 leek, cut in half and cut into 2 inch pieces Step 1: Preheat oven to 350 degrees. In a bowl, mix soy sauce, 1 tbsp oil, grated ginger and a pinch of salt.Step 2: Add salmon and soy-ginger marinade to a ziplock bag and refrigerate for at least an hour.Step 3: In a sheet tray, spread the leeks around and add a pinch of salt. Put in the oven and cook for about 25 minutes. Check on your leeks every 10 minutes to make sure they are not becoming too charred. Taste one; the leek should still be a little crunchy but easy to eat (not super chewy). In a pan over medium/ high heat, add 2 tbsp oil. When the oil is hot, add the salmon (do not throw away the marinade) and cook for 2 minutes. Flip the steak over, add 2 tbsp of the soy-ginger marinade and cook for another 2 minutes. Serve your soy-ginger salmon with leeks and season with salt & pepper.

Thai Hot and Sour Chicken SoupIngredients:3 Chicken Breast Fillets (skinless)2 tbsp oil 4 cloves of garlic minced2 shallots 5 stems cilantro leaves included (also known as coriander) About 6 teaspoons ginger 3 small red chilies chopped (I think I used 7 though as I like my spice)3 stalks of lemongrass 3-3 1/2 pints of chicken stock 3 tbsp fish sauce 3.5 ounces dry rice noodles 6 scallions (spring onions)1-2 limes - squeezedStep 1: Slice the chicken up into strips and bite-size chunks then heat some oil in the pan and then cook the chicken until done.Step 2: While the chicken is cooking chop the shallots, chili, coriander, mince the garlic, grate the ginger( I grated as I am not fond of large chunks) and cut the lemongrass into halves and split down the middle ( if you prefer you can finely chop). Remember to keep an eye on the chicken, just set it to the side when it’s done.Step 3: When you have done all your chopping and mincing heat up some oil in a large pot and place the chopped ingredients in and toss in the oil until fragrant, this only takes a couple of minutes.Step 4: Now its time to add the chicken stock. Bring to the boil and let it simmer for about 10 minutes.Step 5: During this time you can juice the limes and diagonally slice the scallions (spring onions).Step 6: When 10 minutes is up, add the chicken pieces, give a stir and simmer for another 10 minutes.Step 7: When 10 minutes is up add the fish sauce and rice noodles and simmer for another couple of minutes until the noodles are soft.Step 8: Add the sliced scallions (spring/green onions) and lime juice, throw in a handful of coriander (cilantro) leaves and stir.Step 9: Unless you finely sliced the lemongrass, try and get as much of it out as possible before serving. Serve very hot.

Crepes with Ham, Brie and CantaloupeIngredients:2 large eggs 3/4 cup milk 1/2 cup water 1 cup flour 3 tablespoons melted butter 1/4 tsp salt Ham - Thinly sliced (you could also use prosciutto)cantaloupe - thinly slicedbrie (cut up)Step 1: Whirr everything except the ham, cantaloupe, and brie in a blender, pulsing for about 10-15 seconds until combined. Refrigerate and let rest for one hour. This batter makes about 20 or so small 7 inch crepes. Put a little butter in a small nonstick skillet on medium heat. When warm, ladle about 1 oz of batter into the pan, swirling around (note that the first one always comes out a little funny, so make it and eat it, or toss it). When it’s ready to flip (usually about 30-60 seconds), it will be dry on top and crinkly around the edges. Use a rubber spatula to peek if necessary, when it gets close to being ready to flip it will release from the pan. Here’s a blurry pic of one almost ready to flipStep 2: Once you flip, the other side will only take about a minute, so put your toppings on half of the crepe, like an omelet.Step 3: When done, fold and serve.

Chicken Soup with Goji Berries and Red Dates This is a very common chinese herbal soup that is great to have in the winter or spring, and especially when you want to recover from being sick. The ingredients are easy to find and are very nutritious. Red dates are high in vitamin C, the Goji berry is packed full of antioxidants, and the Dang shen is said to improve organ function. Note: Always consult your doctor before adding these ingredients to your diet.Ingredients:A little over 1 lb chicken (thighs/breast/wings) 3.5 ounces goji berries 2.5 ounces or about around 30 red dates 3 stalks dang shen (Codonopsis pilosula) also known as poor man’s ginseng salt Step 1 (One step): Cut the chicken into small pieces, wash the dates, goji berry and dangshen, and put all the ingredients into the slow cooker and cook for 1.5 hours. Serve Hot

Coconut Cream TartsIngredients:6, 4 inch tartlet shells Blind-bake your tart crusts. Mine are 4”. You can make your own pie crust, or buy it from the store, or whatever. 1 1/4 cup silken tofu (about 2/3 of this package)1 cup coconut milk 2 TB sugar 3 TB cornstarch 1/2 tsp vanilla extract 1/4 tsp coconut extract A few drops almond extract 3/4 cup (packed) shredded sweetened coconut whipping cream vanilla extract sugar Step 1: Blend tofu, coconut milk, sugar and cornstarch in a food processor or blender until smooth.Step 2: Transfer to a medium sized saucepan and stir in coconut. Slowly bring to a boil over medium heat, stirring frequently. Remove from heat, and stir in the vanilla and extracts. Let cool, uncovered, stirring occasionally, for 10 minutes. Add lid and let come to room temperature (about 45 minutes to one hour). Pour into pie crust, and refrigerate to set. Step 3: When ready to serve, whip some heavy whipping cream with a little vanilla and sugar. Toast some unsweetened coconut in a pan or in a toaster oven until golden brown in parts. Top with whipped cream and toasted coconut and serve.

3 Cleaning Tips on the CheapSure, it’s easy to drop-off your wine-stained dress at the dry cleaners, or

call in a professional service to take care of those ink spills on the carpet, but what if you could fix those problem areas yourself? For barely any money? Here are 3 ways to clean on the cheap: Clothing:

Remove red wine stains1. . Saturate the stain with table salt ASAP and let it sit for a couple of hours, then wash in cold water. Another trick is to pour some white wine on the stain and wash accordingly.Remove coffee stains2. . Scrub the stain with baking soda paste. To make baking soda paste, just mix baking soda and water.Remove grease/oil stains3. . Blot the stain with dishwashing detergent. If the stain has soaked in, mix one part vinegar with two parts water to make an all-natural cleaner. Apply to the stain and wash. By the way, did you know vinegar can replace 30 household products?

Quarterly Employment TrendsFor Sacramento

Job demand & hiring trends for local companies in the 1st Quarter of 2011

Growing Trend: Twenty-six percent (26%) of Sacramento’s top regional employers are pessimistic about the economy for the next year. On the flip side, another sixty-two percent (62%) of the people who manage people believe there is reason to be optimistic in 2011. In addition, human resource contacts at the 100 top companies surveyed directly by phone say their firms are likely to add workers through the next year. While some couldn’t answer or didn’t know, sixty-seven percent

(67%) were positive about employee expansion when asked if the company would grow its workforce in the next year. As ‘consumer confidence’ spurs the economy, improving economic outlooks are raising ‘employer confidence’ that leads to more hiring. Sacramento’s top companies aren’t going anywhere soon, eighty-nine percent (89%) of the top employers also expect to be occupying the same local address through 2011.

Traditionally the slowest period for hiring in the Sacramento region, fifty-one percent (51%) of companies polled say they will be hiring in the First Quarter of 2011. While thirty-six percent (36%) report more hiring for replacements, or attrition in their existing workforce, thirty-one percent (31%) report hiring motivated by the need for more workers in January, February and March. As economic and market conditions have improved through the year, Pacific Staffing has discovered that Sacramento’s top

employers have maintained or increased hiring motivated by the need to expand existing workforces- 20% in Q1, 37% Q2, 35% Q3, 27% Q4 of 2010 and 31%

anticipated in Q1 2011. Three percent (3%) of hiring in Q1

will be motivated by seasonal demands. Six percent (6%) of companies report planned reductions caused by weather-related concerns and continued slow demand for their products or services in the first three months of the New Year.

How does this Quarter compare to last quarter, or last year? Find out for yourself, for more information & surveys go to www.pacificstaffing.com

Skills Demand: For those seeking employment among the area’s top companies customer service/sales and technical skills are in high demand in the next Quarter. Sacramento employers are also seeking workers with experience in manufacturing, product assembly, warehouse and shipping over the next three months.

Workforce Challenge? The top challenge ahead for HR pros in the area remain serious concerns about how to manage changes in healthcare benefits and costs relating to new laws. Twenty-three percent (23%) of companies polled report healthcare reform -increasing costs and management of company benefit programs their greatest headache.

1st of 13 Principles That Changed Millions of Lives

Napoleon Hill has arguably influenced the success of more men and women than any other person in history. Born in a one-room cabin, he began his career as a journalist. His big break came when he was asked to interview steel-magnate Andrew Carnegie. Carnegie was so impressed with the young reporter that he convinced Hill to research and organize the world’s first philosophy of individual achievement. You’ll see one principle each month.Desire: Desire is the starting point for all achievement, the first step toward riches. But it’s here that we so often run into a roadblock. A person will say, “I know what I desire, but can I get it?” The answer was best expressed by Emerson: “There’s nothing capricious in nature, and the implanting of a desire indicates that its gratification is in the constitution of the creature that feels it.” In other words, you would not have the desire unless you were capable of its achievement. Your burning desire is nothing more than an accurate picture of what you will one day become. So right here, firmly establish in your mind that which you desire more than anything else, and cherish and nurture that desire. Do not suppress or annihilate it. A man without desire has within him no principle of action, nor motive to act.

“There are no mistakes. The events we bring upon ourselves, no matter how unpleasant, are necessary in order to learn what we need to learn; whatever steps we take, they’re necessary to reach the places we’ve chosen to go.” Richard Bach, The Bridge Across Forever
