Sweet-A-Peel’s Muffins 1 cup roasted sweet potato ¾ cup whole wheat flour ¾ cup white flour pinch of salt 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/8 ground cloves 6 tablespoons butter at room temperature ½ cup dark brown sugar 2 eggs lightly beaten ½ cup milk ½ maple syrup 1-2 tablespoons molasses Cream butter and sugar together until your arms fall off. Add eggs and beat, beat, beat, then stir in maple syrup, milk, molasses and sweet potato puree- mix thoroughly. In a large bowl sift dry ingredients together. Add wet to dry but don’t over mix it.

Sweet-A-Peel’s Waffles• 1 ½ cups whole wheat flour• ¼ cup sugar• 1 tbsp baking powder• ½ tsp salt• ½ tsp cinnamon• 1 cup milk• ½ cup yogurt• ½ cup of roasted, pureed sweet potato• ¼ cup canola oil• 3 eggs separated, whites whipped until stiff Combine dry ingredients and set aside. Separate the eggs and whip the

egg whites. Add the rest of the wet ingredients to the egg yolks and stir, add dry ingredients and stir until uniformly combined then fold in the egg whites.

Sweet-A-Peel’s Baked Sweet Potato Fries

• 2-medium sweet potatoes, peeled and cut like fries• 2-3 Tbsp olive oil• ½ tsp salt

Preheat oven to 425*F. Place fries on a huge cookie sheet. Pour over olive oil, and toss to mix. Sprinkle with salt, toss to coat. Spread out in a single layer. Place pan in oven and bake for 15 min, then take out and turn fries over. Place back in oven and bake another 15 minutes until golden brown and crispy on the outside.

• clove garlic, minced• 1 tsp oil• ½ tsp curry powder• 1-tsp mango chutney• 1-tsp tamarind paste• ¼ cup yogurt • salt and pepperMix all ingredients together. Refrigerate. Serve.

Antarctica Lemon Dip• 1-tbsp lemon juice• 1-tsp Dijon mustard• 3 -Tbsp olive oil• ¾ -cup plain yogurt• 1 tsp honey• 1 tsp lemon peel, grated Combine lemon juice and mustard. Blend in

oil gradually until thickened. Add remaining ingredients. Refrigerate. Serve.

Asian Wasabi Mayo• 1- cup mayonnaise• 4 tsp soy sauce• 1-1/2 tsp granulated sugar• 2 tsp lemon juice• 2 tsp wasabi paste

Mix all ingredients together. Refrigerate and serve.

• 1- Roasted red pepper• 1- Roasted red chili

pepper• 60 g feta• 1/4 –cup plain yogurt• pepper Process all ingredients

into a food processor. Refrigerate.

European Tzatziki • 1-1/2 cup greek yogurt• ½ cup finely chopped unpeeled cucumber• ½ tsp salt• 1 clove garlic, minced• 1 tsp lemon juice

In bowl, sprinkle cucumber with salt; let stand 20 min. Drain and place in sieve; press out excess moisture. In larger bowl combine, yogurt, cucumber, garlic and lemon juice. Refrigerate. Serve.
