About Better Process Control School

FDA regulations 21 CFR 108, 113, and 114 requirethat each processor of low-acid or acidified foodsoperate with a certified supervisor on hand at all timesduring processing. These regulations are designed toprevent public health problems in low-acid andacidified packaged foods.

To prepare industry practitioners and help companiesmeet federal regulations, the Consumer BrandsAssociation Foundation and its partner institutionsoffer the Better Process Control School (BPCS).

In addition to meeting FDA regulations, the BPCScourse also meets USDA FSIS regulations 9 CFR 431for thermally processed meat and poultry products.

The BPCS subject areas include thermal processingsystem operations, microbiological food safety,equipment operations, acidification, and containerclosure evaluation for low acid and acidified cannedfoods.

The BPCS program is an important and valuableeducational opportunity for operators, mid-levelmanagers, and employees of food processing plantsthat utilize thermal processing.

The course is an excellent platform to improve thermalprocessing knowledge for food safety and qualityassurance personnel, individuals who work with rigidand flexible packaged food products, academia,auditors, and government inspectors.
