Spicy Seared Pork Tenderloin

with Pineapple Salsa

2 Cups Diced Pineapple 1/3 Cup Diced Beefsteak Tomato

1/3 Cup Diced Red Onion 1 Tablespoon Fresh Lime Juice

1 Tablespoon Chopped Fresh Cilantro1 Teaspoon Ground CuminPinch of Salt and Pepper2 Teaspoons Olive Oil

8 (1/2 in.) Sliced Cooked Pork Tenderloin 1 Tablespoon Chili Powder

In a medium bowl, combine with pineapple, tomato, lime juice, cilantro, red onion and cumin. Toss to combine.

Season with salt and black pepper to taste. Set aside until ready to serve.

Heat the oil in a large skillet over medium heat. Season the pork sliced all over with chili powder. Place the slices in the hot skillet and sear one minute per side until goldenbrown.

Serve the pork sliced with the Pineapple Salsa spooned over the top.
