Bacon CheeseburgerIngredients2 Tbsp. finely chopped onion 2 Tbsp. ketchup 1 garlic clove, minced 1 tsp. sugar 1 tsp. Worcestershire sauce 1 tsp. steak sauce ¼ tsp. cider vinegar 1 lb. ground beef 4 slices sharp Cheddar cheese 4 hamburger buns, split and

toasted 8 cooked bacon strips Optional toppings: lettuce

leaves and tomato, onion and pickle slices

DirectionsIn a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into four patties.

Grill burgers, covered, over medium heat or broil 3 inches from the heat for 4-7 minutes on each side or until a thermometer reads 160 degrees and juices run clear. Top with cheese. Grill 1 minute longer or until cheese is melted. Serve on buns with bacon and toppings of your choice.

Chocolate White Chunk CookiesIngredients1¼ c. all-purpose flour1 tsp. baking powder½ tsp. salt2/3 c. Dutch-process cocoa

powder½ c. unsalted butter, at room

temperature, cubed½ c. white sugar½ c. dark brown sugar1½ tsp. vanilla extract1/3 c. milk1½ c. (6 oz.) coarsely chopped

white chocolate

DirectionsPreheat the oven to 325 degrees. Line two baking sheets with parchment paper.

In a medium bowl combine flour, baking powder, salt, and cocoa powder. Whisk together and set aside. In the bowl of an electric mixer, beat the butter on medium-high speed until light and fluffy. Add the sugars and cream on medium-high speed. Add the vanilla extract and mix well. Add half of the flour mixture, beating on low speed just until incorporated. Add the milk and mix until combined. Add the remaining flour mixture and beat on low speed just until dry ingredients have been mixed in. Gently fold in the chopped white chocolate with a spatula. Chill the dough in the refrigerator for 15 minutes.

Scoop the dough onto the cookie sheets using a medium cookie dough scoop, pressing down slightly. Bake for 18 to 20 minutes, rotating pans top to bottom and front to back halfway through baking. Let cookies cool on baking sheets.

CreamyPesto PastaIngredients1 c. basil leaves, packed3 Tbsp. water2 Tbsp. Parmesan cheese, grated1/8 c. pine nuts½ Tbsp. olive oil1 clove garlic1 Tbsp. lemon juice1/8 tsp. salt1/8 tsp. black pepper4 oz. spinach pasta1 clove garlic, minced½ onion, minced1 lb. boneless skinless chicken

breast, cut into strips1 Tbsp. butter4 zucchinis, sliced into sticks2 Tbsp. cream cheeseSalt and pepper to tasteCherry tomatoes and fresh

herbs for garnish

DirectionsUsing a food processor, pulse together the first nine ingredients for the pesto.

Cook pasta in salted water according to package directions, taking it out 2 minutes early so it doesn’t overcook when added to the sauce. Reserve 2 table spoons of the cooking water.

In a large sauté pan over medium heat add the butter and let it melt. Spray some additional cooking spray and add the onions. Cook for 3 to 5 minutes until they begin to soften up.

Add the garlic and chicken. Cook for about 5 minutes and then add the zucchini. Cook until the chicken is cooked through and zucchini is cooked to your liking – about 5 minutes.

Turn off the heat and add the cooked pasta, pesto, cream cheese, and water to the pan. Stir everything together. Garnish with cherry tomatoes and fresh herbs and serve.

Broccoli & Cheddar Mini QuichesIngredients 1 pkg. refrigerated pie crust

dough2 c. broccoli florets (fresh) 1 c. milk (do not use skim milk) 1 c. heavy cream 2 large eggs + 2 large egg yolks 1 c. Cheddar cheese, grated ½ tsp. salt ½ tsp. pepper ¼ tsp. ground nutmeg (or use

fresh parsley or even a bit of garlic) (optional)

DirectionsPreheat oven to 350 degrees and line a large rimmed baking sheet with foil. Place pie crust on a lightly floured surface. Using a 3-inch biscuit cutter, make 12 circles in the dough. Lightly grease the cups of a muffin tin, and place a piecrust circle in each cup. Press down.

Cook broccoli in a steamer basket over 1 inch of water for 6 minutes or microwave in a dish with a little water, cover and cook on HIGH until tender, about 5 minutes. Let broccoli cool slightly, then chop into small pieces.

In a medium bowl, whisk together milk, cream, eggs, and egg yolks. Stir in cheese, salt, pepper, and nutmeg. Add chopped broccoli to the mixture. Put muffin tin on baking sheet and then ladle egg mixture into prepared muffin cups, filling each cup.

Bake until lightly browned and no longer jiggly in center, about 25 to 35 minutes. Let cool slightly, then run a knife around each quiche. Cover muffin pan with a clean baking sheet and invert to unmold quiches. Serve warm or at room temperature.

Pecan TassiesIngredientsDough:½ c. pecans½ c. cream cheese, room

temperature4 Tbsp. unsalted butter, room

temperature (½ stick)¾ c. all-purpose flourPinch of saltFilling:1 large egg¼ c. packed light-brown sugar2 Tbsp. pure maple syrup2 tsp. vanilla extract1 Tbsp. unsalted butter, room

temperature¼ tsp. salt¾ c. pecans, toasted and

coarsely chopped

DirectionsDough: Preheat the oven to 350 degrees. Process pecans in a food processor until finely ground. Put cream cheese and butter into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until well blended. Add flour, ground pecans, and salt; mix just until dough comes together. Alternatively, stir together ingredients with a wooden spoon in a large bowl.

Roll dough into 18 1-inch balls; press into bottoms and up sides of cups of mini-muffin tins.

Filling: Whisk egg, brown sugar, maple syrup, vanilla, butter, and salt in a bowl. Stir in pecans. Spoon about 1½ teaspoons filling into each muffin cup.

Bake until crust begins to turn golden, 20 to 22 minutes. Let cool completely in tins on wire rack before unmolding. Tassies can be stored in single layers in airtight containers at room temperature up to 3 days.
