PROJECT FRESH One of the best parts about summer in Michigan is all of the fresh fruits and vegetables that are back in season! If you love fresh produce as much as we do, then we have just the program for you! Project FRESH provides eligible WIC participants the chance to purchase fresh fruits and vegetables from participating local farmers markets in Kent County and throughout Michigan. If you participate this year you will receive $25 in coupons to purchase Michigan grown fresh fruits and vegetables from the farmers market as well as a Farmers Market Cookbook. Turn to page 2 of this newsletter to see a couple of highlighted recipes from the cookbook.
To schedule a Project FRESH appointment, please call the WIC scheduling line at 616-632-7200.

FRESH ~Seasonal ~TASTY
Corn
How to select: Look for ears with bright green husks, dark
brown silk, and tight rows of kernel that are brightly colored and milky when broken. Avoid corn with dry husks or indentations on the kernels.
How to store: Store in the refrigerator in the husks. Use as
soon as possible, within 2-3 days of purchase.
Easy Corn Cakes Serves: 6
2 cups corn (about 4 ears of corn)
1/4 cup green onions, sliced
2 eggs
3/4 cup flour
1 tsp baking powder
Salt and Pepper
2 Tbsp olive oil
In a large bowl, mix the corn kernels and green onions with
the egg until combined. In a separate bowl, whisk together
flour and baking powder. Add flour mixture to the corn mix-
ture and gently combine. Add salt and pepper to taste.
In non-stick pan, heat olive oil over medium heat. Using 1/4
cup measuring cup, scoop corn mixture and place in the
heated pan. Cook for 3 minutes, or until browned. Then flip
and continue cooking for another 2-3 minutes or until brown.
Nutrition Information: 170 calories, 6 g protein,

Berries
How to select: Strawberries should be firm and dry with caps
that are green and fresh looking. Raspberries and blackberries should be deeply colored. Blueberries should have a slight frosty white hue. A stained box of blueberries may indicate that some of the berries in it are overripe.
How to store: Store the berries in the refrigerator in the
original container. Wash berries quickly in cold water just
before eating. Do not let them soak.
TIP: Unlike many other fruits, berries don’t ripen after they are
picked, so they are best eaten right away.
Blueberry Salsa Serves: 6
2 Cups fresh blueberries
1/2 small red onion, diced
1/4 Cup fresh cilantro, minced
1 jalapeno pepper, seeded and minced
2 Tbsp orange juice
1 Tbsp balsamic vinegar
1 tsp. olive oil
Salt and pepper
In a small bowl, coarsely mash the blueberries. Stir in onion,
cilantro, pepper orange juice, vinegar, and oil. Season to taste
with salt and pepper. Cover and chill until serving.

Breastfeeding? That’s awesome. Don’t forget to keep taking your prenatal vitamins so you and your baby get important nutrients.

Are your children ready for the next school
year? While making your summer plans, include a
back to school doctor appointment for your
children if they need a routine check-up, sports
physical or immunizations. All day care to school
aged children should be up to date on their vaccines
before school starts. July and August are busy
months for appointments so call now if your child
will need shots before the fall.
