Carla’s Roasted Corn and Potato Chowder

Roasting the corn and the garlic releases the sweetness of these ingredients and adds a nice mellow fl avor to this soup.3 slices lean bacon, diced 1 3/4 cups diced onion4 cups fresh corn kernels, roasted (about 7 ears)1/2 tsp chopped fresh thyme3 garlic cloves, roasted4 cups chicken broth1 cup heavy cream1 cup half-and-half3 cups peeled, diced potatoes

Sea salt and freshly cracked pepper, to taste

Preheat oven to 350 degrees. Cut corn off the cobs and spread evenly onto a sheet pan. Also put three whole garlic cloves in corner of sheet pan. Drizzle corn and whole cloves with olive oil, salt and pepper. Roast in oven for 15 minutes. Cook bacon in a large Dutch oven over medium heat until crisp. Remove bacon from pan; crumble. Add onion to drippings in pan; cook 8 minutes or until tender, stirring occasionally. Add chopped thyme, and garlic to pan; cook 30 seconds, stirring constantly. Stir in broth, cream, half-and-half, and potatoes; bring to a simmer. Cover and cook 20 minutes or until potatoes are tender, stirring occasionally.

Transfer 2 cups potato mixture to a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Blend until smooth; return pureed mixture to pan. Stir in the roasted corn and season with salt and black pepper; sprinkle with crumbled bacon. Make this soup even heartier, stir in cubed rotisserie chicken. Enjoy!
