The MA in FCS is undergoing a program review as part of the 6th Cycle of program reviews at SFSU. For this cycle all graduate programs on campus are being reviewed. Last year the faculty of the Department developed a comprehensive self-study which was submitted to the administration. On Nov 14-15 review-ers external to SFSU (from Illinois and Southern California) visited the department to talk with faculty, students, and alumni of the program. As part of the two-day visit, the reviewers met with the Provost, As-sociate Vice President for Academic Planning & Educational Effectiveness, the Dean of the Graduate Divi-sion, the CHHS Associate Dean, the chair of the Academic Program Review Committee, and the CFS/D De-partment chair. A total of seventeen current students and alumni attended a reception that was hosted by the faculty in the Vista Room. It was great to see our successful alumni back on campus encouraging our current students to do wonderful things.

The students and faculty of San Francisco State University really showed their true colors this year by hosting a variety of events on campus centered around sustainability. On Monday Oc-tober 24th, the Vista Room presented Meatless Monday to promote healthy eating in addition to reducing SFSUs carbon footprint. And later on that day the Dietetic program and the Stu-dent Dietetic Association held a Vegetarian Iron Chef competition in Burk Hall 406. Many non-CFS/D departments happily joined in the fun.

Wednesday was quite busy with highlights in-cluding an on-campus clothing swap hosted by the Fashion Network Association and Orange Band to encourage unwanted clothing to be re-used and recycled. Peer Educators Advocating Campus Health (PEACH) and the Student Die-tetic Association (SDA) hosted a Food Day table and a Mental Health Awareness table inside the student health center.

Sustainability Week a Stunning Success

The week-long celebration of sustainability was con-cluded on Thursday, October 27th with several more events. Overall, the CFS/D department was proud to sponsor many events, and most students can’t wait until next year’s display of sustainability.

The first major event for the ADM program this year was Restyled SF. It was a popup thrift store in Mal-colm X Plaza. The student-run or-ganization, the Fashion Network As-sociation (FNA), has kept the stu-dent budget in mind, so each item was no more than $10. They hosted this event October 19, October 26, and November 3 and will also be planning future dates, which will be available on their website at fnasf.com. Head on out to support the FNA this semester and pick up some new threads while you’re at it.

The main event for ADM this semester is the annual fall fashion show, Impressions. It is a showcase of San Francisco State Universi-ty student work sponsored by the Fashion Network Association. It acts as a preview for the larger annual spring show, and will take place Friday, December 9 at 7pm in Jack Adams Hall at San Francis-co State. Doors open at 6:00pm and tickets are available for pur-chase from the FNA.

The San Francisco State interior design students and ASID student chapter members have been ac-tively engaged in community outreach projects such as working with Habitat for Humanity and volunteering for the Dining by Design event held November 16 and 17 at the San Francisco Design Center Galleria. DIFFA, the Design Industries Foun-dation Fighting AIDS, continues partnering with students at SFSU who volunteer to support Dining by Design. Their work underscores their direct ser-vice to the community and the outcome directly impacts the fight against AIDS as proceeds of the event are used for the AIDS Research Institute at UCSF and the UCSF Positive Health Program at San Francisco General Hospital. This year, students from the ASID student chapter worked with Fash-ion designer Mondo Guerra, from Project Runway, to design an amazing room with table set for guests to enjoy.

Joan Frank and Wanda Siu Chan presented our prestigious dietetic internship program at the American Dietetic Association’s 2011 Food & Nutrition Conference and Expo. In addition, three former dietetics students, Elena Zidaru (current SFSU Dietetic Intern), Angie Fong (graduate of SFSU and current UCSF intern), and Kirke Byers (graduate of SFSU), presented a poster session on their Experimental Foods (DFM 357) project. The title of the project was “High Vitamin D Soup Prepared with Button Mushrooms Treated with Ultraviolet-B Light.” This poster session was well received at the Expo in San Diego in September. Elena Zidaru was able to attend the conference with the help of an instructionally related activities (IRA) $400 travel award from the university.

We want to congratulate Dr. Sands, on the acceptance of a peer reviewed paper titled “Towards a Model of the Ac-ceptance of Information Technology Learning: The Role of Extrinsic and Intrinsic Motivation” authored by Drs. Brenda Mak, Janet Sim, Hy Sockel, & Billie Lou Sands. The paper has been accepted for publication in the Interna-tional Journal of Information Processing and Management (ISSN: 2093-4009). Dr. Connie Ulasewicz was invited to present a paper at Texas State University’s “Sustainable Product Development and Marketing Forum: Where Fashion Meets Forward Thinking” More information can be found at the following website: http://www.txstate.edu/news/news_releases/news_archive/2011/November-2011/FashionMerch112311.html

The CFS/D department is welcoming a new tenure-track teacher into its family. Terezie Mosby Ed.D, RD, CSP, IB-CLC, LD/N will be joining us in the Spring of 2012. Dr. Mosby has graciously answered a few questions so we can get to know this new professor (see page 4).

Kirke Byers (mentioned above) won a contest for Gastronomica magazine by inventing another word to supple-ment "foodie" in the vernacular. His winning entry was "culinarian." He won a year’s subscription to the magazine, and major bragging rights. Let’s all support this alumnus and help to spread “culinarian” into the vernacular.

1) What is your educational background? My undergraduate degree is in Public Health and Nutrition. I also have an undergraduate degree in Physical Therapy. Both of my un-dergraduate degrees were obtained from the Third Medical School at the Charles University in Prague, Czech Republic. My masters degree and internship were in Clinical Nutrition and were obtained from The University of Memphis, in Tennessee. My doctorate degree in Adult Education is also from The University of Memphis.

2) What are your current work experience/specialties/special skills? For the past eight years, I have been working as a clinical dietitian and pediatric nutrition specialist in the Hematopoietic Stem Cell Transplant Unit, St. Jude Children's Research Hospital in Memphis. I am also a lactation specialist. In addition, I lead the International Outreach Program for Dietitians in the St. Jude Children's Research Hospital that involves training of international dietitians in pediat-ric oncology nutrition. I also conduct research nationally and internationally, and I have been teach-ing various nutrition classes in online and traditional face-to-face settings at the University of Mem-phis and in the Northwest Community College . 3) Where did you grow up and where are you currently living? I grew up in Prague in the Czech Republic. After completion of my undergraduate degrees, I worked in Mexico and Argentina as a dietitian. Then, I moved to Memphis where I have stayed until now. I am relocating to San Francisco, where my parents have been living for the past 20 years. 4) What do you hope to accomplish at SFSU? My passion is nutrition and teaching. I want to contribute to the development of health care profes-sionals in the area of nutrition. I also plan to conduct research in both the clinical and community settings together with my students and to spark their interest in research. Another passion I have is for international outreach. I want to contribute to improvement of women's and children's health by improving the quality of nutrition around the world and by establishing the role of the dietetic pro-fession worldwide by training dietitians internationally. Therefore, I hope to develop in our Depart-ment an international outreach and an exchange program with international internships.

5) Any other personal details you wish to share? I have two teenage boys and I enjoy partaking in their activities. We love to travel throughout the US as well as abroad. Every year we go to Prague to spend some time with our family and friends. I also love nature and animals. We have a cat and two dogs at home.
