That’s notall they offer. After all this talk of tune belting andnacho munching, The Office may seem like yourover-the-top watering hole, a party paradise. Well, it is, but there’s much more to this familyowned and operated business. Jim & RuthLaferrierre want to maintain an environment thatis family-friendly, with a complete children’s menuand healthier menu items like salads, turkey andchicken wraps.

Change isn’t easy. I’m one to talk because I sometimes find myself fighting change tooth and nail. When Iwas an adolescent my parents enrolled me in every kind of camp imaginable. They wanted me to experience asmuch as possible at an early age, as well as keep me far out of trouble during the liberating summer months.
I went to Camp Shiwaka and Camp Wintaka, Video Camp (where I learned the process of amateur movie making), Sports Camp and many other day camps whose names by now have slipped my memory.Some of these camps were held walking distance from my house at Mayfair Park. I loved that park! It waswhere I made a few great friends, grew crushes on some pretty mean boys, and tried my best just to fit in. It’s the place I jumped off high diving boards and socialized, and had my first all-around sense of freedom. I sure did love Mayfair Park, and still do. One year though, the announcement was made that the park wasabout to undergo renovations. The construction would only last a few months. Camp life would resume at the same location, only in a more upscale setting, but I was not ready to accept that change. I remember gruelingemotionally over the sight of torn out benches and the taped off areas where I once sat and ate lunch with my clique. That was probably one of the first signs I’d ever had that adaptation wasn’t my strongest virtue.
The lowcountry is going through some rapid changes these days. Taller buildings and businesses are popping up all over. New people are coming to town and new styles are being fashioned into this once quaint,quiet community. I’m hearing from many that the work days seem to be getting longer, and relaxing nightshave somehow become more intense and action-packed. I’m certainly not accustomed to keeping up with thatkind of engaging nightlife and can find myself feeling quite defeated after a night on the town. More of the cleaning, crafting and creative type, my “lowcountry” home is where I most prefer to be once the sun sets.
I sometimes wonder how friends of mine can go through rapid changes in life’s structure with such ease.Like sliding down a water slide, with all it’s twists, turns and sudden drops then splashing into the bottom pool andjumping up in laughter. That same slide would have me in a panic, weighting myself down to slow my speedand emerging at the end a bit dazed and confused.
Perhaps others don’t take change as openly as I think. Maybe there are those of you just like me who enjoya life of the simple same pace. It’s inevitable though; there is impermanence in everything. Children grow,loving neighbors move, ice cream melts, it’s just a part of life. Summer is slipping away whether we want it toor not. Before we know it September will be at its end and I will have even turned another year older, anotherchange to become accustomed to. For a short time, when someone asks how old I am, there will be that littlepause before I answer. That is when I will have to accept change yet again by turning the “two” into a “three”.Through it all, even though the number of years I’ve been alive will change, I’m still just little old me. I’m thegirl that prefers cute critters to creepy crawlies and Shirley Temples over Long Islands, and some of those thingsI shouldn’t try to change.
Mayfair Park’s renovation was a success. I continued to enjoy the camp activities with my friends, even thoughthe park was no longer the same. It was changed. The change was an incredible one though, as soon as Iaccepted the park as being exactly what it was... new and improved.

he Savannah River i s theboundary between South Carolinaand Georgia. Since the 1732
format ion of the Georgia co lony,this boundary has been a bone ofcontention between those two states.In that year, King Charles II of GreatBritain defined Oglethorpe’s grant asreaching “from the northern stream” of the Savannah River as far south as “the southern stream of the Altamahanear Florida.”
Until 1787, Georgia claimed jurisdictionover the total width of the Savannah Riverbed “from its mouth, along the north sidethereof and up to the most northernstream or fork of said river to its head-source,” and including all the islandsin the river.
General Oglethorpe had forbidden the saleof rum, a major portion of which was usedby South Carolina traders with the Indianson the Savannah River. Georgia officialsbegan to seize South Carolina boatscarrying casks of rum for the Indian trade.
In a June 5, 1736 letter to Lt. Gen. Broughtonof South Carolina, Gen. Oglethorpe wrote:“The persons whom you say are sufferers...have suffered because they brought intothe Province of Georgia goods prohibitedby the laws of Georgia... and taking theIndian trade with the expense of treatingwith the Indians is taking off a burden fromthe Province of South Carolina. The Publickthere have been at all the expense and a few private merchants only receiving the benefits.”
In 1787, delegates of both states met inBeaufort, S.C. and on April 28 signed theConvention of Beaufort “to settle theperennial problem of the upper reaches ofthe Savannah River.” According to thiswriter, they virtually ignored the lowerreaches, from the city of Savannah to theAtlantic. It was there that most futureproblems would arise.
In 1977, S.C. Senator James M. Waddellprotested that maps of the U.S. GeologicalSurvey, showed parts of Oyster Bed Islandas part of Georgia, as well as portion ofJones Island and Barnwell Island 1 and 2.Eventually the Supreme Court handeddown its decision settling the S.C./ Georgiaborder in favor of South Carolina, “endinga legal squabble dating back 13 years anda war of words that goes back more than200 (years),” according to this writer atthat time.

Shrimp Bisque12 ounces shrimp, shell-on1 onion chopped, divided1 carrot peeled and sliced1 stalk celery (with leaves) sliced1/2 cup dry white wine1/2 teaspoon black peppercorns1 bay leaf3 cups water1 tablespoon extra-virgin olive oil4 ounces mushrooms wiped clean and sliced
1/2 green bell pepper, chopped1/4 cup chopped scallions2 tablespoons chopped fresh parsley1/4 cup all-purpose flour1-1/2 cups low-fat milk1/4 cup reduced-fat sour cream1/4 cup dry sherry1 tablespoon lemon juice1/4 tspn saltGround pepper to tasteDash hot sauce
Shrimp and Corn Chowder
DIRECTIONS:In a large pot, heat oil over moderate heat. Add shrimp and 1 tspn ofsalt and cook, stirring frequently until the shrimp are firm, about 5 min.Remove and when shrimp are cool enough to handle, peel andset aside. Add onion, cayenne, paprika, cumin, and 1 tspn of thesalt to the pot. Cook, stirring occasionally, until the onion is translucent,about 5 min. Add Tabasco, squash, cabbage, potatoes, corn, andwater to pot. Cover and bring to a boil. Reduce heat and simmer,partially covered, until potatoes are tender, about 15 min. Add creamand simmer for 10 min. Stir in the shrimp, remaining tspn of salt,and peas. Cook until shrimp are just heated through, about 2 min.

seeded & cut into 1-inch cubes
1/2 small head green cabbage (about 1-1/4 pounds), chopped (about 1 quart)
1 pound baking potatoes (about 2),peeled & cut into 1-1/2-inch chunks
4 ears of corn, halved2 quarts water1 cup heavy cream1 cup frozen peas

DIRECTIONS:Peel & de-vein shrimp, reserve shells. Cut the shrimp into 3/4-inch pieces;cover & refrigerate. Combine shrimp shells with about half the onion,all the carrot, celery, wine, peppercorns & bay leaf in a large heavysaucepan. Add water & simmer over low heat for about 30 min.Strain through a sieve, pressing on the solids to extract all the juices;discard the solids. Measure the shrimp stock & add water, if necessary,to make 1-1/2 cups. Heat oil in the same pan over medium heat.Add mushrooms, bell pepper, scallions, parsley & the remaining onion.Cook, stirring, until mushrooms are soft, about 5 min. Sprinkle withflour & cook, stirring constantly, until it starts to turn golden, 2-3 min.Slowly stir in milk & the shrimp stock. Cook, stirring to loosen anyflour sticking to the bottom of the pot, until the soup returns to asimmer & thickens, about 5 min. Add reserved shrimp & cook untilthey turn opaque in the center, about 2 min more. Add sour cream,sherry & lemon juice; stir over low heat until heated through—do notlet it come to a boil. Taste & add seasonings; salt, pepper & hot sauce.
