In understanding the basics of wine you will steer your palate into choosing what you love. The best way to learn about your taste is to classify wines by their fundamental traits and then pick what you like from there.
To understand the basic characteristics of wine it’s important to learn how to taste wine. Learning to identify wine characteristics helps to identify what you like about a wine.
Wine descriptions are determined by:Sweetness: To sense its level of sweetness, focus
your attention on the taste buds on the tip of your tongue. Simply, if your tastebuds are tingling– is an indicator of higher level of sweetness.
Acidity: Acidity in wine comes across as tart and zesty. Tasting acidity is often confused with the taste of higher Alcohol. It is common for wines that have been grown in cooler regions to have higher acidity. Wines with higher acidity feel lighter weight because they come across as ‘spritzy.’ If seeking a wine that is more rich and round, you
enjoy slightly less acidity.Tannin: Tannin is a compound found from the skins and
seeds of grapes that produces a drying effect in the mouth. Depending on the amount and nature of wine’s tannin, you can describe a red wine as astringent, fi rm, or soft. Most importantly, tannin adds balance, complexity, structure and makes a wine last longer.
Fruit: Wines are often characterized by their main fruit fl avors. Tasting for fruit fl avors in a wine can help you better defi ne your preferences. For instance, wines that have plum or rich fruit notes lead into a very different variety than enjoying wines that taste like raspberries. In addition, the level of fruitiness that you taste in a wine leads to very different growing regions.
Body: Body is the weight and fullness of a wine that can be sensed as it crosses the tongue. Typically, a full-bodied wine will tend to have a lot of alcohol, concentration, and glycerin than a lighter body wine.

Moroccan spiced carrot soupServes 42 tbsps olive oil1/2 large white or yellow onion, chopped1 pound diced carrots1 1/2 tsps ground cumin1 1/2 tsps ground coriander1 tsp cinnamon1/8 tsp ground allspice2 1/2 cups low-sodium chicken broth1 tbsp honey2 tbsp sherry (optional)1 tsp fresh lemon juiceSalt and pepper, to tastePlain Greek yogurtGround coriander, for garnishFresh cilantro, chopped, for garnish
1. Heat oil in a pot over medium-high heat. Add onions, carrots, cumin, coriander, cinnamon and allspice, and sauté for about 2 minutes, until the vegetables start to become soft and spices release their fragrance. Add the broth, bring the mixture to a boil. Reduce heat to low, simmer until the carrots are tender, about 20 minutes.
2. Remove soup from the heat, take out the cinnamon stick (if using) and purée with an immersion blender or in a food processor or blender. Return puréed soup to the pot and stir in the honey and lemon juice, and season with salt and pepper. Reheat soup over medium-low heat, if needed, stirring occasionally to prevent the bottom of the mixture from burning.3. Ladle soup into bowls, spoon a little yogurt on top of each serving and sprinkle coriander and cilantro over them.
Perfect for fall entertaining!
