Hugh E. Weathers Commissioner A Dirt Farm? As I travel all over South Carolina, I’m always running across new and interesting ventures in agriculture. This one that I have to share with you comes from the Low Country. Last month the SC Ag Council took a group of folks down to Johns Island to visit Dirt Works Incubator Farm. If you’re not aware, the Ag Council, which is dedicated to the promotion of our state’s agriculture, does a great job of educating its members. In addition to quarterly lunch meetings (with great food!), they also sponsor two exceptional tours which are open to the public. Membership is open to anyone who is interested in agriculture. Regarding the visit to Dirt Works, you’re probably wondering what an incubator farm is. Some folks asked if they were raising poultry, having “incubator” in their name. But what they are doing is educating new farmers. This exciting program called “Growing New Farmers” is the first of its kind in the state. Historically, the next generation of farmers has been those who grew up on farms to become farmers themselves. But as many of those children left the farms for other careers, that left a gap in the knowledge pool. With farmers aging (the average age of a South Carolina farmer is 57), the old ways are in danger of becoming lost. Growing New Farmers is a three-phase program that teaches people—men and women, young, middle-aged, and older—how to be successful farmers. When you think about it, they’re cramming a lifetime of knowledge into just a few years. Weatherman Jim Gandy saw a need to help peoplecope with rising food prices by teaching them howto garden. Naturally, the station executives soughtout the help of the SC Department of Agriculture.

Weatherly Thomas, Executive Director of theSC Fruit, Vegetable and Specialty Crop Association,planned and built the garden for the news station.

“They wanted to go great guns right from thebeginning, so I built eight raised beds for them, six8x4’s and two 4x4’s. We planted a traditional

Southern summer garden with tomatoes, okra,squash, zucchini, cucumbers, watermelon, sweet andhot peppers, green beans, eggplant, corn and herbs.”

Gandy is new to gardening but is learning fastwith Thomas’ help. “He’s excited to get his handsin the soil and see things grow. 1 package ready bake sugar cookie dough½ teaspoon cinnamon½ teaspoon sugar1 teaspoon vanilla extract1 teaspoon melted butter2 cups confectioner’s sugar8 oz. Cool Whip

Roll out cookie dough onto floured surface.Press into pan form or place onto flat pizza stone.Mix cinnamon, sugar, vanilla extract and meltedbutter. Brush onto cookie dough. Bake accordingto directions. Remove from oven and allow tocompletely cool.

Mix confectioner’s sugar, cool whip, and creamcheese together. Spread evenly over top of cooledcookie dough.

Gently toss sliced peaches in lemon juice, and

1 large package cream cheese2-3 cups fresh SC peaches, sliced2 tablespoon lemon juice½ package peach flavored gelatin2 ½ tablespoon cornstarch¾ cup sugar¾ cup waterarrange over pizza.

Place pizza in refrigerator while makingtopping.

In a heavy saucepan, combine half package ofpeach gelatin, cornstarch, sugar and water. Bringto a boil over medium heat and whisk untilslightly thickened. When cooled, pour over top ofpizza.

Keep cool until served. May garnish with freshmint, if desired.

1 pint package. frozen sweetened peaches (fresh peaches can be used)

1 1/2 cup cold pineapple juicePlace peaches in blender, add pineapple and

lemon or lime juice. Blend until peaches arebroken up. Add ice and blend to thick icy

1 tablespoon lemon or lime juice1 cup ice cubes1 cup cold gingeraleconsistency. Add gingerale and blend. Serve withmint leaf and a fresh peach slice. Yield six 8 ouncecups.

1 can sweetened condensed milk4 ounce container refrigerated

non-dairy topping, thawedFold together milk and topping. Add lime juice.

Fold in watermelon balls, reserving about 5 ballsfor garnish. Pour into graham cracker crust.

1/4 cup lime juice2 cups watermelon balls1 9-inch graham cracker crustPlace remaining watermelon balls on pie togarnish. Chill for 2 more hours before serving.

One is the most important components is the 10-month apprenticeship that stresses classroom and fieldtraining. Located on the old Walnut Hill Plantation, the program allows each of the 20 or so apprenticesto learn whether they have what it takes to become farmers. According to Nikki Seibert, the directorof Sustainable Agriculture and our hostess for the day, the new small farmers are learning to grow theirown crops.

They can choose what theywant to plant, and eachapprentice is paired witha mentor—an experienced,successful farmer—who givesthem advice. During lunch weheard one of the apprenticefarmers grumbling that hismentor “is always telling meI’m doing things wrong.” Mightbe a little frustrating to hear that,but the lessons are a whole lotless expensive this way.

After a successfulapprenticeship, the buddingfarmer can apply to work on theincubator farm. Instead of acubicle and a computer, each ofthe six Dirt Works farmers getsan acre and a half and a tractor,Nikki explained.

The new farmers learn how to prepare the ground, measure the rows, use mulch, set up drip irrigation,and plant their seed. Since Dirt Works uses organic practices, they learn about natural pest control andfertilizers. On the day we visited, several apprentices and incubator farmers—some of them not soyoung—were laboring on their plots, weeding, mulching, staking and getting ready to harvest some earlyproduce.

The great thing about this program is that Dirt Works provides the land, tractor, infrastructure,supplies, and a start-up plan. The training doesn’t stop with growing the vegetables—or chickens, ordairy goats, or herbs, or whatever they have chosen—but also teaches the farmers how to market theirproducts. They learn about post-harvest handling and transportation, as well as the financial aspectsof agriculture.

Dirt Works has a modern packing shed with refrigerated units that can handle just about any typeof produce. The new farmers also learn how to deal with customers. As Nikki pointed out to the class,no matter how proud they are of what they have grown, it’s what’s inside the sample box that sells.

At the end of three years, each graduate can receive advice through the Farm Land-Match programon either purchasing or leasing land of his own.

Growing New Farmers, now in its fourth year in South Carolina, has graduated 95 people. While theyhave applicants from all over the country, they want people who will stay in our state after they finish theprogram. We are very pleased that this program is available in our state. As it succeeds in producing newfarmers, the future looks even brighter for sustainable agriculture.
