 ALBONDIGAS CON SALSA DE PEREJIL:

MEATBALLS WITH PARSLEY SAUCE RECIPE

This Spanish dish or iginates in the Balear ic Islands of theMediterranean.

Ingredients

1 yellow onion

2 cloves garlic 

2 lbs. lean hambur ger 

1/4 cup par sley

4 slices bacon

1/2 cup (approx) bread crumbs for coating 

1 to 1 1/2 cups vir gin olive oil for frying 

1/2 cup flour 

1 cup bread crumbs 

4 cups beef broth 

4 spr igs f inely chopped par sley for sauce1/3 cup f inely chopped walnuts

It serves six to eight people for a family main cour se dinner!

1 whole chicken or 10-12 boneless, skinless pieces of 

thigh or breasts cut into pieces 

1 handful of bread crumbs 

1 clove garlic, peeled

1 yellow onion

2 spr igs of Italian par sley

2-3 threads saffron

1 cup white wine

1/3 cup olive oil (approximately)

salt to taste

MADRID BEEF STEW RECIPE

This Spanish beef stew recipe is from the Madr id region in central

Spain.

Ingredients

1 yellow or white onion

4 cloves garlic 

2.2 lbs (1 kg) veal or beef (stew meat cut into chunks)

4-5 Tbsp (approximately) flour for coating meat5-6 Tbsp Spanish vir gin olive oil

2 bay leaves 

20 whole black pepper corns 

1/2 tsp thyme

1-2 par sley stems 

2 cups (500 ml) white wine1 Tbsp red wine vinegar 

1 lb (500 gr) potatoes 

1 sweet green pepper 

2 cups (500 ml) Spanish vir gin olive oil for frying

1/4 cup Spanish vir gin olive oil

1 medium-size yellow onion

2 cloves garlic

1 Spanish chor izo sausage

1/2 red bell pepper 

1 tsp Spanish smoked papr ika

1 24 oz can crushed tomatoes

1/2 lb. dry penne, macaroni or spaghetti noodles

This dish  contains 4 servings.

CHULETAS DE CERDO A LA MADRILENA

This traditional recipe is from Madr id, Spain.

ENSALADA MIXTAThis ³ensalada mixta´, is very popular in Spain. Especially for ³cina´

Ingredients

1 head Icebur g or Romaine lettuce

2 tomatoes, cut into 8 pieces

1 cucumber s, peeled and sliced

1/2 cup green olives, stuffed with anchovies

1 can (approximately 15 oz) white asparagus

1 red or yellow pepper , sliced in long thin str ips

1/4-1/2 yellow or red onion, sliced thin

1 carrot, grated

1 6 oz can tuna, drained

2 hard boiled eggs, peeled and cut into quarter s 

red wine or sherry vinegar extra vir gin Spanish olive oil

salt to taste

Optional:

1 15 oz can baby corn, drained

1 15 oz can artichoke hearts, drained

WHITE GARLIC SOUP RECIPE - SOPA DE

AJO BLANCO

This is a quick, easy, and tasty recipe for a garlic  soup that everyone

will love.

Ingredients

4 oz (1/2 cup) blanched, peeled almonds

3-4 slices stale baguette or white bread3 cloves garlic

4 cups (32 oz) water 

5 Tbsp extra vir gin Spanish olive oil

3-4 Tbsp Spanish sherry vinegar 

16-20 seedless green grapes (optional)

salt to taste
