-Look for rice/veggies/tofu dishes -If brown sauce, ask if vegan (sometimes sauces contain fish byproducts) -Ask if pad thai is vegan -Rice noodle & veggie dishes are often vegan -You can pair tofu with all sorts of sauces, and then add extra flavors by ordering sides of vegetables, rice or noodles. Some great dishes are kung pao/po tofu, tofu with ginger and spring onion, tofu with garlic and black bean, tofu with satay sauce, sweet and sour tofu, tofu with cashew nuts, tofu with chili/hot and spicy tofu, and tofu with broccoli and black bean and/or garlic -Stir fried vegetables and Chinese vegetables are always an easy vegan option, and you can usually specify which sauce you’d like to go with them. Oyster sauce is popular with Chinese vegetables so make sure you check what sauce it automatically comes with if not listed on the menu. -Most noodle dishes can easily be made with rice noodles instead of egg (if you are not sure from the menu, ask) -Vegetable spring rolls, veggie dumplings – both fried and steamed – are standard appetizers that you’ll find in almost all Chinese restaurants and are happily vegan

-Look for vegetable curries without milk products -Vegetable biryani, chana masala & vegetable samosas are often vegan (ask to be sure) -Poppadom/papadum, chapatti, puri/poori and rotti are vegan if ordered without butter -In terms of starters, onion, cauliflower and okra bhajis, vegetable samosas and vegetable pakoras are all vegan -Veggie vindaloo, sambar, vegetable biryani and balti are all great main options -The majority of the sides tend to be veggie-packed; saag aloo, aloo gobi, tarka daal, daal, chana saag and Bombay potato are all filling and flavorful dishes

-A lot of Mexican staple foods are actually vegan -Enchiladas, tacos, chimichangas, burritos and quesadillas can all be made vegan. Simply pick the vegetarian option – roasted veggies, veggie chilli, beans – check how it’s cooked, and then ask for no cheese and sour cream, but extra salsa, beans, guacamole, etc. -Take the time to explain to your server that you don’t eat any dairy or animal products, and the process should be relatively smooth -Guacamole should be vegan but ask just in case (some guac mixes contain milk products)

-Plenty of vegan options here -Be sure to specify that you don’t consume animal products (some foods are prepared in fish sauce) -Most tofu and veggie dishes are vegan -Traditional thai dishes that are often vegan: veggie spring rolls, veggie salad salad rolls, fried tofu, mushroom/vegetable soups, thai salads, curries, glass noodles, rice noodles, pad thai, veggie/tofu stir fry, etc. -Always ask to be sure, as cooking methods differ across restaurants

Easy Plant-Based Transition Tips
(So Good One Day You May Say “Oops! I’m Accidentally Vegan!” ☺ )
• Go at Your Own Pace
o Whether you’re comfortable starting with trying one new vegan recipe a week, jumping straight into being
vegetarian, eating VB6 (Vegan Before 6PM), or anything along the spectrum, do what feels right for you
• Create a food diary for 10 days
o Write down everything you eat for 10 days
o Start to explore how you can transform your favorite dishes into plant-based versions by:
• Google “vegan” before the name of your favorite dishes to find recipes and tips for substitutions
• Begin phasing out meat, dairy and eggs from your meals
o Try substituting plant-based meats and cheeses into your favorite meals
o Try making one new 100% plant based recipe at home per week (if that’s too often try every other week)
o Try increasing the number of 100% plant based meals you make each week over time
• Try new plant-based foods at the grocery stores, restaurants and in recipes
o Aldi, Lucky’s, Kroger, Giant Eagle and Walmart all have a multitude of vegan options
• Find supportive people

o Get free mentoring through CVC which could include:
• Texting with a mentor
• Meeting mentor at grocery store to find vegan options
• Practicing cooking vegan meals with mentor (at your house or theirs)
o Attend free local vegan events to try new foods and build relationships with like-minded people

• Try to eat plant based proteins at every meal (beans, peas, lentils, nuts and seeds)
• If motivated by health:
o Try to cover approximately ½ of your plate at each meal with fruits and vegetables
o Try to eat non-processed carbs (oats, brown rice, millet, quinoa, starchy vegetables & wheat)
o Try to eat omega 3 fatty acids daily (found in chia seeds, flax seeds, hemp seeds)
• When possible: grind whole seeds into a powder form using a blender/coffee grinder and add to
smoothies/meals as this is more healthful than purchasing pre-ground items
• Note your caloric intake
o Plant foods tend to have much fewer calories than animal-based foods. For example, a black bean patty has
around 100 calories and a beef patty has 200 calories. You will need to eat a greater volume of food to meet
your caloric needs. One tip is to make sure you’re eating whole grains, starchy vegetables (potatoes, sweet
potatoes), and legumes (beans, peas, and lentils) because these are higher in calories.
Easy Plant-Based Transition Tips Continued:
• Take a vitamin B12 supplement
o Vitamin B12 is made by bacteria which are naturally present in drinking water and in soil. However, because
of our sterilized modern environment it is now necessary to supplement this vitamin. Vitamin B12 is also
found in animal products; however, today even those animals are given vitamin B12 supplements because
their feed does not contain enough naturally occurring vitamin B12.
• Types of Plant Milks to try in recipes, cereal, smoothies
o Found at any chain grocery are milks made from: soy, flax, cashew, rice, almond
• Ripple is the only pea protein milk we recommend
• Silk, Almond Breeze, and Good Karma are good brands
• Try Tofu at Restaurants!! If you like it, start making it at home
o Tofu is AWESOME, versatile and cheap! If you like it, it’s a good thing to learn to make at home. It is very
bland until you season it and then it sucks up the flavors you season it with.
o Try tofu at Bibibop in a bowl (this tofu gives you an idea if you like extra firm tofu)
o Try tofu at Chipotle. The sofritas option at Chipotle is tofu which has been seasoned.
o Pro Tofu Tip: Invest in a Tofu Press if you like tofu at the restaurants! It’s $20 and totally worth it! A good
brand on Amazon.com is “EZ Tofu Press”
o Pro Tofu Tip to make extra extra firm: put tofu in freezer overnight. Thaw in fridge the next day or quick thaw
by running it under hot water. Then use Tofu Press. This helps get out the maximum amount of liquid (freeze
and thaw up to two times before preparing for the ultimate firm tofu).
