Donatella’s hit the high street! When H&M announced

its latest designer collaboration earlier this year, we

knew it would be the best yet. With the House of

Versace on board, it’s full-throttle glamour all the way,

and the new collection for H&M – just released a few

days ago – is about as close to couture Versace as you

can get... but without the hefty price tag.

Versace’s collection for H&M is full of the pieces that have made the house of

Versace legendary. Dominated by colour, print and cut, the brand’s creative

director Donatella Versace has gone back to the archives to bring some Versace

classics to a whole new audience. Iconic dresses are the focus of the women’s

collection, while menswear is centered on sharp tailoring. And, for the first

time, an H&M designer collaboration includes homeware pieces, reflecting

Versace’s influential home designs.

No wonder the collaboration caused queues to snake out of the H&M store

on the first day it became available. Instantly recognizable, Versace designs

are flamboyant and glamorous, without ever losing sight of the important of

tailoring: the women’s dresses flatter curves and the men’s shirts sit close to the

body, tapering at the cuffs and waist. Versace, for so long loved by the A-list,

has created a high street collection for H&M this winter that plays close to its

roots: each piece is a Versace statement, through and through.

“The collection for H&M is the essence of Versace” confirms Donatella. “For

the collaboration we’ve brought back from the archives, as well as from more

recent collections, some of the icons of Versace such as the bright prints, the

Greek key and daring cuts. I can’t wait to see how H&M’s wide audience will

make these pieces their own.”

Margareta van den Bosch, creative advisor at H&M, told us: “Versace’s

collection for H&M is a moment in fashion. It is full of strong pieces that stand

out, with colours, prints and cuts that are clean and precise. The women’s

collection is flattering and full of dresses, while the men’s collection is very

sophisticated. When I think about Versace I think of iconic items. With this

collection for H&M we’ve got the essence of Versace.”

Jennifer Lopez, Sarah Jessica Parker and Lady Gaga are all fans of Versace

couture, the latter recently enjoying a private tour of the Versace archives with

Donatella Versace as her guide. In fact, Donatella recently revealed that seeing

Donatella’s hit the high street! When H&M announced

the vintage Versace designs through Lady Gaga’s eyes – and witnessing

her excitement at the priceless collections – inspired the Milan-based

design legend to create the H&M collection, and fill it with nods to Versace

signature motifs.

The result is that Versace’s collection for H&M includes many of the iconic

designs. For women, a classic black silk crepe dress has gold Grecian

buttons on its patent straps, while the flow of a floor-length goddess gown is

balanced by boning in the bodice. For night-time shine, multi-colour sequin

dresses are covered in archival Versace prints, short metallic dresses come

in either silver or gold, and strong colour shift dresses are embellished with

studs in classic Greek motifs.

They’ve revisited some of its most famous prints, which for women are used

on collector’s item pieces such as dresses, short pleat skirts, velvet bomber

jackets, leggings and jeans. Meanwhile, the importance of leather for

Versace is reflected in leather jackets that come decorated with gold studs

and zips. Accessories include a high-heeled laced boot and a studded suede

high-heeled sandal, along with studded leather bags as well as velvet bags

covered with the Miami palm print.

It’s not just the women either: the label’s heritage, from its origins with

creator Gianni Versace who sadly was murdered in 1997, is firmly rooted in

super-glam menswear (celebrity fans include Elton John and David Furnish,

George Michael and Robert Downey Jr). The new high street Versace men’s

collection is a mix of slick tailoring and pieces of extravagant pattern. Suit

jackets and trousers come in either black or pink, while a black tuxedo jacket

has metallic tip trims on its pockets, and shirts have metallic wing-tips on

the collars. Versace’s palm and optical prints are used on T-shirts, as well as

on thin-knit cashmere sweaters, while print is also used on velvet bombers,

jeans, and even swim trunks.

There’s leather in the men’s collection too, with a quilted leather jacket

trimmed with gold studs in the Versace classical Greek pattern, which is

repeated down the sides of black

cotton shorts and a rolled-sleeve

T-shirt. Accessories include

embellished beanies and

patterned caps, embellished or

print scarfs, hi-top sneakers and

the perfect dress shoes.

There’s even a homewear

collection for H&M, echoing the

hugely successful homewear

range in the main couture line.

Taking full advantage of the

house’s iconography, there

are pillows and a bedspread

resplendent in the multicolour

floral Japanese fan print,

bringing the complete Versace

lifestyle to H&M.

Versace for H&M is now in store at

H&M in Bullring

Uma Thurman, Blake Lively, Chace Crawford, Jessica Alba, Jennifer

Hudson and Selma Blair were among the guests who joined Donatella

Versace at a specially designed building on NYC’s Hudson River. Guests

entered the world of Versace from the moment they set foot on the red

carpet: the catwalk was paved with gold, and the show was followed by an

after-party which featured exclusive performances by Donatella’s special

guests, Prince and Nicki Minaj.

Verdict from the A-listers? “I think it is so exciting for Versace to be made

available to everyone. The collection is cool, colourful, young and very

hip. I couldn’t wait to see the show,” said Uma Thurman. “I am such a

fan of Versace, Blake Lively told us. “The fits for a woman’s body are

incredible. I’m also a huge fan of H&M. To have Versace at H&M is the

best.” Selma Blair loved the evening, adding “Versace is so incredible and

so glamorous. For kids to be able to buy it is wonderful. Donatella is an

amazing woman.”

1 6STYLE EXPERT

This year, the autumn/winter collections are inspiring and confident. This season’s trends nod to the 1960s and 1970s through to the present day, with sleek modern silhouettes and a contemporary use of colour. Inspired by the 60s and 70s, this season will see anything from retro floral prints to houndstooth hit the fashion agenda.

In casual weekendwear, this winter we’ll see knits meet denim with a ‘Fjordic Heritage’ influence; a confident and colourful trend with no limits. Layering is integral to this style, with the focus on soft cashmeres, cable knits and trimmed sheepskin.

Getting ready for party season? The party collections are absolutely stunning this Christmas; at House of Fraser, we’ve chosen gorgeous pieces from jaw-dropping floor-length gowns to edgy leather dresses.

Accessories are a key factor in dressing for party season. From work drinks and girls’ nights out, to family gatherings and more sophisticated affairs, there’s an outfit and accessory to suit every taste and every budget. Glitter and sparkle reign supreme across sequin playsuits and dresses for the girl who likes to party. Hem lines are high and so are the heels, with statement looks

designed to make an impression. Elsewhere, fitted shift dresses

and jewel-coloured maxi dresses provide a grown-up,

chic alternative. Luxurious faux fur coats finish the

chic seasonal look and also serve to keep the winter chill at bay.

Exclusive to House of Fraser, BIBA is one of the hottest occasionwear destinations this season. Inspired by the red carpet, choose a one-shoulder goddess gown in a stunning snakeskin print or eye catching shade of metallic blue to flatter a truly feminine silhouette. For something more relaxed and adding a fashion edge to the collection, opt for the black silk and beaded Twenties-

inspired flapper dress or a rich red tunic with gold embellishment.

Beaded and bejeweled evening clutches from Lulu Guinness, Michael Michael Kors and Wilbur & Gussie will ensure your party look is complete, along with show-stopping

footwear and stunning jewellery from an array of brands.

Finding the perfect outfit can be daunting, and for some, the thought of dressing up for Christmas parties can be a dread. If that sounds familiar, why not invest in a free session with a personal shopper? They can help you identify your style, and find an outfit that perfectly fits your needs. At House of Fraser, our personal shopper is always happy to help customers find a style which works for them and works within any budget and for any occasion.

Harvey Nichols Birmingham certainly threw a tenth birthday party to remember. The luxury store turned The Mailbox into the most fashionable big top when it celebrated a decade in the city with a circus-themed evening.

Boasting an eclectic guest list, the party saw stars from the small screen, music and sport all dressed uber glam to mark the milestone anniversary.

VIPs included Alexander Burke, Danielle Lloyd, Nikki Sanderson, Layla Monoochehri, Aisleyne Horgan-Wallace and The Only Way Is Essex stars Joey Essex, Cara Kilbey and Billi Mucklow.

Footballers Lee Hendrie, Darren Byfield, Matt Murray, Ishmael Miller, Zat Knight, Nigel Reo-Coker, Charles Nzogbia and Matt

Jarvis enjoyed the party alongside Aston Villa Manager Alex McLeish and Terry Connor from Wolves.

They were joined by more than 500 guests from media, fashion and business from around the city to be entertained by stilt walkers, fire dancers, contortionists, a caricaturist, mime artist, escapologist, magician and tarot card reader, as well as Britain’s Got Talent semi-finalists Peridot Dance Troupe.

Tricks and treats included a designer fashion show, wall of mirrors, circus-themed dress-up box and music courtesy of DJ Collin Francis. Guests were served Perrier Jouet Champagne to complement mini hot dogs, cheese burgers and fish and chips, followed by toffee apples, ice creams, candy floss and popcorn.

Clockwise from left: face-painting; the catwalk show; TOWIE’s Joey Essex; a circus performance artist; Adee Phelan and Sarah Longbottom; Alexandra Burke; TOWIE stars Billi Mucklow and Cara Kilbey; Danielle Lloyd

I’ve just created my own range of shoes and boots for Clarks. Why? You get to an age when what you want from a shoe changes. You want comfort. You still want fashion, but more importantly, you want comfort. The problem that we have at the moment is that you cannot get the two on the high street; you have to pay designer prices. What we’ve done is we’ve created really fashionable shoes with added comfort. It’s not rocket science but it’s simply what women want.

Clarks is the best shoemaker in the world, and it’s British. They are obsessive about making comfortable shoes. When I was working with them, it was amazing to see their processes. There was a huge sense of respect between the two of us. They really wanted to push the fashionable factor of the shoes, but in no way compromise on the comfort.

I’ve chosen on-trend colours of aqua, black, bright pink, red and leopardprint. They will be seen all around the high street this winter. My partner (Grazia fashion editor-at-large Melanie Rickey) lets us know what colours are in as soon as she knows. She was on a train going to the Alexander McQueen show this year and she was sending us the colours so we knew in advance. We’ve got some great McQueen-influenced colours coming through.

We’re about to make your Christmas shopping a hundred times easier this year! Style Renaissance at The Mailbox is giving Birmingham fashionistas a great new place to add to their favourite shopping hotspots! From finding the perfect gift for a loved one to discovering something fabulous to wear for the fast-approaching party season, Style Renaissance will definitely leave you spoilt for choice, right up until the end of the year.

Split into seven sections, here’s a taster of what’s on offer:

STYLE CLINIC: Learn from those in the know. Dedicated style advisors will help you take the legwork out of shopping and use their knowledge of the latest trends to pick the perfect look. Not only that, visitors get the chance to shop the new season collections from the featured fashion, jewellery and accessory labels. Who’s there? Expect to find Pastiche Couture, the UK’s number one supplier of opulent prom dresses, as well as striking celebrity-influenced dresses. Check into Style Clinic The Boutique, where image consultants offer style, colour and shape advice to women of all ages.

INNOVATIVE BEAUTY: Confused by the latest skincare advances? Want

to catch up on the new cosmetics trends? Mailbox experts certainly have their fingers on the pulse when it comes to the beauty breakthroughs. There’s a wealth of advice and new products in the beauty centre, and tempting goodies too. Fancy a treat? Made in England, Ruxx uses the finest leather and finishes to create its selection of leather backpacks and rucksacks. The brainchild of designer Sarah Ward-Hendry, the bags combine luxurious materials, head turning designs and practicality. Hard to resist is Nancy Pop, who joins Style Renaissance from Notting Hill. She specialises in statement pieces for women as well as

showcasing collections from up and coming designers.

HOME STYLE: Pick up essential tips from a professional interior designer, who can guide shoppers through the new season trends for the home. From bespoke furniture to Christmas decorations, there is plenty of inspirational gifts and accessories on sale too.

JEWELLERY BOX: Step inside to discover a must-have range of opulent pieces that will go straight to the top of anyone’s Santa wish-list. Pick up some great advice on jewellery and gems, and enjoy the chance to splash out on a fabulous statement piece. We love Julia Burness Jewellery: with a nod towards creating environmentally-friendly pieces, Julia creates stunning metallic lace jewellery using gold from Fairtrade mines and recycled silver. She works

closely with clients to create individual and

stunning items. Fluid By Designs craft one-off designs, the handiwork of jewellery designer Sarah Clarke, and you’ll want to snap up the work of Angeli Yara, a Columbian designer of

bespoke pieces. Want even more

choice? A host of amazing new jewellery designers have just arrived at Style Renaissance: we love the work of Ana Ostrom, Christine Davies, Julia Davenport, Rhiannon Lewis, Mikaela Black and Le Vita Couture.

STYLE CENTRE: A treasure chest for trend-setters, the marketplace features an impressive selection of designers, vintage and couture fashion, millinery, costume jewellery and lavish gifts. Homeandkids.com has a range of gorgeous gifts and eye-catching interior items, showcasing a wide selection of designs from across Europe. Many of the pieces on sale are from collaborations with local artists.

Also in the Style Centre, you’ll find E-Vintage: this company stocks a must-see collection of distinctive vintage garments and accessories, handpicked from across the globe and spanning the decades. All the items are in great condition and date from the 20s through to the 70s … perfect if you’re rocking this season’s retro trends.

THE GENTRY: The guys don’t need to feel left out, with a dedicated area highlighting up-to-the-minute men’s fashion and grooming. Personal shoppers and style

From luxury fashion and handmade jewellery to quirky

gifts, Style Renaissance is a shopping treasure trove,

Rosie Ginday, 27, pastry chefBurberry Prorsum’s collection for autumn/winter included touches of understated greens, and Rosie’s cap-sleeve dress gives a nod in that direction, while a statement gold belt and chunky bangles bring light to the dark shade of the dress.

Elise Richards, 35, nail technicianIf you can’t make up your mind what to wear, the one item you can always rely on for any evening out is your little black dress. Elise has made the most of her shift dress by continuing with black throughout the rest of her outfit, but adds a flash of cream with her shoes. Simple, but chic.

Gurpeet, 30, cardiac physiologistDonna Karan’s Collection for autumn/winter featured an abundance of grey pieces, and Gurpeet’s shiny grey dress picks up on this trend beautifully for the party season. She’s Christmas-ready with the embellishment on the front of the dress, which is reminiscent of snowflakes.

Caroline Bannerton, 28, mortgage advisorProenza Schouler covered their dresses in native patterns on this season’s catwalk, swiftly kicking off a trend for tribal prints. The coloured sequins on Caroline’s dress give the Navajo-inspired graphics an eveningwear spin. If you want to stand out from the crowd but still be on trend this winter, embrace your inner Pocahontas and go native!

True blue

Various hues of blue were blended into the outfits on Jil Sander’s runway this season. Sharon’s vibrant blue dress is cleverly contrasted with cream cut-out panel shoes that tie in bows at the back, and a grey flowered handbag. She’s completed the look with a glam slam of red, using lipstick and nail polish.

Leanne Cook, 36, nurse specialistLeanne’s shift dress features a cinched-in waist with triangular colour blocking, giving an art deco spin to the dress. She has accessorised the outfit with silver detail on her bag and shoes and has added silver jewellery: don’t forget that it’s time to shine during party season!

Louise Billingham, 36, programme managerDolce & Gabbana, Chanel and Ralph Lauren incorporated dark, masculine tailoring into their offerings for autumn/winter, which is good news if you’re a trousers girl at heart. Cover your pins with pride during this party season, but be sure to keep things feminine like Louise has here, with her shimmery cream top and leopardprint detailed shoes.

Melanie Townsend, 45, solicitorMelanie’s chic shift dress is a bold take on the monochrome trend, which was championed by Yves Saint Laurent this season with houndstooth and plaid patterns. With its large, chain-link detailing, this dress is an elegant, striking alternative to embellished and brightly coloured eveningwear.

Kara Wilcox-Pates, 31, chartered accountantComplemented by a matching art-deco clutch, Kara’s peacock blue evening gown is on par with Gucci’s jewel-coloured dresses for this season. Look for rich, bright colour and shiny fabric for maximum wow factor this winter.

sarah giles, 35, account executiveThe bigger and bouncier your coat is this season, the better. Gucci’s autumn/winter collection was full of oversized, brightly-coloured furs, and Sarah’s coat - teamed with her silver Jimmy Choo’s and little black dress - is a modern Hollywood glamour fix and a perfect evening cover-up against the winter chills.

‘BEAUTY IS AN ADVENTURE’Australian-born skincare guru Sue Devitt (top right) shares her secrets

‘I’m a make-up artist, and I love what I do. I’ve worked with a lot of celebrities including Jennifer Lopez, Kim Cattrall, Sandra Bullock, Katie Holmes and Claudia Schiffer and my mantra is ‘beauty is an adventure’. I travel a lot, and the one item that I have with me at all times is my Microaquatic Oxygen Infusion Masque £28.50. Travelling between different time zones can cause harmful toxins to build up in the skin and this immediately refreshes, revitalises and decongests the skin. My products are simple. You don’t need a complicated routine to give your skin the best treatment. Start with a good SPF - I always use SPF 50 - and a liquid foundation to match your skin tone. You want to improve your skin, not cover it up. You are who you are. Don’t distort your natural beauty. It’s a crime.’

The Sue Devitt range is available in Harvey Nichols Birmingham.

4 0STYLE EXPERT

I love all the colours in my new

Lasting Finish Collection, but I

have to say my favourite shade is

the red, shade number 1. I just really

like a red lip.

I chose colours that every woman

could wear. I would describe these

shades as easy to wear. I wanted

colours that are classic, ones that I

have always worn and to suit every

occasion. There are some for day

with a mix of beiges and pinks, and

for the night the red and darker

colours. There is a shade for any

occasion.

I looked to my own make-up

collection for inspiration. From

the start, the inspiration was for

classic shades that I have always

worn and had in my handbag.

There is a small selection of shades

I always go back to and I wanted

this range to reflect that as they will

never go out of style. The packaging

is black and just really cool and

matt. I really wanted to keep it

simple, nothing too bling. I was

inspired by the type of packaging I

have always liked.

In lipstick, comfort is everything.

What I really love about this range

of lipsticks is they do not feel like

lipsticks. I really hate that heavy

lipsticky feeling you can get on your

lips when you first apply it. This

range is not at all like that, it has a

very comfortable feeling without

losing any of the colour.

My make-collection is pretty big!

I think Rimmel Flash Eyeliner in

black is great and I love the Pro Nail

Polish with the maxi brush, they

make application so easy. What

else do I always have in my make-

up bag? You’ll always find kohl

eyeliner because I love a smoky eye.

And mascara! My make-up rule

is to either have a strong eye or a

strong lip, not both together.

I keep my skincare simple. I

love Sisley products but I don’t

have a strict routine. I wash and

moisturise so it’s very minimal and

simple really. One thing: I always

use SPF.

I love fragrance. I love all of my

own fragrances but I am wearing

my new fragrance Lila Belle quite a

lot at the moment. I tend to dress

first and then put my fragrance

on, and each day I’ll wear a

different fragrance to suit my

mood.

I have one favourite way

to relax. It’s in the country

with my friends and family.

I just love spending

time at my house in the

Cotswolds.

TK Maxx is embracing the colour blocking trend with a new consignment of bright knitwear and chinos. Go all out with two clashing colours or streamline the look by mixing a red, green or blue with white and black or neutrals such as tan or denim. Jumpers from £16.99, chinos £19.99, cardigans from £12.99, all TK Maxx.

All over the catwalks for autumn/winter? Fitted leather jackets: sleek, shaped and almost shrunk to mould into your shape. This trend is sexy and sharp, pairing easily with winter’s knitwear and slim-fit denim.

Alongside some very sharp party season suiting – we rate the tuxedo £150, shirt £38 and bowtie £8 combination shown here - Topman unveils a new look for the winter season, heavy on English heritage with traditional Harris tweed to the fore. This is no country-pursuits-and-wellies style, but rather a nod to trad tailoring, with sleek lapels, suede and leather patches as detailing, two- and three-button jackets and classic winter coats that will last for years. Team your Harris tweed with jeans and tees for a relaxed take on the trend, or layer with thin mohair sweaters, chinos and boots for the quintessential English gent look. Switch things up for evening with a statement jacket in blue suede. Harris tweed coat £200, brown shoulder-patch jacket £150, blue suede jacket £90.

If you’re investing in the Oxford tweed trend for winter, keep things simple with a few ‘heritage’ pieces: a wool blazer, crewneck sweater, flannel shirt, slim fit jeans and brogues or suede boots will work all season. Head to River Island for a capsule collection that won’t date: model wears blazer £80, denim shirt £32.99, textured crew £28 and jeans £50 and tan shoes £55. Boots £55 and scarf £14.99.

Tux it up for party season with an investment suit from Gieves & Hawkes, masters of the very sharpest tailoring. Tuxedo jacket £700, formal trousers £200, shirt £175 and bow-tie £45.

He may have left Take That (again) but Mr Robbie Williams hasn’t been idle this autumn. He’s launched a new all-British menswear label, Farrell, named after his grandfather, ‘Stoke-on-Trent legend and notable dresser’ Jack Farrell. Designed for men who ‘like a bit of snap in their clothing’, the collection has Robbie wit: secret pockets, branding and logos tucked away inside, a Harry Palmer-style mac, even polka dot silk scarves. KING IS BACKTop grooming range King of Shaves has launched a new electrical grooming range at Argos. In cool packaging, the trimmers and groomers boast advanced Remington technology, and each one comes with a free 50ml King of Shaves soothing and cooling Face Balm. Invest in the Beard & Goatee Stubble Groomer £29.99, Precision Nose & Ear Clipper £12.99 or shell out on the All-in-One kit £32.99.

EARN YOUR WINGSWingman deodorising wipes are the brainchild of Stuart Jolley who recently featured in BBC Two’s ‘Britain’s Next Big Thing’, fronted by Theo Paphitis. During the series he secured a contract to stock his product exclusively in Boots and it’s now on sale for £3.56 for a pack of eight. The ‘man-sized’ deodorising wipes have a refreshing mix of soothing aloe vera, cooling peppermint oil and invigorating ginseng. How did Stuart get the idea? While camping with friends. With no showers to use at the campsite they became frustrated using ‘girly’ baby wipes. Shortly after his trip he realised he had spotted a gap in the market, when on a night out clubbing he noticed men wiping their armpits with paper towels to try to mask their body odour. Wingman has to be better than that, right?

editor’s pickOur latest discovery is [3D]MENSION, Schwarzkopf Professional’s first haircare brand that’s 100 per cent engineered for men’s hair. It focuses on key concerns: looking after the scalp to beat dandruff and reduce hair loss, styling without greasiness and keeping colour looking natural. There’s shampoo, conditioner and a large range of styling products, but the hero is the Grey Blend range: at a salon, you can have greys blended away in a subtle, natural way with no heavy dye (and the best thing is, it’s done at the backwash sink, not in the styling chair, so it’s discreet and fast). For salons, go to www.schwarzkopf-professional.com

Unlike so many high street celeb hairdresser ranges, the Trevor Sorbie MG Grooming range does what it promises. Each product is simple but effective: there’s no fussy pomades or over-scented gels, you just choose a product that fits your needs. Stand-out products? The Styling Cream, £5.10, creates a classic, slicked, wet-look, the Two-in-One Shampoo, £5.50, cleans and conditions with anti-oxidant ginseng, and the Moulding Mud, £6.50, shapes and defines and is the easiest hair styling product we’ve reviewed all year: just slick on and go. Find the range at Boots and Debenhams.

Find the range at Boots and Debenhams.

gold tin £6.99, and tree £5.49, at Debenhams.

1. Get perfect roast potatoes

Start with potatoes with a high dry matter, in other words, potatoes that don’t have too much water. Maris Piper, although not the best, are a good, all round potato that roast pretty well. If you can find Golden Wonder or Aaron Victory, then even better. Cook them until they are just about falling

apart in simmering water. This part is key. If they aren’t cooked enough, they will not become crisp. Be careful not to let them completely fall apart though! Use a generous amount of olive oil (at least 1cm in the tray) or beef dripping for roasting. Roast at 190°C for approximately 1 hour to one and a half hours, until the potatoes are nice and crisp. I always make sure the temperature is right using an oven thermometer, especially when cooking large meals. Timing is important with roast potatoes. Unlike the rest of the Christmas dishes, roast potatoes need to be ready at the time of eating and don’t hold too well. If you are not quite ready when the potatoes are, turn the oven down to 100°C until you are ready to serve them.

2. Cooking carrots

Cook peeled and thinly sliced carrots in butter, salt, pepper, a pinch of sugar and sprig of thyme and not a drop of water. Cover the pan and cook gently until the carrots are tender and glazed.

3. Cabbage over Brussels sprouts

Instead of Brussels sprouts, try cabbage. Break off the leaves of a Savoy cabbage (one for four people), remove the veins and shred the cabbage (discard the outer two or three layers). Slice one or two onions and crush a clove of garlic. Cook the onions and garlic in olive oil on medium heat for ten minutes. Add the cabbage, season generously and put the lid on. Cook, shaking the pan regularly for another ten minutes. Remove the lid: add the flesh of a small red chilli, finely chopped, some lardons of smoked bacon and a generous knob of butter. Replace the lid and cook on low heat for another 5 minutes. Season to taste and set aside until ready to serve.

4. A top tip for turkey

A top tip for a great turkey is to brine it. Use 10% brine - 100g of salt per litre. Put your turkey in it for 12-24 hours, take it out and pat it dry. Then rub the breast and legs with butter and roast the bird at about 170°C. It is very important to check the temperature of your turkey as it cooks, to check that it is getting cooked right through. Use a good meat thermometer and check regularly, in different parts of the bird. When the breast gets to 60 degrees, take the bird out of the oven and let it rest. Once it has rested for 20 minutes, take the legs off and put them back in, because they’ll need more cooking. If you are so inclined, make a stuffing by blitzing breadcrumbs with softened butter, garlic, loads of parsley, and a sprig of tarragon with salt and pepper until you get a green paste. Work this between the meat and the skin with your hands until the breasts are covered. It is easy to lose track of time when preparing the Christmas meal, so put a timer on and make sure the bird rests for at least 45 minutes. It will keep its heat and will retain more moisture. Don’t forget to dig out the oysters from underneath. They are my favourite bits!

5. Waste not want not

Chop up the bones and carcass of the turkey after carving, cover with water, add finely sliced onions, carrots, mushrooms, the white and light green sections of leek, a touch of garlic and some herbs in a pressure cooker. Bring to full pressure over low heat for one hour. Allow the pot to cool enough to remove the lid and add fresh parsley and leave to infuse for another 30 minutes. Strain the liquid and use this stock to create the base for a turkey soup or gravy for the next time you have a roast.

T H E TA ST E O F N A P L E S A R R I V E S I N

B I R M I N G H A MIn 1988, three Italian rugby players channeled their love of their native cuisine to form Pizza e Contorni.

The focus of the company was originally to renew the classical Neapolitan catering system using only authentic produce. 1992 saw the birth of the Sebeto Group whose aim was to communicate the true meaning of what it is to be Neapolitan. After trying out several restaurants, 1998 finally saw the launch of Rossopomodoro, where it all took off. Rossopomodoro grew and grew, and there are currently over 100 restaurants in Italy, totaling 148 worldwide, including four in the UK. The company is constantly expanding, with plans to open many more restaurants throughout the world.

The Rossopomodoro restaurant in the food court of Selfridges Birmingham is tucked up the corner, away from the hustle and bustle of the everyday shopping traffic. The cosy setting adds to the charming ambience of the less-than-ordinary Italian restaurant. The attentive waiting staff cater to your every need, ensuring your experience is as close to the authentic Neapolitan experience as is possible in Birmingham.

As Italian cuisine goes, you would be hard pushed to find a more

authentic restaurant. The majority of Rossopomodoro’s ingredients are imported from Naples, giving you the opportunity to sample the true taste of Naples from here in Birmingham.

What better wine to accompany an Italian meal than Prosecco? The Valdobbiane Prosecco stocked by Rossopomodoro (£5 per 125ml glass, £28 per bottle) is a crisp yet sweet drink. To start, I scanned the antipasti menu and decided upon the bruschetta topped with tomatoes, mixed beans, basil and extra virgin olive oil (£4.50) and l’affettato cured meats and cheeses (£8) with buffalo ricotta, caciocavallo cheese, Parma ham and buffalo cacciatorino salami. The perfect way to start any meal, the bruschetta was crunchy and very tasty. The Parma ham on l’affettato was fantastically salty and went beautifully with the creamy buffalo ricotta.

For the main meal, I decided to sample the two staples of the Italian diet – pizza and pasta. For the pizza I opted for la verace (£11) which is simply covered with tomato sauce, buffalo mozzarella, extra virgin olive oil and fresh basil. The simplicity of this pizza tells you everything you need to know about Neapolitan cuisine. Simplicity equals perfection. The base and crust of a Neapolitan pizza would take any takeaway-loving Brit by surprise. The base is so thin that you struggle to maintain rigidity whilst feeding the slice into your mouth. This is, however, a very small price to pay for the mouthwatering, succulent flavour.

For my pasta dish, I chose the spaghettino (£9.50), homemade fresh spaghetti with cherry tomatoes, extra virgin olive oil and fresh basil. Once again, the simplicity

of Rossopomodoro’s food far outweighs the pretentiousness that so many Italian restaurants possess. The fresh spaghetti melts in the mouth while, somehow, tasting of Italy. Maybe it’s because you are made aware that the pasta has been shipped in from Gragnano, maybe it’s the authenticity of your surroundings. Whatever it is, the pasta is by far the most delicate that I have ever tasted.

Whichever dish you choose, make it complete with la mozzarella (£11.50). The 200 gram buffalo mozzarella served with rocket and tomatoes, freshly shipped in from Caserta is the perfect accompaniment to any Italian dish.

All too often when eating out, a dessert is ordered but not really savoured. Rossopomodoro has a lovely selection of liquori as well as gelatino (ice cream), pannacotta and tiramisi. After sampling quite a large portion of the Rossopomodoro menu on offer, I decided to pass sensibly on the desserts and to have a glass of another celebrated Italian beverage, Limoncello (£5.50 per 50ml glass). A beautiful way to cleanse your palate after a big meal and give your taste buds the illusion of having eaten a pudding.

If what you’re looking for in a meal out is authentic Italian cuisine in a relaxing yet bustling atmosphere, Rossopomodoro is the place to go. It’s conveniently located too in the ever-busy Bullring. Enjoy a day of retail therapy in Bullring’s array of shops, then pop in to Rossopomodoro for a spot of dinner. Buon appetito!

Rossopomodoro The Bullring, Foodhall, Birmingham B5 4BP E: [email protected] T: 0121 600 6753

Rossopomodoro sources its produce from local farmers and producers in and around Naples. On a trip to Naples, I had the fantastic opportunity of visiting some of the farms and factories.

The silky extra virgin olive oil used in Rossopomodoro restaurants comes from Gargiulo in La via dell’olio di Sorrento, up in the picturesque mountains of the Amalfi coast. The plant has been run by the same family for three generations. Every bottle of extra virgin olive oil produced here is certified by the authority to test the PDO (Protected Destination of Origin) to confirm that it is a product of the soil of Sorrento.

The fresh, stringy buffalo mozzarella is bought in from Piazza Vittoria mozzarella factory in Caserta. Made fresh daily from buffalo milk, the silky cheese is certainly worlds away from the plastic vaccu-packed mozzarella we Brits are used to.

The Pasta Afeltra factory in Gragnano is the only pasta factory in Italy still making and drying pasta in the traditional method of air-drying. Back in the days before pollution, the pasta was dried out in the streets, absorbing the fresh sea and mountain air. Nowadays, the factory is used to help things along.

Also in Gragnano, the tomato farm of San Nicola peels and bottles the succulent San Marzano tomatoes used by Rossopomodoro. All done by hand, this tiny factory is a perfect example of how authentic Rossopomodoro like to keep their produce.

Win! WIN A CHOCOLATIER’S TABLE!What fun would Christmas be without a bit of chocolate? Certainly not much fun in the Style Birmingham household!

Christmas is a great time of year when we can eat chocolate without feeling guilty about it. Treat yourselves; you deserve it.

This year, kit out the perfect Christmas with some goodies from Hotel Chocolat. Whether it’s for a gift or simply to wow friends and family on Christmas Day, Hotel Chocolat treats are a great way to say Merry Christmas to one and all.

The Alternative Mince Pies are chocolate cups filled with layers of praline and salted caramel - perfect for those of us who eat mince pies purely to be polite. The Mini Crackers are irresistibly cute and will look great on any table setting. The showstopper this year is undoubtedly The Chocolatier’s Table. A truly impressive collection covering every genre of chocolate made at Hotel

Chocolat. With an astounding 125 chocolates, this is a must-have for every chocolate-loving household this Christmas.
