    Grandma Smiths Blintzes Blintzes 3eggs 1cupwaterteaspoonsalt 2tablespoonsoilcupflour,sifted

    Beat eggs and oil together.Heat butter in a 6 pan.Pourabout2tablespoonsofbatterintothepan,tiltingtocoat thebottom justenough tomakea thinpancake.Letthebottombrownand then turnoveronapaper towel.Continueuntilallthebatterisused.

    Spreadoneheapingtablespoonofthefillingalongtheside of thepancake.Turn opposite sides in and rolluplikeajellyroll.Frytheblintzes. Filling 2cupscottagecheese1eggyolk1teaspoonsalt1tablespoonmeltedbutter2tablespoonssugar(optional)Raisins(optional)Flour(optional)

    Beat all together. I like to add a teaspoonof flour tofillingtohelpitholdtogether.

    Combineyeast,water and sugar inPyrexmeasuringcup.Allow to stand for about fiveminutes toproof theyeast.Inprocessorwithmetalblade,combineeggs,sugar,colorandsalt.Processforoneminute.Addcombinedoilandwater.Process for oneminute.Add two cups flourandprocess foroneminute.Addyeastmixture.Process.Addremainingflour(startwiththreecups).Processuntildough forms a ball. If sticky, add an additional cup offlour.

    Place dough in greased bowl and turn once so itscoatedwithbutter.Coverandallowtoriseinwarmplace(Turnovenonwarm foroneminute.Turnoff.Put covered bowl in for 1 hours or until finger pressed indoughleavesimpression.)

    Afterdoughhas risen,punchdown.Turnandcover.Let rest for 10minutes.Dividedough inhalf.Eachhalfweighsabout1lbs.

    Divideeachhalfintothreeequalportions.Addraisins,ifdesired.Rollthemeachintoalongrope.Braid.Tuckendsunder.Placetheloavesonalightlygreasedcookiesheet.Coverwith towel.Allow to rise for one hour inwarmplace.

    Bakecrustaccordingtodirectionsonboxoruseyourfavoritecrustrecipe.Sliceberriesandfillcrust.Mixwater,sugarandcornstarch.Boil.Turnoffheat.AddJelloandmix.Pourmixoverberries (theremaybeextra). Refrigerateatleasthalfadaytoset.Servewithwhippedcream.

    Iris' Coffee Mousse 1cupstrongcoffee(decafisfine)48bigmarshmallows1pintheavycream,whippedpintheavycream,whippedChocolatecoveredespressobeans(optional)

    Heat marshmallows in the coffee until they arecompletely melted. You can use the microwave. Startwith about 1minute, stir, then 30 seconds, stir, then 30seconds,etc.Coolcompletely;add1pintwhippedcream.Pourintoamoldoruseseparatemoussecups,chill.

    Servewithwhipped cream on top and a chocolatecoveredespressobeans.

    Place12clovesinsideeachsliceoffruit.Addslicestociderandsimmer.

    Separateeggs into two largebowls.Add liqueur toeggyolksandstiruntilblended,thenaddmascarpone.Usebeater tomixuntilblended.Beat eggwhitesuntilsoftpeaksform.Continuetobeat,addingsugaralittleat a timeuntil stiffpeaks are formed.Addhalfof theeggwhites to thecheeseeggyolkmixandblend.Addrestofeggwhiteandfoldingently.Setaside.

    Brush ladyfingers in espresso.Dont saturate them.Place flat side down in a shallow dish (13x9x2).Addhalfthecheesemixture.Gratehalfthechocolateon thetop.Add another layer of espressocoated ladyfingers.Top with remaining cheese mix and smooth the top.Coverwithremainingchocolate.Refrigeratecoveredforseveralhoursorovernight.

    Beat eggs until thick. Stir in the rest. Turn into agreased baking dish. Bake 350 until brown, about 1+hour.Servehot.

    1poundsPennsylvaniaDutchfinenoodlescupmargarine,melted 4eggs,separated56Macintoshapples,peeled,andslicedthin1cupssugar,less2tablespoons1teaspooncinnamonboxyellowraisins1cupcrushedcornflakes,mixedwith1/3stickmeltedmargarine

    Boilnoodlesanddrain.Add cupmeltedmargarine.Beatineggyolks.Mixinapples.Addsugar,cinnamon,andraisins. Beat eggwhites until stiff and fold into noodles.Grease a 10x15 or 9x13 pan. Put in noodles mix. Addcrushedcornflakeswithremainingmeltedmargarine.Bakeat350for3045minutes.

    Soak matzoh in cold water for a few minutes andsqueeze thoroughly.Beatyolkswith sugar, saltandcinnamon.Stirinjuices,matzos,apples,walnutsandmeltedbutter.Beatwhitesuntil stiff and fold into eggmixture.Bakeingreasedcasseroleat350degreesfor45minutes.

    Combinemargarine, eggs, sugar, vanilla, and creamcheese in a blender or food processor untilwellmixed.Add sour cream. Blend. Mix noodles with sour creammixture.Pourinto2quartovenproofcasserole.(Cansplitintosmallerdishestoo)

    Topping: 1cupscrushedcornflakes(Ihavesubstitutedothercereals)pound(1stick)meltedmargarinecupsugar

    Combinetoppingingredientsandsprinkleovernoodles.Coverandfreezekugel.

    Bake while frozen and covered. Bake at 400 for 2hours.Servehot.Serves1012.

    Filling: Solobrandapricot,almond,poppyseedpiefillingCinnamonandsugarmix(Bensfavorite)

    Creambutterand cream cheese.Add sugar, cream.Stir in flour until dough is formed.Shape into a big ball,wrap inwax paper or put in aTupperwarecontainer,chillfor2+hours.

    Roll 1/4 inch thick.Cut into circles. Place filling incenter of circle. Pinch into a triangle shape. Place ongreased baking sheets and bake for 1215 minutes at375.

    BJs Frozen Dessert

    1cupmacaroons,crushed1cupsugar9tablespoonslemonjuice 3cupsheavycream6eggs,separated

    Line a spring form pan with macaroons. Dissolvesugarandlemoninabowl.Whipcream.Beateggyolksand add lemon and sugar. Beat well until thick andcreamy. Fold in whipped cream. Fold in egg whiles(beaten).Pourinpan.Sprinklewithmacarooncrumbs.

    Freeze.Servefrozenanddecoratetopwithstrawberriesorraspberriesorotherfruit.

Add sugar gradually and continuebeatinguntillight.Addeggandmilk.Blendthoroughly.Adddryingredientstoformastiffdough.Rolldough into 1inch balls.Place on awell grease cookiesheet(astheyburneasily).Pressdownwithaglass(putflouronbottomofglasssothedoughdoesntsticktoit).Sprinklewithmixtureof sugarand cinnamon.Bakeat375forabout1012minutes.Removefromcookiesheetrightaway!Makesapproximatelythreedozencookies.

    Nana Tariots Chocolate Frosted Bars 1cupbutter1cuplightbrownsugar1eggyolk2cupsflour17ounceHersheybarfortopping1+cupfinelychippedwalnuts

    Preheat oven to 350. Mix together butter and sugar(buttereasiertoworkwithataboutroomtemperature).Addeggyolkandmixthoroughly.Addflourandagainmix.Youwillhaveaverystiff,pastelikebatter.

    Patbatterwithhands intoa9x12pan.Bakeat350 forapproximately1820minutes.Watchcarefully themiddlemaylookslightlyunderdone,butthatisok.Itshouldbesoftratherthandoneallthewaythrough,lookinggolden.

    While the batter is baking, melt the Hersheys (can bedone carefully in microwave). When baked batter is stillwarm,spreadchocolateontop.Shakeonwalnuts.Ifpossible,pickuppanwithhotpadsand shake toevenout thenuts.Gentlypatsurface toensurenutsstayonwhenyoucut thebars.

    Grate potatoes in food processor and drain.As theysit, theywillmakemorewater and get a bit pink, butdontworry.Addthebeateneggs;addpotatoesandthentherestoftheingredients.Fryinahotfryingpan.Keephotinasinglelayerintheoverat350.Enjoywithapplesauce.

    3eggs 1cupmilk2tablespoonsbutter,meltedteaspoonsalt1teaspoonsugar1cupflour

    Preheatovento425.Mixtogetherwelleverythingbutflour. Slowly beat in flour until mixture is perfectlysmooth.Buttermuffintins.Fillhalfwayandplaceinovenfor15minutesat425.Reduceheat to350andbake foranother1520minutes.DONOTOPENDOOR!Makes9popovers.

    The Desserts Morris Apple Bundt Cake

    1cupoil 1cupssugar3eggs2cupsflour2teaspoonsvanilla1teaspoonbakingsoda3apples,welldiced1cupchoppedwalnutscupraisins

    Preheatovento325.Coatthepanwithoil.Combineingredients in order, blending well after each andadding eggs one at a time. Pour into a bundt pan.Bake 70minutes until a toothpick comes out clean.Cool45minutes.Invertonplatter.

    Alice Ts Chocolate Bundt Cake 1packagechocolatecakemix(notapuddingmix)1smallpackageinstantchocolatepuddingcupvegetableoilcupwarmwater1cupsourcream4eggs1bagchocolatechips(6oz.)

    Mix everything except the eggs and chips. Addeggsoneata time,beatingwellaftereachegg.Foldin chocolate chips.Grease a bundt pan and pour incake. Bake 1 hour at 350. Cool 45 minutes beforeremovingfromthepan.

    Chop artichoke hearts finely and place into mixingbowl.Add1cupofgratedParmesantomixingbowl.Add1cupofmayonnaisetomixingbowl.Chop1smallonionintodicedpiecesandaddtomixingbowl.Chopacoupleof scallion stems intodiced pieces, add tomixing bowlandmixeverythingtogether.

    Preheatovento350.Placethemixtureintoabackingdish. Can sprinkle a little of Parmesan cheese on top.Cookdishfor45minutesoruntiltopgetsa littlebubblyandturnslightbrown.

    Let cool for a minute, serve with sliced bread orcrackers.Makesenoughtoserve615peopleasanappetizer.

    Barbaras Roasted Tomatoes with Shrimp and Feta 5largetomatoes,cutintoeights3tablespoonsoliveoil2teaspoonsmincedgarlicteaspoonkoshersaltteaspoonfreshgroundpepper1poundsmediumshrimp,peeledanddeveinedcupchoppedfreshparsley2teaspoonslemonjuice1cupfeta,crumbled

    Preheat oven to 450. Place the tomatoes in a largebakingdish. Spoon theoil andgarlicover the tomatoesandsprinklewith thesaltandpepperand toss.Placeontoprackofovenandroastfor20minutes.Removebakingdish from oven and stir in shrimp, parsley and lemonjuice.Sprinklewith the feta.Placeback in theoven foranother10to15minutesoruntiltheshrimparecooked.

    Morris Familys Spinach Quiche 3eggs,beaten1cupmilk8ounces(pound)Swisscheese,grated1piecrust,inpieplate1packagefrozenspinach,cookedandwelldrained

    Beateggsandmildtogether.Addspinachandcheese.Pour into piecrust.Bake 350 degrees about an hour oruntilbrown.Freezeswell.

    French Chicken 6boneless,skinlesschickenbreasthalves 1egg1tablespoonmincedparsley,freshorflakesSalttotastecupflour3tablespoonsoil4tablespoonsmargarine,dividedcuplemonjuice4ouncesmushrooms,sliced1lemon1tablespoonscookingsherry(orcookingwineorMadeirawine)

    Lightly pound chicken breasts to flatten (do this byputtingchickenbetweentwosheetsofwaxpaper(orfoilor saranwillwork) and poundwith amallet or a can.Beateggswithparsleyandsalt.Dipchicken first inegg,theninflour,theninegg.

    In a large skillet, heat oil and saut chicken, turningonce,untilgoldenbrown.Removefromskillet.Wipeskillet clean and melt margarine. Stir in lemon juice andsherry.Pouroverchicken.

    Insameskillet,meltremaining tablespoonmargarineandsautmushrooms(youcanleavethisstepoutifyoudont likemushrooms,wouldprobably be okwith artichokes). Pourmushrooms and pan juices over chicken.Topeachchickenpiecewitha thinsliceof lemon.Coverpan and cook just until heated through. Garnish withparsleyandservehot.

    Cookpastaaccording todirectionsonpackage.Sautscallionsandnutsinoil.Addpastaandtoss.

    35lbs.chickenpieces LargepotofwaterOnionsCeleryParsnipsTurnipsParsleyDillCarrotsSaltandpepperCarmelsoupmix

    Cleanchicken.Boilwaterandaddchicken.Let itboiland skim the top.Addonionsandcelery.Cook20minutes.Add the rest of the veggies. Seasonwith salt andpepperandsoupmixasneeded.Cook1to2hours.

    Takeoutchickenandveggies.Throwoutonionsandcelery. Strain soup and add back cut up veggies andchicken.Freezeswell.

    Matzoh Balls

    5eggs,separatedcupwater12cupsofmatzomealSaltandpepperParsleyflakes 1/3cupchickenfat,melted(canuseothershortening)

    Mixyolkswithwater,chickenfat,saltandpepperandparsleyflakes.Add1cupofmatzomealandmix.Ifverysoupyaddmorematzomealuntilthick.Beateggwhitesstiff. Fold into batter. Shape into balls. Place in boilingwater for2025minutes.Carrienevercovered them,butboth recipes tellyou to cover andnotpeek.Try itbothways.Drainandserve.Freezeswell.

    Knuckle/marrowbeefbones2poundsleanstewbeef1largeonion,chopped 5carrots,sliced4celerystalks,chopped 14ouncescancuttomatoes1canCollegeInnBroth Parsley1clovegarlic1bayleafteaspoonbasilSaltandpeppercupbarley cupdrybabylimabeans 1packagemixedfrozenveggies23tablespoonsWylerschickenbrothmix

    Boil bones and beef until froth rises. Skim.Add therest.Cook23hoursonalowheat.

    Iris Turnip Soup 3cupsofturnips,peeledandsliced34cupsofchickenbroth,cannedorhomemade1potato,slicedandpeeledonion,diced

    Sautpotato and onion briefly, add turnips and sautbriefly.Add34cupsofchickenbroth.Bringtoaboilandaddturnips.Cook25minutesuntilturnipsaresoft.Drain,reserving23cupsofliquid.Pureeturnipswithcupskimmilk.Addsaltandpeppertotaste.Ifneeded,canaddsomeofthereservedliquid.Goodhotorcold.

    Bring chicken brother to a boil.Add chicken to thebroth,coverandreduceheattosimmer.Poachchicken12minutes.

    Removechickentoaplateandpourbrothintoalargemeasuring cup.Return the pan to heat and add butter.When buttermelts, add flour and cook,whiskingwithbutterfor2minutes.Slowlypourcookingliquidbackintothepan,untilappropriately thickened,combiningwithawhisk.
