Dear Neighbours,

It’s hard to believe as I sit at my desk writing this, that spring is on its way. It’s freezing and there is snow fl urrying around!

However the tell-tale signs that the weather may soon improve are already here; lighter mornings & evenings, a few fl owers are braving the cold; Daff odils just in time for St David’s day!

It’s been a busy few weeks here at Th e CF15 Directory, generating new business & increasing exposure of the magazine. Th is in turn helps to promote the businesses advertising in the magazine & also highlights many of the great causes we support. Two great charities who feature in this edition are, Autism Puzzles & Welsh Hearts. Th e CF15 Directory is proud to support both of these fantastic charities, we hope you will too. I am also pleased to bring you news of Th e South Wales Police Th ree Peaks Challenge. Th e Offi cers and support staff are again to scale the dizzy heights of the UK 3 Peaks, in aid of Cancer Research Wales (based at Velindre Hopsital) & Welsh Guards (Help for Heroes)

Ffion’s Fun FactualsSt David's Day is on 1 March. St David's Day is celebrated in Wales on 1 March, in hon-our of St David (Dewi Sant), the patron saint of Wales. St David (Dewi Sant was a Celtic monk, abbot and bishop, who lived in the sixth century. He spread the word of Christian-ity across Wales. The most famous story about Saint David tells how he was preaching to a huge crowd and the ground is said to have risen up, so that he was standing on a hill and everyone had a better chance of hearing him. The national emblems of Wales are daffodils and leeks. St David's Day is commemorated by the wearing of daffodils or leeks. Both plants are traditionally regarded as national emblems. There are many explana-tions of how the leek came to be adopted as the national emblem of Wales. One is that St David advised the Welsh, on the eve of battle with the Saxons, to wear leeks in their caps to distinguish friend from the enemy. Shakespeare mentions in Henry V, that the Welsh archers wore leeks at the battle of Agincourt in 1415. On St David's Day, some children in Wales dress in their national costume, which consists of a tall black hat, white frilled cap and long dress. The national flag of Wales, depicting a fiery red dragon (Y Ddraig Goch) against a green and white background, is also flown.

Th ere are many recipes for carrot cake, some with fruit some with nuts, & some using lime and mascarpone frosting, & believe me I have made & the family have tried most variations!

Th is recipe is one I have adapted & has come out as a favourite for us, so I thought I would share it with you. It’s a simple recipe, so ideal for making with your children. Ioan loves helping me make this one, as much as he loves eating it! Th e spices I have listed are to our taste, but please feel free to chop and change to suit your own pallet. Some prefer mostly cinnamon with only a little of the other spices, whilst others like a more gingery hint. Whatever suits you!

Ingredients: Frosting: 250g unsalted butter, soft ened 150ml double cream250g light brown soft sugar 250g full-fat cream cheese4 large eggs, 85g icing sugar, sift edzest and juice of 1 orange zest and juice of 1 medium sized orange170g self-raising fl our, sift ed 1 heaped tsp baking powder 1 heaped tsp ground cinnamon a pinch of ground cloves a pinch of ground nutmeg ½ tsp ground ginger 250g carrots, peeled and grated

Preheat the oven to 180ºC/350ºF/gas 4. Grease and line a 22cm-cake tin; use whatever shape suits you, with greaseproof paper. Blend the butter and sugar together until pale and fl uff y. Beat in the egg yolks one by one, and add the orange zest and juice. Stir in the sift ed fl our and baking powder, spices and grated carrot and mix together well.

In a separate bowl, whisk the egg whites with a pinch of salt until stiff , and then gently fold them into the cake mix. Pour the mixture into the cake tin and cook in the preheated oven for about 50 minutes until golden and risen. You can check to see if the cake is cooked by putting a clean knife into the centre of the cake, if the knife comes out clean the cake is cooked; if slightly sticky, it needs a bit longer, so put it back in the oven for a few minutes. Leave the cake to cool in the tin for 10 minutes, then turn it out on to a rack and cool for at least an hour.

When the cake is cooled, mix the icing sugar,double cream and soft cheese until it forms soft peaks. Th en cover the cake with the frosting. Enjoy!

Update from Cllr. Rod McKerlich• Th e governors of Radyr Primary are working with the LEA to

have a pre-school provision in place in September 2013; this has been strongly requested by readers of this publication.

• Cardiff Bus are responding to my pressure and that of local residents by consulting us on the demand for a direct bus link to Cardiff centre

• Th e redundant railway bridge between Radyr Sidings and Llandaff North is almost converted into a new pedestrian crossing over the River Taff and work has begun to connect this to Hailey Park and the village of Llandaff North.

• I was one of 3 councillors who formed an investigating committee to assess new ways of dealing with dog fouling, fl y tipping, litter, abandoned shopping trolleys and litter strewn exit roads at roundabouts. I know from local residents that these cause great off ence; I hope that you will soon see evidence of a new determination to deal with this nuisance.

Ingredients:

1 ¼ lbs/ 560g ready made marzipan1 lb/ 450g dried mixed fruits (currants, raisins, sultanas, glace cherries)3 oz/80g candied chopped peel8 oz/ 225g plain flourPinch salt1 tsp ground cinnamon1 tsp freshly grated nutmeg6 oz/ 175g butter6 oz /175g fine/caster sugar3 large eggs, beatenMilk to mix2 tbsp apricot jam

Preparation:Heat the oven to 325°F/170°C/Gas 3Line a 7 inch cake tin with greaseproof paper.Divide the almond paste into 3 and take one portion and roll it to a round the size of the cake tin.In a large roomy bowl mix the dried fruits, peel with the flour, salt and spices.In another large bowl cream the butter with the sugar until light and fluffy. Add the beaten egg to the butter mixture a little bit at a time, beating well after each addition - do not try to rush this process as the mixture could curdle. If it does curdle simply add a tbsp of the flour and mix again, this should bring the mixture back together.Carefully fold in half the flour and half the fruit into the egg and butter mixture, once incorporated repeat with the remaining flour and fruit.Put half of the cake mixture into the tin, smooth and cover with the round of almond paste. Put the remaining cake mixture into the tin and smooth the surface carefully. Bake in the centre of the oven for 1 hour.Lower the heat to 300°F/150°C/Gas 2 and bake for 3 hours until the cake is golden brown. Remove from the oven and leave to cool in the tin.Roll another third of almond paste, again to the size of the tin. Make the remain-ing almond paste equally into 11 tiny balls.Once the cake is completely cool, remove from the tin and brush the top of the cake with apricot jam and cover with the disc of almond paste. Place the 11 tiny balls of paste evenly around the edge. Brush the paste all over with a little apricot jam and place under a hot grill until lightly browned.The cake can then be decorated as you wish with tiny Easter eggs or any other Easter theme. Enjoy!

Golf Awareness Month –April Golf Specials at Radyr

April is Golf Awareness Month in Wales and Radyr Golf Club is offering specially discounted green fees for golfers to come and play one of the Top 20 courses in Wales. The course is known to be one of the best kept in Wales and is also recognised as one of the 'hidden gems' of Welsh golf. All the children, staff and parents have enjoyed taking part in ‘Healthy Me Month’ during January. The children took part in various healthy cooking activities, including making yummy carrot cake, apple flapjacks and fruit kebabs!

The children were given recipe cards, so they could make delicious snacks and meals at home and as well as healthy-food song cards.

To mark the transition from our Nursery Rhymes theme to Healthy Me Month, The Caterpillars enjoyed playing (and eating!) boiled eggs whilst singing Humpty Dumpty.

In line with St David’s Day, the whole nursery will be taking part in Welsh Week. The staff have planned some fantastic activities, including making red dragons with sugar and paint and enabling the children to explore their senses with red tapioca play!

South Wales Police 3 Peaks ChallengeYou may recall an article in last year’s April/May edition of The CF15 Directory, when we told you about a group of intrepid South Wales Police officers, based in the Vale of Glamorgan who were taking part in the 3 Peaks Challenge…Well the walk didn’t put them off & they are at it again, & this time there are more of them! The 3 peaks last year proved so successful that more officers have volunteered to take part in the gruelling challenge.

For those of you who don’t know, the 3 peaks challenge involves travelling to and climbing Snowdon, Scaffell Pike & Ben Nevis, in 24 hours. The event; organised for the 4th year running, by Morganstown resident Sergeant Steve King, is to raise vital funds for Cancer Research Wales based at Velindre Hospital and Welsh Guards (Help for Heroes).

Both of these charities rely heavily on the people of Wales to take part in sponsored events such as the 3 peaks, and to make donations so that they can continue their vital work.

The officers will be undertaking this difficult task mid-May, starting off from Gwaelod y Garth & heading to Snowdon, with the hope that Snowdon will be scaled & descended early enough for the Scaffell Pike walk to be started while it’s still day light! Ben Nevis will then be walked either in the middle of the night, or at day break!

Sgt King is looking for contributions for the SWP 3 peaks challenge this year, from small personal donations to corporate sponsorship & offers of kit, food & drinks. Many of last year’s sponsors are already on board, including Burnt Tree vehicle hire, a fantastic supporter, who have again kindly donated the use of mini buses.

Radyr Primary School News

Radyr Primary School pupils gained a fascinating insight into Brain Science recently as one of four schools chosen to help launch an exciting event to be held at the National Museum Cardiff on Sunday 17th March. Professor Derek Jones and his colleague Professor Frank Sengpiel from CUBRIC at Cardiff University outlined introduced the upcoming ‘Brain Games Event’ which will run from 11am until 4pm during which visitors can try out upside down glasses (and the effect they have on your Nerf gun aim), take part in brain games and learn a whole host of fascinating facts. The children at Radyr Primary learnt about the size of our brains in relation to the brains of other mammals (and dinosaurs) and why each needs a different sized brain. We explored the different areas of the human brain and had an exclusive inside look at Year 6 teacher Mr Thomas’ brain following his voluntary MRI Scan at the University. Both Mr Bussy and Mr Thomas tried on the upside down glasses with mixed results that delighted the children. Many thanks to both Professor Derek and Professor Frank for involving us in this fascinating and worthwhile project. We look forward to seeing them at the Brain Games Event in March.

Make your own bird feeder

It’s important for us all to keep our garden birds fed throughout the year so why not have a go at making your own bird feeder. You’ll need and egg carton, a paper punch and some string. Firstly, cut off the lid of the egg carton. Next, punch a hole in each corner. Thread a piece of string through each corner and tie a knot to stop it from slipping back through the hole. Then gather all four bits of string together in the middle of the carton and tie them together in a knot. Fill your egg carton lid with bird feed and hang it from a tree in your garden.

How to make a bark rubbing

You will need:- A piece of A4 paper 4 drawing pins Crayons (any colours you like) You’ll need to find a mature tree for this. You may have one in your garden or try finding one in a relatives garden or your local park. Using the drawing pins, pin your piece of paper to the tree. Take your crayon and rub it over the paper. You will see the bark of the tree appearing on the paper. Use as many different colours as you like and take as many rubbings as you like - try using different trees. When you have finished, hang your artwork where everyone can see it.
