“We focus on two things,” she de-scribes. “First we find out how to help them discover what their motivations are for eating when they aren’t hungry. Then we replace eating behavior with something that serves them better.”

Hello Laguna Beach and welcome to The Local DISH Magazine! We are excited to introduce you to our monthly publication that has featured local events, music, restaurants and businesses in and around your community since 2007. I understand your lives are busy, so we have thoughtfully designed our magazine to provide quick and light editorial content, a local dining guide, relevant advertisements and promotions along with our renowned calendar of events. We strive to provide you with a timely and useful snapshot of what’s happening in your own backyard and will continue to serve up the dish to the communities of Dana Point, Laguna Niguel, San Clemente, San Juan Capistrano and now for the first time...to Laguna Beach!

Laguna Beach holds such fond memories for me. As the youngest child of five raised in Los Angeles, I was first introduced to the city back in ‘78. My mom and dad came up with the brilliant idea of occasionally taking each child, sans siblings, on a weekend getaway in order to spend quality, one-on-one time together. I was fortunate enough to enjoy a two-night stay in Laguna at an amazing resort with its own indoor pool – the first I’d ever seen. Laguna Riviera Motel still sits right there on PCH...the way I remember it as a nine-year old boy. I smile every time I drive by.

The Festival of Arts was my introduction to the art world as a young man. Each summer, Mom would pack up a picnic basket and we’d head down in the afternoon to view the exhibits, followed by a magical evening at t he Pageant of the Masters. I’m looking forward to highlighting the many events that Laguna Beach offers the local community.

This month’s cover of The Local DISH Magazine features orthodontist, Frank Mogavero. Dr. Frank is an avid snowboarder and his passion for the sport shows in the unique and intricately designed office he’s created in San Clemente. Learn how you can “Sync your Smile” with your lifestyle.

Mogavero draws inspiration from innovators he has known throughout his lifetime who also love what they do. He holds great admiration for Dr. William Beazley, his personal orthodontist from the 1970’s, Dave McCoy, the devel-oper of Mammoth Mountain Resort who started it all with a tractor-pulled rope tow in the 1930’s, and his own father.

Dr. Mogavero and his family love skiing and snowboarding and it’s no coinci-dence that he also practices part-time in the resort town of Mammoth Lakes. As an avid snowboarder, Dr. Mogavero takes particular inspiration from the close-knit snowboarding community. “They’re like a large family,” says Mogavero, “Snow-boarders, in general, are proud of each other‘s accomplishments, whether in the halfpipe or on the slopes. Professional snowboarders have chosen to pursue a sport they love and then have tied that love into their work.” Says Oren Tanzer, Director of Youth Action Sports Market-ing at Mammoth Mountain Ski Area, “You have to do what you love in this lifetime. Two trends in healthcare have become appar-ent and both of them seem to favor a new prac-tice like San Clemente Family Medicine, which opened last October at the Saddleback Health Center at Talega.

The first trend is that female patients are becoming more knowledgeable and proactive about health-care. Being interviewed by potential patients for suitability is a case in point and a frequent occur-rence, according to Candace Basich M.D., who shares the opinion and the San Clemente Family Medicine practice with Amber Pachon M.D.

These medical colleagues don’t mind being evalu-ated by patients, however, because it gives them an opportunity to talk about their training and philosophy of family care. In an established, time-sensitive medical office setting, there typically isn’t time for such an information exchange.

Both Dr. Basich and Dr. Pachon, who completed their residency together at Long Beach Memo-rial last summer, enjoy establishing their cre-dentials with even the most internet-influenced interrogators.

“We’re aware of pretty much everything that’s out there,” Dr. Pachon says of their response to the perils of the information age.

and have come to accept or reject them based on the results of controlled trials.

“We explain or agree with our patients that they have options when it comes to treatment,” Dr. Basich says. “The patient always has a choice. Part of our approach is to provide all the vari-ables and make a recommendation.”

Dr. Pachon says, “It’s also important that the patient knows the likely result of each option before they make a choice. We provide that as well so that each decision is an informed one.”

Doctors Basich and Pachon are board-certified family medicine physicians, specializing in comprehensive care for the entire family, including children, teens, adults and seniors. They offer same-day or next-day appointments and both doctors are available on a 24- hour basis to their patients. In addition, San Clemente Family Medicine is contracted with most insurance plans, as well as Monarch Health Care.

What patients learn in an introductory session is that these doctors are very tech-savvy and can access information within as well as way beyond a patient’s reach.

“Our practice is electronically linked to the Sad-dleback Memorial network,” adds Dr. Basich, “which gives us access to information and re-cords throughout the system and facilitates every aspect of care from check-ups to treatment.”

The capability to immediately have the same information as any physician on the network as-sures that their practice doesn’t have to rely solely on the patient’s memory for medical and drug history.

Also important for the inquiring patient to learn is that the Saddleback network can be accessed for the latest illness trends and discoveries in di-agnoses and treatment. Taking the time to share such important high-tech capabilities helps es-tablish trust and confidence and can accelerate the physician-patient bond.

The second trend in the medical community is the growing acceptance of “alternative” treat-ments such as nutrition, chiropractics and pre-ventative medicine. Doctors Basich and Pachon have been exposed to modern medical options

LAgunA BeAchLaguna’s annual American Legion and Women’s Auxiliary Easter Egg Hunt takes place at 1:00 p.m. sharp on Sunday, April 4th at the Laguna Beach High School baseball field. Come early (noon) for photos with the Easter Bunny. This event is more than 50 years in the running and promises that over 1000 eggs will be hiding! Open to all children aged nine and younger.

For an altruistic take on the holiday, put on your sneakers and sunglasses

and head to one of nine loca-tions around town (includ-ing Laguna Beach High School, Whole Foods and Yoga Works) where volun-

teers participate in the Zero Trash Laguna campaign every

first Saturday of the month from 10 a.m. to noon (April 3rd). This group helps keep the city streets clean and business owners proud.

sAn JuAn cAPIstRAnoThe city of San Juan has a couple of long-held Easter traditions of its own. The annual Easter Egg Extrav-aganza, sponsored by the Rotary Club, takes place at Historic Town Center Park on Saturday, April 3rd from 9:00 a.m. to noon. The event draws a crowd and features a bounce house, face painting, egg dying and pictures with a certain fuzzy special guest.

If Saturday’s event doesn’t fit your schedule, Calvary Chapel invites you to celebrate Easter in the Park on Sunday, April 4th, also at Town Center Park. An elaborate BBQ is the major draw for this day out and live music and an Easter egg hunt do not disappoint. The fun starts at 10:00 a.m. and runs until 2:00 p.m. Come one, come all!

sAn cLeMenteThe city’s Spring Spectacular has ev-erything Easter in one place! The event at San Gorgonio Park starts off with a pancake breakfast sponsored by the Ki-wanis and Key Clubs (9:00 a.m. to noon) and continues through the morning with a series of age-group Easter egg hunts. To keep the little ones busy after the baskets are full, the Spectacular offers face painting, pony rides, and visits with Wilbur the Pig and Mary and her Little Lamb. Don’t miss your chance to find the Prize Egg… ages two and under 11:00 a.m., ages three and four 11:30 a.m., ages five through seven 12:00 p.m., and ages eight through ten 12:30 p.m.

A wonderful way to give back to the community is to support the Communi-ty Easter Brunch on Saturday, April 3rd, at 10:00 a.m. at Ole Hanson Beach Club. The event is open to individuals and families in need and is co-sponsored by the Family Assistance Ministries and the City of San Clemente. Volunteer and do-nation opportunities are available. dAnA PoIntDana Point offers two Egg Hunts, generously sponsored by the City of Dana Point Recreation Department. The events take place simultane-ously on Saturday, April 3rd at 10:00 a.m. at two of the city’s most beautiful spots, Sea Can-yon Park and Pines Park. The hunts are open to children up to ten years of age and both offer a petting zoo and photo ops with Sir Hopsalot.

BeniseTake a musical journey with BENISE, an Emmy Award-winning World Music and dance production that comes to The Coach House on April 24th. Composer, guitarist and creator, Roni Benise (pronounced Buh-nes-say), says the show pushes the boundaries of traditional Flamenco/Spanish guitar and combines the beautiful and passionate elements of music, dance and theater. Inspired by their tour that covered ten countries (including India, Sri Lanka and Spain), over three years, BENISE will appeal to people of all ages, cultures and musical backgrounds. “Our collaborations with artists around the world always incorporated local instrumentation, harmonies and beats. That made each stop unique and The Coach House show will be a celebration of our journey,” shares Benise.

This special event will provide a sneak preview of the upcoming BENISE Fall Tour. Accompanied by his band and world-class Flamenco dancers, Benise said, “We are looking forward to playing The Coach House for the first time. We have played at the Mission San Juan Capistrano and love the intimate shows and really interacting with the audience.” Flamenco, Classical and even Rock and Roll elements challenge the band with different styles and instrumentation.“That’s what people enjoy - hearing different styles, changing it up. There really is something for everyone.”

From a grass roots beginning in Southern California, BENISE started out by playing in the streets, in front of coffee shops, selling lots of CDs. The buzz and the band built, as they added dancers and exotic showmanship. Soon they were promoting and selling out their own shows at larger and larger venues. “The next logical step was to travel the world and capture the essence and beauty of those different places in my melodies,” Benise said.

“I hope people will be inspired by our music and our story, and have the passion to follow their own dreams.” Looking ahead to future tour dates, Benise adds, “I can’t wait to travel to new cities, meet new people and play every night—it’s what I live for.”

Go ahead and grab your keys-you can read the rest of this in the car. Mark’s Restaurant, a long-time Laguna Beach favorite, has reopened after a five year hiatus. In a new location, just steps away from the Sawdust Festival on Laguna Canyon Road, Mark’s is spot-on perfection from soup to nuts.

To be fair, Mark’s had me at the butter. As we were seated, the most glorious bread and butter were delivered to our table. That night’s creation was warm jalapeño cheese bread accompanied by a beautiful hunk of fresh, sweet, unsalted butter sprinkled with crystals of red and black Hawaiian salt.

After the bread and butter ecstasy, we moved on to the buffalo mozzarella caprese salad – perfect snow white balls of fresh mozzarella, halved tear drop tomatoes and baby greens drizzled with a balsamic glaze. Every ingredient was at its peak and the addition of kalamata olives provided a perfect flavor balance.

The soup offering was French onion – a lovely, golden, sage-laced onion broth, caramelized onions and a toasted crouton topped with a slice of brie.

Our entrées were equally incredible. We started with sautéed shrimp perched atop cilantro and garlic risotto, surrounded by a puddle of smoky chipotle and tomatillo cream sauce. This dish was intensely flavorful and satisfying on every level. Our grilled filet mignon was cooked to perfection and served with garlic mashed potatoes and a gossamer béarnaise sauce.

My favorite house-made desserts were the Apple Tarte Tatin and the Mexican Chocolate Torte. Made with Abuelita’s Mexican chocolate, the torte is an unbelievably good chocolate cookie crust topped with a mixture of chocolate cream, allspice, nutmeg, cinnamon and cayenne pepper. The apples of the Tarte Tatin were indescribably smooth in texture, bathed in a caramel pan sauce and inverted atop a puff pastry crust. Not to be overlooked is the value. At Mark’s, the portions and prices are sized for the real world making it worthy of many return visits. Are you there yet?
