A massive thanks to all the delegates who attended the Pelican Catering Roadshow Over 90 delegates attended the Pelican Roadshow which took place on the 8th October 2014 at the River Centre, Tonbridge in Kent.

Caterers attended seminars where they learnt how to prepare for the EU Allergen Labelling Legislation and how to manage conflict at work. Plus, they all had an exclusive preview of the new Pelican’s Piranha system, which offers solutions to the allergen labelling legislation.

F R U I T & V E G E TA B L E SMARKET REPORT Vegetables As winter approaches there is an increased demand for root vegetables including cabbages, celeriac, butternut squash, sweet potatoes, and Jerusalem artichokes. Heavy rainfall across the country means that cauliflowers are packed in 6’s owing to their enormous size! Salad and Fruit The UK fruit and salad season has almost come to an end, and the market now relies on supplies from the warmer parts of Europe, resulting in a slight price increase. Crop Update Lemon prices have started

to ease as supplies are now available from Turkey. Be aware that the last of the UK lettuce will have a very limited shelf life, particularly after heavy rain and cold weather, do not hold too much stock and buy as required.

Lamb As the UK supply of the 2014 Lamb season starts to dwindle, we should see prices rise. With increased demand for proteins from the Far East, this is putting increased demand on NZ exports - supplies which find their way to the UK usually being higher in price than this time last year. Beef We will start to see UK beef prices increase as the year goes on. Limited

availability will be driving this rather than increased demand. Imported beef pricing will also steadily rise due to increased demand in the Far East. Pork UK pork pricing is remaining stable after some increases this year, and in previous years. The Russian ban on food import is putting pressure on the EU market. The gap between UK and EU pricing is starting to narrow compared with last year. Poultry Chicken pricing in the UK is remaining stable due to huge demand. The increase in demand is, in part, a result of chicken being seen as a healthy alternative to red meat. This means demand does not seem to be slowing.

Food allergen regulations will cost business £200 million per year!

In time for the Christmas party season 2014, every restaurant, hotel, pub, take away, motorway service station, café owner and festival caterer, as well as schools, hospitals and prison meals services, will have to accurately track, record and communicate to the public what menu items contain any of 14 of the most common foods to cause allergic reactions, such as nuts, shellfish and eggs.

The new EU regulations, which come into force on 13th December, seek to provide the public with better information about the foods they are eating.

The challenge will be greatest for restaurants which frequently change recipe or menu items; pop-up or event caterers; establishments with high staff turnover; and smaller establishments who may struggle with the resources to track, identify and record all allergens used from main dishes through to garnishes and drinks. As a result, the British Hospitality Association has calculated that it could cost the industry up to £200 million per year to implement new sourcing and management processes, adapt menus and websites and regularly brief and train staff.

UK diners prefer British-style food!

British food in restaurants is the most popular cuisine for people in the UK, according to a new survey, conducted by Travelzoo. The poll asked more than 2,000 UK adults to rank their preferences when it came to dining out in their local area. After British food, Indian cuisine was the second most-popular nationally, followed by Italian, Chinese, “gastro-pub” style, Thai, American, French, and Japanese.

Also 70% of people said that they have a favourite restaurant that they visit regularly.

There were also regional differences: Brighton residents preferred Italian, while Scots, Londoners and Mancunians preferred Indian food to British dishes.

Thinktank wants clamp down on takeaways near schools to stem rise in obesity

The government has been urged to scale back the large number of takeaways near schools to reduce children’s intake of fast food, as part of a renewed drive against obesity.

Pupils outside schools at lunchtime and after school are faced with too much temptation to buy unhealthy food, says 20/20 Health.

The report published by the 2020health thinktank, titled Careless Eating Costs Lives, says some chip shops, kebab houses and chicken joints should be closed as the temptation they pose for pupils is damaging schools’ efforts to promote healthy eating.

Julia Manning, the thinktank’s chief executive, said: “Fast-food outlets should all need a licence in the same way that off-licences do. There are far too many fast-food premises near schools. Limiting their number would have the support of schools and would help create a healthier environment for the schools. At the moment they are undermining schools’ attempts to help students to choose healthy meal options.

Cocktail sales rise by 10% - are you cashing in?

The Mixed Drinks Report 2014, a new survey of this significant market for the on-trade from CGA Strategy, reveals that cocktail sales have grown by an impressive 10.8% in just two years!

Cocktails are surging in popularity among young adults in particular. The proportion of under-35s who say they have bought a cocktail in the last week has jumped over the last year—from 36% to 43%.

Contrary to some popular perceptions, it is not just women who enjoy cocktails, with the split between female (54%) and male (46%) drinkers fairly even.

Eating-out sector to come under further pressure on health issue

The UK’s eating-out sector will come under further pressure in terms of its health responsibilities if proposals from a new report commissioned by Boris Johnson are taken up.

The proposals includes new rules that will be forcing restaurants to prove they would not have an adverse impact on health - and enable “exclusion zones” to be created. The report also proposes that traffic-light warnings about levels of fat, sugar and salt should be required in restaurants with at least 15 outlets in the UK, to avoid penalising small restaurants and cafes.

RENTOKIL The new ‘Bed Bug Monitor’ service from Rentokil Pest Control This is an early detection programme for bed bug activity. The monitoring service uses a food-based lure which actively attracts bed bugs onto a sticky pad, providing an early warning of infestation. The lures are placed discreetly around the bedroom, such as under the bed or in suitcase storage areas and are serviced every six weeks by a Rentokil technician. Bed bugs are virtually flat, and as a result can easily stow themselves away in the linings of suitcases or underneath skirting boards.
