The Russian New Year GuideThe most extensive New Year celebrations in Russia occur on December 31st/January 1st.

Fireworks, concerts and sumptuous feasts mark this holiday.

It is on this day that the “Rus-sian Santa”- Ded Moroz and his companion Sengurochka visit children to deliver gifts (See the differences of San-ta and Dede Moroz p.14).

What is known in the West as a Christmas Tree, is called a New Year’s Tree in Russia, so don’t be confused, when the Russians talk to you about buying a Christmas tree on the 30th of Decem-ber.

The New Year is regarded in Russia as a family celebra-tion, when everyone get to-gether to have dinner.

As we mentioned in last di-gests for a long time the re-ligion was prohibit, so many Christmas traditions and customs were mixed to-gether.

You will see that the winter festive season in Russia is truly interesting!

So if you want to have an amazing 2015-year, you will need to be concentrated on all your action for the last and the first day of the year and follow the Russian New Year Customs.

All that you will do on these days will reflect all your next year!

Before the 30th of DecemberBefore New Year, you still have a possibility to “Change your life” and get some “good points” for your karma.

d Start by getting out all the old things and things that remind you some bad or difficult moments of your life. If you don’t do that the bad luck and emotion will follow you in the new 2015 year, that we don’t want to happens;

d Clean all you house, to show to the new 2015 year your welcome;

d Pay all the debt and try to get back all the debts from your friends, so next year you will have no debts and you will wait money from no-body;

d Visit a hairdresser or bar-ber, make a new look to wel-come the New Year;

d Make some shopping, you will need to welcome the New Year in new clothes, or you will never do shopping in the next year! (That one is scary for women =) );

d Make some shopping in the grocery store – if you ta-ble is rich – you will be rich next year (it’s so easy);

d Ask anyone who is await-ing it for forgiveness and forgive all the bad things to others – and you will be Happy next year;

d Decorate a “Christmas” tree;

d Buy Bengal fires;

d Buy Tangerines;

d Buy/Create gifts.

On the 31th of December

d Take a shower or bath, you need to be clean and beautiful to welcome the New Year – it will make you happy next year.

d Start celebrations at home early, some families start even before 6pm. So your next year will be rich and interesting.

d Invite all your fami-ly (if possible) and all your friends. As with whom you will welcome the New Year – will be with you all year long.

d Put some ropes or rib-bons on the legs of the ta-ble – so all the people sitting at the table for the New Year will be healthy and always together.

Be sure that:

d The tree is decorated

d Everybody is clean, with a new hairstyle and new clothes

d The table is rich with sparkling wine or Cham-pagne, and Soviet Cham-pagne

d Everybody has a Bengal fire, a paper, a pen and a lighter

d Everyone has tange-rines

On the time of clock strikes

Here comes the magic!

Before the Kremlin clock starts striking, all the Rus-sians of all political views lis-ten to the Russian President and get ready to the main part of the celebration, the Kremlin clock strikes.

(As in Russia only the Krem-lin clock has magic power ;)

When the clock strikes 12 and before it finishes beat-ing you need to:

Option I:

1. Open a bottle of So-viet Champagne2. Pour Soviet Cham-pagne in the glasses of your guests/family3. Make a toast for the New Year4. Light a Bengal fire5. Make a wish6. Clink glasses with everyone in the room7. Give the gifts to everyone in the room

Option II (for the persistent ones)

1. Open the bottle of Soviet Champagne2. Put Soviet Cham-pagne in all the glasses of your guests/family3. Make a toast for the New Year4. Light a Bengal fire5. Make a wish and write it on a paper6. Burn the paper and put it in the Soviet Cham-pagne 7. Clink glasses with everyone in the room8. Drink the entire glass with the burned paper and Soviet Champagne9. Give the gifts to everyone in the room

When your small ritual of Russian New Year is fin-ished and the clock strikes, call ALL you friends, as the more people you will con-gratulate, the richer you will be in 2015.

At that moment the Ded Moroz and Snegurochka usually come.

d Never get some debt or lend money on that night, or you will be unlucky with money all year long.

On the 1st of JanuaryDon’t stop to celebrate and invite your friends on the 1st of January. While the 31st of December is more of a family celebration, you can spend the following day with your friends.

Mind all the things you do during this day, as it will be a brief of all your 2015 year.

d Don’t clean anything or touch any dirty thing – as it could attract the misfortune!

d Never get some debt or lend money on that day, or you will be unlucky with money all year long.

Option III (for the persistent ones, but not too much)

1. Open the bottle of Soviet Champagne2. Put Soviet Cham-pagne in all the glasses of your guests/family3. Make a toast for the New Year4. Light a Bengal fire5. Clink glasses with everyone in the room6. Drink your Soviet Champagne7. Make a wish and clean a tangerine8. Put the clean tange-rine under the “Christmas “ tree9. Give the gifts to everyone in the room

Salad OlivierIngredients:2 lb waxy potatoes, such as Yukon Gold;1 large carrot;2 lb unsliced bologna;1 white onion, minced;1 can green peas, drained;3 hardboiled eggs, mashed;3 tbsp fresh dill weed, minced;3 dill pickles, quartered lengthwise and sliced;1 tsp black peppercorns;2-3 bay leaves;1 cup mayonnaise (freshly made preferable);salt;freshly ground black pepper

Cube potatoes and bologna.

Slice the carrot in half lengthwise.

Split each half into thirds lengthwise and slice across.

Toss together potatoes, bo-logna, carrot, pickles, eggs, onion, peas, and dill.

Season with ground black pepper.

Add mayonnaise, mix well, and chill before serving.

Method:(IMPORTANT: Those ingre-dients that are cubed; for purposes of Olivier salad, are cubed SMALL. The side of each cube should be no more than 1/3 inch.)

Place potatoes and carrot, unpeeled, into a stock pot.

Add bay leaves, pepper-corns, and enough boiling water to cover.

Simmer until done when pricked with a fork, but not falling apart.

Cool completely and peel.

Mimosa salad recipeFor years, Mimosa salad is considered as one of the musts on the table when there is a big family event or a New Year celebration.

Even though the salad is made with mayonnaise, the taste is very tender and light.

You can try with different canned fish in oil.

Method:For this salad, it is better to use a deep glass bowl. Put canned fish on the bottom without any liquid and mash with a fork. Spread mayon-naise on it.

Then top with finely grated egg whites and again may-onnaise.

After that goes grated boiled carrot -> mayonnaise-> fine-ly chopped onion-> mayon-naise-> grated boiled pota-toes-> mayonnaise.

The top is decorated with grated yolks. Chill before serving.

Ingredients:1 can salmon in oil;4 boiled eggs;2-3 boiled carrots;3 boiled potatoes;1 onion;1 cup of mayonnaise.

Selyodka Pod ShuboyThe Russian name is “Se-lyodka pod Shouboy”, that means “Herring under fur coat”. It is a traditional na-tional dish for any events.

Ingredients:2 thick salted herrings;5 potatoes;4 carrots;3 beets;4 hardboiled eggs;400 gr mayonnaise.

If you like onion, you can put little pieces of onion on the herring.

Then spread mayonnaise evenly (thin layer).

Grind potatoes and make the next layer of it. Spread mayonnaise. Use a fork to plane the layers. Then goes carrot (grind, put, spread).

Then you do the same with 4 eggs and beets. Spread mayonnaise on the beets and grind 1 egg on it to make the dish beautiful. This salad must look like a cake.

Put the dish in the fridge for an hour. “Selyodka pod Shouboy” is served as an appetizer.

Method:Boil vegetables until they are ready ( you can boil veg-etables in 1 pan).

Boil eggs hard.

Peel skin from herrings, cut them along the spine.

Take all bones away.

Cut herring meat into very little pieces and always check for bones.

Take a large dish.

Put herring meat evenly on the bottom.

Fish Zalivnoe recipeThis dish is traditional for the New Year. In Moscow and St. Petersburg it has differ-ent names: Zalivnoe and Kholodets.

Ingredients:2 lb salmon (cat fish, trout);1 carrot;1 onion;parsley root;1 lemon peeled;1 bay leaf;5 black olives;2 tbsp gelatin;tbsp fresh dill weed;salt.

Place a lemon slice (peeled) on every fish slice anâ dec-orate with carrot rounds and olives.

Strain fish stock and add gelatin, bring to a boil and strain again.

Decorate fish with fresh dill weed and parsley green and pour over half stock carefully.

Let it to congeal a little and then pour over the rest. Serve with cabbage salad, hot sauces.

Method:Soak 20-30 g gelatin in wa-ter in advance. Wash and clean fish.

Cut the head, tail and fins and pour over it cold water (2 liters). Slice fish.

Place fish head, tail, parsley root, onion, salt in a pan and cook 25-30 minutes, then add sliced fish and cook at low heat until done (not more than 20 minutes).

Take fish slices out carefully and arrange them on a dish.
