Tips on Drink MixingAuthority discusses martinis, perfects,Tom Collins and rum innovations

OF the making and drinking of drymartinis, there are so many differ-

ences of opinion that only one thing canbe said without contradiction-the cocktailthe other fellow makes always tastes bet-ter. Nevertheless, this most popular cock-tail contributes very substantially to barrevenue. I trust I shall be pardoned forremarking that my observation in manyclub bars is that the drink is too oftenmade as a matter of course, served toowarm and not carefully mixed-whereasin the homes of my friends I invari-ably enjoy an excellent martini. It seemsto me a manager might well experimentwith the tastes of his membership to makesure he is serving the sort of martini theylike best. I know I lay myself open, tothe charge that if his club has 500 mem-bers, there are 500 different tastes tocater to; but I believe a mean can bestruck.

The purist insists there is only onedry martini-two-thirds gin to one-thirddry vermouth, with an olive or a littleonion. But in actual fact there are manyvariations. Every club must have a fewmembers who insist on five gin to onevermouth-to my taste a vile thing tohave to drink. And there is a chain ofpopular restaurants whose success in theEast has been spectacular, who put a fewdrops of scotch whiskey (a fact!) into

'each martini they serve and appear tothrive on this innovation.

Women Like PerfectsI always make what I think is known

as a perfect; that is, I include a smallportion of Italian vermouth with theFrench, and on great occasions add afew drops of lemon juice. Our lady friendsare gracious enough to express their ap-_

Then there are those who use no dryvermouth at all, but turn to Italian. Myexperience with such martinis -is thatthey need a master's hand. One dolloptoo much of Italian and the drink is afailure, but made with the right propor-tions-I would not dare commit myselfbeyond saying use a very little Italian-and serve Arctic cold, the drink is a mas-terpiece! Recently a kind club host pre-faced his dinner for me by making hisversion of a martini which uses onlyItalian. The drinks were poured out intothe glasses, very cold, at the table, andhe squeezed into each a quick shot oforange peel essence and then one of lemonpeel oil, the -slivers of peel being placedbefore him in pony glasses, ready for use.It was a magnificent cocktail. Obviouslyimpractical for general club use, becauseit is too time-consuming, but recommendedto any manager who may have a harassedhouse committee dinner to steer into pleas-anter channels.

Tom Collins VariationsAnother popular drink, often better

made at home than in a club, but withmore excuse for it, is a tom collins. Itis vital to a smooth collins to dissolvethe sugar _in the lemon juice and ginbefore adding the ice and soda water.This takes time and on busy days yourbartender cannot be expected to do it.Here is a solution that I first suggestedlast spring, and in certain restaurants andclubs that adopted it, the result was re-markable, especially with ladies: insteadof sugar in your collins, use green or whitecreme de menthe. Not so cheap as sugar,of course, but you could announce thedrink as your special club tom collinsand charge a trifle more than you do forthe regular. A delicious variation for acollins is to take a few mint leaves, add2 teaspoons of powdered sugar, poundthem up well and add your gin. Let itstand for a minute and then add the juice

Remember, in all long gin drinks aflavory gin should be used, because one'spalate seeks the taste of gin, whereas ina martini all flavors should blend, so thatno one is prominent.

When it comes to rum, I am prejudiced,believing as I do that the finest rum onthe market for cocktails, planters punches,or old-fashioneds, comes from Trinidad.This is because it is a light-bodied rum ofliqueur quality. It calls for the use ofvery little sugar and, like all other rumsin a cocktail for that matter, calls forlimes rather than lemons. Sugar syrupis simpler to handle than sugar, but ifthe latter is used be sure to use a super-fine granulated, since powdered or con-fectioner's is apt to have corn starchadded, which may make your cocktailcloudy and leave a deposit in the bottomof the glass.

If a West Indies custom of rum drink-ing could be introduced into clubs in thiscountry, receipts from rum sales wouldimprove. Perhaps you can persuade anenthusiastic house committee member: tofollow this plan. It is customary in theIslands for the butler to offer drinksto the guests on a large tra¥ filled withglasses, into which the cocktails have beenpoured. The guest selects his glass, turnsand toasts his hostess and drinks downthe whole drink, returning the emptyglass to the tray and immediately picksup a second glass, which he sips at hisleisure. The butler then proceeds to thenext guest. Late-comers obey the sameritual, which is quite a pleasant one.

Winter Means More $ $ for FungyIN order to get better acquainted with

the golfers that play during the summermonths over his course-the Spring Mea-dow GC, Allaire, N. J., a resort coursethat draws considerable play from the Jer-sey City district-Joe Fungy opened anindoor golf studio this past winter wherethese same golfers could receive pro in-struction, and practice to improve theirgames. Fungy had been encouraged lastsummer by his members to open such a

practice studio, so this past winter, witha young pro, George Malhame, as his as-sistant, he purchased the old MadisonSquare Garden outfit and with the addi-tion of equipment he already had on hand(from studios formerly operated at Clarks-burg, W. Va., and York, Pa.) opened theJersey City Golf Studio.

The studio, which occupies the top floorof a business building in the heart of thecity, is the largest golf practice layout of

its kind in the Metropolitan district. Thereare five large nets for practicing andteaching, one large approaching net forchip shots, etc., and a large practice put-ting green with cups placed at variousangles. A net has also been installed inthe back of the building for pupils whoare inclined to, be self-conscious.

Other pros in the district have been in-vited to bring their pupils in for personalinstruction and practice, and quite a fewhave already taken advantage 'Of this op-portuni ty to improve their members'games: during the so-called winter layoff.The golf studio opened December 15 andclosed for the summer season June 1, atwhich time Fungy took up his duties atthe Spring Meadow course.

Success of the studio in its first yearhas been so great that Fungy is alreadyformulating plans to enlarge and extendits services for next season.

captain was unanimous., Although only 15, Miss Fox is in herfifth year in golf, and has a national handi-cap of 8. She is a product of the GlenRidge club's junior golf instruction classes.Another product of this class, Elaine

. Beatty, daughter of Judge L. G.Beatty,Glen Ridge, is a member of thaboys' golfsquad of Glen Ridge High School. A thirdgirl and another Glen Ridge junior classproduct who has been honored by playingon her high school's varsity golf squad, isLaddie Irwin, who played on the Montclair(N. J.) High School golf team in '36 and'37.

New England PGA HoldsEighth Annual Exhibit

FOR seven' years the New England Sec-tion PGA has 'been giving increasingly

successful annual demonstrations of proadvance in business organization. Thisyear again, the New England proslaunched their season with an exhibition ofpro-shop merchandise representing 25 dif-ferent manufacturers, in a hall at HotelStatler, Boston. Judging from a rathercareful survey of the exhibitors, there wasapproximately $20,000 of pro-shop mer-chandise and supplies sold during the oneday of the New England display.

The display 'han itself was one of theeducational factors. Pros repeatedly com-mented on attractive displays made bymanufacturers, and picked up numerousideas for pro-shop use in giving the shopstock a sales pull. Display spaces at theNew England affair are of uniform size(10. ft. x 5 ft.) but of such variety ofdisplay treatment that they inspire thepro who thinks that it is hopeless to tryto make his shop distinctive.

Exhibits Promote Intelligent BuyingIt is the general conviction that the

New England exhibits' have done much toeducate this section's professionals in buy-ing. They have not reduced their fallordering, so this spring buying arrange-ment does not curtail the advance ordersthat manufacturers count on to give thema winter manufacturing schedule and toallow them to spread their productionprogram instead of taking a chance withan unduly large volume of spring ordersfor immediate delivery. However, the ex-tensive variety of merchandise on dis-play at the spring exhibit permits compar-ative shopping on a strictly business basis.

In this way three purposes are served:(1) Selling costs are reduced for the

manufacturers. The pros realize that thenumber of calls a manufacturer's salesmancan make on pros in a day is limited be-cause the pro often is on the lesson tee,

(.2) Too much "friendship" buying isdone by pros. This does the pro or thesalesman who gets the "friendship" orderfor a small amount, no lasting good. Thepros, like the stores, are finding it wise tolimit the number of lines stocked in theshop, but to have a fuller range of thefew featured lines.

Many a professional has 'learned that agood part of his season's expected profitis tied up in slow moving merchandisethat he has 'ordered because he felt kindlytoward the salesman, rather than becausehe was enthusiastic about pushing thegoods for service value to the pro's shopcustomers. Having a quite full represen-tation of manufacturers in attendance atthe spring exhibition reminds the pro thatif he tried to do business with every sales-man who's a good fellow his shop stockprobably would be spread too thin for ut-most selling force.

(3) The pro gets into the atmosphereof merchandising and goes back to hisclub realizing that supplying the mem-ber with the playing equipment requiredis a highly important part of club service,as well as an essential phase of the pro'smoney-making operations:

There is a predominantly business key-note to the annual dinner which bringsthe spring exhibit day to a close. Invari-ably one of the prominent speakers atthe dinner makes remarks that receive na-tional publicity. National and regionalamateur association and PGA officials,prominent players, and newspapermenspeak.

This year there was an exceedingly in-teresting demonstration of golf swinganalysis made with a device developed byRobert Adams. New England pros believethe device has great possibilities in in-struction.

WHAT'S NEWPabst Brewing Co's. chairman, Fred Pabst, re-

cently . made the statement that "Keener discrim-ination is to be found among today's beer-drinkingAmericans." Pabst based his statement on asurvey of more than 22,000 purchasers of packagedbeer, 85% of whom today order packaged beer bybrand name, and more than 82% of whom purchasea .part.lcular brand because of taste preferences.

The Pabst Brewing Company, with 96 years ofbrewing experience behind it, has been watchingthis trend during the seven years since repeal, Pabstremarked in further comment on the increase inBlue Ribbon beer sales. The distinctive flavor ofBlue Ribbon beer, Pabst explained, is produced byblending more than 33 brews to make the beer theconsumer drinks. This blending process is controlledby skilled brewmasters and laboratory technicians.It produces a finished product which is alwayssmooth and uniform in flavor.

"This blending is a requisite of good beer," Pabstsaid, "because br swing-c-even though controlled withmany devices of modern science---is still largely anatural process. No two brews-even though theingredients are the best and the processes of brew-ing them are identical-c-ever turn out quite the same.Only by expert and extensive blending-which ispossible because of the experience and the hugestorage facilities of the Pabst company-can a normin the taste of a beer be maintained.
