By Rhonda Meredith

When Charlie Felts andChef Christopher Simonmet 35 years ago, theyjust clicked… Their friend-ship was maintained in-side, as well as outside, the fickle service industrythrough a shared dreamto one day to co-own arestaurant. The date thisdream became a realitywas in January 2010,when Opus Bistro openedits doors for the first timein Clear Lake Shores.

The restaurant’s namereally captures its essence.“Opus” is a Greek deriva-tive that translates to“one’s life’s finest work.”And “Bistro” has originsfrom the South of France, which loosely means “aneighborhood restaurantthat serves large portionsat affordable prices.”

Opus Bistro offers continental cuisine at affordable pricesfrom the 100 year old recipes of Escoffier that have stood thetest of time over and over again. The restaurant specializes inBlack Angus steaks and fresh seafood. Felts notes that they only

buy the freshest products;the seafood is purchasedlocally; and the items onthe menu are made fromscratch daily.

The friendly andknowledgeable staffmust have had previousexperience in fine diningto be handpicked byFelts to become a part ofthe Opus Bistro family.“Most of the staff wehired back in January2010 are still workingwith us,” Felts says. Hethen sums it up by say-ing, “We have the bestfood and professional

service in the area.”

But being the culmination of morethan three decades in the making,Opus Bistro does not stop at foodand service! The restaurant has athriving bar area with over 120wines available. “We try to go over

and beyond with just an offering of the basic of wines to ourcustomers,” declares Felts. Opus Bistro utilizes the services of awine broker who has a knack for seeking out newer and lesser-known wines. “Hidden gems” as Felts calls them. Customershave the opportunity to try out up-and-coming wines beforethey become widely available.

One would be remiss in not mentioning the martinis cheer-fully served at Opus Bistro. As featured in The SCENE Maga-zine’s November issue, the two martinis served most often atthe bar are the slightly sweet “Lemon Drop” martini and the sin-fully delicious chocolate martini.

It has been said that the restaurant’s food presentation andwarm, elegant decor are only rivaled by the charm of the BayArea’s rich history and friendly people. Opus Bistro’s neighbor-hood setting is only minutes away from the Kemah Boardwalk– this understated building is nestled on the waterfront. Uponentering Opus Bistro, you will quickly note that the atmosphereis welcoming to all types and there is not a bad seat in thehouse. The casual, yet elegant, waterfront dining experience isgood for families as well as for those who may be on a formalfirst date. Patrons enjoy complimentary valet parking on week-ends.

U.S. Senator John Cornyn to receive 2012 Quasar AwardAnnual BAHEP Banquet on Friday, Jan. 20 at the South Shore Harbour ResortThe Bay Area Houston Economic Part-

nership will honor U.S. Senator JohnCornyn with its prestigious 2012 QuasarAward for exceptional leadership in Eco-nomic Development presented duringthe organization’s Annual Quasar AwardBanquet on Friday, Jan. 20, 2012, at theSouth Shore Harbour Resort and Confer-ence Center in League City.

The Quasar Award is presented eachyear to an outstanding individual whohas contributed greatly to the economicwealth and diversity of the Bay Area Hous-ton region. In 2008, Texans overwhelmingly re-elected Senator JohnCornyn to represent them for a second six-year term in the UnitedStates Senate. Senator Cornyn was first elected to the Senate in 2002and previously served in Texas as a district judge, a member of theTexas Supreme Court, and as Texas Attorney General.

Since 2002, Senator John Cornyn has worked diligently in the U.S.Senate to protect and promote Texas businesses. In June 2011, Sena-tor Cornyn wrote EPA Administrator Lisa Jackson highlighting the dan-gers of unfairly sweeping Texas into the final Cross-State Air Pollution

Rule program without due process and he continues the fight againstgovernment overreach in Washington. Senator Cornyn’s commitmentto the continued economic growth of the State of Texas and the BayArea Houston region makes him the ideal honoree for the Bay AreaHouston Economic Partnership’s 2012 Quasar Award.

Bob Mitchell, BAHEP president, said, “For more than 25 years, Sen.John Cornyn has worked for the people of Texas. He has served itsbusinesses, both large and small, individual entrepreneurs, and Texasworkers. The strong economy of Texas and the Bay Area Houston re-gion is due in no small part to his efforts, and, for these reasons andmore, we strongly felt that Sen. Cornyn would be the ideal 2012Quasar Award honoree.”

Sen. Cornyn responded, “I am deeply proud of the accomplish-ments of the men and women of the Bay Area Houston community, whose hard work has elevated America to the forefront of humanspaceflight. I am honored to receive the Quasar Award, and I appre-ciate all the Bay Area Houston Economic Partnership does to supportand promote the region. I look forward to continuing my efforts toensure that as our space program transitions, both the JohnsonSpace Center and the Bay Area region continue their rich tradition ofhelping to advance America’s leadership in space.”

223 West Main St., La Porte • 281-867-1700Background / Experience: Robert began working as the Execu-tive Chef at Mainly Drinks in October 2011. Before that, he workedin the food service industry with Eurest Dining Services at Exxon asChef Manager, and before that as Executive Chef with Sodexho atSpace Center Houston. Robert also served as General Manager/Cheffor Reata Restaurant's Alpine location. Robert has 20-plus years inthe culinary field and his emphasis is on Southwestern, Cajun/Cre-ole and American cuisines. He believes in providing the guest witha dynamic dining experience and works hard to achieve excellence in his kitchen.

Specialty: Southwestern and Cajun/Creole

Signature Dish: Seafood Cakes. Lightly breaded shrimp and lobster cakes, sauteed, and served with sun-driedtomato cream sauce. The seafood cakes are delicious because they have very little breading – “You get shrimp andlobster in every bite.”

Have you ever prepared a meal for anyone famous or infamous? At Space Center Houston, Robert su-pervised the “Return to Flight” party, celebrating the return to flight of the Space Shuttle after the Columbia disaster. In attendance were many celebrities, including astronauts from the Apollo and Shuttle programs. While employed atReata Restaurant - Alpine, Robert prepared food for Julia Roberts, as well as for Brad Johnson, Tommy Lee Jones, and Tom Selleck while they were hunting at the restaurant owner's ranch.

Ever Please share one special cooking tip or technique with our readers: To keep milk past its expira-tion date, add a pinch of salt to one gallon. The salt slows down the rate of bacteria growth.

ARTSFeatured Artist: Steven Trimble

By Kelley Dawson

Artist and designer,Steven Trimble wishesto evoke emotions in atruly mixed-media man-ner. Whether by astroke of his paintbrush, graffiti marker orspray paint; the im-agery Trimble createscalls out to you, pullsyou in and doesn’t letgo. Wood coveredwith multiple layers ofnewspaper serves as the foundation for his paintings. Look forthe whisper of a news clipping hiding behind layered blacks, the muffled conversation of a newspaper photograph or thescream of a headline. The combination of newspaper layersand his designs form much depth and texture. Trimble’spieces literally speak volumes.

Each painting contains specific newspaper articles and/orpictures mostly detailing current events. Trimble shared themeaning of a private collection piece, The Ghosts of Progress. It depicts articles about the BP spill and reflects his own ques-tion, “What happens after we leave?”

Trimble wasborn andraised inPasadena,Texas. His fa-ther worked ata press shop.Having grownup around thepress shop,Trimble feelsnewspaperand ink are apart of hisblood; there-fore, what bet-ter medium forhis life’s work.Plus, newspa-per is readilyavailable.Newspaperalso creates aunique surface.Trimble stated,

“You can'tpredict awrinkle, acrease, orjust howthe paperwill all layon top ofeach other. Each paint-ing has alife of itsown viathis lay-ered, tex-turedbackground.” Trimble believes he will outlive newspapers andonce shared his opinion with his disbelieving father. Trimblehopes his paintings “carry on the legacy of what newspapersused to be.”

The main source of Trimble’s creative inspiration comes frommusic. One of his most recent paintings, It’s Always Sunny, isbasically a self-portrait that was inspired by the Cure song, Dis-integration. Another of Trimble’s paintings is based on thesong Ten Thousand Days by Tool. It’s no wonder that Trimbleeventually met up with the owner of the local music venue,Scout Bar. Trimble assisted with the interior design as well ascommissioned nine paintings specific to the bar. Local bandfavorite, The Hunger, requested Trimble to create their lastalbum cover. He has since designed countless artworks fornational bands. In addition to music, Trimble is “wildly in-spired by graffiti.” Layered with drips and overspray, graffiti of-fers texture all its own. Trimble calls the art form “controlledmayhem.” As he watches graffiti evolve from “cities of art” likeNew York to tagged trains which Trimble refers to as “movingart,” his creations have morphed from clean and polished tomore urban and gritty.

ARTSTrees Turned ArtBy Peggy ‘Domino’ Taylor

In a month where we findourselves looking for ways to dis-pose of the memory-filled driedto near-brown Christmas tree –maybe the kids pose the solutionof a making a fun tree fort oryou consider cutting it up andusing it as mulch or just dispos-ing of the sacred bush on a spe-cial trash pick-up day – butGalveston has come up with anextraordinary idea for recyclingdead trees and turning theminto memorable pieces of art,the Trees Sculptures.

The Tree Sculpture Tour is aproduct of the numerous treesdamaged or dead from the hor-rific winds and tidal surge fromHurricane Ike in 2008. As the citywas forced to say a sad goodbyeto these majestic trees that greetthe tourists’ upon arrival and pro-vide sheltering canopies in Galve-ston’s landscape, a group of homeowners saw a chance tomorph symbols of destruction into signs of rejuvenation. Localartists have sculptured the tree remains that lined the streetswith whimsical objects of art. Most of the sculptures are con-centrated on the East End Historical District and were paid forby private homeowners, but they grace all areas of Galveston.

The carvings weredone by Galveston’sartist Earl Jones, JimPhilips of Houston andDale Lewis of Indiana.Sometimes during theguided tours one cansee these artists creatingnew sculptures.

The Galveston VisitorInformation Center(2328 Broadway, behindthe Ashton Villa) offers abrochure map for theself-guided tree tours. The tour is easy to enjoywhile walking, biking, orriding. If you prefer a

guided tour the Galveston Island Tours, an af-filiate of the Galveston Historical Foundation, offers one every Saturday morning departingfrom Ashton Villa, with tickets $15 for adultsand $10 for children and the mode of trans-portation is a solar powered shuttle bus.

Many more trees were damaged from thestorm than the display of the new symbols ofrejuvenation can reflect. After the hurricane, the Galveston Island Tree Conservancy in con-junction with the Galveston Island Tree Com-mittee worked with hundreds of volunteers toensure that 100% of the Ike wood was kept

out of landfills and used for recycling projects.

Over a 100 tons of former Galveston trees were selected forthe restoration of America’s only remaining whaling ship andanother 200 tons went to Malaga, Spain, to be used in thecompletion of a full scale replica of the Brig “Galveztown,” anda local lumber yard took several tons of the Ike wood to milland dry for building projects. Several art galleries in Galvestonsell various smaller wooden art pieces also from these treas-ured trees.

For information or to book a Tree Sculpture Tour, call 409-765-8687, www.galvestonislandtours.com and for general in-formation call409-797-5144, or logon towww.galve-ston.com.Donations arealso acceptedfor the treeproject. Whata better wayto start aNew Year.

Hundreds of boatsswarmed the Nassau Bay La-goon, South Shore Harbourand the Kemah Boardwalkdazzling the crowds along theshores.

Beautifully decorated sailand power boats entertainedthousands of spectators withtheir creative lights, music, dancers and designs. “Manyboats used the traditionalSanta, candy canes andsnowman, but others werevery unique,” said ParadeChairman Jim Christiansen.“There was an octopus, thegiant lamp-leg from “a Christmas Story”, Elvis live from Vegas, skating penguins and a huge birthday cake on a boat cov-ered in golden lights,” said Christiansen. Many boats salutedthe special anniversary of the parade with the number 50 inevery color.

This year’s event not only celebrated the 50th parade, but

also commemorates the 50th birthday for League City andthe Clear Lake Area Chamber of Commerce. The first paradein 1961 had five boats and included boat Captains JackCampbell and Red Adair. In the early 1980’s when the pa-rade participant numbers were steadily increasing, long timeparade committee member and participant R.B. “Bob” Taylor,

suggested asking the Clear Lake Area Cham-ber of Commerce take over producing theevent. “The parade has continued to be asuccessful project,” said Christiansen. Tohonor the 50th anniversary, R.B. “Bob” Taylorserved as the honorary Parade Marshall andlead the parade on the Dorothy “D”, a yachthosted by Lakewood Yacht Club.

Other sponsors included Nassau Bay, KemahBoardwalk, The Bay Area Citizen, the HoustonChronicle, Hollis Huff Lewis & Company P.C., 3Amigos Fuel Dock, Houstonboatshows.com,Houston Safe Boating Council and the SouthShore Harbour Resort and Marina.

The boat TANGLED WEB, pictured at right, exemplified the50th Anniversary of the Clear Lake Area Chamber of Com-merce, the parade and the community by designing lights thatlook like notable sites around the lake plus the Chamber’slogo. They won the Jack Campbell Memorial Best Overall Fam-ily Boat, the Nassau Bay Mayor’s Award (shown above) andthe Chamber’s 50th Anniversary Golden Anchor Award.

Upon reflection regarding his win, Dane stated “I felt really preparedfor this regatta. I feel very proud to have the honor of having my nameplaced on the Mendleblatt Trophy at Southern Yacht Club.” He hasearned this trophy in every way having worked hard and coming upthru the ranks of Opti sailing classes for the last several years, explainedSeahorse Co-Chair Jill Hughes. Captain Noah shoves offIt’s now “official!” Fred and

Beverly Lyttle (owners of Noah'sArk Bar and Grill in Bacliff) haveretired! Or so they say.

The Lyttles left word that theyare going to travel, travel, andthen travel some more.

At the helm are GM Kellie Ver-lander, Kitchen Manager Andre Cartier and Assistant GM JeanTanksley who happily accepted the course set before them.

Noah’s Ark has been in business more than 15 years and iswell supported by dedicated employees and many loyal cus-tomers. Known for their generosity in the Bacliff community. They have provided free meals to Veterans on Veterans Day;on 9/11 each year, free meals are offered to all local fire fight-ers and police. Thanksgiving and Christmas meals have beengifted to friends and neighbors in need, and year after year, they serve a traditional Christmas dinner to area senior citizens.

This month, Noah's has pledged 5% of their food profits tothe Lions Club, who helps needy people obtain eyeglasses andprovides support to the Lion's Crippled Children’s Camp.

Their immediate presence will be missed, but rest assuredtheir community services will continue on. And, just becausethey are “officially retired,” doesn't mean you won't occasion-ally see them at Noah’s for a visit. “They know where to go forgood food,” said Jean.

GORDON STREET TAVERN: Walking On The Wild SideBy Rhonda Meredith

Quick Question… Haveyou been to Alvin lately?

On New Year’s Eve2011, Gordon Street Tav-ern opened their doorswith a lot fanfare to hosta huge and successfulcelebration bash. 2012 islooking pretty bright forthis Alvin establishment.

Located in a building that is over a century old, GordonStreet Tavern’s walls are thick with history. It’s cozy and the fullmenu that is being served makes it the place to be… Say, are

you hungry right now?

And if you are hungry, then let me ask HOWHUNGRY? Hungryenough to take the Gor-don Street Tavern chal-lenge? The challengeincludes consuming 4 -1/2 pound angus patties, each topped with Ameri-

can, Swiss, Colby-Jack, 4slices of bacon, chili, and fin-ished off with a toasted bunand accompanied by one

pound of waffle fries that will be covered in chili and cheesejust before leaving the kitchen. Of course, there are other foodoptions and plenty of them that sound so good…chickensandwiches, fish ‘n chips, and even fried eggplant and pickles!

Maybe it’s your thirst you are looking to quench? The tavernoffers 30 kinds of beers on tap, an additional 50+ in the bottle, and a fully stocked bar. Happy hour is 3pm to 6pm Mondaythrough Saturday and all day on Sunday. “Industry Night” isevery night and all of the time.

The “Original” Martini – It’s deceptively simple: The basisfor this classic is the simple taste found within Tangueraygin or Tito’s (made in Texas) vodka. Add olive juice to cre-ate texture in the beverage and stir. The perfect garnishis olives on theside. Pair this drinkwith Union Tav-ern’s steak nighton Mondays.

Anndee’s StrawberryShortcake Martini – It’s

almost too pretty to drink!Sobieski Vanilla vodka

shaken with Qream’s StrawberryCreme liqueur is served with acherry garnishment. Guys, this is a wonderful drink to pick out for a dateon a certain February holiday or actually anytime you want to impress!

Ramona’s Caramel Orange Martini – A martinithat is not for the weak and tastes savory sweet. The glass is filled with the rich tone flavor of So-bieski Karamel vodka and infused with Sobieski’sOrange vodka. The latter flavor is reminiscent ofan “Orange Slice” candy. This is served “straightup” and without any other ingredient otherthan a lemon slice for a sucker punch!. A varia-tion is to add a splash of Sugar Free Red Bull.Call it a “skinny version.” Great to sip on

while listening toChris J. Hardy’sacoustic set everyother Tuesday night.

Loose Notes by Andy EngWe hope everybody had a safe and joyous Holiday Season, took care of your loose

ends in 2011, and ready for what pundits predict should be a doozie of a 2012. What-ever your goals and challenges be for the New Year, we wish you the best -- And hopeit includes catching you out there out on The SCENE. Before we do...

OUT WITH A BANG - went December, and we lit the fuse with Krewe Du Lac'sChristmas Toy Drive & Pub Crawl in Kemah. The fun started at T-Bone Tom's with Wood& Wind on stage before the hordes of merry mongers headed off to Crazy Alan'sSwamp Shack, Zone 504 shaking things up with Andy & The Dreamsicles, and finallyroosting at Bakkhus Taverna. The food and fun at each was tops and the quality of toysdonated at this annual Lighthouse District event was up a notch with some really goodstuff going to area youngsters needing a ray of sunshine. Thanks to all the Crawlers!!

'TWAS THE SEASON -- Cheers to the Bay Area Houston's Ballet & Theater Companyfor flat out amazing our lenses and delighting our souls with their sold-out presentations of The Nutcracker Ballet. Guest artistsMs. Lorna Feijoo and Mr. Nelson Madrigal provided us world-class performances andthe BAHBT local cast of dancers, actors, crew, directors & producers were nothing short

of utmost. Wanna catch some-thing seriously cool? BAHBT'sgot it... While in the "wayback" mode, we jaunteddown to Galveston joining upwith locals and visitors fromacross the nation at the annualDickens On the Strand. Everbeen? There's simply some-thing magical when stepping into the past that never gets old...

NEW STOP ON THE BEAT - And that be Fatty's on the southeast corner of NASA Road One and 146. This place qualifies asSCENE Party Ready with a spacious upstairs loft, super staff, huge bar, plenty of games, a great deckand grand opened with a full house with noneother than Madigan on stage. Speaking of new,we got to hear the band with their two new addi-tions, Jeremy Walton (bass/vocals) and Mike McCul-loch (keyboard/vocals) providing depth anddimension furthering an already dynamic and daz-zling experience. 2012 should be a great year forboth Madigan and Fatty's. Stay tuned!

Local musicians Jordan Applebe andRichard Rose have been friends for a“good” 6 years or so… But it wasn’t untilafter Applebe’s band broke up last yearthat they started jamming together andrealized some kind of cool acoustic thingwas happening.

“After the experience of the bandsRichard and I had been involved with inthe past, we decided to do something abit more simple, more relaxed and fun,”Applebe said. “Instead of beating our-selves up over ‘does this sound toogeneric’ or ‘is this out-of-the-box enough,’we now just go out, drink, perform, andhave a good time. The audience in turndoes the same with us!”

Applebe has been playing the guitarfor 12 years now and Rose is very adepton the fiddle having over a dozen years’experience as well. “One of the biggestchallenges of playing acoustic versusplaying with a full band is there's a lotmore energy that comes from a fullband. You've got the bass and the drumsand the amps are all cranked up, so it's easier for people to get into it.”

And the flipside is? “Performing acoustic is a lot more candid and intimate. There's more feel-ing and a lot less focus on sheer entertainment. That way when you connect with your audi-ence, it's a much deeper connection. They connect to you and your music not for the flashand glamour… That's what we've done with Thick N Thin. We've shaved off the fluff and got-ten down to the heart of what we play.”

Applebe and Rose have put together “a mix of classic, modern, and Southern rock songs”along with some “Texas dirt music” and a few originals. One of Applebe’s favorite originals toplay is their newest song titled "One Last Stop." It’s about running from the police while tryingto make it to Mexico but “he's got to stop in Houston to see his girl before he escapes.”

Applebe notes that Thick N Thin is influenced by classic acts such as Bob Dylan and TheDoobie Brothers, along with modern music from Aaron Lewis and Alice In Chains. “We per-form a lot of slower ballad-type tunes. Songs that are really poignant and relevant to what'sgoing on in people’s lives. And since we are the only act usually on the bill, we try to interjecthumor and spontaneity in between songs to keep the audience interaction.”

Thick N Thin’s philosophy is simple enough and Applebe sums it up like this, “We strive toplay good music that people can relate to and to get a bit tipsy in the process!”

Thick N Thin will be performing at Fatty’s in Seabrook on February 11. Go check them outduring their thing at a very cool venue and friend them on Facebook too. For booking infor-mation, email Applebe at [email protected].
