Farmers, growers, and food producers have been sent a local foods survey, and are being asked to respond to it by Monday, June 4 th . The local foods project was discussed at length during the last year. Richard Zink, Executive Director of Southern Tier West, says the board has been talking about the project since December of 2010. The goal of the project is to assess the current capacity of local food production, and to gauge the feasibility of developing new strategies and programs geared to grow the local food economy. The emphasis is to stress the benefits of eating locally grown foods, within an 80 to 100 mile radius of the three-county region. Zink noted in a previous article back in October of 2011 that locally grown foods help not only the farmer, but also the local economy as a whole, while enhancing the nutritional value to consumers. As explained in the survey sent out to growers, responses are logged in anonymously. The text reads, “We would like to ask you to take a few minutes to respond to the Food Producer Survey. We would appreciate your honest and thoughtful responses so that we have valid results that can inform our future strategies. Area Relay for Life participants will not only be walking on tracks in the near future, but they will also be taking steps to fight cancer. Teams will remain on those tracks for hours to raise money for cancer research, along with celebrating the lives of people who have battled cancer, remembering loved ones fighting the disease or who have lost lives due to it, reports the American Cancer Society’s Relay for Life website. Holiday Valley Resort is hosting the first annual Mudslide Obstacle Race on June 16, 2012. This off-road run takes place on the Holiday Valley ski trails where participants must navigate 8 obstacles along the very muddy 3.5 mile or 5.4 mile courses. The number one goal of the event is to have fun and people of all ages and varying fitness levels are encouraged to join in. Race packet pickup is Friday from 6PM to 9PM at Tamarack or Saturday morning from 8AM to 10AM. The event will start at 11AM at Spruce Lake. A ride to the start on the Spruce Lake chairlift is included in the entry fee. Spectators may ride up the lift for $5. The 3.5 mile course travels east across the cross country trails to the top of Eagle, down Woodstock, across Explorer to Morning

Star then through the woods and across Mardi Gras, down Holiday Run to Edelweiss to the finish at the Training Center. The short course elevation has a downhill drop of 600 feet. The 5.4 mile course adds a loop from Eagle across to Cindy’s, down Bear Cub and then a challenging uphill to Explorer where it joins back into the short course. Eight obstacles will be placed along the trail including a log pile, a “slalom” course, a maze and the final challenge is a giant mud slide down lower Yodeler. Medals will be awarded to all finishers. Prizes will be awarded at the post race party on the Champagne Sundeck to the overall 3 fastest males and females as well as the most creative costumes. Muddy runners can shower under the snowguns on Yodeler and changing facilities will be

available. Pre-registration is available on until June 7 at holidayvalley.com and at Active.com for $45 for the 3.5 OR the 5.4 mile run and $10 for the kids’ run (up to age 12). Day-of-race registration is from 8AM to 10AM and is $60 for the 3.5 or 5.4 mile run, $15 for the kids run. Pre-registered competitors are guaranteed a t-shirt. All competitors will receive a goody bag and a super cool finisher’s medal. Competitors are encouraged to visit Ellicottville after the event and many of the businesses will be offering specials to those wearing their finisher medals. Special lodging packages including Mudslide entry fees are available at the Inn at Holiday Valley and the Tamarack. If you’re thinking about entering...do it now because it will give you inspiration to train!

The Ellicottville Memorial Library is pleased to announce the generous donation of funds from the Rotary Club of Ellicottville Foundation for Youth to hire a local student as a summer intern to help with the children’s Summer Reading Program. We are thrilled because this additional person will give us the ability to provide more programs and activities to the 100+ children that sign up each summer for our Summer Reading Program. Residents have been busy scouring their basements, attics and garages searching for just the right treasures to put out there. It’s a veritable extravaganza of second-hand goods and it all has to go! Talk about capitalism at its finest … While you’re out there enjoying some sunshine and rummaging, keep in mind we owe our pre-summer break to the thousands of men and women who have made the ultimate sacrifice for our freedom. I speak, of course, of those who have perished while serving in the armed forces. If you really think about it, Memorial Day will be a somber

day for the many families who have lost loved ones ensuring our country’s liberty. And for the over 8,000 veterans still living in Cattaraugus County, this is a time for remembrance of the friends lost who served alongside them; those who literally “gave their all.” Imagine being a mom or a dad whose son or daughter is currently serving in Iraq or Afghanistan or some other dangerous place. For them, each and every day must start and end with a prayer of protection for their child. So, dear readers, by all means, enjoy this wonderful weekend to its fullest. Just make sure you remember – even briefly – why you’re able to live in such a wonderful place at such a wonderful time. It’s all about freedom and it’s about those who contributed to this end in the most honorable of ways. Until next week …

Relay For LifeA Nation Fights Back, One Community At A Time

Cancer. At its core it is a very frightening word. In fact it may be one of the single most frightening words a person can hear. Sadly, cancer is so prevalent that chances are you have, or you know someone who has, been affected by cancer in some form. Luckily, we live in a day-and-age where cancer research is also very prevalent. One of the driving forces behind that research is the American Cancer Society, which is the largest volunteer-based health organization in the United States and is doing everything in its power to extinguish some of the fear that comes along with a cancer diagnosis. With more than 900 local offices nationwide, and a presence in more than 5,100 communities the American Cancer Society has literally taken the fight against cancer to the streets with the Relay For Life. On June 2, 2012 Relay will once again be coming to Ellicottville. In case you’re not familiar with it, Relay is truly an event that must be experienced in order to be fully appreciated. Teams will

set up camp around a track and members from each team take turns walking around the track for the duration of the event. It’s a family-friendly event where the entire community can come together to support cancer survivors and do what they can to help fight back against cancer. The event itself is filled with plenty of games, activities and fundraising opportunitites…and food. It wouldn’t be a Relay For Life without some excellent energizing food choices. Right now there are approximately 16 teams (made up of 153 participants) signed up to take part in the Ellicottville Relay For Life at the Ellicottville Central School track. Over $15,000 dollars has been raised to date but with a goal of $50,000 there is still a long way to go. Your involvement can make a tremendous difference. There is still time to sign up and show your support. Go to www.relayforlife.org/cattarauguscountyny. There are lots of ways to get involved and the website can show you every option available. Every single Relay across the nation has at least one thing

in common. The opening Ceremony is a powerful and emotional sight to behold. With the playing of the Star Spangled Banner as the tone-setter it is obvious that you are in for a special sequence of events. The Ellicottville Relay will feature a dynamic duo of cancer survivors presenting the Honorary Survivor Speech. Husband and wife Jerry and Liz Titus will be sharing their story of dedication towards overcoming cancer. It is safe to say that it will be a powerful moment. Following the Survivor Speech will be the Survivors’ Lap and then the Caregivers’ Lap. Registration begins at 11am and Opening Ceremonies begin at 12pm sharp. The always-emotional Survivors’ Lap starts at 12:10pm, followed by the Caregivers’ Lap at 12:15pm. The visually powerful Luminaria Ceremony is scheduled for 9:15pm. “FIGHT BACK through research! THIS YEAR, selected Relay event(s) in our community are offering the unique opportunity to participate first-hand in a landmark new study, the Cancer Prevention Study-3 (CPS-3). The American Cancer Society will be enrolling people into CPS-3, a long-term study that will help researchers better identify the lifestyle, environmental, and genetic factors that cause or prevent cancer. The purpose of this plan is to provide a blueprint for the future growth and development of the County in the areas of land use, economic development, agriculture, the environment,

One of the great things about living in Western New York is that it’s easy to find a great home out in the country. Out on Dublin Hills Road is one such example. Memorial Day marks the traditional start of summer, and one of those hallmarks of the season has to be dirt track racing. They’re raring to go at Little Valley Speedway, where Memorial Day means the start of another season of racing action. The Memorial Day Late Model Special, sponsored by Close Racing Supply, kicks off the summer excitement on Sunday, May 27th. Super Late model Champion Dick Barton returns to Little Valley Speedway on that date to defend his title against the top late-model drivers in the region. Participants will be racing for $3,000 to win. The Memorial Day card also features the BRP Can-Am Series Tour for the 360 Late Models, led by track champion and BRP Series Champion Jeremy Wonderling, racing for $1,000 to win. They will be joined by the UEMS E Mods, with defending champion Rich Michael Junior and the

“This is what I do!” Priscilla Snider says with a laugh as she flips open one of her three cell phones and answers it. The call she is taking is one of the many she fields each day. In this case it’s about the upcoming Relay for Life event coming up on June 2. Priscilla has been involved with the Relay for Life event since 1997, but this year has special meaning for her. Just last February she was diagnosed with Esophageal cancer. “It’s nothing you ask for,” she says of her affliction. But if you think that it might slow her down, you would be mistaken; Priscilla has maintained her go-go energy and infectious laugh. She is married to her husband Rob

and has two kids, Heather 23 years old and James 19, a senior at ECS. About six months ago she began to notice she was having trouble swallowing, and was wasn’t able to finish meals. She was eating about the same quantity of food but was losing weight. An endoscope exam reveled that she had a tumor in her throat that had wrapped around her esophagus and closed it down to less than the size of a dime. Although she had been scheduled for additional tests, her doctor called and asked her to start treatment the next day. It turned out the tumor was malignant, but the good news was that it had not yet spread into any of the neighboring tissues. She began treatment through Roswell Park on March 5th and has been receiving both radiation and chemotherapy. She went through the treatments with her usual enthusiasm, “I just marveled at the machines, and the technology and knowledge that lead to these treatments,” and adds she has had only slight hair loss and no nausea. “We’ve just been able to keep going” she adds with a laugh. Surgery is scheduled for early June, but her doctor agreed to hold off until after the Relay. Keep going is exactly what she has been doing through her 28 days of treatment. She is a

Valley Speedway WOO winner. The BRP Can-Am Series and the E Mods will also race the night of August 29th. Last season, the World of Outlaws raced to a sellout crowd at the McKean County Raceway in East Smethport. That track opted out of the circuit this year, opening the door for Little Valley Speedway to host the event. Tickets for the World of Outlaws event will be on sale at the Speedway. The price for this show is $25 for the grandstand and $35 for the pits. 4,000 seats will be made available for the race. This year’s season at Little Valley Speedway will feature six racing programs in all, each highlighted by the ever-popular 800 horsepower Super Late Models. The season ends on Saturday, September 15th with the Western New York Late Model and Modified 358 Doubleheader. case worker for “my kids” (as she calls them) who are in the county juvenile justice system. This can mean anything from giving kids rides to and from court, counseling, fitting youths with electronic monitors, and evaluating special needs; all with the goal of keeping the kids in their homes and out of jail. Priscilla tells me about one young man who needed some special attention. She helped him through a tough family situation and was able to keep him out of further trouble with the law. Though she hadn’t seen him for some time, he called her on Mothers Day to thank her for her help. As we talk she is interrupted by yet another phone call about one of her kids. She says it’s amazing the difference can be made in the life of a teenager “when somebody had treated them with respect.” This year is the first year she will be serving as Co-Chair of the Relay for Life. Priscilla once joked that she wanted someday to wear the special purple T-shirt worn by cancer survivors. This year she will proudly don the shirt as she walks the special lap that those who are dealing with, or have survived cancer take on the track. You can bet, she’ll accompanied by a laugh and and smile, and all three cell phones.

Our bones are a living tissue that is continually being renewed. Bone building consists of a complex process of biochemical reactions that maintain a balance between breaking down old and injured bone and building new strong, but flexible bone. Old bone is constantly being dissolved and reabsorbed and new bone is constantly being laid down in its place. For this reason, our bones need a constant supply of nutrients to keep them healthy. Very often we are told that calcium builds strong bones. This is because calcium is both the most abundant mineral in the body and the most abundant mineral in bones. But bones are made of much more than calcium. Bones contain other macro minerals such as magnesium, phosphorus, sodium, chloride, potassium and sulfur. They also need trace minerals such as silica, iron, molybdenum, cooper, zinc, fluoride, selenium, chromium, manganese, iodine, and cobalt. In addition, vitamins like C and D, protein and other nutrients are also required for bone health. As we can see, we are deficient in other trace nutrients that are needed to make proper use of calcium already in our diets.Steve Horne indicates that the biggest problem contributing to several bone ailments, including

osteoporosis is a lack of nutritional density in our diets. A lack of trace minerals and nutritional density is the primary reason our bones are weaker, but there is another contributing factor: our pH. An overly acidic diet causes the bone to break down more quickly because alkalizing minerals like calcium, magnesium, sodium and potassium are “borrowed” from bones and other tissues to help counteract the excess acid. This general over acid condition is caused by a diet high in soda, pop, coffee, alcohol, grains, meat and interestingly enough, dairy. Alkalizing foods tend to be fresh fruits and vegetables, in which most diets are low. Shallow breathing, high levels of stress and air pollution also make the pH of the body become more acidic. Your bones support you, but as you can see, you also need to support your bones with good nutrition. There are numerous herbs and nutritional supplements that can help support the health of bones and joints. Calcium is an essential element for the health of bones. It also requires vitamin D for proper absorption and utilization. In harmony with the parathyroid hormone, vitamin D is essential for absorbing calcium in the small intestines and for maintaining adequate serum calcium and phosphate concentration that enable normal mineralization of bones. After dark, people touched by cancer are honored and loved ones lost are remembered during the luminaria ceremony when candles are lit inside bags filled with sand, each of which bears the name of a person touched by cancer. A fightback ceremony is also part of each event when commitments are made by participants to save lives, as each pledges to do something simple to help. More than $4.5 million has been raised by Relay for Life events, which also serve as inspiration for survivors, caregivers and hosting communities, according to the American Cancer Society.A relays will be held June 16 to 17 at the Olean Middle School track also.

was persuaded by his son-in-law Kody Sprague to take over a failing bowling alley in Springville. The alley was in pretty bad shape, but Tim invested a lot of time and effort to fix it up. As the business grew Tim found he was spending most of his time running back and fourth between the stores. About a year ago he decided to “cut lose” the other stores and concentrate on running the bowling alley and pizzeria. He changed the name of the pizza store to Tim & Bonnie’s Pizza. Keeping with the family tradition both Tim’s wife and daughter are partners in the business. For a long time Tim scouted

out the Ellicottville area looking for a good location for the restaurant. Son-in-law Kody kept telling him to wait for the perfect location. Last year Kody revealed that he and his grandfather had purchased the old bat factory on Elizabeth Street. Kody gave Tim a tour and he realized that not only would it make a good pizzeria but there was plenty of space for a bowling alley as well. The eight lane bowling alley will have all new state-of-the-art equipment, and will be “screaming nice,” as Tim puts it. The restaurant will feature their popular pizzas, subs and wings. Tim admits “we sell a lot of subs,” He also mentions they will be serving some pasta as well. They will serve beer and wine, but will not have a full bar. In talking about his years in the business, Tim seems to get the most satisfaction from working with the many teenagers he’s

hired. “I hired a lot of kids. They get their first job at 16 or 17.” Hey says most of them go on to college, work their way through school and then come back to Tim and Bonnie’s and have pizza. “I’ve changed a lot of kids lives, I installed a work ethic in them,” he says as a smile crosses his face. Tim also points out he spent a lot of time in the various approval meetings listening to the locals concerns about the business. Some of his future neighbors have expressed concern about noise emanating from the establishment. He assures them that the alley will be a good neighbor, adding “We’re (the pizza parlor in Springville) right next to the alley and we never hear the alley, the sound won’t go through a brick building.” Remodeling of the factory should be under way buy the time you read this, and Tim hopes to have the alley and restaurant open sometime mid
