“New Year’s Countdown”

On New Year’s Eve,

Marilyn stood up in the local

pub and told everyone that it

was almost midnight, so get

ready. As the clock countdown

began, Marilyn had asked every

person to be standing next to

the one who made their lives

worth living.

Well, it ended up being

quite embarrassing.

As the clock struck mid-

night...the bartenders were al-

most crushed to death. Guess

they were great listeners.

Easy Tactics To Tackle

That Debt Scale back spending. Re-examine

where your money goes every

month. Lots of things that you

think are necessities may not be.

It’s easier to scale back spending

than it is to increase income.

Sell things on eBay. You can raise

some cash to pay off your credit

card by selling unwanted goods on

eBay or by holding a garage sale.

Get a part-time job. Anything you

can do to bring in extra money will

help you pay down unwanted credit

card debt. Need flexible hours?

Look for ways to turn a hobby into

an extra income source or look for

something you can do from home

that will bring in extra money.

Borrow from family and friends. If you have an unexpected expense,

see if you can borrow money from

family or friends. Also, check with

your church and charities if you

have a real hardship. They, too,

might be willing and able to help.

See a consumer credit counselor. Having a frank discussion with a

nonprofit consumer credit coun-

selor can open your eyes and help

you plan and make sound budget

decisions. The sooner you seek

help, the better.

Gen. Aches and Pains: Cold – Sometimes Allergy – Never

Mayonnaise may not be the most common sauce for scallops, but per-haps it should be. Mixed with celery and cilantro to make a sort of high-class tartar sauce, it's a perfect match for the crispy breadcrumb-dredged scallops. Serve with something starchy, whether that's bread, pasta, rice, or potatoes. Ingredients:

1/4 cup low-fat mayonnaise 1 teaspoon olive oil

2 tablespoons minced celery Cooking

2 teaspoons minced fresh cilantro 1 1/2 pounds sea scallops

1/4 teaspoon salt spray1/4 cup Italian-seasoned breadcrumbs

1/8 teaspoon black pepper 4 lime wedges

Directions:

1. Combine first 5 ingredients (mayo through black pepper to create tasty tartar sauce).

2. Heat the oil in a large nonstick skillet coated with cooking spray over medium-high heat.

Dredge the scallops in breadcrumbs. Add scallops to pan, and cook 4 minutes. Turn scal-

lops, and cook 3 minutes or until done. Serve with mayonnaise mixture and lime wedges.

Schedule a time for your activ-

ity. Remember to block out 21

consecutive days on your cal-

endar and don't let anything get

in the way of your schedule. If

you miss one of your scheduled

days, it's best to start over and

schedule another 21 days.

Once you reach your 21 days,

congratulate yourself. But don't

stop! Schedule another 21 days

and keep going. Be consistent

and dedicated in your efforts.

Chicken and Lemon-Broccoli Alfredo

INGREDIENTS

4 small skinless, boneless chicken breast halves

Salt and pepper

8 ounces mushrooms, halved

1 tablespoon olive or cooking oil

1 lemon

3 cups fresh broccoli florets

1 10 - ounce container refrigerated light Alfredo pasta sauce

Directions

Season chicken with salt and pepper. In large skillet brown chicken and mushrooms 4 minutes in hot oil, turning chicken halfway through.

Meanwhile, shred 2 teaspoons lemon peel; set aside. Slice lemon. Add broccoli and lemon slices to skillet. Cover; cook 8 minutes or until chicken is done (170 degrees F on an instant-read thermometer).

Place chicken and vegetables on plates. Add Alfredo sauce to skillet; heat through. Serve with chicken. Add lemon peel and pepper. Makes 4 servings.
