This is a nice breakfast recipe having tomatoes baked with Parmesan cheese, corn, chives and an egg inside. You can have it with some rice or bread.Ingredients

• Large size tomatoes – 4 no.• Salt and ground pepper• Eggs – 4 no.• Fresh/frozen corn kernels – ½ cups• Snipped fresh chives – 2 teaspoons• Parmesan cheese – ¼ ounce

1. Preheat your oven to 350oF. Take a baking dish of about 9 inch size with parchment. Cut off the top ½ inch of each of the four tomatoes. Take out all the seeds and the inner membrane of the tomatoes with the help of a spoon. Take care not to break through the side and bottom flesh of the tomatoes. Place the tomatoes on the dish and season them with salt and pepper.

2. Divide the corn equally among all the tomatoes. Take a bowl and whisk all the eggs together with the chives adding salt and pepper to your taste. Now put this mixture equally inside the tomato shells and place the topping with cheese. Bake till the egg mixture sets (45 to 50 minutes). Serve this dish warm.

Eggs (Beaten) – 6 no.

Parmesan Cheese (Finely shredded) –2 tablespoons

Round flat breads (6 inch diameter) – 4 no. / Oval flatbreads (6 by 8 inches) 3 no.

Olive oil – 2 tsp. (optional)

Cherry tomatoes (cut into halves) – 1 cup

Thinly sliced spinach – ½ cup

Salt & pepper (optional)

Italian Cheese Blend (shredded) ¾ cup

Red pepper (crushed)

1. Heat the oven to 450oF. Apply cooking spray on a large non stick skillet cooking pan and heat it on medium flame.

2. In a medium sized bowl beat the eggs with parmesan cheese and blend them well. Pour the egg mixture into the skillet. Cook gently till the eggs begin to set forming soft large chunks. Do not stir continuously, do not overcook. Continue pulling, folding and lifting eggs until they get thickened and some noticeable liquid egg remains.

3. Put the flat bread on baking sheet and if desired gently brush the top side with olive oil. Dividing evenly, top it with scrambled eggs, spinach and tomatoes. Apply salt and pepper to taste. Sprinkle Italian cheese blend.

4 Bake in an oven at 450oF for 5 to 6 minutes till cheese melts. If desired, sprinkle some crushed red pepper. Cut each of the pizzas into 4 parts and serve immediately.
