Welcome to the December and January issue of Trend. For us, this time of year is all about gathering family and friends to share some quality time during the darker days and evenings, whether that’s at home or out and about. This time of year also involves a great deal of shopping and preparation, whether it’s buying Christmas presents or making the most of the January sales, cooking up a storm or painting the town red. Of course, having a copy of Trend provides a great shortcut since all the best the North-east has to offer is in one place.

As usual, we’ve been exploring all the best places to eat, sleep, stay and play. Kate waltzed off to Vienna in search of perfect coffee and Sachertorte and Courtney headed to the Edinburgh Dungeons for some live action. Rae’s has all the latest party make up looks and our fashion pages have all the coolest clothes to take you from the office party all the way through to Burns Night.

You wouldn’t normally think of going to a garden centre just for the food. Mains of Drum though, is one of few garden centre cafés I’ve been to that’s busy with people who seem to be there only to eat.

Upstairs – and separate from the usual eclectic mix of plants, furniture, photo frames, imported food and toys – the cafe is busy and warm, and seems a little bit like a restaurant in its own right.

There are of course soups, sandwiches, baked potatoes and paninis on offer, but there is also a daily board of specials that - when I

went - featured fish dishes, pastas, and a tempting BBQ pork open sandwich.

Between two of us, we tried as much as we could. The Cullen skink was chunky and smoky and not too creamy, and came with warm seeded bread, the goats cheese and sweet onion ciabatta was delicious but too big to finish, and the BBQ pork was rich and sticky.

Already completely full, we decided to wash everything

down with coffees and herbal teas, and then turned our

attention to the cakes. We settled on tiffin and a

banofee tart - though it took a while to

choose between

the strawberry tarts, rocky roads and huge scones and that were also on offer.

The tiffin was dense and chewy but not too sweet, and the banoffee tart was surprisingly light, even if it was topped with a huge dollop of cream. Both desserts were disturbingly easy to finish after a big lunch, and they made it easy to see why people bypass the shopping and the plants and head straight upstairs to the food.

When a last minute Saturday evening decision was made to head out for some Indian food, the thought arose to call Cafe Bombay in Peterculter. I had heard about the restaurant numerous times during the previous six months and not wishing to take our chances jostling for taxis in town, booked a table for two. The employee taking the call kindly reminded me that Cafe Bombay is BYO – at times a real bonus on a night out. When we arrived mid-evening, the restaurant was busy with small tables and a larger birthday party which was in full swing – great

atmosphere in the small café environment.

Our waiter, quick to serve us with our wine, pointed out that they are the only Indian tapas-style restaurant in Aberdeenshire. He explained that the dishes were smaller than normal and suggested we select more dishes than two hungry adults would normally order. For starters we opted for Chana Poori – chickpeas served in light pastry and also Dosa – crispy lentil pancake stuffed with spicy mince. They were delicious and I would recommend both.

For main course we decided on Chicken Tikka Chasni – barbeque tikka pieces in a sweet and sour sauce, Lamb Karahi and Chana Aloo. These arrived with moist Peshwari nan and perfectly cooked basmati rice – definitely enough for us both.

Overall, Cafe Bombay gets a gold star for their delicious, reasonably-priced Indian food and quick service. A return visit is planned as would love to try more amazing tapas style Indian Food.It is open 7 days 2 till 10 pm.

What made you decide to be a chef?I have always had a keen interest in cooking from a young age and decided in my last year of school that I was going to get the qualifications so I could take it up as a career. I got into a kitchen in my local town and gained my qualification through working, and from the moment I qualified I decided to travel around gaining experience. This took me to London to start with, then I worked my way back North working in places from the Wordsworth in the Lake District to Santini Ristorante in Edinburgh, eventually ending up in Aberdeen ready to start to make my own mark on the industry.

Describe your cooking style?I would say my style of cooking is more of a rustic style. I would rather spend the time making something that tastes perfect, rather than overcomplicating a dish with too many ingredients, although we do like to experiment with different techniques.

How do you come up with new menus?When coming up with new menus I try to keep the traditional Italian dishes, as I feel that it is important to perfect these dishes before trying to introduce more complex ones. When coming up with new ideas, I try to use my

understanding of ingredients that go well together and maybe try some dishes that people haven’t seen, to bring something else to the table. I also find it important to get input from other members of the team so they can learn and improve their knowledge as well.

If you could spend a day travelling the world, where would you have breakfast, lunch and dinner and what would you eat?I think I would start the day waking up in Venice, overlooking the Riva Degli Shiavone with a double espresso and a crostata swiftly followed by a trip to Sicily for lunch at Capri Leone. I would choose something nice and simple like a nice bowl of porcini risotto, before rounding the day off with dinner at Locanda Locatelli with their baked sea bass in a salt and herb crust.

Describe your greatest achievement to date.I would say gaining my first Head Chef position was a great achievement for me, as it’s something everybody sets out to achieve when they choose this career. It was the first goal I set myself and now I have got there, I can only hope to achieve more goals in my career as I progress.

Ingredients500g baking potatoes50g grated pecorino2egg whites, 1yolk150g ‘00’ flour1 butternut squash 1punnet San Marzano tomatoes (baby plum tomatoes)200g crushed roasted chestnuts6 sage leavesseasoning

MethodFirst take the potatoes and put in a pan, cover with cold water. Add a tbsp of salt then bring to the boil. While the potatoes are boiling pre-heat the oven to 170C (Gas 3) then peel the squash, cut in half and de-seed, then chop into nice big chunks. Mix well with some oil, salt and pepper, a little brown sugar and roast in the oven until it starts to caramelise.

Once the potatoes are soft enough

(pierce with a knife and if they slide off they are ready), strain the water and transfer the potatoes to the oven to dry out (usually around 15mins). When they are ready, take out and cut in half to make sure the potato is nice and dry.

To make the gnocchi, scoop out the potato and discard the skin, transfer to a mixing bowl with the parmesan and some seasoning. Mix together well with your hands before gradually adding the eggs individually, incorporating well. Finally add the flour gradually until a dough starts to form, not too wet but quite soft. Transfer to a clean work surface and roll into a sausage shape with a little flour to stop it sticking.

Once you’re happy with the consistency heat a pan of water to a rolling boil for the gnocchi and drop them in. Meanwhile get a

non-stick frying pan add some oil and heat gently, cut the tomatoes in half and add to the pan with a little sugar.

When your gnocchi are floating, add to the pan with the tomatoes and fry until they are a nice golden colour. Add the roasted squash and sage with a little bit of stock to help to make a little sauce, so it’s not too dry before finally adding the chestnuts and transferring to a bowl.

Annie Lennox kick-starts charity’s call for donations Home-Start Aberdeen - a city-based charity that supports families locally, kick-started the call for quality donations to its first social enterprise shop with a special donation from international superstar Annie Lennox.

The ‘Sweet Dreams’ star donated one of her own handbags to the new George Street shop which was officially opened by Lord Provost George Adam on the 1st November 2012.

The shop is situated directly opposite the John Lewis store, and offers high quality clothes for adults and children, shoes, toys and home furnishings.

As well as appointing experienced Retail Manager Karen Milne, the shop has already received generous donations from local businesses and individuals. All proceeds from the shop will go towards Home-Start Aberdeen and the funding required for its 70 volunteers to carry out their roles.

The Aberdeen scheme is the largest in Scotland, and is headed up by Georgette Cobban.

Georgette commented, “The volunteers have been providing help and support to families throughout Aberdeen for the past 25 years, so the opening of the shop is an exciting new development for the charity.

“The shop will provide necessary funding and increase awareness of Home-Start Aberdeen, which means we can continue to make a positive impact on the development of children and the health and welfare of local families.”

This car took the world by storm when it was first revealed to the public in America and immediately became a fashion icon, then everyone waited patiently to see if it drove as well as it looked. The answer to that is, quite simply yes. Today I am driving an SD4 Dynamic Automatic which comes with every conceivable extra including panoramic roof and parallel parking.

The latter if you have not used it, is a lot of fun and I am sure those who have difficulty parking a car will find it helpful. The diesel engine which is remarkably

quiet, develops 190 hp and 420 newton metres of torque which is more than enough to make this Evoque a very exciting car on the road but also gives you the feeling it could take you anywhere, for which Land Rover are most famous.New to the market is a two wheel drive version, this car is manual, 150 hp, 380 newton metres of torque. This is the first time Land Rover has ever delved into the two wheel drive market.

I have to say by the success of this model, Land Rover have made a good decision with fuel consumption combined 56.5 mpg

and CO2 emissions of 129. This is a car for the person who does not really need a 4x4 but would like the brand of Land Rover parked in their driveway. You really need to visit Town and County in Aberdeen to see the full range of cars in their showroom, there are three models to choose from, with prices starting at £28,695. There is, of course, a waiting list of almost 3 months and there is no shortage of buyers.

As I have said after driving this car today, Land Rover have come a long way from the early Defenders, Freelanders, Discoverys and Range Rovers. With their latest products they have finally produced a road car with the dynamics and looks to take on all the other brands and leave them in its dust/sand/snow or whatever you choose.

Jen Dundas is one of the North-east’s most talented new jewellery designer-makers. She works in wax to produce distinctive, meticulously crafted designs which are cast in silver and incorporate semi-precious stones...

“I have been designing and making things for as long as I can remember. As a child, my family encouraged me to embrace my creativity and I spent long hours drawing or folding origami or stringing objects to make a necklace. Jewellery always interested me but there wasn’t a dedicated jewellery course at art school so I chose to study textiles at Gray’s,” Jen explained.

“I wanted to learn more about making jewellery so I took an evening class and I also worked part time for a jeweller. After graduating, I worked in London

for a number of years as a knitted textiles designer. After returning to the North-east, I decided to pursue my interest in jewellery design so I read books and taught myself specific skills. I also attended evening classes at Gray’s learning advanced jewellery techniques like enamelling, metal forming, casting and stone setting.

“My inspiration comes from the textures and surfaces of natural forms and in particular sea life structures. My recent collections have been sourced from sea urchins, shells and cuttlefish. “I often come back from a walk with a collection of shells, pebbles, leaves or twigs,” she laughed. “Recently I have also been inspired by the intricate structures of lace fabrics. I always carry a camera as I never know when something will catch my eye!

“Usually I start with an idea sparked from an unusual texture or shape. I then sketch out some ideas or do some drawings to simplify a pattern but usually I prefer working in three- dimensions and developing my designs organically. I work with clay and experiment with surface textures to create patterned impressions.

“Most of my jewellery is made using the lost wax casting technique. This means my pieces are first handmade in wax before being cast in metal. I like the nature of the wax and the diversity of ways it can be treated: carved, melted or formed. Lost wax casting is ideal for making my work as I can achieve very detailed results. When my pieces have intricate patterns these are translated into the metal. Once I am happy with my wax pieces I send them to a specialised casting company to be cast in silver. The silver casts come back in a relatively raw state so I hand finish them and set any stones. Vienna is the city of Mozart, Beethoven, Schubert and Brahms, of grand imperial palaces, baroque interiors and the expressionist architecture of Friedensreich Hundertwasser.

It is the home of the Hofburg Palace, where the Habsburgs lived and presided over the Austro-Hungarian Empire. Its Museums Quartier is the site of some of the world’s most powerful and contentious contemporary art, and the Vienna State Opera – where the likes of Mahler conducted during his tenure - plays host to what is still one of Europe’s most prolific and respected companies.

The city’s reputation as a hub of culture – both historically and today – is indisputable, and the awareness of what surrounds you as you sit in a café, or in a restaurant, or even as you just wander the streets, is what makes for such a unique atmosphere.

One of my favourite places in the whole city is Café Pruckel. It hasn’t changed much since the 50s – low armchairs, little plastic menus

and spartan wooden chairs make it unmistakably a café, but the food (boiled eggs are served in a champagne saucer), the waiters (dressed at all times in tuxedos), and the customers (businessmen, artists, performers) make it something more.

Vienna is full of places like Pruckel, coffee houses and cafes that feel like they are part of the city and its foundations, and they are as

important as the palaces and museums. At Palmenhaus you can eat and drink in part of the stunning nouveau greenhouse that houses hundreds of tropical plants and free flying butterflies. It can get hot but it’s worth it!

Few cities that boast such grand cultural merits and historical significance are as accessible and relaxed as Vienna. There is a gallery, an event, a restaurant to

suit every taste. You couldn’t ask for more in a weekend away, and there aren’t a great many places where you could get more in a weekend away.

The hand-carving techniques I use are a dying craft and I like to think I am keeping them alive to some degree. People seem to be growing less enamoured with mass produced, imported, throw-away items and are beginning to appreciate the traditional skills once again. Someone once said to me, “You can produce the best brochures in the world, but they’ll end up in the bin. Create something in wood or stone and it will be loved forever”.

“I took a few evening classes in wood carving and I fell in love with creating works of art with my hands, rather than a computer. I bought some chisels and started carving Celtic designs on reclaimed floor slates before trying stone and then teaching myself letter cutting. I find the complexities of Celtic design that our ancestors managed to achieve with rudimentary tools fascinating and I’m greatly inspired by the scenery and wildlife around me.

“Much of my work is bespoke carvings and sculptures for homes and gardens. I’m happy to work on large and small pieces, predominantly in wood, stone and/or slate. I often receive commissions as gifts for special occasions such as weddings, anniversaries and milestone birthdays.

“The majority of my work is for private commission – whether it be bespoke furniture, hand-carved signs and memorials or garden sculptures. I have ideas and initial designs for several, more ‘fine art’-based series of work, that I’m looking forward to getting started

The Peterhead fish market may seem like an unusual choice for an early morning trip, but it should be a more popular one.

Kitted out in a fetching hairnet and wishing I’d worn a bigger jacket, I find myself being led into a cold, wet warehouse filled with open crates of shining, freshly landed fish, groups of busy men, and porters moving almost at a run, somehow managing not to slip as they trail the large boxes of ice-packed fish into the back of waiting lorries.

Even as they almost trip over me, people stop to talk briefly, or eagerly answer my questions as they dash by. Someone pulls me into a huddle so I can get a proper look at a sale - a rapid, loud, fishy auction that sees men in rubber boots and woolly hats bidding and closing on haddock, monkfish, hake, megrim, and what seems to be an infinite number of different fish.

Someone else lets me try and pull a crate while he tells me that there has been a working harbour at Peterhead for over 400 years,

that it was originally intended as a harbour of refuge for ships at risk in dangerous weather, but when sail gave way to steam and boats could navigate rough seas in relative safety, the focus of the harbour changed.

There was a boom with the whaling industry, and hard times when stocks have been depleted, but if the market isn’t as busy today as it once was, you certainly wouldn’t know it as you watch the men and women work, and try to estimate just how many boxes of fish are stacked around you.

The market is well worth getting up early for. It offers a lively and welcoming chance to see the workings of a harbour and an industry that has always been hugely significant for the North-east.

Every now and again, it’s nice to go for a change of scenery when looking for a day out with the kids. And with the ease of train travel, it’s actually no hassle as a two-and-a-half hour journey passes as quickly as a cup of coffee and a good magazine. With that in mind, we decided to spend a recent school in-service day having a good look around The Edinburgh Dungeons.

If like me, you haven’t been to The Edinburgh Dungeons before, then you might think you are in for a stuffy history lesson about the injustices that once went on beneath Scotland’s capital city – but you would be mistaken. More accurately, you are in for a live-action re-enactment of said

injustices by a troupe of men and women with a flair for drama that makes the Edinburgh Fringe Festival seem dull.

Be warned – if you are someone who stands out from the crowd, prepare to be asked to join the action. Members of the audience may find themselves tried for witchcraft in a dingy courtroom, locked up in an old metal cage, or beheaded at the instruction of the embittered ghost of William Wallace.

But the Dungeons dig deeper than actors alone to try and scare you. There is a boat ride through darkness so thick you can’t see the severed hand in front of your

face and the Extremis drop ride, at the end of the tour, will leave you screaming for mercy. Needless to say, this is not a day out for the very young or very squeamish.

If you are planning a visit, you’re best to purchase your tickets online where you will find significantly discounted prices and even package deals that include a meal at Hard Rock Café. For a fun day out, the Edinburgh Dungeons give you the chance to relive a bit of gruesome history, with the advantage of being guaranteed your freedom at the end.

TREND held its first Wedding Exhibition at the Marcliffe Hotel and Spa. The event attracted over 370 visitors and 70 exhibitors. Upon arrival the guests received goody bags, a glass of fizz and a cup cake. They were treated to a fabulous Bridal Fashion Show, floral styling and hair and makeup sessions. A Ladies day Afternoon Tea and Fashion show was held at Rox Hotel on Saturday 6th October, in aid of The National Association for Crohns & Colitis UK. 180 ladies attended the fashion show by Phase Eight. A total of £4000 was raised.

Special thanks to everyone who attended and donated raffle prizes, Phase Eight staff and Rox Hotel. Plans are under way for a Spring/Summer Ladies day.

The Caledonian celebrates it’s 120 year anniversary!

The Caledonian by Thistle hotel and Team Challenge held a generation game client evening. This was part of the hotels 120 year anniversary celebrations. The hotel has a wonderful history with guests such as the Queen, Mike Jagger, Frank Sinatra and Laurel and Hardy and following its full refurbishment they are looking forward to a wonderful future.

THE LAST WORD

To say that car-daft Martyn Melville is driven is an understatement. He left Aberdeen Grammar School at 16 determined to make his mark in life somehow, despite his dyslexia, and hey presto! - the boy done good.

Next year, the 48-year-old bachelor celebrates 25 years of his car-valeting business, the Washbay, proud of his reputation as a cut above the competition that has sprung up in the bowels of places such as the Trinity Centre car parks. I went to see him at his premises just off the city’s Broomhill Road in Salisbury Terrace, otherwise known as Speed Bump Alley for the viciousness of the sleeping policemen.

It is soon apparent why he is in the car business as he greets me beside a 1989 Rolls-Royce Silver Spirit, gleaming after another session of the Melville magic touch.

So is he bothered by the plethora of car-cleaning outlets? “Not at all,” says Martyn. “We have always gone the extra mile for our customers, for example, fetching and returning their cars and so we enjoy a lot of repeat business. Indeed, retired accountant Dave Forsyth has been with us from day one.”

Another surprise awaiting you at the Washbay is the cosy waiting room off the shop floor where coffee is dispensed. Here you can

sit in a comfy high-backed chair and admire Martyn’s collection of toy cars. I gave up counting at a hundred.

He is also very conscious of operating in a residential area and has built up good relations with his neighbours. “I try to be as helpful as I can,” says Martyn. In turn, he acknowledges the start he was given by James Hird at his washbay in the city’s Albyn Garage.“Here’s to the next 25 years,” Martyn adds. “I hope my folks are looking down and seeing I did manage to achieve something after all.”
