Hi All,

Super-Eating for Pregnant Mamas
Being pregnant is like taking a vacation from your usual
body, and holidaying in another. Only the holiday has
un-forecasted thunderstorms and bursts of torrential
tears. Hormones go wild. Bowel movements hibernate.
And those once supple joints start to sound like that
doddering old floorboard upstairs. Sound familiar? You
should enjoy this recipe so. It‟s made with you in mind.
Omega fats are to hormones what Edward is to Jedward.
Indispensable. Every single cell in the body requires
omega fats to function properly. This is why scientists
refer to them as „essential fatty acids‟ or EFAs for short.
Hormonal malfunctioning (that‟s diplomatic speak for
sharpened fangs and temper tantrums) should not be a constant feature in your
pregnancy. If you nourish your body, then your body will nourish you.
The perfect ration of omega-3 to omega-6 fatty acids is 2:1. In other words, twice as
many omega-3 foods to omega-6 foods. So here‟s some help with next week‟s
shopping list; stock your fridge with oily fish, rich in omega-3 EFAs. These include
mackerel, wild salmon, herring and sardines. You could also soak flaxseed overnight,
and stir it through cooked porridge in the morning. Sources of omega-6 can be
sprinkled over your breakkie – hemp seed, sesame seed, pumpkin seed, sunflower
seed, Brazil nuts, pecans and hazelnuts. But don‟t forget, you want twice as many
omega-3 sources than omega-6 for optimal health. Too many omega-6 fatty acids can
have a negative effect on health, turning into bad prostaglandins.
For those extra busy days, just reach for your bottle of Udo‟s Choice® Ultimate Oil.
Udo designed the blend himself with optimal health-supporting properties in mind.
The bottle includes seven supersonic, extra
virgin organic oils in the perfect ratio of omega
oils that the body requires.
Particularly rich in omega-3, Udo‟s Oil offers
mummy more than an insurance policy against
mood swings, Pram Brain and post-natal
depression. Omega-3 fats support foetal brain development we now know to be an
integral part of a healthy happy baby. Dr Ricardo Uauy, professor of public health
nutrition and advisor to The World Health Organisation (WHO), stresses the
importance of mummy‟s diet while carrying her baby. Uauy‟s research points to an
increased risk of disease in later life through exposure to poor nutrition, smoke and
environmental toxins such as dioxins in the womb. “In fact, someone’s risk of
developing cancer starts from before the time of conception” insists Uauy. “The risk
factors are already operating in the mother’s eggs before conception.” Right then.
Anyone for Gazpacho?
Gazpacho Recipe
Gazpacho is a superbly tasty tomato soup. It‟s served chilled, which
helps with morning sickness. In the traditional recipe, Gazpacho
calls for sherry and stale white bread. You may notice I have
doctored this one to make it more nourishing for pregnant mamas.
There‟s lots of tasty veg with protective antioxidants, and some
honking garlic to keep the bugs at bay.
For the soup you will need:
1 small punnet / 250g cherry tomatoes, quartered
2 cloves garlic, peeled and crushed
1 red pepper, deseeded and diced
1 cup diced cucumber
3 spring onions, sliced
2 cups / 500ml tomato passata
Juice of 1 small lemon
3 tablespoons extra virgin olive oil
For the finishing touches you will need:
A swirl of Udo‟s Oil
Fresh crack of black pepper
Basil leaf
Method: Too simple really – whizz and serve. You‟ll need to start with the cherry
tomatoes and garlic. Just give them a jolly good whizz until they‟re really smooth. Add
in the remaining ingredients and pulse very briefly. Gazpacho is best thick and chunky
like a soupy salsa. Should you find you‟ve accidently puréed until kingdom come,
don‟t panic. Garnish with a smile and crumbled egg, announcing it is in fact
Salmorejo. No-one argues with a pregnant lady.
Chill in the refrigerator for 30 minutes, and spoon into four cold soup bowls. Serve
with a drizzle of Udo‟s Oil, torn basil leaves and a few moments of peace.
Enjoy! Susan Jane
