COOKING & STORAGE OF FISH & GAME

    YOU MUST

    KNOW HOW TO

    PREPARE FISH

    AND GAME

    FOR COOKINGAND STORAGE

    IN A SURVIVAL

    SITUATION.

    IMPROPER

    CLEANING OR

    STORAGE CAN

    RESULT IN INEDIBLE

    FISH OR GAME.

In contemplating virtually any survivalsituation, the mind immediately turns tothoughts o ood. I the situation occurs

in an arid environment, even water, which is more important to maintainingbody unctions, will usually ollow oodin our initial thoughts. The survivor mustremember that the three essentials osurvival water, ood, and shelter areprioritized according to the estimate othe actual situation. This estimate mustnot only be timely but accurate as well.We can live or weeks without ood butit may take days or weeks to determinewhat is sae to eat and to trap animals inthe area. Thereore, you need to begingathering ood in the earliest stages osurvival as your endurance will decrease

daily. Some situations may well dictatethat shelter precede both ood and water.

    SKINNING & BUTCHERING

    GAME

Bleed the animal by cutting its throat.I possible, clean the carcass near astream. Place the carcass belly up andsplit the hide rom throat to tail, cuttingaround all sexual organs. Remove

the musk glands at points A and B toavoid tainting the meat. For smallermammals, cut the hide around thebody and insert two ngers under thehide on both sides o the cut and pullboth pieces o.

Remove the entrails rom smallergame by splitting the body open andpulling them out with the ngers. Donot orget the chest cavity. For largergame, cut the gullet away rom thediaphragm. Roll the entrails out o thebody. Cut around the anus, then reachinto the lower abdominal cavity, grasp

the lower intestine, and pull to remove.Remove the urine bladder by pinchingit o and cutting it below the ngers. Iyou spill urine on the meat, wash it toavoid tainting the meat. Save the heartand liver. Cut these open and inspector signs o worms or other parasites. Also inspect the livers color; it couldindicate a diseased animal. The liverssurace should be smooth and wet andits color deep red or purple. I the liverappears diseased, discard it. However,a diseased liver does not indicate youcannot eat the muscle tissue.

Cut along each leg rom above theoot to the previously made body cut.Remove the hide by pulling it awayrom the carcass, cutting the connectivetissue where necessary. Cut o the headand eet.

    Cut larger game into manageable

pieces. First, slice the muscle tissueconnecting the ront legs to the body. There are no bones or joints connectingthe ront legs to the body on our leggedanimals. Cut the hindquarters o wherethey join the body. You must cut arounda large bone at the top o the leg andcut to the ball-and-socket hip joint. Cutthe ligaments around the joint and bendit back to separate it. Remove the largemuscles (the tenderloin or backstrap)that lie on either side o the spine.

Separate the ribs rom the backbone. There is less work and less wear on

your knie i you break the ribs rst, then cut through the breaks.

Boil large meat pieces or cookthem over a spit. You can stew orboil smaller pieces, particularlythose that remain attached to boneater the initial butchering, as soupor broth. You can cook body organssuch as the heart, liver, pancreas, spleen, and kidneys using the samemethods as or muscle meat. You canalso cook and eat the brain. Cut thetongue out, skin it, boil it until tender, and eat it.

    WHEN CUTTING THE

    HIDE, INSERT THE

    KNIFE BLADE UNDER

    THE SKIN AND TURN

    THE BLADE UP SO

    THAT ONLY THE

    HIDE GETS CUT. THIS

    WILL ALSO PREVENT

    CUTTING HAIR AND

    GETTING IT ON

    THE MEAT.

    BIRDS (PIGEONS & CROWS)

Ater killing the bird, remove itseathers by either plucking or skinning.Remember, skinning removes someo the ood value. Open up the bodycavity and remove the entrails, savingthe craw (in seed-eating birds), heart,

and liver. Cut o the eet. Cook byboiling or roasting over a spit. Beorecooking scavenger birds, boil them atleast 20 minutes to kill parasites.

Pigeons & Crows have both excellentsight and hearing. I you are in veryopen country they will see you, and iyoure crashing though a logged-oarea, theyll hear you, and be gonebeore you get to where they were.

Shot Size - It doesnt take a dozenpellets o number 5 shot to bring downa pigeon or crow. A single pellet can

oten do the job. Most people whohave had some experience in pigeon &crow hunting will go with a 20 gaugeshotgun and shot size no greater than7 1/2. You can save the number 5 shotor ducks and pheasant. As ar as theshot pattern is concerned, an improvedcylinder choke works well. At 35 yardsyou should have a pattern such that atleast 2 pellets, and preerably no morethan 4, will hit the bird. You dont wantthe bird weighing signicantly moreonce its been downed because its ullo shot. Youll want a pattern that is justa bit tighter than what you would need

    or quail.

Pigeon & crow are not terribly hard toknock down i theyre fying straighttowards you, or more likely, straightaway rom you. Its when they arefying straight across rom you oraway at an angle that you have to takeleading into account. I you re right atthe bird, it will no longer be there when

the shot gets there. You need to leadthe bird, and the best way to do thatis to train the muzzle o your gun to aspot just behind the bird, then swing itsuch that it overtakes the bird. Whenyou see a little daylight between themuzzle and the ront o the bird, pullthe trigger.

BASEBALL, FOOTBALL, GOLF,AND SHOOTINGWhen you swing at a baseball, youdont stop swinging the instantyou make contact, nor do you stopswinging a gol club the instant you

make contact. What you are taught todo is to ollow through on the swing. The same advice applies to pigeonhunting. When you take aim at thebird, and lead it by swinging themuzzle, you continue to swing themuzzle ater pulling the trigger. Iyou dont, youll miss.

Baseball and ootball provide anothermetaphor that applies to pigeonhunting. On occasion youll havethe opportunity to get a shot o at asecond bird ater hitting the rst. Inootball, a wide receiver sometimes

starts to run with the ball beorecatching it, and drops it. Or a shortstop

    SNAKES

To skin a snake, rst cut o its head,to include 10 to 15 centimeters (4 to6 inches) behind the head. This willensure you remove the venom sac, which is located at the base o thehead. Bury the sac to prevent urther

contact. Then cut the skin down thebody 2 to 4 centimeters (1 to 1 1/2inches). Peel the skin back, then graspthe skin in one hand and the bodyin the other and pull apart. On large, bulky snakes it may be necessary toslit the belly skin. Cook snakes in thesame manner as small game. Removethe entrails and discard. Cut the snakeinto small sections and boil or roast it.

    TIPS FOR RECOGNIZING

    A POSIONOUS SNAKE

    1. It will Always have a pointed head. The mouth will be more pointed Notcurved.

    2. I its Red and Yellow will kill a ellow.

Size sometimes doent mean anything.Coral snakes are very pretty, but theirbite is deadly.

    3. I their tale rattles, leave it alone, itsprobably a rattle snake.

    KILLING A SNAKE

    1. Approach the snake rom behind.Slowly and skillully approach it romthe rear. Remember i he turns aroundand nails you, you could be plantedin the ground instead o the snake.

Always make the rst, hopeully thelast, blow just behind the snakes head.

    2. You may kill it head on i youre areal good shot with a 45 or shot gun,but you better be a great shot with asteady aim, this aint no game.

    3. Any object used such as a shovel, hoe, weed whacker or spade better besharp and you better be ast.

    4. Remember those angs arepoisonous, the mouth and bodywill still move a while ater the

snake is dead. Do not let the angspierce your skin.

    HUNTING/worms

    INSECTS

The most abundant and easily caughtlie-orm on earth are insects. Manyinsects provide 65 to 80 percent proteincompared to 20 percent or bee. Thisact makes insects an important, i notoverly appetizing, ood source. Insects

to avoid include all adults that sting orbite, hairy or brightly colored insects, and caterpillars and insects that have apungent odor. Also avoid spiders andcommon disease carriers such as ticks, fies, and mosquitoes.

Rotting logs lying on the ground areexcellent places to look or a varietyo insects including ants, termites, beetles, and grubs, which are beetlelarvae. Do not overlook insect nests onor in the ground. Grassy areas, suchas elds, are good areas to searchbecause the insects are easily seen.

Stones, boards, or other materials lyingon the ground provide the insects withgood nesting sites. Check these sites.Insect larvae are also edible. Insectsthat have a hard outer shell such asbeetles and grasshoppers will haveparasites. Cook them beore eating.Remove any wings and barbed legsalso. You can eat most sot-shelledinsects raw. The taste varies rom onespecies to another. Wood grubs arebland, but some species o ants storehoney in their bodies, giving them asweet taste. You can grind a collectiono insects into a paste. You can mix

them with edible vegetation. You cancook them to improve their taste.

    WORMS

Worms (Annelidea) are an excellentprotein source. Dig or them in damphumus soil and in the rootball o grassclumps, or watch or them on the groundater a rain. Ater capturing them, dropthem into clean, potable water or about

15 minutes. The worms will naturallypurge or wash themselves out, aterwhich you can eat them raw.

    SQUIRRELS

Mammals are excellent protein sourcesand, or Americans, the tastiest oodsource. There are some drawbacks toobtaining mammals. In a hostile area, the enemy may detect any traps orsnares placed on land. The amounto

injury an animal can infict is in directproportion to its size. All mammalshave teeth and nearly all will bite insel-deense. Even a squirrel can inficta serious wound and any bite presentsa serious risk o inection. Also, anymother can be extremely aggressivein deense o her young. Any animalwith no route o escape will ghtwhen cornered.

    FISHING

Fish represent a good source o proteinand at. They are usually more abundantthan mammal wildlie, and the waysto get them are silent. To be successulat catching sh, you must know theirhabits. For instance, sh tend to eed

heavily beore a storm. Fish are not likelyto eed ater a storm when the water ismuddy and swollen. Light oten attractssh at night. When there is a heavycurrent, sh will rest in places wherethere is an eddy, such as near rocks. Fishwill also gather where there are deeppools, under overhanging brush, and inand around submerged oliage, logs, orother objects that oer them shelter.

There are no poisonous reshwatersh. However, the catsh species hassharp, needlelike protrusions on itsdorsal ns and barbels. These can

infict painul puncture wounds thatquickly become inected.

Cook all reshwater sh to kill parasites. As a precaution, also cook saltwatersh caught within a ree or within theinfuence o a reshwater source. Anymarine lie obtained arther out in thesea will not contain parasites becauseo the saltwater environment. Youcan eat these raw. Most sh encoun-tered are edible. The organs o somespecies are always poisonous to man;other sh can become toxic because oelements in their diets. Ciguatera is a

orm o human poisoning caused by theconsumption o subtropical and tropical

marine sh which have accumulatednaturally occurring toxins throughtheir diet. These toxins build up in theshs tissues. The toxins are known tooriginate rom several algae speciesthat are common to ciguatera endemicregions in the lower latitudes. Cookingdoes not eliminate the toxins; neither

does drying, smoking, or marinating.Marine sh most commonly implicatedin ciguatera poisoning include thebarracudas, jacks, mackerel, triggersh, snappers, and groupers. Many otherspecies o warm water shes harborciguatera toxins. The occurrence otoxic sh is sporadic, and not all sho a given species or rom a givenlocality will be toxic. This explainswhy red snapper and grouper are acoveted sh o the shores o Floridaand the East Coast. While they are arestaurant and shermans avorite, and a common sh market choice, they

can also be associated with 100 caseso ood poisonings in May 1988, PalmBeach County, Florida. The poisoningsresulted in a statewide warning againsteating hogsh, grouper, red snapper, amberjack, and barracuda caught atthe Dry Tortuga Bank. Other exampleso poisonous saltwater sh are theporcupine sh, cowsh, thorn sh,oilsh, and puer.

    IMPROVISED FISHHOOKS

To make a wooden hook, cut a pieceo hardwood about 2.5 centimeters (1inch) long and about 6 millimeters (1/4inch) in diameter to orm the shank. Cuta notch in one end in which to place thepoint. Place the point (piece o bone,

wire, nail) in the notch. Hold the point inthe notch and tie securely so that it doesnot move out o position. This is a airlylarge hook. To make smaller hooks, usesmaller material.

A gorge or skewer is a small shat owood, bone, metal, or other material. It is sharp on both ends and notched inthe middle where you tie cordage. Baitthe gorge by placing a piece o bait on itlengthwise. When the sh swallows thebait, it also swallows the gorge. I youare tending the shing line when thesh bites, do not attempt to pull on the

line to set the hook as you would witha conventional hook. Allow the sh toswallow the bait to get the gorge as ardown its throat beore the gorge setsitsel in.

    SPEARFISHING

I you are near shallow water (aboutwaist deep) where the sh are largeand plentiul, you can spear them.To make a spear, cut a long, straightsapling Sharpen the end to a point orattach a knie, jagged piece o bone, or

sharpened metal. You can also make aspear by splitting the shat a ew inchesdown rom the end and inserting apiece o wood to act as a spreader. Youthen sharpen the two separated halvesto points. To spear sh, nd an areawhere sh either gather or where thereis a sh run. Place the spear point intothe water and slowly move it toward thesh. Then, with a sudden push, impalethe sh on the stream bottom. Do nottry to lit the sh with the spear, as itwith probably slip o and you will loseit; hold the spear with one hand andgrab and hold the sh with the other.

Do not throw the spear, especially i thepoint is a knie. You cannot aord tolose a knie in a survival situation. Bealert to the problems caused by lightreraction when looking at objects inthe water. You must aim lower than theobject, usually at the bottom o the sh,to hit your mark.
