Ingredients 1 1/2 cups all-purpose flour 1 1/4 tsp baking powder 1/4 teaspoon salt 5 Tbsp unsalted butter, softened 1 cup sugar 1 teaspoon vanilla extract (or other extract of your choice) 1 egg 3/4 cup milk Instructions •Heat oven to 350°F. •In a medium bowl, whisk together the flour, baking powder and salt; set aside. •In a separate mixing bowl, beat the softened butter and sugar on medium speed until fluffy, about 2 minutes. (if it looks like popcorn, it’s not done!) •Beat in the vanilla, then the egg, scraping down the sides of the bowl as necessary. •Add a third of the flour mixture, then beat just until mixed on low. •Add half of the milk and beat again just until mixed. •Repeat pattern with another third of the flour, the rest of the milk, then end with the flour, beating just until mixed each time. (do not over mix!). •Fold in optional mix-ins depending on your recipe. •Fill cupcake pans prepared with cupcake liners about half full. Bake 17-19 minutes until a toothpick inserted in the center comes out clean. •Cool the cupcakes in the pans for 5 minutes, then transfer to a rack to cool 5-10 minutes more . •Decorate with your favorite frosting and toppings.
