A Brief History of Black Friday

Just like baseball, apple pie and big trucks, in America, Black Friday is an institution. A holiday of its own allowing many an extended weekend that is celebrated with such ferocity it has been known to cause injury. Whether that’s

physical injury or injury to one’s dignity I’ll leave up to you, but injury just the same. We all know and understand the ramifications of engaging in a Black Friday sale. Rules are out the window. So is personal space. Coffee, tenacity and a strong will are imperative for a successful Black Friday outing; we Americans are hard-wired with an insatiable need for a good deal.

But do you know how Black Friday actually started? Its beginnings are retail and financial based, but it has since morphed into a different animal. In the 1960s, the term was coined in reference to the upward spike in retail sales around Thanksgiving. Before computers and financial software, records were kept using pen and paper (what?!). Red ink signified a loss while black ink showed a profit. As it does now, the day after Thanksgiving marked the start of the Christmas shopping season, thus bringing most retailers from the red into the black. Unofficially, this can be traced to as early as 1924 when the Macy’s Thanksgiving Day Parade made its debut. A trend such as this cannot go unnamed and the obvious choice was Black Friday. The Kadena Force Support Squadron will feed your need for sales this Black Friday. Enjoy our sales and discounts throughout November and on Black Friday, but don’t forget to enjoy your family too!

I was a young boy when they started, 13 or 14 years old, growing up in the sticks of Southeastern Ohio. We had the cruelest winters then. Snowdrifts ran for miles along our salted roads; the sun a dim orb

caught in a haze that turned the world black and white like an old film.

Perhaps they were films that inspired those dreams that would follow me for years —

the Kurosawa classics and Zatoichi: The Blind Swordsman, or modern flicks like

The Last Samurai and Spirited Away. My only connection to Japan: movies and dreams.

In these dreams, I’m walking alone on a dirt path at dusk. The forest is receding and I can see the soft red glow of paper lanterns in the distance. Soon I’m upon a small village of wooden homes with big sliding doors and white flags painted black with Japanese characters. Silhouettes move along the windows, but there aren’t any villagers to be seen. I try to imagine their lives from outside before moving on — the cicadas and my footsteps the only sounds in the dark.

I rest on a bench at the end of town. I’m waiting for something or someone I do not know. A drone swells out of the silence, and it’s then I begin to realize I’m dreaming. With this

realization comes a powerful feeling of peace. Of coming home

from a long journey. And the dream ends.

It was luck my Navy wife was selected for two tours in Okinawa.

I’d traveled to Japan once before we met. It was during my sophomore year

in college, the August leaves already orange with autumn. I chased those

dreams through the electric jungles of Tokyo and the rough stone streets of Kyoto.

I learned much about Japanese culture and society, but the world of my dreams was

nowhere to be found.

I discovered Okinawa to be a place of unspeakable beauty, particularly the emerald shorelines and

palm-studded mountains up north. Certainly there is

peacefulness in walking these humid streets at dusk when the traffic dies down and the izakayas come alive.

We departed Okinawa for Sapporo in northern Japan last February. I hadn’t worn snow gear for years, not since those angry Ohio blizzards, and I actually cringed looking down at the snow banks from the plane. I’d left the cold behind long ago, yet this was vacation.

We trudged through the Sapporo Snow Festival where great walls of ice were cut into stunning works of art like the Manila Cathedral. We drank coffee by a towering Darth Vader and learned about the indigenous Ainu people at the Sapporo Clock Tower. The night was lit up like Christmas, and I began to wonder if I’d ever seen anything so romantic.

In Otaru, artisans demonstrated how to make blown glass, and later we nearly lost one another in the heavy snowfall along the canal.

I picked up a snowboard for the first time in Hokkaido. Somehow, I managed to slide through the powder without serious injury. In Jyozankei, I bathed in a hot spring overlooking a frozen river, still as an oil painting. I could’ve soaked my weary spirit in that spring forever.

We missed our bus to the ski resort, so we had to take the Hakodate Line that edges along Ishikari Bay. Gulls hovered above solitary houses resting precariously on blocks of ice. Soon even the light posts disappeared and the train doors opened to an empty shack of a station.

A lady resting next door brought us inside to wait by the fire for a taxi that seemed to never come. I took a moment to walk outside down a short path cut through the snowdrifts. The stars gleamed brighter than I’d ever seen them, and I could hear the train bustling on through the naked trees.

I sat down in the snow and watched the shadows play in the window. I could feel a strangely familiar peace sweep over me. Like I’d come home. Before I could come to terms with it, the rescue taxi appeared.

I’ve been fortunate to spend so much time in a country I dreamed of exploring since I was a boy. Living in Okinawa for three years, though, the dreams don’t come often anymore — at least not like before.

But when they do, I am again walking that path alone to a village of paper lanterns and wooden houses with Japanese characters painted on big white banners. Only now the ground is not rough with dirt, but slick beneath my feet, and the fire lit houses of my dreams are layered with the thinnest veneer of freshly fallen snow.

DIY No Sew Table RunnerIf you’re like me you don’t have a working sewing machine. You’ve got an antique Singer that probably does work, but you’ve got NO clue how to make that happen. So there it sits functioning as a conversation piece. Sewing projects overwhelm and intimidate me not only because I don’t have a sewing machine but also because sewing is a skill that, by my own fault, I never learned. It’s like piano lessons growing up – we all took them and most of us hated them. Now as adults, our biggest regret was not practicing that minuet just one more time! Or maybe that’s just me? I digress. My mom sewed for my sister and I growing up. I remember going to the fabric store to pick out sewing patterns for our school plays and being pinned into the thin paper when we got home so that my mother could begin sewing. It’s a lost art and threading the needle is an understatement. There’s a bobbin pin, a spool pin and cap, tension regulators, stich guides, a hand wheel, the list goes on and nevermind that your foot has to do some work, too. The anatomy of a sewing machine is nothing to scoff at making even the simplest of sewing tasks a full mind and body experience. I’m overwhelmed just thinking about it. Someday, I will take a step or two into domesticity and learn how to sew. For now, though, glue I must.

Step 1: Pick out your fabric. The obvious choice for November is a fall themed color palette but this will work with any combination of colors and patterns you like. My first no sew table runner was a combination of nine different brightly colored, patterned fabric squares. My decorating style is less on the minimalist side and more on the as many colors and patterns (within reason, of course!) I can fit into one room without nauseating my husband side. For this particular project, I chose two patterns and a few different colors. Like I said, I don’t shy away from colors and patterns, so if this is too bold, pick one pattern and two solids to tone it down and make the single pattern stand out more.

Step 2: Cut your sizes. You’ll need some heavy-duty scissors depending on the type of fabric you use. However, it’s usually good practice to use fabric specific scissors instead of your everyday desk scissors. I decided to treat myself and got some shiny, new pinking shears from Kadena Arts & Crafts for this table runner. Two of the three fabrics I chose are strong cotton so it was well worth it. I wanted my table runner a bit wider and not quite as long as my dining room table so (in all honesty) I guestimated my sizes. It ended up being about 14 inches wide and just shy of the length of my table. All measurements are up to you. You could even use this same method to make a color blocked table cloth if you want…but let’s start small, shall we? Cut all your pieces to roughly the same width to make your life easier when you start ironing.

Everyone loves a good DIY project, right? We peruse countless blogs and articles trying to find whatever it is that will scratch our itch to create. There are usually a few problems, though: I don’t own a table saw, a kiln and endless amounts of burlap. Nor am I in possession of the amount of time it will take to paper maché a balloon to flawlessly create my new candy bowl. Let’s take a stand against these far fetched, other worldly DIY projects and take on only projects that are possible in our current reality.

Step 5: More ironing! Take your middle piece and iron two more creases. These new creases will run perpendicular to your original creases. This will be where you start gluing. Run a line of glue down the newly ironed piece, lining up the original creases of both pieces of fabric and pressing them together. Repeat this process for all sections. Eventually you’ll iron these, too, but let the glue dry for a minute.

Step 6: Go get a snack. You’re almost done, but you’ve definitely earned some chocolate and you’ve got a few minutes to wait while the glue sets.

Step 7: Iron some more. You can really make this project as iron heavy or light as you want – I err on the heavy side just to make sure that the creases are as crisp as I can get them.

Step 8: Glue some more. Along each “seam,” run a line of glue. You can also add some dots of glue along the top edge of the fabric you’re going to fold over. Once you’ve glued all you can glue, fold the extra fabric inward along the original crease. Repeat this for the other side. You should have something that finally resembles a table runner. Let the glue dry and, if you want, iron again.

Step 3: Oh yeah, this is an iron heavy project. If you’ve got time and ambition to spare, once you’ve gotten all your pieces cut to size you can put them in the laundry. If you ask me, this isn’t really necessary. I skipped this and went straight for my iron. Iron all your pieces flat, doing your best to get every crease out. When you decide on your desired width, fold the width-side edges of your fabric, ironing them when you’re sure your fabric is the right size. Don’t panic if it isn’t, though. This is by no means an exact science. If it was, I would be in a lot of trouble. My way of measuring, if I can even call it that, is actually just ironing my first piece to about the size I want, keeping the edges as straight as possible. I’ll use the first one as a template for the rest, repeating with lots of ironing.

Step 4: Now you can start lining up your fabric. You’ve still got more ironing, but you’re making progress! If you want, you can lay out your entire table runner at this point. I think it’s a good idea to see roughly what it will look like just to make sure you like the patterns and colors you’ve chosen. Once you’ve glued them, there’s no going back so it’s better to be safe than sorry. Plus, it takes about three seconds.

Step 9: Pick your end “seam.” Many table runners have a triangular end versus a square end. I prefer the square end mostly because I think it’s less formal. There isn’t any more difficulty in either way it’s just which ever you like best. To get a square end, you’ll fold the corner edges in, creating two small triangles on each side. Glue those down. Then you’ll just need to pull the fabric a bit taught and make one more fold so that you’re creating a straight edge. You guessed it, glue this down. Repeat on the other end and you’re done! Unless of course you’d like to take one final pass with the iron… You know, just to be sure.

Step 10: Revel in the fact that you just created something out of fabric without machinery! Maybe get some more chocolate, too.

We’ve all seen them…the seemingly effortless centerpiece at our neighbor’s house or the perfectly placed peonies at the Easter dinner table. Although we’ve got the best of intentions to master the art, without fail, we sit adoringly drooling over flower arrangements that we’ll never be able to recreate. But what if I were to tell you that it’s actually not that difficult? For one thing, beauty is in the eye of the beholder, so we’ve got that on our side. There are also a few other things within our controls that can help our flower arrangements go from drab to fab. While the internet is a great help, I actually prefer (gasp!) a good old fashioned book to tell me how to do things. Though I’d consider myself a homeschooled novice of flower arranging, I’ve always been extremely pleased with how my creations turn out. The cool thing about flowers is that they’re inherently beautiful. You could do almost anything and they’ll still look nice just because they’re flowers.

Get creative with your vessel. Vessel?! Yes, vessel. Don’t limit yourself to a vase. I’ve put flowers in watering cans, large serving bowls, mason jars, hurricanes, tea cups and whatever else I have that can hold water and stems. The overall look of your table will (should) affect what you use to hold your flowers. I’ve chosen a silver pitcher, a green glass vase and a mason jar because I love a more vintage look. One thing to keep in mind when choosing your vessel is the location of your flower arrangement. If it’s going to be in the center of your table (get it, centerpiece!) I’d recommend something lower. If your flowers are too high, your guests will have to talk around the flowers. You don’t want to make them feel like they’ve got to shout through the jungle while they’re trying to eat mashed potatoes.

Get creative with your flowers. Here on Okinawa we are presented with a myriad tropical flowers – use them! Stray from the standards. I’ve used berries, sticks and artichokes in my flower arrangements before so I promise you won’t be disappointed. You’ll end up with a flower arrangement that looks magical! Try to pick one main flower – I went with sunflowers – that will be your standout. You could think of it as a movie. There’s always the lead role with the supporting cast and extras. You, of course, are the director, producer, writer and whoever else is important in putting movies together. Your supporting cast will be slightly less eye catching but are still necessary in a successful arrangement. Your extras are things like greens that, though not colorful or sometimes even noticeable, perfect and finish the story line of your flower arrangement.

Get creative with levels. A good flower arrangement plays on different levels and types of flowers. This part may take a little planning when you’re at the store. If you grab a variety of flowers, though, you’ll probably get what you need. If not, that’s why there are pruners.

If you can get your hands on it, use some sort of stabilizer for your flowers – these range from plastic grates you can insert into your vase or by using tape to create your own grid along the top of your vase. While this isn’t always necessary, it is definitely helpful when using something as wide-mouthed as a serving bowl.

Now, before you go throwing your flowers in your vase, there are a couple steps to take that will improve your flowers’ longevity. First, make the proper cuts. For most flowers, a sharp angle cut is best. However, for flowers like hydrangeas and others with woody stems, it’s best to cut about one inch up into the stem allowing maximum surface area for hydration. Different flowers intake water differently, so if you have a minute, do a bit of research beforehand. You’ll also want to remove all leaves and thorns that will be submerged as they will shorten the lifespan of your flower arrangement due to the amount of degradation that occurs. Luke warm water is best for your flowers, but don’t need to go overboard with the amount you’re using. You’ll need to keep in mind that there is a level of commitment that goes along with a good flower arrangement. To increase the lifespan, the flowers will require fresh cuts and water every couple days.

The actual arranging of your flowers is extremely subjective. Like I said, beauty is in the eye of the beholder and everyone has a different take on what creates a beautiful centerpiece. Have fun, though. For me, arranging flowers is extremely therapeutic. Admittedly, I’m not an outdoorsy person but working with flowers is my way of connecting with nature. It’s so totally organic with nothing synthetic to it. Flowers freely give you their beauty, helping you create something more - something casual and calming or something extravagant, but always something that’s natural and real. Place cards are always a fun touch to a dinner party. You can assign seats or let your guests pick, but it’s a simple, extra touch that will give you a huge sense of accomplishment.

These are extremely simple and easily finished in less than an hour. I decided to play on the rustic and vintage look again using sticks I gathered up while on walk. I’ve broken them down into sections about four inches each and bundled them with some twine. You can add berries or flowers to this but I kept mine simple. I cut pieces of paper to size for each name and secured the paper between some twigs. No glue or iron required!

Thanksgiving is upon us again and for me it’s a time to be grateful for the kindness in the world, time to enjoy the company of others and appreciate traditional comfort meals with a twist of my family’s culture.

As a fi rst generation Vietnamese American, I did not celebrate Thanksgiving growing up. For my family, the Lunar New Year was our holiday to give thanks and send well wishes to friends and family. But I always looked forward to the Lunar New Year. Our families would spend time to-gether, go see the dancing Chinese lions, light red fi re crackers and eat as much food as we were able. The best part for us kids, though, was the lucky red envelope we received from our parents.

However that is not what the American side of me knows as Thanksgiving. When Autumn came around, I remember envying my friends when they began their Thanksgiving festivities. Their families traveled from near and far to watch the

adults deep fry their winning turkey from the hunting season. I kept thinking of how nice it would be to have family visit for a couple days, prepare a lot of food, eat a big feast and catch up on life, waxing nostalgic over memories of the past.

My brother and I were very fortunate to have grown up in North Carolina and when Thanksgiving came around, the whole town became festive, happy and thankful. Pumpkin fi lled the air and the atmosphere was warm and inviting. My parents would take us to the Fall Harvest downtown and allow us to take part in the fun. Our neighbors fi rst introduced my family to an offi cial Thanksgiving meal. The spread was enormous! There were bowls fi lled with pumpkin soup, roasted vegetables, corn on the cob, green bean casserole, a huge leg of ham, a giant turkey in the middle with stuffi ng covering the plate and so much more. I remember my folks being so impressed by such a huge turkey. The cooked ham was my brother’s favorite.

As for me, that meal introduced me to smashed potatoes, which grew into a love for all things potato. Thanks to Southern hospitality, I came to learn that Thanksgiving is more than just food on the table, it is a time to come together and appreciate the company of others and recount our many blessings. We were able to spend another Thanksgiving with the same family the following year and this time my parents wanted to bring dishes that were unique to their culture but would compliment a traditional Thanksgiving meal.

Over the years, my family and I have made many Vietnamese inspired Thanksgiving dishes and I want to share with you the ones that they made during our second Thanksgiving. They are very special to me because it symbolized that I can incorporate both my American culture I was born into and my Vietnamese culture I was born from.

Turkey Spring RollsIngredients:1 packet of spring roll rice paper1 pound of ground turkey1/2 small white onion (diced)2 tbsp vegetable or coconut oil1/2 red bell pepper (julienned)1 carrot (julienned)1 green onion (diced)1/4 cup of fresh cilantroGarlic powder, salt and pepper to taste

Directions:1. Turn your pan onto medium-high heat and add in your oil. When oil is heated, add in the white onion and cook for one minute before adding in the ground turkey. Continue cooking, mixing the ground turkey with the onions until the turkey is thoroughly cooked and the onion is translucent. Add garlic powder, salt and pepper to taste and remove from heat.

2. Prepare all of your vegetables. From the pictures you can see that I diced everything, however for spring rolls, julienne strips are better. Separate each ingredient into bowls and prepare a pan with warm water.

3. Dip the rice paper into the water and place it flat while it is wet. Add a spoon full of ground turkey on the lower half along with the sliced vegetables. Top it off with cilantro and start folding.

4. Roll up the ingredients, foldin in the sides of the rice paper, and continue rolling forward. Arrange onto plate with saran wrap in between the spring rolls so they do not stick together. Repeat this until all ingredients have been used.

The first dish is inspired by the famous Vietnamese Spring Rolls and can be modified with either shredded or ground turkey. It’s a healthy side dish, easy to prepare in advance and a colorful touch to your Thanksgiving spread.

The ingredients hold so many flavors that a sauce is almost unnecessary; the balance of the ground turkey with vegetables is perfect.

Ham & Pineapple Fried RiceIngredients:1 1/2 cups of cooked rice (leftover rice is great for fried rice)1/2 small onion (diced)1/2 cup carrots (diced)1/4 green onion (diced)1/2 cup green beans (I use yardlong beans diced into small pieces)1/2 cup of mushrooms (diced)1/2 cup of red bell pepper (diced)2 eggs1 cup of fried tofu (cubed)

Directions:1. Turn your pan or wok onto high heat and heat up the coconut oil. Add in garlic and onions until fragrant. Then add carrots, green beans and red bell pepper. Cook for two minutes, stirring constantly.

2. Mix in the tofu, mushrooms and ham, cooking for another two minutes. Move everything towards the sides of the pan, creating a hole in the middle. Add your rice to the center, breaking it apart then combining all of the ingredients in the pan. Continue this for about three minutes.

3. Add in the hoisin and soy sauce. Mix well and create another hole in the center of your pan. Crack two eggs in the center, add sesame oil in then scramble it by stirring it around the center. As soon as the eggs are cooked, mix all ingredients together.

4. Finally, add in the pineapple chunks, setting aside some for a garnish, combining the rice. Salt and pepper to taste.

5. Transfer everything into a serving dish or, if you want to be fancy, transfer into a pineapple bowl (see above). Place the pineapple chunks on top for garnish along with some cilantro leaves.

This second dish was inspired by the huge leg of ham from my first American Thanksgiving meal. It has been a crowd favorite for many Thanksgivings. The best part about this fried rice is that it can all be made in the same pan. Adjust the cooking times with the heat from your stove.

Directions:1. Add chicken broth to a medium sized pot and bring it to a boil. While the broth is coming to a boil, shred the turkey and grate the ginger.

2. Add rice and ginger to the pot, stirring so that it does not stick. Continue stirring every two minutes for 15 minutes or until the rice has completely softened and expanded. Add in the shredded turkey, carrots, pepper and green onions. Give it a good stir and keep boiling for fi ve more minutes. Season to taste with salt.

3. Transfer to a serving bowl and place some shredded turkey on top. Garnish with chopped green onions and cilantro or more pepper if you like.
