TO BUY THE FISH.

La Trattoria “Alla Veneziana” rappresenta le nostre origini. Siamo a cavallo fra le due guerre quando l’allora proprietario, originario di Venezia, andava in bicicletta fino alla stazione dei treni di Bassano del Grappa per prendere di persona il pesce freschissimo che arrivava dalla città lagunare.

La ricerca del miglior pescato continua ancora oggi, con lo stesso spirito: a portarla avanti è Luigi Parise, che acquistò il locale nel 1979. Da allora sono trascorsi più di 30 anni: i viaggi al mercato non si fanno più in bicicletta, ma è ancora Luigi ad andare là, tra i pescatori, a scegliere personalmente la migliore materia prima.

The “Alla Veneziana” Trattoria represents our origins. We’re talking about the period between the two wars when the

proprietor at the time, originally from Venice, went by bike to the Bassano del Grappa train station to personally get the

fresh fish that arrived from the lagoon city.

The search for the best catches still continues today with the same spirit. Stilling doing this is Luigi Parise who bought the place in 1979. More than 30 years have passed since then, the trips to the market aren’t by bike anymore, but

it’s still Luigi who goes, among the fishermen, to personally choose the best produce.

Oggi è Davide Parise, figlio di Luigi, a portare avanti la gestione del Ristorante. La sua filosofia di cucina si sintetizza in una parola: essenza. Una parola che significa rispettare l’identità di ogni pesce per avere il privilegio di riconoscerne il sapore autentico: un astice di cattura, un rombo chiodato, un cannolicchio della laguna veneta, senza interferenze di sapore. L’unico condimento ammesso è l’olio d’oliva che Luigi produce nell’uliveto di famiglia, a Marostica.

Today, it’s Davide, Luigi’s son, who runs the Restaurant. His philosophy in the kitchen can be condensed into one word:

essence. A word that means respecting the identity of every type of fish so that we can all still have the privilege of recognizing the authentic flavour of a fresh local lobster, of a turbot, of a

razor clam from the Venetia lagoon, without any interferences in flavour. The only dressing allowed is the olive oil that Luigi

produces on the family olive tree grove in Marostica.

Da moltissimi anni ricerchiamo, in Italia e all’estero, la verità: quella di vini prodotti da terra e uva non avvelenate da chimica di sintesi, erbicidi, pesticidi. Ricerchiamo chi produce ancora il vino con le mani, chi rispetta il territorio e i cicli naturali, chi si alza all’alba a dinamizzare l’acqua per fare i preparati biodinamici, chi arrossisce quando gli si dice che il suo vino è buonissimo. La nostra Cantina è fondata su una precisa e irremovibile filosofia: quella dei vini veri.

We have been looking for the truth for many years, both in Italy and abroad; the truth of wines

produced where chemicals, weed killers and pesticides don’t poison the land or the grapes. We have been looking for wine producers that

still use their hands, respect the territory and its natural cycles, that wake up at dawn to revitalize the water to make biodynamic preparations, that blush when you tell them their wine is delicious.

Our wine choices are based on the precise and unyielding philosophy of true wine.

La pizza è Arte. Per questo la prepariamo rispettando il tempo di una lunga lievitazione, scegliendo impasti integrali, assecondando le esigenze speciali e cucinandola solo ed unicamente su forno a legna.

Nella nostra Brasserie Mediterranea la spontaneità è espressa negli ingredienti e nell’ambiente che vi accoglie. Le mattonelle, scelte nel colore del Mediterraneo. I vasi di vetro che svelano con sincerità il loro contenuto. Il pentolame e i quadri che ricordano le vecchie dimore di campagna.

Pizza is a form of Art. For this reason we make it respecting long raising times, choosing whole-wheat dough, indulging its particular needs and cooking it only in a wood-burning oven.

In our Brasserie Mediterranea, spontaneity is in the ingredients and the environment that welcome you. The

Mediterranean-coloured tiles. The glass vases sincerely reveal what’s inside. The pots and pans and the paintings

remind you of old country homes.

I nostri vini sono prevalentemente naturali e le nostre birre artigianali, prodotte dai migliori micro-birrifici italiani.

We love looking for special ingredients with a particular inclination for small, superior-quality

producers of the Pomodorino del Piennolo del Vesuvio DOP, of Menaica anchovies, Salina capers and other Slow Food associates. We serve mainly natural wines and artisan beers produced by the

best Italian micro-breweries.

Assaporate frutta e verdure stagionali, pesce fresco, cereali, legumi: tutti conditi solo con olio extravergine di oliva. Per il tempo di un pranzo o di una cena, assaporate la cucina mediterranea: cotture brevi e rispettose della materia prima come la griglia, la padella e vapore.
