DESCRIPTION

To understand a cultures diet is to understand a culture. Eating is an extremely personal routine that happens constantly, we literally consume food every day. Therefore it is important to understand what are the forces at work changing the way culture produces, consumes, thinks and talks about food. Never before has the sourcing, ingredients, process, location, and production of food been so discussed or debated. The two motivators in this field, the DIY consumer (bottom up) and the food curator (top down), respond differently to various macro global trends with micro food movements.
