WHITE
SAUVIGNON BLANC
A meld of herbaceous and tropical aromas, Sauvignon Blanc’s popularity races across a bright and tangy mineral thread, largely devoid of oak.From straightforward, fruit-driven
expressions; to more detailed, textural examples; Sauvignon’s punchy aromas and zesty acidity appeal to many.
RIESLING
Australia grows more Riesling than France. Plantings are largely concentrated in ‘cooler’ South Australian regions, settled by Silesians eager to give a Germanic voice to a landscape of parched rolling hills and gumtrees. Domestic expressions share a transparency, capacity
to age and the compelling detail of their foreign brethren, yet it is from more marginal climes such as Tasmania and the wilds of Great Southern, whence more recent exemplars
hail. These wines sit at a Harbour-side table like no other.
SEMILLON
Citric and acerbic when young; toasty and redolent of lanolin, curd and lemon oil with age; Semillon, and Hunter Valley Semillon in particular, ages like
no other Australian wine of either colour. The better tensile examples are borne of ancient sandy river-beds; other broader expressions, from richer loams smattered with ironstone.
CHARDONNAY
A malleable, blank canvas capable of evoking the personality of the maker across winemaking nuances, Chardonnay’s neutrality is also a canny chameleon,
shape-shifting across geological, topographical and cooler climatic traits to become what is arguably the most exciting idiom of wine in Australia. Margaret River, with wines of flesh,
flavour and sumptuous oak handling; the naked energy of Chardonnay from the Yarra and Mornington Peninsula; in addition to the tensile excitement of Tasmanian expressions, are
all deserved of attention.
PINOT GRIS
As the name suggests, Pinot Gris is a mottled pinkish grey, when hanging on the vine. Nevertheless, it is largely responsible for white wines. Capable of viscous styles, redolent of apple and pear; or fresh, sprightly expressions often called ‘Grigio’, Pinot Gris also boasts an
uncanny resemblance to Pinot Noir if made as a light red in hipster hands.
TOO COOL FOR SCHOOL
While Australia may be traditionally known for the polish and generous warmth of its wines, the exploration of cooler, sometimes marginal climates; in addition to sustainable,
minimal interventionism from grape to glass; serves as foundation for a dynamic vinous zeitgeist on these shores. Think of wines with no additives, filtration or fining; judicious use of oak...if any; and a swirl of giddy vitality in the glass that is worth celebrating...and
drinking!
RED
PINOT NOIR
The uninitiated often fail to grasp the synergy that Pinot Noir finds with select cooler nooks and crannies, amidst Australia’s harsh climate. Maritime, cool Continental and
sub-Alpine zones, across Mornington, Macedon and throughout Tasmania, coax texture, energy and compelling detail from this fickle and capricious grape variety to the extent
that...OK, we will say it-Australia makes by far the most interesting Pinot Noir in the New World...boasting a savoury confluence with Burgundy that can be downright uncanny.
SHIRAZ / SYRAH
An exchange of vine material, philosophies and stylistic interpretations between the northern Rhône and Australia, has resulted in a myriad of domestic expressions from a grape variety that we have made our own. From the gnarled, ancient vines of South
Australia and their sun-drenched generosity; the thinner, cool, volcanic soils of the Upper Yarra; the lower Alpine reaches of Beechworth’s granitic vineyards and their taut, highly
aromatic expressions; not to forget the ancient loams of the Hunter Valley and the highly ageable Shiraz that bears witness to Australia’s rich history; Shiraz or....Syrah, provides a
great adventure across Australian stories and regions.
CABERNET SAUVIGNON
Notes of currant and leaf, sometimes eucalyptus with an Aussie accent, mark this variety and its tightly wound disposition. Margaret River boasts more generous examples,
frequently blended across Bordeaux varieties, with a telltale lick of pastille and smart oak; while Coonawarra offers more savoury and reticent wines, attractively rustic at times and
in need of patience to emerge from their carapace of tannin and bright acidity.
NEBBIOLO
By origin, northern Italian; by right, the champion of wine lovers the world over; Nebbiolo performs well on Australian shores from cooler zones such as the King and Yarra Valleys,
to Heathcote and beyond. The pallid colour of Nebbiolo’s wines belie highly complex, savoury tones of sandalwood and crushed red fruits; while jangly acidity and edgy tannins
give an energy that pulsates across the palate.
GRENACHE
The lifeblood of the Mediterranean, Grenache finds ample opportunity throughout much of Australia’s similar clime. Sumptuous of texture,
hedonistic of expression and delicious of flavour, Grenache reaches its apogee as a confluence of established vines and thin sandy topsoils, while peering toward the endless ocean in McLaren Vale; or when roots reach deep beneath ancient loams and gnarled old
vines, in the Barossa. Both conventional and hipster expressions abound, with the latter often turbid, spiky and brimming with energy and optimism.
CABERNET FRANC
Cabernet Franc is a variety of moderate colour, brisk acidity and marked tannins that are neither as linear, nor as obdurate, as those of its brethren, Cabernet Sauvignon. The
variety ripens somewhere between the precocious Merlot and the late-ripening Cabernet Sauvignon, giving it a vintage-redeeming usefulness when used as a blending agent, as in Bordeaux or Margaret River. However, it is with the crunchy, mid-weighted wines of the
Loire Valley-all currant, sass and eminent drinkability-that the variety reaches its apogee.
GAMAY
Are there more delicious, hedonistically pleasurable wines than the best made from Gamay, the chief grape variety of the Beaujolais? Gamay entices with crushed red fruits on
the nose, before lilting across the tongue with gentle tannins and bright acidity. Impeccably poised, with nothing excessive or out of place, Gamay brings a grin and inevitably, another
glass.
PREMIUM WINE
While tastes in wine may change, fine wines remain resolute and immutable. Fine wines boast an inimitable stamp of place due to special sites
and their variables-aspect, climate and geological makeup-in addition to the diligence, humility and patience of the makers. The results attest to an uncanny confluence
between sleight of hand and propitious locale, be it the oldest Shiraz vines on earth, as at Henschke; or the ferruginous plots that define Wendouree and its ironclad, eternal
expressions. Such wines are surely age-worthy, unravelling with intrigue over time, while setting a benchmark for their regional peers and indeed, for wines throughout the world.
