This hands-on experience starts with creating the pasta dough, your base of a plethora

of variations and shapes.

Winvian Farm Pastry Cooking Classes

Indulge in learning how to make decadent desserts with

our Executive Pastry Chef, Jim W. Hutchison. Chef will

enlighten you on his pastry philosophy and his method of

developing Winvian’s famous desserts. In class, you will

learn a mixture of classic and modern pastry techniques

that are easily duplicated at home. Leave with a goodie

bag full of sweets to enjoy!

Chocolate Tasting

This experience is a must for all chocolate lovers! Learn about

the origins and production process of your favorite sweet

while indulging in a decadent tasting.

Executive Pastry Chef, Jim W. Hutchison, will demonstrate

making a pastry with chocolate to conclude the experience.

Leave feeling confident in your new skills to evaluate and

enjoy the finest of chocolates.

Meet the chefs of Winvian!

Before taking leadership of Winvian Farm’s culinary team, Executive Chef Chris Eddy worked as a sous chef to both

Alain Ducasse and Daniel Boulud. He also worked for the Jean-Michael Bergougnoux.

From these masters and his French Culinary Institute training, his technique, he says, “Is heavily engrained with

classic and southern French, with an emphasis on using local ingredients and artisanal products”.

Jim W. Hutchison is an American Pastry Chef with 17 years of experience. After graduating from the highly regarded Culinary

Institute of America in Hyde Park, NY he went to work at the finest restaurants in Boston and NYC, including the famed Four Seasons

Restaurant. After an 18-month stint in Italy he now has made his triumphant

return to the States, where he is practicing his craft once again in the Litchfield Hills.

Take a hike to the top of nearby Mt. Tom Tower or enjoy a leisurely walk through

the neighboring White Memorial Foundation, home to over 35 miles of

hiking paths and trails. The more adventurous at heart may inquire with

our front desk about more specific trails which offer a variety of views, sights, and

difficulties. Choose a river walk, spectacular views of Litchfield Hills, or bring a gourmet boxed lunch with you

and search for a quiet field during an all day adventure!

Kayaking & Canoeing

Experience the area’s natural beauty on the water! Paddle on Connecticut’s largest natural lake, Bantam Lake, in

one of Winvian Farm’s canoes or kayaks. No experience required, our

kayaks and canoes serve as the perfect vehicle for guests of all ages to escape the cacophony of civilization. For an additional charge, gourmet

boxed lunches can be provided upon request.

Bonfire & s’mores roast

Memories are made around a roaring fire where one can share

stories and laugh when roasting marshmallows with friends and family.

The roasting kit is provided and bonfire lit

for you by one of our Guest Assistants.

Biking the Litchfield Hills

Winvian Farm and the surrounding areas are made to be explored on two wheels. Choose a relaxing ride through the White

Memorial trails or test your endurance through winding

country side back roads. Each adventure can be personally

designed to cater to any rider’s ability!

Horseback Riding

Allowing for individual know-how, you will have the chance to ride for one hour as you discover your way through hills and valleys on a group or private riding experience. Remember, whether it is a

romantic tromp or an exciting gallop you are after, Winvian Farm can get you

there...and back. Choose from either a trail ride or learn a bit of control through

an instructor guided lesson.

Wine Tasting

Take a tour around the world in a glass! Accompanied by our sommelier, your group indulges in wine from across

multiple regions. Reds, whites & everything in between - you will leave a

FencingDelve inside the regal world of

sword wielding, or if experienced, enhance your skills with Marc

Ganych –

a fencing master with 38 years of experience in the sport of Olympic

Fencing.

Fishing Trips

Take a half a day or full day fishing trip as you cast off one of the many rivers here in the Litchfield Hills. A guide will accompany you

as you journey to your destination where they will show you what you need to know in order to catch that perfect fish. The rivers are full of various fish ranging from smallmouth bass to

rainbow trout. No need to worry about the equipment, this is provided to you for the day

on the water. Transportation and boxed lunches provided by request for an additional

fee.

Fly Casting Lessons

Receive a one-hour fly fishing overview and fly casting lesson, all without

leaving the Winvian Farm grounds! Our professional guide will cover all of the

basics of fly fishing, equipment, how to handle a fly rod & how to cast. This

lesson is great for beginners who would like an introduction to the sport.

River Boat Rides

Enjoy the beautiful scenic views of Cornwall, CT while you row through the mountains of the Housatonic

River Valley. Soak in the peaceful surroundings while on a 2-3 hour boat ride with our knowledgeable

Hot Air Balloon Rides

Have you ever wished you could fly? Winvian Farm offers you the next best thing to gliding through the

clouds! Hot Air Balloon flights are being offered, weather permitting, directly from our meadow and can

accommodate up to 6 passengers at a time. These colorful balloons stand

90 feet tall when fully inflated. Flights last approximately one and a half hours and depart either around sunrise or right before the sunset. Champagne, fresh squeezed juices, artisan bread, cheese, crackers and

other treats are offered during flights.

Sunrise Tour: $500 per person

Sunset Tour: $550 per person

Golfing

Described appropriately as having all “the charm and beauty of what southern New England golf should,” Fairview Farm is a championship 18-

hole golf course offering players an upscale private club atmosphere. The par 72 layout is located in nearby Harwinton, just 10 miles from Winvian's gate!

Paddle Boarding

Stand up paddle boarding (S.U.P) offers a fun, relaxing way to play on the water. With a minimum of gear,

you can paddle your way along Bantam Lake and experience the

area’s natural beauty.

River Tubing

Trying to escape the summer heat? Visit the Farmington River Tubing Company and enjoy an

exciting, yet relaxing, 2-mile journey down the Farmington River. The river will take you through three thrilling sets of

rapids, down the winding river. Your tube and life jacket will be

provided, so get ready to jump in! Tubing: $20 per person to Farmington River Tubing Company directly, cash only

Paint & Sip Palette Party

This is not your average paint & wine night! Using only artist palette knives, you will have the

opportunity to create your own scape using the artist’s technique of layering, removing, scraping, and blending. Make it a mother-daughter outing,

date night, or even get the creative juices flowing in your children and use this class as an alternative babysitter while you and your significant other

enjoy the Litchfield town center.

The class is BYOB, but snacks and materials are included.
