Of all the recommendations we received from Gastroposters regarding mission ideas, a

gluten-free challenge was top of the list. Well, you asked and we delivered! This week, we

want you to go gluten-free. Considering all the super subs — such as polenta for pasta, quinoa

for couscous and the great number of alternative grains — you’ll find it’s easy to do without gluten. Whether you’re a gluten-free

guru — like Gastroposters Laura Stolf and Rachel Bies, who recommended this week’s

mission and have long championed gluten-free eats with their posts — or giving it a try for the first time, show us a dish that delivers all the

goods, minus the gluten.

YOUR NEXT MISSION:

GOING GLUTEN-FREE

“These buckwheat crepes are flipping delicious. You will not miss the gluten,” Gastroposter

Laura Stolf says. “Going gluten-free is not as di!cult as

one may think. There are so many delicious, versatile, and nutrient-rich substitutions for the

glutinous grains we have become accustomed to.” If all substitutes are as good as this, count

us in Laura!
