Yuzu Gelee Makes 1 cup or 4 small servings Delicious as a refresher between courses, or a light dessert, this gelee highlights the fresh complex aspects of the yuzu juice. You can also use this to top a dessert, sushi or whatever you desire. Ingredients: ½ cup each water and granulated sugar 1 tsp of unflavoured gelatin 2/3 cup yuzu juice (Yakami Orchard Yuzu Juice) In small heatproof bowl, sprinkle gelatin over yuzu juice. Let stand until gelatin softens, about 5 minutes. Meanwhile, in small saucepan bring water and sugar to boil over high heat. Boil, stirring, until mixture is clear and sugar is dissolved, about 2 minutes. Whisk hot sugar syrup into yuzu mixture until gelatin is dissolved. Pour into desired serving dishes. Chill until set, about 4 hours.
