Pure Catskills is an economic initiative of the Watershed Agricultural Council. with funding from the New York City Department of Environmental Protection, the U.S.D.A. and other sources.

The Council works with farm and forest landowners to protect water for nine million New Yorkers. It holds over 24,000 acres in conservation easements, thereby protecting working landscapes.

This is an important moment for Pure Catskills. First, in this issue, we mark the accomplishment of a major milestone, ten years of Pure Catskills. We are

proud to promote buying local in the Catskill Mountains for the last decade. To celebrate this accomplishment, you will find six farms that have been a part of Pure Catskills since its inception featured in this issue. These farms have grown alongside Pure Catskills and you’ll love hearing their stories as much as we have loved watching them unfold. Secondly, Pure Catskills is expanding to include not only farms and local businesses that support farms, but will now feature forestry products as well. To mark this expansion, two new woodworking Pure Catskills members are also featured in this Guide. We are beyond excited to welcome the local artisans that make these undeniably beautiful products. Last but certainly not least, this is our biggest Guide yet! We are ecstatic to feature a record 286 Catskill farms, woodworkers, restaurants, accommodations, small businesses, forestry products, community organizations, farm support agencies and more! Watching Pure Catskills grow—from just 50 farms, farmers’ markets and restaurants in 2004 to almost 300 local businesses in 2014—speaks volumes on the importance of the region’s vital working landscapes.

From local eggs to honey, pasture-raised pork to baked goods, cheese to maple syrup, berries to beef, this year’s Guide remains your go-to source for connecting you to local farms, local food events and the community as a whole. We are thrilled to include several new businesses that can help you find where to purchase locally-made home goods, wedding and holiday gifts. In the twelve years that I have been farming in the Catskills and the ten years I have been a member of Pure Catskills, I have offered

the community and region everything from Certified Organic vegetables to humanely raised grass-fed beef and lamb. The Watershed Agricultural Council and Pure Catskills have helped me interface with both customers and other farmers. Not only has Pure Catskills given farmers excellent exposure to new customers but it has made shopping local so much easier for the consumer with concise, searchable product listings in the Guide.

Entering my second decade in farming Betty Acres Farm has refined its focus to bring you Modern Milkmaid Farmstead fresh and cave aged cheeses. Produced from our own herd of grass-fed Jersey and Guernsey cows, our cheese is hand- crafted on the farm and gently aged in our European hillside cave. Look for

our delicious uber fresh and signature aged Delchego and St. Placide in stores from NYC to the Catskills and local farmers’ markets. That wide presence is due partially to my fantastic collaboration with the other farms in Catskill Family Creameries, is a satellite project of Pure Catskills. Through this fantastic collaboration, I have made not only business connections but met fellow farmers/friends who are knowledgeable to the process of value-added dairy.

George A. Olsen, Jr. has been creatively turning wood since 2004. From the first, he enjoyed discovering what was inside a particular piece of wood, and what he could fashion from it. He joined clubs and read many books and articles and made a lot of wood chips. As his skill increased he enjoyed it more. . . but whatever would we do with all the turned pieces?

“With my wife Theresa’s and friend Claudine’s and others’ encouragement, I began to enter shows, and found a market for my wood. Problem solved! I experimented with different woods and new tools, some of which I developed. Theresa began to learn to turn as well as handle the business end. I typically create useful pieces that have uniqueness about them. Each pepper or coffee mill’s wood dictates its final shape. It is a pleasure to furnish people with beautiful tools,” George said.

Living in the Catskill region has furnished us with a wide diversity of local woods to use for turning, and each kind provides many variations. The region has a wealth of craftspeople who learn from each other and foster the arts. We belong to four guilds (The Artisan’s Gallery in Middleburgh, The Artisans’ Guild in Oneonta, and the Catskill Mountain Artisans Guilds in Margaretville and Delhi) where our work is sold. Pure Catskills has provided a venue of encouragement and support with opportunities to enrich our knowledge of the business of doing business in our region.

We bought our farm in this valley for the good dirt that lies here along the river. It’s a good place to grow vegetables, and a big, hungry New York City market for food is only

three hours away. We wanted something small and good. This is a small community--small towns, small farms, small businesses--but sometimes hard to know. Over every hill is another farm, and every farm has another story and another way of being. Years ago, Pure Catskills came to be out of a need for unity, for a way to bring together farms and people whose lives and businesses seemed likely to benefit from knowing each other or at least knowing of each other. We were farming Lucky Dog Farm and operating Lucky

Dog Farm Store in Hamden, but knew few of the other producers in the area. Early on, Pure Catskills membership was a means of introduction to our neighbors. Time and again, those introductions have turned into friendships and often into business relationships. In our store, we sell local products, from maple to dairy to meat to vegetable to fiber, and a large share of the local products we sell come from other Pure Catskills members. On the farm, we grow organic vegetables that we sell both here and in the city, and recently we have begun to transport other farmers’ products to the City when we go. This is a community and community is good.

Burn Ayr Farm was originally established by Kathy’s great-grandparents who settled in Delaware County from Scotland. Kevin and Kathy initially started the farm business growing potatoes and specialty vegetables in 1999. Since that time, they have expanded and diversified their product line. In addition to the vegetables, they began raising grass-fed Scottish Highland beef cattle. Last year, several cuts of the Scottish

Highland beef were declared heart healthy by the American Heart Association. In addition to the beef, they raise hogs, and free-range chicken and

turkey. The farmstand located on the farm along State Route 28 in Delhi features a variety of local products for expanded shopping. They also sell their products at the Delhi Farmers’ Market on Wednesdays and Andes Farmers’ Market on Saturdays.

Kevin and Kathy are excited to have had the opportunity to use the land of their family farm to raise meat and vegetables. Most recently, they have been working to reclaim pasture land to be used in the extensive rotational grazing plan for the animals. They feel it is important to know where your food comes from and how it is raised.

They are planning to open The Inn at Toll Gate Creek a bed & breakfast on the farm this summer. They look forward to sharing their beautiful homestead with their guests.

Kevin and Kathy joined Pure Catskills ten years ago and it has provided them the opportunity to connect with consumers and network with other farmers to promote locally raised products.

The Frisbee family heritage has strong roots in Delaware County. From some of the first settlers and farmers in Delhi to the current three generations operating Riverdale Farm & Forest, they have been committed to the stewardship of the bountiful resources of this area. While currently producing beef, pork and pure maple syrup for their local markets, they have utilized the many programs and resources available through the Watershed Agricultural Council to improve water quality on the farm to promote and market their products. As a Pure Catskills member for 10 years, they have gained exposure and new markets. A sustainable agricultural development grant in 2010 allowed them to purchase a filter press to improve filtering of their maple syrup, developing an avenue to package the product in fancy glass containers that are easily promoted for gifts and wedding favors. Participation in the Watershed Agricultural Program led to the development of a whole farm plan to improve water quality from the livestock production on the farm. Through this, they were eligible for a Conservation Easement, which was completed in 2011. This easement ensures the future of the property as a farm, allowed for some capital improvements to the property, and solidifies the future of good stewardship by the Frisbee family for generations to come.
