Regular exercise can bene-
fit the body in many ways,
helping men and women
maintain healthier weights and
lower their risks for
developing potentially
deadly diseases. Though
many people are quick to
associate exercise with
its physical benefits,
those hours spent on thetreadmill also can boost
brain power.
According to Dr. Barry
Gordon, professor of
neurology and cognitive
science at Johns Hopkins
Medical Institutions and
coauthor of Intelligent
Memory: Improve the
Memory That Makes You
Smarter, exercise has a
direct impact on thebrain. Thats because
exercise works directly on brain
tissue, improving the connections
between nerve cells, creating new
synapses, growing new neurons
and blood vessels, and improving
cell energy efficiency. So while
many people may begin an exer-
cise regimen with a goal of trim-
ming their waistlines or toning
their bodies, they might be happy
to know that those physical bene-fits are accompanied by several
cognitive benefits as well.
As the American Psych-
ological Association acknowl-
edges, the connection between
exercise and mental health is
hard to ignore, and the APA
notes that the following are just a
few of the mental benefits men
and women might reap from regu-
lar exercise.
IMPROVED MOODMany people feel great after
exercising, especially if that exer-
cise comes at the end of a partic-
ularly stressful day. However,
those extra laps on the track or
those hours spent on the tread-
mill dont just pay short-term div-
idends. In a controlled trial over-
seen by Duke University
researcher and clinical psycholo-
gist James Blumenthal, sedentary
adults with major depressive dis-order were assigned into one of
four groups: supervised exercise,
home-based exercise, antidepres-
sant therapy, or a placebo pill.
Those in the exercise and antide-
pressant groups had higher rates
of remission than those in the
placebo group, and Blumenthal
concluded that exercise was gen-
erally comparable to antidepres-
sants for men and women with
major depressive disorder. Inaddition, in following up with
patients a year later, Blumenthal
found that those who continued
to exercise had lower depression

L
osing a spouse can be
hard enough, but losing
a spouse and not know-ing how to manage the fami-
lys finances can lead to
despair. As you gather your
tax records this year, take a
few extra steps to help your
spouse avoid added stress after
youre gone.
In many households one
spouse takes care of the
finances, such as paying bills,
filing important papers and
tracking investments. Itsessential that the other spouse
at least knows the location of
these papers and how to access
the assets. To provide struc-ture to your records, start with
a balance sheet listing of all
bank accounts, insurance poli-
cies and investment holdings,
including applicable online
passwords. Also list your phys-
ical assets and the location of
ownership titles.
Having a complete
record of assets is important,
but so is knowing how to man-
age those assets. Make a list ofthings you consider important
that your spouse might not
know about. This might
include such things as how to
manage retirement distribu-
tions and estate issues. You
might also list the names of
people who should be notified
of your passing. Simple things,
like routine chores to performat the vacation home or recre-
ational vehicle, might provide
comforting guidance.
Educating your spouse on
financial matters can also be a
satisfying social opportunity.

ment club where everyone

making. Such venues often

Blumenthals study was
not the only one to conclude
that exercise can have a posi-tive impact on mood. In a
review of 11 studies that
examined the effects of exer-
cise on mental health, Boston
University professor of psy-
chology Michael Otto and his
colleagues found that exercise
could be a powerful tool when
treating clinical depression,
and even recommended clini-
cians include exercise as part
of their treatment plans fordepressed patients.
ANTIDOTE TO ANXI-
ETY
Some researchers, Otto
included, have begun to
examine the effects of exercise
on treating and possibly pre-
venting anxiety. The bodys
nervous system responds
quickly when people feel
frightened or threatened,
often causing the bodys heartrate to increase and sweating
and dizziness to occur. Those
people who are especially sen-
sitive to anxiety respond to
these feelings with fear, and
that makes them more likely
to develop panic disorders.
But Otto and fellowresearcher Jasper Smits of the
Anxiety Research and
Treatment Program at
Southern Methodist Univer-
sity studied the effects that
regular workouts might have
on people prone to anxiety.
Since exercise produces many
of the same physical reactions,
such as sweating and an ele-
vated heart rate, the body pro-
duces when responding to fearor threats, Otto and Smits
wanted to determine if exer-
cise might help people prone
to anxiety become less likely
to panic when experiencing
fear or threats. In studying 60
participants with heightened
sensitivity to anxiety, Otto
and Smits found that the sub-
jects who participated in a
two-week exercise program
exhibited marked improve-ments in anxiety sensitivity
compared to those partici-
pants who did not take part in
the exercise program. Otto
and Smith concluded that this
improvement was a result of
the exercise group partici-
pants learning to associate thesymptoms common to both
fear and exercise, such as
sweating and an elevated
heart rate, with something
positive (exercise) instead of
something negative (anxiety).
Regular exercise benefits
the human body in numerous
ways, not the least of which is
its impact on the brain. More
information on the link
between exercise andimproved mental health is

Tooth sensitivity can be
caused by a problem
with the tooths nerve
and blood supply (pulp), or by
exposure of dentin, resulting
in dentin hypersensitivity.
Dentin is a sponge-like,
hard layer underneath enamel
(the outer white, hardest
layer of a tooth) that contains
small channels that connectthe pulp to the outside of the
dentin. When dentin is
exposed, there can be hyper-
sensitivity.
Dentin hypersensitivity
is a short, sharp pain not
caused by tooth decay. It can
affect up to one in every two
people at sometime in their
lives. This condition is esti-
mated to affect 40 million
people in the U.S.Hypersensitivity mostly
affects people in their 20s and
30s. Age changes dentin and
decreases tooth sensitivity.
Age increases gum recession
(exposing dentin), enamel
erosion, and tooth structure
loss.
Enamels hard texture
protects the pulp and dentin.
When it is lost, hypersensitiv-
ity occurs. The most common
complaints are caused by coldand sweets. The pain from
enamel loss is caused by:
1. Acidic foods and drinks
(sodas,sports drinks,fruits,etc.)
2. Vigorous over-brushing,
removing the enamel
3. Abrasive toothpastes
4. Using a medium or hardtoothbrush (not American
Dental Association approved)
5. Gum recession
6. Use or overuse of tooth
whitening products
7. Clenching or grinding your
teeth (bruxism)
Part 2 discusses the actu-al reason hypersensivity hurts,
damaged to the pulp (nerve),
and available treatments.

While there are
many ways to help
elderly loved ones
do all they can to maintain
health, one of the best ways to
improve both the physical and
mental health of senior citizens
is meditation. We know that
meditation can reduce stress
and help us relax, but recent
studies have shown that medi-
tation can also relieve pain,
reduce the probability of heart
disease and improve creativity.
Here are some other benefits of
meditation:
1. The deep breathing exer-
cises central to any program of
meditation encourage oxygen
enrichment to the blood.
Senior citizens who suffer
from digestion problems often
see immediate relief because
the oxygenation of their
digestive functions is empow-
ered through meditation. This
extra oxygen boosts the
immune system, heals the
lungs and improves circula-
tion.
2. Meditation also causes
increased alertness and the
ability to interact with others
and surroundings. The
increased oxygen in the
bloodstream of the elderly
user of meditation will cause
brain functions to improve.
3. Because both the mind and
the body become more
relaxed, the mental and phys-
ical health of the individual is
improved drastically. Seniors
who suffer from depression
can benefit from meditation.
During meditation, feelings of
happiness are created in the
brain that increase daily hap-
piness and satisfaction.
4. Meditation improves physi-
cal energy, making the senior
years just as rewarding as
other life phases. Meditation
is also easy to learn and
requires no certain religious
affiliations. The fact thatmeditation is flexible and easy
to do makes it a great choice
for everyone, quickly enrich-
ing the lives of seniors.
5. A study published in the
Journal of Brain, Behavior and
Immunity shows that eight
weeks of training in mindful-
ness meditation is linked with
decreased loneliness. Aside
from alleviating loneliness,
mindfulness meditation has
also been shown in past
research to have positive
effects on the brain linked
with brain changes that may
even have effects against
mental illness.

Though February does
not often elicit images
of youngsters building
campfires or playing games in
the pool, the month more
synonymous with the Super
Bowl and Valentines Day is a
great time for parents to start
thinking about summer camps
for their kids.
Summer camp is often
something kids look forward
to, and something they will
fondly recall long after they
reach adulthood. For many
kids, summer camp provides a
first taste of independence, as
youngsters spend significant
time away from home without
their parents for the first time
in their lives. But as great an
experience as summer camp
can be for youngsters, it can be
just as difficult an experience if
parents dont find the right fit
for their children. Thats why
it behooves parents to start
thinking about summer camps
for their kids in winter, before
camps start filling out their
rosters, which tends to happen
in early spring. The following
are a few things parents should
take into consideration when
seeking a summer camp for
their kids.
STAFF
The right summer camp
staff can make all the differ-
ence. Many children are
understandably shy when
arriving at a summer camp, as
their friends from back home
might not be joining them. That can make kids hesitant
to participate in activities or
less enthusiastic about those
activities. But a good staff will
know how to make kids feel
welcome, which should help
them come out of their shells
and make the most of their
summer camp experiences.
The quality of staffs can vary
significantly depending on
the camp, so its importantthat parents ask camp repre-
sentatives about their staffs
before making any commit-
ments. Ask how long the staff
has been together and the
types of training new and
even veteran staff members
undergo before the start of
camp season? Does the train-
ing include first aid and emer-
gency medical training and
certification?
Its also good to ask about
the vetting process the camp
employs before hiring new
staff, including the extent of
its background checks. Are
criminal background checks
conducted? How many refer-
ences must potential staff
members supply to be consid-
ered for employment? A good
camp will be forthcoming
with answers to all of your
questions, so eliminate those
that appear hesitant to share
information about their staffs.
A DAY IN THE LIFE
When vetting camps for
kids, parents should ask what
a typical day is like once the
season hits full swing. Many
parents want their youngsters
to have a well-rounded expe-
rience, while others might
want their kids to attend a
more specialized camp,
whether its a sports camp
focusing on a particular sport
or a music camp devoted to
helping kids become better
musicians. Regardless of the
type of camp parents are con-

After a long season of
use, fireplaces need
to be cleaned. Many
homeowners think this is a job
that can be put off until the
fall, but spring is an ideal sea-
son to have the chimney and
flue cleaned and inspected.
One reason to include scrub-
bing the chimney as part of
spring cleaning is to cut down
on odor. After using a fire-
place, a buildup of creosote
forms in the chimney. As the
weather gets warmer, creosote
deposits can start to smell sour
and that odor will seep into
the home. In addition, mois-
ture can mix with the creosote
and start to degrade the flue
liner, necessitating costly
repairs. The sooner a chimney
and flue are cleaned the bet-
ter. A chimney sweep can do a
thorough job of scrubbing
down the chimney and fire-
place and ensuring that every-
thing will be in working order
come next season.
sidering for their kids, they
should ask about what daily
life at the camp is like. Ask to
see schedules and how strictly
camps adhere to those sched-
ules. When considering spe-
cialized camps, ask the staff
representative if kids will
have the chance to simply
have a little fun and which
types of recreational activities
are planned to give kids a
break from what are often rig-
orous schedules.
CAMP GOALS
Another thing parents
must consider before choosing
a summer camp for their kids
is the goals of each individual
camp. A camp should be ded-
icated to ensuring kids have
fun, even when kids are
attending more specialized
camps that tend to be more
strict. In addition, parents
should look for a camp that
wants its attendees to foster
relationships with their fellow
campers. Camp can be lonely
for some youngsters, especially
those attending summer camp
for the first time, but a sum-
mer camp that strives to pro-
mote friendship among its
campers can reduce, if not
eliminate, any feelings of
homesickness.
Late winter is when par-
ents should start looking at
summer camps for their kids,
and there are a host of factors
moms and dads should take
into consideration during the
vetting process to ensure their
youngsters have as much fun
as possible.

Romantic nights out on
the town are how many
couples celebrate
Valentine's Day. Restaurants
and resorts book quickly come
Valentine's Day, while movie
theaters tend to be packed as
well. Even babysitters cash in
come February 14, as parents
look to enjoy a romantic night
away from the kids.
Parents who do not secure
a babysitter well in advance of
the holiday will have to spend
Valentine's Day with kids in
tow. Many parents actually pre-
fer to spend Valentine's Day
with their children, and there
are plenty of family-friendly
Valentine's Day activities to
keep everyone occupied.
DESSERT SPREE
Valentine's Day is the one
day of the year to fully engage
your sweet tooth. And what
child doesn't enjoy sampling
plenty of sweet treats? Create a
sundae station after dinner,
complete with different flavors
of ice cream and various top-
pings. Include mix-ins, like
brownie bits or small chunks of
pound cake. Everyone can cre-
ate their own sundae, topped
off with whipped cream and a
cherry.
This is also a time to
experiment with different
dessert recipes. Encourage kids
to come into the kitchen and
dabble in pastry arts. Bake and
decorate heart-shaped cakes
and cookies. Whip up healthy,
pink-tinged strawberry-banana
smoothies. Create edible
candy-and-chocolate bouquets
to use as the centerpiece on a
dining table. The opportunities
for fun with sweets are endless.
GET CRAFTY
Families also can use this
Valentine's Day as a chance
turn off their electronic devices
and have fun with crafts and
hobbies. While heart-shaped
paper crafts are requisite for the
day, that doesn't mean you
need to be limited to all frilly
creations. Boys can construct
their own Cupid bows from
twigs and some yarn. Everyone
can whip up a batch of fizzing,
scented bath salts. Homemade
craft dough also makes for a fun
project, and the dough can be
turned into all different shapes,
including hearts and bows.
FANCY DINNER AT
HOME
Who says you have to
venture out for fine dining?
Plan an intimate dinner right
in your own dining room. Have
the entire family dress up in
semi-formal clothing and enjoy
a candle-lit meal on fine china.
The meal need not be fancy, as
long as everyone enjoys what
they are eating. Plan for dessert
afterward.
MOVIE NIGHT
Rather than facing the
crowds at area theaters, you can
visit your nearest movie quick-
serve kiosk or purchase a movie
through your cable service
provider. Find family-friendly
films with love and together-
ness as the center theme. Then
whip up a large bowl of pop-
corn, snuggle under the blan-
kets and enjoy a movie
marathon.
MEMORY BOX
Purchase or find a wood-
en, plastic or metal box that
will last for several years. Have
all members of the family gath-
er their favorite items or things
that are sentimental to them
and place them in the box.
These can be ticket stubs, pho-
tographs, jewelry, or other trin-
kets. Place them in the box and
seal it. Agree not to open the
box until next Valentine's Day
to see how the family has
grown and evolved.

Valentines Day is upon
us. This is a day to
celebrate our loved
ones and show them we care.
We also have to take care of
our four-legged loved ones, as
some Valentines Day gifts and
ideas may be hazardous to our
pets.
The most obvious warn-
ing is: Dont let your pets eat
chocolate. Chocolate is one of
the traditional gifts on
Valentines Day but can be
very dangerous to pets, even
life threatening. The toxic
compounds in chocolate are
methylxanthines, mainly
theobromine and, less impor-
tantly, caffeine. The amounts
of theobromine and caffeine
vary with the type of choco-
late. For instance, unsweet-
ened (Bakers) chocolate con-
tains 8 to 10 times the amount
of theobromine as milk
chocolate. This is a very com-
mon toxicity in dogs and seen
less in cats just by nature of
their eating habits.
Clinical signs of choco-
late toxicity usually occur
within six to 12 hours of
ingestion. Theobromine
affects the body as a central
nervous system stimulant, car-
diovascular stimulant,
increases blood pressure and
nausea. Therefore, common
signs of chocolate toxicity are:
vomiting, diarrhea, hyperac-
tivity, tremors, seizures, fast
heart rate and, in severe cases,
death. If your pet ingests
chocolate, contact your vet-
erinarian or poison control
immediately for treatment.
Also, knowing the type and
quantity of chocolate ingested
is helpful.
Another potential hazard
for pets on this sweet holiday
is any sugar-free gum or
candy. They commonly con-
tain the sugar substitute xyli-
tol. Signs of xylitol toxicity
can be seen as quickly as 30
minutes and causes a sudden
drop in the bodys blood sugar
(hypoglycemia). This may
result in weakness, depression,
loss of coordination, seizures,
coma and even liver failure.
Treatment should be initiated
immediately if ingestion
occurs.
Some holiday flowers,
though they are romantic, can
be toxic for your pet. The
biggest culprits are lilies. They
are highly toxic to cats, so
make sure your cats cant get
near them, or choose a differ-
ent variety of flower but not
tulips (the bulbs are the most
toxic). Amaryllis, daisies,
chrysanthemums or any flow-
ers with thorns may be poten-
tially dangerous flowers.
Leftover gift-wrapping or
decorations are enticing for
curious cats. Make sure all rib-
bons, bows and other wrap-
ping are out of your pets reach
and cleaned up. Cats especial-
ly like chewing on strings or
ribbons which can cause
choking or worse, an obstruc-
tion in the intestines that
could require emergency sur-
gery.
Candles are also a nice
touch on Valentines Day but
not to paws and fur. Dont
leave candles unattended, as
pets can easily be burned or
the candles could be knocked
over, causing a fire.
One last warning is not
to give pets as gifts. Puppies
and kittens are very cute and
cuddly but owning a pet is a
big undertaking. Purchasing a
pet should be done in a
responsible way and only after
a lot of research. If youre
ready, you should consider
adopting a pet from your local
shelter. These steps can be
done together and are roman-
tic and rewarding.
Have a sweet and safe
Valentines Day!

Winter weather can
be treacherous.
Extreme wintry
conditions can make walking
on wet or slippery surfaces
unavoidable. If you must walk
on wet or slippery surfaces,
observe the following precau-
tions:
Take smaller steps to
keep the center of balance
underneath yourself.
Walk like a penguin
sound silly? Not really. Walk
with your toes pointed out-
ward. This will provide a
wider, more stable base of
support for maintaining bal-
ance.
Turn gradually and slow-
ly. A sharp turn results in a
sideways force that can cause
loss of balance.
Keep both hands free for
balance.
Use hand railings when
walking on steps.
Take short steps and
walk at a slower pace.
When walking on snow
and ice, the following precau-
tions will help reduce the
likelihood of any injuries:
Whenever possible,
walk on surfaces that have
been cleared of snow and ice.
Walking on snow or ice
is especially treacherous and
wearing proper footwear is
essential. A pair of well insu-
lated boots with good rubber
treads is a must for walking
during or after a winter storm.
Keeping a pair of rubber over-
shoes with good treads which
fit over your street shoes is a
good idea during the winter
months.
When walking on an icy
or snow-covered walkway,
take short steps and walk at a
slower pace so you can react
quickly to a change in trac-
tion.
If you must walk in the
street, walk against the traffic
and as close to the curb as
you can.
Be on the lookout for
vehicles which may have lost
traction and are slipping
towards you. Be aware that
approaching vehicles may
not be able to stop at cross-
walks or traffic signals.
At night, wear bright
clothing or reflective gear, as
dark clothing will make it dif-
ficult for motorists to see you.
During the daytime,
wear sunglasses to help you
see better and avoid hazards.
Be safe during the wintry
months, stay warm and stay
upright!

Completing home im-
provement projects on
your own can be both
rewarding and financially
responsible. A growing number
of homeowners are dabbling in
do-it-yourself projects, recog-
nizing both the personal and
financial rewards of such
undertakings. As more and
more homeowners perform
their own renovations and
other improvement projects,
many are outfitting their
homes with state-of-the-art
workshops and transforming
garages into a do-it-yourselfers
paradise.
Safety is vital in any work-
shop. During a typical home
renovation, homeowners will
use all sorts of dangerous tools
and chemicals, and even the
simplest mishap can result in a
serious injury. Following safety
rules can reduce the risk of
injury.
Know your tools
Before novice do-it-your-
selfers begin working with
power tools, they should famil-
iarize themselves with their
owners manuals and the oper-
ating instructions. Some home-
improvement retailers offer
classes in various home renova-
tion projects and may be able
to teach tool usage. Do-it-your-
selfers should consult
professionals with
regard to proper tool use
and safety. Do not use
tools for purposes other
than what the tool was
intended to do. If
machine guards are pro-
vided, they should be
used and never
removed.
Wear safety gear
Eye, ear and
breathing protection
are key in any workshop
environment. Dust and
chemical gases may be
present when working
with certain products,
and debris can be
kicked up and enter the
eyes, causing irritation
or even blindness. Loud
power tools can damage
sensitive ears, especially when
used in a contained room.
Always wear goggles, sound-
muffling earphones and dust
masks when working.
Assess physical well-being
Do-it-yourselfers should never
work with machinery if they
are feeling sick or fatigued or
while taking medication that
can affect concentration or
alertness. All it takes is a
moment of distraction to cause
an injury.
Never surprise anyone
who is working with power
tools and keep unnecessary
people out of the workshop,
where they might chat and dis-
tract others from the tasks at
hand.
Factor in ergonomics
Failure to work in
comfortable conditions
can result in repetition
injuries or muscle
strain. Make the work-
shop as comfortable as
possible. Ensure the
work table is at the right
height. Use a rubber
mat on the floor to
reduce standing fatigue.
Have a stool or chair
available for taking
breaks.
Keep a clean shop
Power cords strewn
around the workshop
present a tripping haz-
ard. They also make it
possible to drag sharp or
heavy tools off of tables
and workbenches if the
cords are pulled or
tripped over. A neat workshop
is a safer workshop. Pay atten-
tion to where tools are kept and
keep cords manageable.
Dress appropriately
Loose clothing and hair
can become tangled or lodged
in equipment. Do not wear
jewelry. Dress comfortably but
appropriately for the workshop,
being sure to wear sturdy shoes.
Lock it up
Children and pets are
curious and may wander into a
workshop to explore. They can
become seriously ill or injured
by the bevy of chemicals and
tools used for common projects.
Some items are flammable and
sharp and should always be out
of reach. Locking cabinets and
drawers can keep tools inacces-
sible. Also warn youngsters
against entering the workshop
unattended.
As more people engage in
do-it-yourself projects, home-
owners should reacquaint
themselves with safety proce-
dures.

sive home improvement proj-
ect. But that doesn't mean
painting does not require a lit-
tle prep work before the proj-
ect can begin.
Address any holes or bumps
on the wall. Holes or cracks in
the wall will need to be
patched with spackle, which
then must dry before the wall
can be given a new coat of
paint. In addition, sand down
any bumps until the walls are
smooth and free of any
unsightly abnormalities.
Wash the walls. Walls can
get dirty, and that dirt may or
may not be masked by paint.
Before adding a new coat of
paint, wash the walls and
inspect them for dust. Dust
can collect on molding, espe-
cially in rooms that get little
natural air. When dust has
collected on the molding and
around doorways and trim, use
a damp cloth to wipe it away
before adding any new paint.
Apply primer. Primer can
serve many functions, not the
least of which is its role as a
bonding agent between the
wall and the top coat of paint.
Primer can also help conceal
dark colors, prevent stains and
increase the life expectancy of
the paint job you are about to
undertake.
Prepare your paint.
Preparing the paint is a simple
task, but one novice painters
may not be aware of. When
opening a new can of paint,
stir the paint before using it.
In addition, even if you don't
plan to use a roller when
painting, do not paint straight
from the can, which can be
heavier to hold than a small
bowl, and a light bowl is less
likely to be spilled than a
potentially heavy can of paint.
In addition, once paint has
been removed from the can,
replace the lid so dust and
other impurities do not settle
in the can.
Purchase painter's tape.
Painter's tape can be especial-
ly valuable to novice painters.
Painter's tape makes it easier
to paint smooth and clean
paint lines, giving a room a
more professional looking coat
of paint without the cost of
hiring a professional painter.
Painting can be an inex-
pensive and fun way to
upgrade a home's interior. But
even though painting does not
require the technical know-
how of more large-scale home
improvement projects, it still
requires some prep work and
attention to detail to ensure
the job is done right

Valentines Day is
known for many
things. Youngsters
associate the day with
exchanging homemade valen-
tines with their classmates,
while couples look at the day
as an annual opportunity to
express their feelings for their
partners, often over a nice
dinner.
But no Valentines Day is
complete without sweets. On
Valentines Day, healthy eat-
ing often takes a backseat to
indulging in various confec-
tions, as seemingly everyone
finds a way to enjoy a special
treat on February 14. Those
who want to experience how
Parisians might indulge their
sweet tooths on Valentines
Day can try the following
recipe for Truffes au
Chocolat from Sarah
Woodwards The Food of
France (Kyle Books).
Truffes au Chocolat
Makes 20 to 24 truffles
1 cup heavy cream
2 tablespoons super fine sugar
1 tablespoon Cointreau or
Armagnac (optional) good
quality cocoa powder
2 tablespoons unsalted butter
Scant 1/2 pound dark choco-
late with at least 70 percent
cocoa solids
Scald the cream with the
sugar by just bringing to the
boil and then removing from
the heat immediately. Whisk
in the chocolate piece by
piece until you have a smooth
emulsion. Allow to cool
slightly then whisk in the but-
ter, again in pieces, followed
by the alcohol if you are using
it. Chill the mixture in the
freezer 20 minutes.
Now stir the mixture well
and, using either two tea-
spoons if you are dexterous or
your fingers if you dont mind
getting messy, fashion the
truffles into small balls. Place
on parchment paper or foil on
a baking sheet and put in the
refrigerator for 30 minutes or
so. Roll well in the cocoa
powder and leave in the refrig-
erator at least overnight
before serving.

No Valentines Day iscomplete without
chocolate. Men and
women alike look forward to
their sampling of sweets come
February 14, and that sam-
pling simply must include
some delectable chocolates.
Those who want to go
the extra mile this Valentines
Day can try their hands at
crafting their own confec-
tionary concoctions from thecomforts of their kitchens.
The following recipe for
Triple-Chocolate Cookies
from Michael Recchiuti and
Fran Gages Chocolate
Obsession (Stewart, Tabori
& Chang) will no doubt
please your valentine this
February.
Triple-Chocolate Cookies
Makes about 48 cookies
1 cups unbleached all-pur-pose flour
1/3 cup plus 1 tablespoon
unsweetened natural cocoa
powder
teaspoon baking soda
12 tablespoons unsalted butter
at room temperature
cup sugar
cup dark brown sugar
teaspoon pure vanilla
extract
Tahitian vanilla bean, split
horizontally
teaspoon fleur de sel (sea
salt) fine grains
3 oz milk chocolate, roughly
chopped
3 oz dark chocolate, roughly
chopped
Make the dough:
Sift the flour, cocoa and
baking soda together into a
bowl. Set aside.
Put the butter in the
bowl of a stand mixer fitted
with the paddle attachment.
Beat on medium speed until
creamy. Add both sugars and
the vanilla extract. Scrape the
seeds from the vanilla bean
into the bowl. Sprinkle the
salt over the top. Beat on
medium speed just until com-
bined.
Reduce the speed to low.
Add the dry ingredients in 3
additions, pulsing the mixer to
incorporate each additionbefore adding the next one.
Pulse just until a crumbly
dough forms. Add both
chopped chocolates and mix
on low speed just until incor-
porated.
Turn the dough out onto
a lightly floured work surface.
Knead a few times to incorpo-
rate any crumbs.
Divide the dough in half.
Roll each half into a log about1 inches in diameter and 12
inches long. As you roll, gen-
tly push the ends toward the
center occasionally to prevent
air pockets from forming and
to keep the logs at an even
thickness.
Wrap the logs in plastic
wrap and refrigerate until
firm, at least 3 hours or up to 3
days.
Bake the cookies:Preheat the oven to 325
F. Line the bottoms of two 12-
by-18-inch sheet pans with
parchment paper.
Remove the logs from
the refrigerator and unwrap
them. Using a ruler to guideyou and a sharp knife, cut
each log into rounds inch
thick. If the dough crumbles
as you cut it, reshape each
slice. Place the rounds on the
prepared pans, spacing them 1
inches apart.
Bake on the middle
shelves of the oven, rotating
the pans 180 degrees halfway
through the baking time, untilset but soft enough to hold a
slight indentation when
pressed with a fingertip, about
14 minutes. Let cool com-
pletely on the pans on wire
racks.
Store in an airtight con-
tainer at room temperature for
up to 1 week.

Findingthe RightRestaurant
for YourDinnerParty
Over the last couple of years, dining out has become an even bigger luxury than itonce was. Thanks to the struggling economy, many people have decided to cutback on spending, and dining out has become casualty of such events.
While the economy is gradually rebounding, dining out is still largely reserved forspecial occasions among those whose memory of the recession is still fresh. However, dining out does remain a strong choice when hosting a special occasion such as a birthdayparty or anniversary celebration. When choosing a restaurant to have such a gathering, consider the following tips to ensure that rare restaurant night out goes off without a hitch.
NEWwhats
in dining?
Look for versatility in a menu. Whendining out, the emphasis is obviously on thefood. Couples might enjoy certainrestaurants they have previously patronized, but that does not necessarily make therestaurant ideal for a party. When shoppingfor a restaurant, look for one that boasts aversatile menu that can cater to a vast arrayof palates. Especially for larger parties, theversatility of the menu is very important.Restaurants that boast a large entreeselection that includes meat, poultry, seafood, and even vegetarian dishes ensures
each guest has options.
Examine the elbow room. Because diningout has become such a luxury, comfortshould be another key consideration. Look
for a restaurant that provides ample elbowroom so everyone can relax and wont feelcrowded.
Be sure there are places to park. Chancesare, most guests will be driving to the party. While it seems like an afterthought, therestaurant should provide ample, and ideallyfree, parking. Avoid restaurants that chargefor valet service or inquire if such servicecan be included on the tab ahead of time.
Reserve well in advance. If its a trulyspecial occasion, be sure to begin the process
of finding a restaurant as early as possibleand make a reservation the moment adecision is made. Reservations can alwaysbe cancelled should things not work out.
