Ingredients• 2 cans (5 oz each) Wild Planet Wild Albacore Tuna, undrained• 1 jar (6 oz) marinated artichoke hearts, drained and coarsely chopped• 1 can (15.5 oz) chick peas, rinsed and drained• 1/2 cup chopped red bell pepper• 1/4 cup pitted Kalamata or other olives, coarsely chopped• 1/2 cup chopped red onion• 1/4 cup chopped fresh parsley • 1/2 cup shredded carrots• 2 Tbsp chopped fresh basil or oregano, or 1 tsp dried• 3 Tbsp capers, drained• Juice of one lemon• 4 Tbsp olive oil • 2 Tbsp red wine vinegar• Sea salt and freshly ground pepper, to taste

Makes about 4 servings.

DirectionsPlace Wild Planet Wild Albacore Tuna and juices from the cans into a large bowl. Flake with a fork to separate tuna into bite size pieces. Add artichoke hearts, chick peas, red bell pepper, olives, red onion, parsley, carrots, basil or oregano, capers and lemon juice to tuna in bowl. Mix gently to combine all ingredients. In a small bowl, whisk together olive oil and vinegar; season with sea salt and pepper. Pour over tuna salad and stir to combine.

During the summer months many of us eat lighter, healthier and take the time to plan meals, which often leads to better nutritional choices. Just the absence of homework allows us more time at the end of the day since we’re not running out to get money for the field trip or poster board for that forgotten project assigned a month ago that is now due tomorrow. We’re more active too, outside enjoying the weather running, biking or gardening. Our activity level naturally increases in the summer, further assisting us in making good food choices.

But what happens when summer dwindles? When kids go back to school and the homework returns along with soccer practice or Driver’s Ed or the multitude of other things our kids do? How can we take these summer habits of planning and eating healthy, fresh meals “back to school” when we are running around and need quick, easy meals so that we can get where we need to be and on time? Here are a few tips to help you stay on your game this fall.

1) As part of your “unloading the bags after shopping” process, unpackage your healthy snack options and create “snack packs” that are grab and go. Washed and cut up carrots and celery? Much better option than a bag of chips, but if they aren’t easy to grab like the chips are, I’ll make a bad choice.

2) Planning is essential, organize your meals ahead of time; this includes breakfasts, lunches and dinners. Meals that are planned in advance are more often followed through on which stops us from those impulsive junk food grabs or fast food stops.

3) Make freezer meals. During a weekend when you have less going on and more time, make a few healthy meals that can be frozen and then thawed when you need something fast. Or double batch the meals that you make during the week and throw the rest in the freezer. This will stop us from calling our favorite take out or delivery place when we need something easy and fast.

4) Remember that family meals don’t need to be elaborate in order to be nutritious. Think yogurt with cut up fruit, salads, raw veggies and hummus, granola…keep it simple.

Eating well doesn’t need to take a lot of time…just a little thought and preparedness. Try just one of these tips this week and see how it affects your healthy lifestyle/busy life balance.
