What can I say?!” Eddie Jordan Bristow, OK (Pop. 10,170) www.justapinch.com/steakparmesan Eddie Jordan What You Need 2 well-trimmed beef t-bone or porterhouse steaks, cut 1 inch 1/4 c grated Parmesan cheese 2 tbsp olive oil, light 2 tbsp red wine vinegar 1 red bell pepper 1 yellow bell pepper 1 lg red onion, cut 1/2 inch slice Seasoning: 1 tbsp crushed garlic 2 tsp dried basil 1 tsp pepper Steak Parmesan with Grilled Vegetables • In a small bowl, combine seasoning ingredients: mix well. Remove 4 teaspoons of mixture and press into both sides of steak. • Add cheese, oil and vinegar to remaining seasoning mixture. Mix well and set aside. • Place steak in center of grill over medium ash- covered coals. Arrange vegetables around steak. Grill steak uncovered 14 to 16 minutes for medium doneness, turning occasionally. • Grill peppers 12-15 minutes and onion 15-20 minutes or until tender, turning once. Brush vegetables with reserved cheese mixture during the last 10 minutes of grilling. • Season steak with salt, as desired. Remove bone, and carve steaks crosswise into thick slices. It was a cabin by the lake and we should have been roasting hot dogs and toasting marshmallows! It was fabulous! I think everyone of the members told her we wanted to live out there or live with her! Once President Jane Simmons got us all collected in the same room, Carol Sills read the devotion by Max Lucado. We all love Max Lucado! Of course, at the top of our list this night, was the death of our dear, precious friend, Jan Mayer. We reminisced about the note cards she created for one of our fundraisers with pictures of different images around the city. They were awesome and we all realized that we still had a few packs left over. I can guarantee that those note cards will go in a safe place and never be sold. Jan’s talent was phenomenal! All of us recollected the things we had in our house that she had made for us. Just amazing! We decided to do something special in Jan’s honor around Christmas such as donating money to the Arts Council that she loved so much or donating to the Back Pack program to make certain school children have something in their back pack to eat when they leave school on Friday. We thought Jan would want to do that since she was a teacher’s aide for awhile. In the meantime, we chose to purchase a flag from the Brownsville Exchange Club for the Field of Flags and let her fly free as the doves did at her graveside service. We love her and will miss her. She was such a gentle, caring soul with a beautiful spirit. Natalie Darnaby Pinner was our special guest and she discussed Special Friends and the Back Pack Program. Natalie told us about the children in her class that had Special Friends. One of them happened to be her sister, Jennifer’s Special Friend. She told us how the children that have a Special Friend, need someone to look up to and to be told what life has to offer them. She even discussed the percentages of better behavior of those children who have a Special Friend. Sometimes these children have no idea what’s out there for them or what they can actually aspire to become, if they only knew it was possible. We are going to do Samaritan Purses again this year and we chose to do 20 this time. We Love doing this project! Last year, our Samaritan Purses went to Mali and we actually got a thank- you note from them! Our next meeting will be held November 11 at the Chamber of Commerce building. That way we will have enough room to spread out and pack our Samaritan Purses! JoAnne Finn has the program and Kathy Cook will be responsible for refreshments. Tenth Review Club by the Lake By Marty Williams The Senior Center has a variety of programs and activities planned for November. We encourage all senior citizens to join us for any of these events. Educational programs: November 4 at 10 a.m. Ashley Parson will have a presentation of the Tennessee Recovery Act. This is to assist those who were flood victims. November 8 at 10 a.m. Sharon Sparks, UT representative, will present a nutritional education program. Everybody looks forward to her presentations, because she always brings nutritional snacks for everyone to sample. November 17 is open enrollment for Medicare Part D. Anyone who needs assistance, call 772-2438 and ask for Reba. You may not want to change anything, but you will be able to compare your plan with others to see which will benefit you more. November 18 at 10 a.m. a representative from Crestview will conduct a health educational program. November 29 at 10 a.m. Cindy Wilkins from Haywood County Health Department will conduct our regular monthly caregiver support group meeting. All caregivers are invited to attend. Pastors and laymen/ women from a variety of churches conduct Bible studies each Wednesday at 10:30 a.m. Exercise programs: Each Monday, Wednesday and Friday at 9:30 a.m. we have “Chair Dance”, a video exercise program designed especially for seniors. The YMCA also allows us to use their facilities to walk. Recreational activities: Our monthly Chat/ Chew will be November 5 at 9:30 a.m. The day trip will be to Ryan’s November 9. Our bingo parties will be November 12 and 23. Bubba’s Bunch will sing November 16 at 10 a.m. Our potluck will be November 19. A new group (G-3) gospel-singing group will be singing for us at 10 a.m. Lunch will be served at 11:30 a.m. Anyone who would like to join us for lunch should call 772-2438 for reservations. Remember When? program will be November 22 at 10 a.m. Our birthday party will be November 30 at 10 a.m. The Center will be closed November 11, 25 and 26. Senior Center November Highlights Gerald, Dana, Adam and Abby Woods, along with Stanton Mayor Allan Sterbinsky are shown reinstalling the Stanton signs they repaired for the Town of Stanton. The Woods family made this a family project. The signs were in bad shape and one had been hit by farming equipment. Steak Parmesan with Grilled Vegetables
